Yassa Food Adventure from West Africa Yassa Food Adventure from West Africa Yassa is the customary name of a range of dishes eaten in Gambia and Senegal. Originating in the Casamance region of southern Senegal, it is most commonly associated with “Poulet Yassa”. This combines marinated and barbecued chicken with onions to create a wonderful dish. As Gambia and Senegal are both on the Atlantic coast, Yassa is also commonly eaten as a Fish dish but also works well with Pork, Beef and Lamb. KEY FLAVOURS As with most food cultures, the indigenous plants and animals provide the key flavours for the West African style of cooking. The history of West Africa also plays a large role in their cuisine, as interaction between different cultures (particularly the Arab World and later Europeans) over the centuries have introduced many ingredients that would go on to become key components in many national dishes. It was European explorers and slave ships who brought chilli peppers and tomatoes from the New World, both have become ubiquitous of West African cuisines along with peanuts, corn, cassava and plantains. In turn these ships carried African ingredients to the New World ,including black-eyed peas and okra. Many West African dishes are enriched with a base of tomatoes, onions and chilli peppers, considered an essential cooking technique in the region. Vegetables are a part of any West African meal and commonly eaten varieties include aubergines, squashes, okra, cassava, sweet potatoes, plantains as well as a huge variety of both farmed and foraged green leafy vegetables. THE PRODUCTS In a chance meeting, we discovered two amazing marinades made by a West African chef who was inspired by her Grandmother’s recipes.
