What’s Cooking?
Pomegranate Glazed Turkey with Wild Rice and Chestnut Stuffing
Housekeeping
Cleaning
Special
Ingredients:
1 small fresh turkey (cut into pieces)
Olive oil
Salt and black pepper
4 c. wild rice, cooked
2/3 c. chestnuts, toasted, roughly chopped
1/2 c. finely chopped fresh thyme leaves
1 tsp. finely chopped savory leaves
2 T. roughly chopped fresh parsley
1/2 c. crumbled goat cheese
1 c. pomegranate juice
Directions:
Preheat grill on high heat. Season turkey with olive oil, salt and pepper. Let stand at room temperature for 20 minutes.
Mix rice, chestnuts, onion, and herbs in a baking dish. Top with crumbled goat cheese. Cover with foil and set aside.
Preheat the oven to 350 degrees. Place turkey on the grill and cook over high heat until browned, about 4 to 5 minutes
each side. Turn heat down to low and move turkey pieces to a higher rack in the grill. Close lid and let cook slowly,
turning occasionally, for 30 to 40 minutes. Then brush pomegranate juice on turkey and continue until turkey is cooked
through (175 degrees). Remove turkey from the grill, transfer to cutting board, and let stand, loosely covered with foil,
for 15 minutes before carving. Place stuffing in oven and let warm for 10 minutes. Serve stuffing with turkey. Bring any
remaining pomegranate juice to a simmer and drizzle over turkey. Recipe courtesy of Miromar Lakes Culinary Team.

that are related to crabs, shrimps, lobsters, and hermit crabs. Crayfish are
