A FEW WORDS ABOUT THE HOSTS
Jean-Louis Bottigliero graduated from the Ecole Hôtelière
de Nice. In 1988 this 24 year old native of Marseille took
control of the Château de Gilly and became one of the
youngest Hotel General Managers in France.
His 8 year experience as a manager gave him the
opportunity to take a very active role in the local
community (Rotary Club, Chamber of Commerce, town
council, among others). It also allowed him to fulfill the
position of regional delegate for Relais & Châteaux
Burgundy, Champagne and Alsace.
In 1996 the Concorde Hotel Group offered him a job as
Assistant General Manager of the Hôtel de Crillon in Paris
before appointing him General Manager of the Hôtel
Martinez in Cannes. He became Chief Executive of the
Relais & Châteaux International chain in 2001.
Susanne Bottigliero, who was born in Berlin, moved up in sales management at Concorde
Hotels before becoming Sales Director at the Hôtel Ambassador in Paris.
Then she worked in the Chanel perfume and cosmetic department as an export delegate
in charge of sales development in Eastern Europe. She is trilingual and has good
interpersonal skills as well as an amazing ability to communicate enthusiasm.
It had been a long dream of Jean-Louis and Susanne Bottigliero to acquire their own
property and transform themselves into merchants of happiness, always considerate and
thoughtful towards their guests.
A brief history
• May 2004 : purchase Hostellerie recovery Levernois ***** to Jean Crotet
• May 2006 : creation of Bistrot du Waterfront Restaurant, located in the former kitchen of
the main building at the Hostellerie 18th century
• December 2006 : resumption of the Park Hotel with transformation of a building (the
Meix Wisteria) into additional bedrooms for Hostellerie de Levernois and commissioning
function of these rooms in September 2007
• May 2008 : renovation of the second part of the wing to become the Parc de
l'Hostellerie **
• May 2010 : creation of the BOUTIK to sell items related to food and greet customers in a
tasting room

This lovely bourgeois house, in complete harmony with nature, is composed of 26 bright rooms (4
of them apartments) distributed in 3 different buildings, in a park of more than 5 hectares.

DISCOVERING BURGUNDY
On the doorstep of Beaune and in the heart of the vineyards, the Hostellerie is the ideal spot to go
off to explore the charms of Burgundy.
At only 3 hours from Paris, an hour and a half from Lyon and
2 hours from Geneva, this Relais & Châteaux is just five
minutes away from the A6 highway exit n° 24.1 and the
Beaune train station.
It is located in the heart of famous Burgundy’s vineyards
such as Gevrey Chambertin, Vougeot, Vosne Romanée,
Pommard, Meursault or Puligny-Montrachet.
This place offers peace, serenity and relaxation in a rural
setting far from city pollution. A charming river called “La
Bouzaize” runs through the park of 11 acres.
Take a moment to listen to the daily singing of the robins, whistling blackbirds or nightingales. Enjoy
a walk in the French garden and relax in the shadow of hundred-year-old trees like black walnuts,
Louisiana cedar trees and hornbeams.
Member of Relais & Châteaux since 1991, this property distinguishes itself by its atmosphere, both
chic and relaxing, where you will enjoy being pampered.
The oldest part of the building dates back to 1750 and houses some apartments and the “Bistrot
du Bord de l’Eau” among others. This bourgeois house was first converted into a hotel restaurant in
1988.
Jean-Louis and Susanne Bottigliero’s dream came true when they bought this property in spring
2004 and turned it into a charming residence combining both elegance and simplicity.

BRIGHT AND SPACIOUS ROOMS OPENING ONTO NATURE
The Hostellerie de Levernois offers 22 rooms and 4 suites.
Twelve spacious and bright rooms are situated in the Pavilion
in the middle of the park, in harmony with nature. They all
have a private terrace.
The beauty of Burgundy stones, the old parquet flooring and
the fabrics create a warm atmosphere that is also found in
the very nice bathrooms (authentic and trendy materials,
woodwork structure and appropriate lightning).
Six rooms are located in the main building. This is also where
the reception, the lounge, the fine dining restaurant and the
“Bistrot du Bord de l’Eau” are found.
The Meix des Glycines houses 8 rooms. This 18th century
building was recently acquired. The last fittings were carried
out in close collaboration with the Interior Design Company
Ecart managed by Gilles Leborgne.
The main goal of the renovations was to create a chic but
relaxing atmosphere combining tradition and modernity.
Susanne Bottigliero was the one who chose the fabrics
and furniture to give each room its own identity.
She decided to use warm shades to make the rooms
welcoming and comforting. Burgundy stones, stained ash
wood, silk velvet and subtle lightning contribute to
prolong this feeling.

PHILIPPE AUGÉ, CHEF OF THE CUISINE OF THE HOSTELLERIE DE LEVERNOIS
Philippe Augé has been the chef of the cuisine of the Hostellerie de Levernois
since 2008.
This native of Nantes studied in the south-west of France (in Toulouse then
Souillac) before starting his professional career in Monte-Carlo where he
spent 3 years from 1990 to 1993 working with Alain Ducasse as a Chef de
Partie at the Hotel de Paris.
He then was Sous Chef at the Rotonde, Casino Lyon Vert from 1993 until
2001. The property obtained its second Michelin Star in 2000. He also worked
with Philippe Gauvreau and Jacques Maximim as a consultant.
From 2001 to 2008 he was the starred Chef of the cuisine of the Relais &
Châteaux the Royal Champagne next to Epernay.
Philippe Augé likes to play with the large variety of products of the generous region of Burgundy.
He perpetrates the tradition while revisiting the great classics of Burgundy cuisine and defines his
art as a “cuisine of products” and a “cuisine of tastes, flavours and colours”.
He places regional products at the centre of his cuisine and with sincerity, spontaneity and a
certain charisma adds a touch of sun and modernity to them. He is surrounded by his Sous Chef,
Alexandre Fabris, and the Head Pastry Chef, Jean Marc Diop.
Below are some examples of the last gourmet restaurant menu:

Snails, sweet Garlic cream;
- Piece of wild Turbot Sauvage with Fallot mustard
casserole, French style green vegetables;
- Charolais piece of Beef, Preserved Shallot with
blackcurrant, Burgundy juice with bone marrow;
- Soft chocolate Biscuit, blackcurrant ice cream;
- Soufflé with Grand Marnier, blood orange sorbet.
The kitchen garden provides seasonal vegetables that make for a cuisine rich in flavours and
authenticity.

THE BAR
The bar, with its Burgundy stone flooring, ethanol fireplace, subtle lightning and contemporary
furniture, is a convivial space in perfect unison with the heart and soul of the property. A glass of
wine, a hot drink, a cocktail or a snack can be served at any time of the day.
Weather permitting you can have a drink on the terrace, in the shade of gazebos, where you will
enjoy a stunning view of the formal garden and the park and it hundred-year-old trees.
Some days, jazz musicians entertain the guests and accompany the singing of the birds of the
park.
THE GASTRONOMIC RESTAURANT : 1* STAR IN THE 2014 MICHELIN GUIDE
The restaurant is a space filled with natural light opening onto the park and its river, the
“Bouzaize”.
The dining room was decorated with bright and contemporary colors. Caroll Roughol, a local
artist, drew her inspiration from the designer tableware and the shimmering red orange fabrics to
paint her work of art.
Two private dining rooms with a view on the garden welcome you to celebrate the most
important moments of life.
The exceptional wine cellar is paying tribute to the prestigious Burgundy appelations with more
than 800 references. This was all the more natural as the property is surrounded by prestigious
villages such as Gevrey-Chambertin, Vougeot, Vosne-Romanée, Pommard, Meursault or PulignyMontrachet.

You can relax in the shade of hundred-year-old trees in the park,
enjoy a game of tennis on the court or discover our wine
tastings. Go out and play some golf. The Hostellerie is next to the
Beaune-Levernois golf course (18 holes).
Thematic and musical events are organized during the winter:

“from Jean Sébastien Bach to Gershwin”.

Located in the former kitchens of the 1750 historic building, the Bistrot is the link between past and
present.
This beautiful place, decorated with strong and soft colours and subtly illuminated, conveys a
special atmosphere. Burgundy stone flooring, French-style ceiling, teak and oak furniture are
mixed with amethyst tableware.
The Bistrot offers a lovely terrace alongside a charming river called the Bouzaize that meanders
through the park of the Hostellerie.
The Chef Philippe Augé bases his cuisine upon local fresh market produce of the season, always
with the intention of enhancing regional products.

Susanne and Jean-Louis Bottigliero wanted to
develop an original concept combining a boutique
and a tasting cellar.
Situated in one of the outbuildings dating back to
the 18th century, between the Hostellerie and the
Parc de l'Hostellerie, this innovative space is tinged
with authenticity and intimacy. Its vaulted cellar
exposed stone walls and patinated furniture will get
you into the spirit of the property, subtle mix of
tradition and modernity.
Our team patiently gathered the best products available and is glad to share
them with you.
 Local products: jam, fruit cream and mustard;
 Cooking products and items: oil, vinegar, utensils, herb tea, books on
gastronomy;
 Tableware: plates, glasses, cups;
 Wine accessories: carafes, corkscrews, maps of the vineyards, books.
Besides, wine tastings are regularly organized in the cellar. One of our sommeliers commentates
on the tasting and tackles themes all including the surrounding Burgundy vineyards.
This immersion will allow you to penetrate the mysteries
of the land of Burgundy. Geographical and geological
maps will reveal you how the Chardonnay and the
Pinot noir, two of the greatest Burgundy grape
varieties, can give such generous, elegant and
complex wines.
After the tasting you will be able to purchase some
bottles selected by our sommeliers and coming directly
from the surrounding vineyards.
