With Delta Vistalys’ advantage of a flow rate of up to
10 t/h, the grape berries are sorted by a colour camera.
The ongoing analysis of images enables the user to
grade the sorting operation with high precision,
depending on targets and initial grape quality. The user
is just as free to select exclusively healthy berries as they
are to keep crushed berries or those with a piece of stem
attached. Delta Vistalys is now used by many wineries
around the world.

The Flavy FX Tandem concept is especially suitable
for the filtration of large wine batches. Indeed, the
association of two cross-flow filters operating in parallel
but differently allows the filtration of wines for one
filter and the concentration of retentates from the first
filter, for the other. The fully automatic operations
are controlled by a central computer with data files
consultable on the Internet.

An “dynamic” trough to run presses
Organ® is a new process for running Bucher Xplus presses.
Organ® uses the “dynamic” trough as the transmitter of the necessary information to the
software to run the press.
Organ® leaves the operator free from any constraints related to a complicated
programming due to pressure, pressure keeping-up, number of tank rotations…
Operation
• The “dynamic” trough is fitted with a juice drain-off measurement system. The basic
principle of operation is based on the intermittent recording of the depth of liquid in a
measurement well.
• Leaving the slotted channels, the must is conveyed to the measurement well upstream
of the collection juice trough.
• The steady measurement of juice draining allows the good running of pressing and
draining cycles.
• Depending on the operator’s quality or production targets, the process analyses the
reaction of the crop and adjusts programming on an ongoing basis.
• Operation is automatic.
• Bucher Vaslin has studied and gained experience of grape behaviour over many years.
Organ® integrates all the physical and oenological parameters of that behaviour.

• The operator defines his needs:
. the level of desired draining on a scale of 1 to 9,
. maximum duration of pressing,
. type of grapes to be pressed,
. maximum pressure.
• The level of drain-off corresponds to the desired degree of extraction. The higher the
degree the drier the pressed pomace.
• The maximum duration of pressing is the time assigned for pressing.
• The type of grape is an indication of crop behaviour.
The operator can select one of the following 4 criteria:
. gentle pressing (e.g.: Pinot gris, Riesling, Pinot noir…)
. normal pressing (e.g.: for red grapes from the tank)
. dynamic pressing (e.g.: Chardonnay, Ugni Blanc…)
. pressing for late harvest (e.g.: for liquor-like white)
• The maximum required pressure is parameterizable up to 2 bars.
Applications
• Once the targets are set, Organ® operates automatically. It detects the presence of
free juice, triggers the draining phase, determines the pressing phases (pressure buildup, pressure hold, decompression) and orders a stop to pressing.
• Organ® is suitable for any variety of vine.

graduate sorting depending on his objectives and the
initial quality of grapes. The operator can either choose to
preserve exclusively whole and healthy berries or to preserve

Organ® is a new process for running Bucher XPlus presses from 22 to 80 hl, which is mainly
dedicated to small wineries.
The process is very simple as it uses the trough of the press: discontinuous recordings of
juice drain-off are made through the “dynamic trough” and then transmitted to the software
for the running of draining and pressing cycles.

Cross-flow filtration
for lees and wines
The original idea consists in the double use of one
cross-flow filter within the Bucher Flavy range
to filter all year round:
• wines on one hand,
• lees during harvest on the other hand.
The filter is then equipped with additional
accessories, among which a pre-filter with a Flavy D3
rotating drum in order to eliminate large particles
and organic membranes that allow the filtration of
heavy-loaded products.
The Flavy FX solution is perfectly suitable for small
and large wineries as it allows:
• to get the benefice of a simple, automatic
solution, mobilizing very few labour work during
harvest,
•to optimize the organization of the winery during
harvest,
•to contribute to the respect of the environment
(no input to manage, no treatment of used
diatomeous earth - DE).

Une maie active pour piloter les pressoirs en caves particulières Organ®
Le pressurage est une étape clé de la vinification, décisive et souvent difficile à maîtriser.
La programmation des pressoirs est délicate, nécessite une certaine expérience et requiert
une disponibilité du responsable de cave durant les vendanges, conditions qui sont rarement
réunies.
Le pilotage des pressoirs consiste à indiquer à l’automate du pressoir le détail du cycle de
pressurage à effectuer :
•

valeur des pressions de travail successives,
durée de maintien en pression correspondant aux pressions,
nombre de rebêchages après chaque palier de pression,
durée du cycle de pressurage,
…
Ce travail nécessite une parfaite connaissance des phénomènes de pressurage de la part
du responsable de cave et demande une adaptation délicate du cycle de pressurage à la
nature de la vendange traitée, en fonction des objectifs de la cave.
Le souhait de l’utilisateur est bel et bien que son pressoir travaille en fonction d’objectifs de
résultats qu’ils s’est fixés, sachant que ces objectifs n’ont rien à voir avec la programmation
de paramètres très techniques du cycle de pressurage (pression, rebêchage, mesure du
débit, …).
Depuis tout temps l’utilisateur rêve d’indiquer directement au pressoir :
•
Le rendement en jus qu’il doit obtenir (pour des raisons qualitatives et
économiques). Ce rendement peut être exprimé par le « taux d’extraction » ou
« l’assèchement de la vendange ». Il dépend évidemment des raisins mais aussi du type
de vin qui sera élaboré.
•
La durée maximum de pressée (égouttage, pressurage, vidage, lavage)
correspondant au temps disponible dans l’organisation du travail de la cave ce jour-là.
Cette durée est en relation étroite avec la masse totale de vendange devant être
réceptionnée par la cave, pour la journée considérée.
•
Le mode d’extraction du moût, par exemple une extraction lente
pour permettre une légère macération pelliculaire ou au contraire une
extraction rapide sans trituration pour éviter toute oxydation, en fonction du
produit final désiré.

Organ® est un nouveau principe de pilotage des pressoirs qui répond aux besoins des
caves particulières. Le principe est simple car il utilise la maie du pressoir. Les mesures
discontinues d’écoulement des jus par le biais de la maie « active » sont transmises au
logiciel pour le pilotage des cycles d’égouttage et de pressurage, et une détection précise
de l’apparition de jus pour définir le niveau d’assèchement.
Organ® analyse la réaction de la vendange et adapte sa programmation en permanence en
fonction des objectifs à atteindre fixés par l’utilisateur, comme suit :
- assèchement final requis (ou en d’autres termes « taux d’extraction des jus »),
- durée maximum de pressée (ou temps imparti pour le pressurage),
- type de vendange à presser ou le type d’extraction à mener.
Ce dernier paramètre, le type d’extraction à mener, est en relation direct avec les cépages
à presser ou les méthodes de vinification de la cave. Exemples :

type d’extraction doux : pour Pinot gris, Riesling, Pinot noir, par exemple,
type d’extraction normal : pour Rouge cuvé, …
type d’extraction dynamique : pour Chardonnay, Ugni Blanc, …
type d’extraction pour vendange tardive : pour Blanc liquoreux, …
La solution Bucher Vaslin permet ainsi aux caves particulières de bénéficier d’une
auto-programmation qui prend en compte les besoins de production de la cave
(Assèchement/Durée/Caractérisation de la vendange) et libère ainsi le vinificateur de toutes
contraintes de programmation complexe :
- fini la programmation des pressions, des vitesses, des rebêchages, des durées de palier,
des séquences, de la durée totale, …
- fini les surprises concernant l’assèchement incorrect, fini la perplexité devant des résultats
dont on ne maîtrise pas les causes…
