Pork chops with sage, honey and apricots
METHOD
Jamie Oliver’s pukka pork
recipe uses honeyed apricots
and sage to create a delicious
accompaniment for his roast
pork chops with crackling.
Serves 2.
1) Preheat the oven to 220C/200C fan/gas 7.
2) Place the pork chops on a board and
season both sides with salt and pepper. On
one side of each chop, press a couple of sage
leaves into the meat.
3) Heat a frying pan over a high heat and add
a generous dash of olive oil. Place the chops,

a low heat until you have a sticky sauce.
8) Take the crackling out of the oven. Put the
asparagus in a bowl with the lemon juice, a
pinch of salt and pepper and a drizzle of extra
virgin olive oil, and toss together.
9) Serve the chops and asparagus with
a spoonful of apricot sauce and a bit of
crackling. Perfect with mashed potatoes.
