Pork chops with sage, honey and apricots METHOD Jamie Oliver’s pukka pork recipe uses honeyed apricots and sage to create a delicious accompaniment for his roast pork chops with crackling. Serves 2. 1) Preheat the oven to 220C/200C fan/gas 7. 2) Place the pork chops on a board and season both sides with salt and pepper. On one side of each chop, press a couple of sage leaves into the meat. 3) Heat a frying pan over a high heat and add a generous dash of olive oil. Place the chops, INGREDIENTS sage side down, into the pan, then reduce to a medium heat and cook for a couple of 2 good-quality pork chops minutes on each side. Sea salt and freshly ground 4) Transfer the chops to a small baking tray black pepper and pop in the oven for 6-8 minutes, until cooked through.
