Fresh Favorites
When it comes to German cuisine, it was love at first bite for Klaus Lotter. Growing
up surrounded by Chicago’s rich culinary tradition while enjoying his grandmother’s
Northeastern German dishes at home, it was only a matter of time before Klaus realized
what he was born to do.

Two years of intensive training at the New England Culinary Institute in Montpelier, Vermont
and an internship under renowned Chef Paul Bartolotta at Chicago’s Spiaggia restaurant
gave Klaus the confidence to move to Germany. After an internship at Hotel Gasthof Gallus
in Beilngries, he began working at the Four Seasons in Munich where Chef Andreas Mayer
took him under his wing. That experience proved invaluable as after two years Klaus
accepted his first sous chef job at Ristorante Aquarello in Munich — it has been going uphill
ever since. Klaus married the love of his life and they moved back to the United States
where he has been everything from sous chef at the Peninsula Hotel on the Mag mile to
the executive chef at the Hilton Indian Lakes Resort, Double Tree Hotel and Aramark at the
Morton Arboretum. When the chance to give back to the German community he grew up
loving came in the form of joining the management team at the new Hofbräuhaus Chicago,
it was too good to be true. Klaus is excited to share a piece of his past and looks forward
to a future of bringing authentic German flavors to his hometown.

MEET THE BREW MASTER
Born in Bavaria, Ben is very familiar with the revelry
of the German culture, especially when it comes to
its most beloved beverage — but it took him until his
twenties to discover his true passion for brews.
Ben first apprenticed as a brewer and maltster (one
who makes malt—germinated cereal grains that have
been dried in a process known as "malting”) before he
studied in Weihenstephan, Bavaria. After graduating as
brewmaster he worked in Chile for three years before
spending five years as the brewmaster for several of
Bavaria’s finest breweries.
Ben spent six years as technical director for startup
breweries all over the world before tapping into his
current position.
We are excited to have Ben supporting our team and
can’t wait for you to taste the experience he will bring to
every stein. Prost!

one of the coolest jobs in the world belongs to Ben
Zollenkopf. He is the technical director of international
brewing for Hofbräu München; and it is his job to pour
over 400 years of Bavarian tradition into every ounce of
our Hofbräuhaus Chicago beer. Although we can’t keep
him to ourselves forever, Hofbräuhaus Chicago has been
lucky enough to have his expertise and guidance as we
prepared to bring you the best brews in the world.

WHy is BEER Foam White?
It’s not an age-old brewer’s secret, but simple science.

Carbonation is a key factor. Carbonation
can occur naturally through fermentation,
as it does in Hofbräuhaus Chicago beers,
or it can be added to beer. When beer is in
a keg its carbonation is stable throughout.
When the sealed container is opened, the
carbonation, which is created by dissolved
carbon dioxide gas, loses its equilibrium.
The average amount of carbon dioxide gas
in the atmosphere is 0.2 percent, while the
average carbonation in beer is 98 percent.
To re-establish equilibrium between the air
and the beer, carbonation must leave the
beer. This process produces the signature
foam found on the surface of beers.
Frothy white foam is the key to the taste
and look of Hofbräuhaus Chicago beers.
The foam’s color is the product of reflected
light and the beer’s color. The bubbles that
make up foam are so numerous and small
that they reflect and scatter light rather than
absorb it. Even though an individual foam
bubble is transparent, this reflecting and
scattering of light gives the foam a white
appearance. Approximately 20 percent
of foam layer is made up of beer trapped
between individual bubbles. This trapped
beer, if light in color, will not affect the
appearance of white foam. However, if the
trapped beer is a dark beer, then the foam
will take on a cream to tan coloration.

The INSIDE SCOOP
Before it was a bustling beer hall, Hofbräuhaus was a quaint
brewery and tap room in Munich, Germany. It still boasted
the long tables and stein-wielding patrons, but it wasn’t
until right before the 300th anniversary that the brewery
was removed to make more room for guests to enjoy
the authentic brews, food and entertainment.
Nearly 100 years later, replicas of the
famous beer hall can be found all over the
United States, and Chicago is proud to
be one of the places guests can revel in
Bavarian tradition.

an open-air biergarten much like the original Hofbräuhaus
