There’s something special about the fall. Maybe it’s knowing that
after all the hustle and bustle of summer vacations life gets back into
routine? Maybe it’s the change in the weather that goes from
unbearably hot and humid here in Louisiana to having some nice
cooler days. Whatever it is, it’s undoubtedly one of my most favorite
times of the year. I love the spicy smell that you’ll find in the air,
and the excitement of kids as they head back to school.

season means something different to everyone- whether that means
cheering on your hometown football team from the high school
stadium, gathering with friends at home to watch the game and cook
out, or heading out of town to catch the game live, this is the time
when fans come together to cheer their team on.
If you have ever been to a live game, you have most likely tailgated.
My husband and I attended an NFL game in Buffalo while we lived
in New York. It was my first tailgate experience. There were tons of
people just hanging out and having a good time before and after the
game. Everyone had a common goal- for his or her team to win, and
the camaraderie was amazing. Everyone there felt like one big
happy family! It was a feeling similar to that we army spouses have
with one another.

Living the Lagniappe Life

I'm not sure if there is anything better than the sights, sounds and
smells (yes~ dirty, smelly boys are a part of it, but the fresh cut
grass, popcorn & frito pies is really more of what I'm talking
about) of FOOTBALL!! It's in my blood. I was named after a
football player and it all went downhill from there. I even lettered
in football my Senior year of high school as the head trainer &
manager of both the Varsity & Jr Varsity football teams at my 5A
school in Texas. And today, for my family it's local high school
football on Fridays, college football (HOOK'EM) all day on
Saturdays & professional football on Sundays!

Instructions:
Peaches and Cream Tart
1. Chill a medium mixing bowl and the beaters of an electric mixer.
Meanwhile, for crust, in a bowl site together cookie crumbs, pecans and butter. Press mixture onto bottom and up sides of a 10-to
11-inch tart pan with a removable bottom or into a 12-inch pizza
pan. Bake in a 350 degree oven until golden, allowing 15-18
minutes for tart pan and 12-15 minutes for pizza pan. Cool on a
wire rack.
Prep: 25min
Bake: 15 min
Oven: 350 degrees
Chill: 2 hours
2. For filling, in the chilled bowl beat whipping cream with a mixer
on medium speed until soft peaks form; set aside.
Makes: 10-12 servings
388 calories, 27 g total fat
3. In a small mixing bowl beat cream cheese and sugar with an
electric mixer on medium speed until fluffy. Add rum, vanilla and
almond extract; beat until smooth. Gently fold in whipped cream.
Spoon mixture into cooled crust; spread evenly. Cover and chill for
2-4 hours.
Ingredients:
9 soft coconut macaroon cookies crumbled (2 cups) - (I used the
coconut cocadas at the commissary)
4. Before serving, toss peach slices with lemon juice. Arrange
peaches and raspberries on filling.
1 cup (4oz) ground pecans*
3 tablespoons butter or margarine, softened
5. For glaze, in small sauce pan combine preserves and honey;
heat and stir just until melted. Snip any large pieces of fruit in the
glaze. Strain flame if desired. Carefully brush or spoon the glare
over fruit.
1/2 cup whipping cream
1 8-ounce package cream cheese, softened
1/3 cup sugar
6. To serve, remove side of tart pan. Transfer tart to serving platter
and cut into wedges.
2 teaspoons dark rum or orange juice
* Note: to grind pecans, process or blend the nuts, 1/2 cups at a
time in a food processor or blender
until very finely chopped. Be careful not to over-process or the nuts
will form a paste
1 teaspoon vanilla
1/4 teaspoon almond extract
2-4 medium peaches, peeled, pitted and thinly sliced (1.5 to 3
cups)
Enjoy!!

Happy September! We’re very excited about our first luncheon this month!
As another September rolls around, it brings with it my favorite time of year,
FOOTBALL SEASON! Although football is the most popular sport in our country,
it’s especially huge here in the Louisiana and the rest of the South.
From the LSU Bayou Bengals, to the New Orleans Saints, and several smaller
college football teams, Louisiana boasts an impressive amount of places to
watch a game. Leesville High School Wampus Cats are, very often, playoff
contenders, so get out around the “Friday Night Lights” and watch some local
football!
Our theme this month is going to be FOOTBALL! Wear your favorite team colors,
be they college or pro, and receive an extra Opportunity Ticket. We’ll provide a
little Lagniappe, and lots of fun!
I can’t wait to see all of our returning and new members! Please come up and
say hi! I’ll be wearing the orange and blue of my Auburn Tigers. WAR EAGLE,
and see you soon!

CALLING ALL FPSC MEMBERS
The LAMA (Leesville Area Ministerial Alliance) Food Pantry needs
your help! This ministry helps Vernon Perish families stretch their
food budget. You may volunteer on Wednesdays from 9:00-1:30. If
interested, please contact the First United Methodist Leesville
Church office at 337-239-3828. You may also bring food
donations to the next luncheon for an extra opportunity
ticket. Any help would be greatly appreciated. The most pressing
needs this month are: canned meat, breakfast foods, soup, peanut
butter and jelly, pasta and pasta sauce, and rice. We will also be
serving the Leesville community dinner later this year. If interested

Fort Polk Spouses’ Club has created social media accounts
to provide up to date information on club and local events,
and to foster relationships with members, potential
members and the community. Our goal is to support one
another, so please treat each other with respect and act
professionally when you are posting to any of FPSC's social
media accounts. Please do not post any information that
would compromise OPSEC. FPSC reserves the right to
delete any post.
Here’s how we do lunch!
Our Reservations Chairperson is Carolyn Roeder! Carolyn handles all reservations, cancellations, and general
inquiries about luncheons. Please contact her at fpscreservations@gmail.com.
RESERVATIONS: Luncheon reservations can be made
by visiting our website: fortpolkspousesclub.com/
reservations You may make your reservation up to one
week before the luncheon by 6pm. If you miss the
deadline, you are welcome to place your name on a
wait list, and you will be contacted in the event of a
cancellation.
PRICES: The lunch cost of $16 covers the following: a
catered lunch with drink and dessert, an opportunity
ticket to win a drawing, entertainment and/or guest
speakers, and rental of the facility. If you reserve and
make payment online through PayPal, the cost is $15.
CANCELLATIONS: Email up to one week before the
luncheon by 6pm. If you fail to cancel your reservation
by this date and time, you will be responsible for the
luncheon cost of $15.
GUESTS: We encourage you to bring a guest, a friend
or family member, to the luncheon. A Non-club
member may attend ONE luncheon, at the cost of
$15 online PayPal payment or $16 at the door, before
paying membership fees. Please RSVP for your guest
on the website.
DIETARY CONCERNS: Please contact the reservations
chairperson with any special dietary concerns. We
provide a small number of “to go” boxes for those
who cannot stay for the entire luncheon. If you think
you may want to take any leftovers home, it is best to
bring your own container.
BABIES: Members may bring babies under six months
old to the luncheons. Due to limited space in the
sitting area, please DO NOT bring strollers into the
facility; babies in their car seats/carriers sit with their
mothers.
WALK-INS: Walk-ins are allowed on a space-available
basis. Upon arrival you will be asked to wait to ensure CHILDCARE OPTION: Childcare provided by CYSS Kids
that a lunch will be available for you.

with CYS Services - IF we get at least 10 reservations for
the event.

Fall is in The Air
C
an you smell it yet? The scents of fall; warm pumpkin, sweet cinnamon, and crisp
apples, are among us. Fall in Louisiana is the best time to cozy up with some
fantastic people and truly enjoy yourself. Be it football parties, a number of fall festivals
Louisiana offers, or bonfires, you no longer have to maintain a sweaty distance. How do
you welcome fall? I like to carve pumpkins and roast the seeds. Pumpkin seeds provide a
rich source of protein, fiber, zinc, magnesium, and omega three fatty acids. Simply boil
these nutrient packed little guys in lightly salted water, then bake in the oven for the
perfect snack on the go. They are a great balance to all the candy and festive lattes we
will likely consume this month. While the trees remain green and the weather warm during
this season in Louisiana, there is an abundance of ways to celebrate fall. For starters, we
get an extra hour in our day. However you prefer to ring in the season, you are now part
of a
diverse network ready to partake in the activities with you. Join our craft sub-club
for DIY costume and décor ideas, the girls night out sub-club to sport your sassy
scarves and boots, the garden sub-club to grow a fall bounty, as well as many more. You
may meet a few friends within the club to call upon for a coffee date. Don't deny yourself
the delightful company and delectable treats this Autumn, it's for lagniappe! ..and
swimsuit season is behind us.

Spouses’ Club clubhouse located on Traditions
Circle for any social or non-commercial activity.
The Fort Polk Spouses’ Club maintains silver, a comprehensive
inventory of china, glassware, holiday items, and other decorative
pieces appropriate for all types of social gatherings. These items may
be rented by FPSC members only for a per item charge, with a
maximum charge of $25.

raveling to Lake Charles and looking for somewhere unique to shop? The
Cottage Shops area is located on Hodges St. between Alamo and 12th
Streets and it has been officially designated as a Cultural District. You can shop
for locally crafted goods such as spices, foods, and knick knacks unique to
Louisiana. The stores are set up in old homes and offer boutique shopping with a
little lagniappe for everyone.

L
ake Charles is just over an hour south of
Fort Polk, and it is a truly fabulous
place to visit. It is a thriving destination that
caters to many tastes from glitzy casinos and
the quiet greens of award-winning golf
courses to hunting and fishing adventures
and over 75 festivals, ranging from the area’s
family friendly Mardi Gras to the
Contraband Days Pirate Festival! Performing
arts are alive in Lake Charles, LA, with
theatre and musical groups, including the
Lake Charles Symphony. There are five
diverse museums, one of which houses the
largest display of Mardi Gras costumes in the
world, in addition to charming galleries rich
with art. Taste world-famous Cajun and
Creole cuisine or a drive along the Creole
Nature Trail All-American Road—teeming
with wildlife, including alligators, birds and
three wildlife refuges! Visitors can also stroll
through the Charpentier Historic District
with lead crystal glass glittering in the
lamplight.

omantic evening? Lake Charles can provide that as well! Consider taking a
carriage ride with J&R Carriage, Lake Charles’ only full time carriage
service. You can enjoy a romantic and relaxing ride in one of their beautiful New
Orleans stule carriages pulled by a Belgian Mule. They offer several guided tours
of Historical Downtown Lake Charles with Christmas carriage rides at the Shell
Beach Christmas Light Tour as well!
A
rts and Culture? Lake Charles has a thriving arts community, complete with
exhibitions, festivals celebrating the arts, dance, music, concerts, theatre
and more. The rich cultural history makes art and creativity shines through the
entire city of Lake Charles. If you have children, be sure to check out the
Children’s Museum.

isiting for more than one day? With a few major casinos in the city, your
gambling itch will be more than satisfied. These casinos offer more than
truck-stop penny machines. For example, the L'Auberge du Lac Casino is a
26-story complex with nearly 1,000 rooms, a spa, heated swimming pools, a lazy
river, gift shops and a golf course.

xtra time but not a lot of money? Visit The Creole Nature Trail. AllAmerican Road offers up educational fun for the low cost of a tank of gas.
Journey out into the marsh on this 180-mile driving trail where you can get nose
to snout with the King of the Marsh, the American Alligator! The Wetland
Walkway and the Blue Goose Trail offer paved walking paths that allow
explorers to journey miles into the marsh and view wildlife up close, in their
natural habitat.
L
ake Charles calls itself "The Festival Capital of Louisiana." Lake Charles
hosts over 75 festivals each year, the most famous being Mardi Gras, the
second largest in the state. The annual celebration attracts revelers with Cajun
cook-offs, a children's carnival and a lighted boat parade. The city celebrates its
local heritage with "Contraband Days," a two week long party in honor of the
pirates that once sailed the local lake. The Central School Arts & Humanities
Center is a stop on the African American Heritage Trail.

assist me in making it happen. Please do not
be confused…you don’t have to just be
creative. I need help of all kinds. I could use
some help with creativity but I also need help
for set-up, tear down, assembling items,
muscle, elbow grease and any other areas I need
a helping hand. This may be the day of the
event, several days in the month before the
event, and/or a couple days leading up to the

THRIFTING WITH JEN
Hey everybody, it's Jen Pizzoferrato here! I've been asked to
contribute to The Pelican Pipeline, and in the spirit of
"lagniappe", I've agreed to participate as my way of doing a
little more this year!
I'll give a short bio and then it's time to get this show on the
road! Let's see, I'm 29 and I've been a military spouse for the
last 10yrs. I was found under a rock on a beautiful beach in
Honolulu, HI, I've lived in two different countries and have
visited at least 6 others. I love pizza, mimosas, rayon fabric,
turquoise jewelry, real leather, singing karaoke, hand knotted
rugs, cardigans and worn leather boots. I have ADHD and big, GIANT naturally curly hair (go natural or go
home!). My favorite color is teal and one of my favorite past times is NAPPING! But I have to say that
without a doubt my #1 favorite thing to do in the whole wide world is........ Drum roll please!...............
THRIFT SHOPPING!! That's right, the highlight of my month is the day I get to unleash my inner shopping
beast and buy other people's used crap! I'm getting all mouth breathy just thinking about it! "What will I
find today?!" "What will I turn it into?!" "Can I make a buck with it?!"... And many other wonderful
questions run through my head as I approach the doors of my favorite secondhand haunts! This is what
I've decided to write about in our lovely Pelican Pipeline... The art of Thrifting. Where to thrift, how to
thrift, what to thrift, why to thrift... And for the reverse, why you should donate/sell!
This month I'm going to highlight our on post thrift/consignment shop The Fort Polk Thrift Boutique
helmed by the LOVELY Dita Hammer. Previously at a location further up the road, they've recently moved
to a wonderful new spot located at 2201 Alabama Ave (right under the giant water tower!) If the colorful
art that now dons the outside of the building is any indication of what's to come on the inside... The inside
should be spectacular, and it is! Every time I've walked in there's an AWESOME vibe! Sweet tunes playing
in the background and people that seem to really enjoy their volunteer (!!!) work moving about with
smiles on their faces. This place is packed full of anything you may need... Shoes? Gotcha. Clothes..
Women's/men's/children's? YEP! Bedding, kitchen items (vintage Pyrex, heck yea!), a whole room
dedicated to seasonal decorations, an awesome book collection, jewelry, ball gowns, purses, home decor...
It's all here, people! And the prices? Well, they're fantastic of course. The best part? The funds raised by
your donations and consignments are used HERE at Polk for emergencies, educational funding and
charitable contributions.
Want to make some cash and get rid of some crap? Consigning at the
Fort Polk Thrift Boutique is super easy. Let them do the work of
selling for you! Bring in your items on Thursdays (allowed up to 5
clothing items of the current weather season and 5 random items)
Consignments are split 70% to you and 30% to the shop. This is one
of the best consignment ratios I've seen, very very fair! Come check
them out!

I picked up these AWESOME Pottery Barn feather
pillows for $10 at our lovely featured shop! These
pillows can run anywhere from $30-$50 a piece
depending on the season. Score! A couple of them I'll
leave as pillows and the others I'll turn into tote bags
by attaching leather handles and adding an insert.

Help the FPSC recognize our behind-the-scene
Volunteers by nominating them for Volunteer of the
Month. Email the volunteer's name, email and phone

better the Club and support the Club's activities,
goals, and mission by the last calendar day of the

FPSC Sub-Clubs!
*Couponing- Ever see the show Extreme Couponers
and think, “I could so do that!” Well, here's your chance
to get together with some like-minded ladies to share
tips and deals with. We may not make the show, but we
will definitely save some money. And really, who
couldn't use a little extra cash?!
International- Ever wonder about other cultures
around the world? Join the international club and get
your answers. Learn about celebrations, traditions, and
cuisines. There are Army spouses from so many
different backgrounds, let's take advantage of that and
learn from each other!
Fitness- Have you been meaning to get into a new
fitness routine and maybe just need that little extra
push you can only get from a fellow goal setter? Come
on out and work up a sweat with the FPSC Fitness
sub-club. They will have multiple meetings every month
with times that can fit everyone's schedule. No more
excuses, come get fit!
*Freezer Meals- It's been a long day and you really
don't feel like preparing a meal. Or you have a million
errands to run and will be gone all day so you won't
have time to make a healthy dinner. Sound familiar?
Join the Freezer Meals sub-club and make weeks of
healthy and delicious meals ready to pop in the oven or
crockpot. We will meet once a month to prepare the
meals and split the grocery bill and food evenly amongst
us.
Girl's Night Out- Who doesn't need a break every now
and then? Nothing like a night out with good friends,
food, and fun! Dust off that old dress and break out
those heels, and get ready to enjoy a few hours of 'girl
time' with the FPSC Girl's Night Out group. Once a
month this group meets for a few hours at a local area
location to kick back and unwind.
Book Club- Do you love a good book? Looking for like
minded people to share your passion for reading with?
If so, join the FPSC Book Club! A group for those who
enjoy literary driven conversation and fun with others
who share in their love of reading.
Gardening- Have a green thumb or maybe you wish
you did? Join our gardening club and get your hands
dirty making the world a more beautiful place. Okay, so
maybe we can't change the whole world but at least the
Fort Polk area will be a more beautiful place.
*Holding Down the Fort- Is your spouse deployed/
deploying? Even though all Army spouses offer great
support through this tough time, sometimes you just
need to be around others in the same situation. Holding
Down the Fort sub-club will be just that outlet. Get
together and share care package ideas, countdowns, or
even just vent about how the kids are driving you nuts!
Hunt the Good Stuff- We all know it, the look people
get when you say you are going to Fort Polk. We all hear
so many negative things about this place all the time.
Come Hunt the Good Stuff with FPSC and discover a
whole new outlook on Fort Polk. Enjoy the rich culture
and opportunities unique to Louisiana. Even Fort Polk
itself has some great opportunities to have fun believe it
or not. There really are so many hidden treasures
around here, sometimes you just have to hunt them
out.
Bunco- BUNCO!!! This is the game that gets the whole
group going and there is never a dull moment! Easy to
learn, and a great way to meet a lot of new friends fast,
the FPSC Bunco Group is the ideal place for those
who enjoy a good laugh and a little competition.
*Lunch Bunch- Want to do lunch? This is the perfect
place for those who are on a mission to find the 'best in
food' that CENLA has to offer! From DeRidder to
Alexandria, the ladies of the FPSC Lunch Bunch will
come together to take the lunch scene by storm. This is
a great way to find new friends and fellowship and
still be home before the kiddos get out of school!
Craft- So, you think you're pretty crafty? The FPSC
Craft Group is the place for crafty folks to come
together to share ideas, projects, supplies, and so much
more! Not crafty, but wish you were? This is the perfect
opportunity for you to learn all of the tricks of the trade.
New crafts each month and plenty of fun and
fellowship!

Here in the South, tailgating has taken on a whole
new meaning.
A tailgate includes a tent with your teams colors and
logo of course, a large grill or smoker, table clothed
covered tables (again with the team colors), football
themed décor, corn hole boards, some sort of food
theme, and a specialty drinks to go along with your
standard beer.
W
hat do you get when you add the words fall,
football, food, friends, and maybe a few drinks
together? That’s right, you get tailgating.
Tailgate is officially defined as, “to host or attend a
social gathering at which an informal meal is served
from the back of a parked vehicle, typically in the
parking lot of a sports stadium.” I remember when a
good tailgate consisted of some hotdogs cooked on a
travel grill, some cheap beer, and a football.
And what would one wear to this tailgate? How about
your team t-shirt or jersey and a pair of shorts or
jeans? Oh no, that just will not do here in the South.
Ladies you better break out your cutest school colored
dress and wear that with some boots and jewelry. For
gentlemen, shorts are allowed, but only with a button
down shirt and team logo tie. If children are present,
they must be adorned with clothing “smocked” with
their team’s mascot or name. Don’t know what
“smocking” is, well then you aren’t a true southerner.
Southern tailgate traditions aside, tailgating leads to
a wonderfully fun day full of fun, food, friends, and
football. So who are you rooting for??

The Editor’s Corner

Fall is my favorite season.
I am a sucker for leggings and boots with a nice chunky sweater. There is just something magical about the changing colors, crunchy leaves, crisp air. pumpkin spice
everything and most importantly FOOTBALL SEASON starts (ROLL TIDE)! There isn’t a year that I can remember where I have not l ooked forward to fall arriving,
and this year is no different. I am craving my leggings, tall boots, pumpkin spice and the beauty that nature always provides . I am also ready for some football parties,
tailgating food and cheering for my Alabama Crimson Tide!
When we requested to move to Fort Polk (yes, we requested to move here), I had no idea how wonderful it would be to actually have four seasons. Not all states provide that to you, so it is truly a blessing to have that here at Fort Polk! I think that Louisiana has made me appreciate and love fall even more than I did before. I have
not been let down once by Fall in Louisiana...it is just fabulous. The weather cools down to near perfection, outdoor activities become more bearable (hallelujah), the
beauty of the greens changing to gold, orange and red is stunning... and FOOTBALL season starts (the football culture here is fantastic)! We have found activities that
range from date nights to family adventures and then some. From hunting and fishing to fairs and festivals, live music and pa rades to tours and staycations, memories
are just waiting to be made!
This September offers a series of festivals that I would like to highlight, because you cannot live in Louisiana and not attend at least one festival! There is the Meat Pie
Festival in Natchitoches, the Horror Film Festival in New Orleans and the Louisiana Hot Air Balloon Championship Festival in Gonzales to name a few!
I hope that you can find the time to enjoy one of the amazing festivals, watch some football and enjoy the rich culture here !
