I met Laura Lander, from Laura Lander Massage, at one of the networking events at the TCC Club...I think it was back in September or October 2012...not 100% sure. For the last 13 years, I had been very dedicated to another massage therapist. However, my long-time masseuse recently relocated out of the area, and so I needed to find someone new. Finding a massage therapist is a big deal, at least to me, as it is really important that they understand their vocation well and have some life experience behind them so as to understand the needs of their clients. We are the Lange family: Tim, Nhien, Emily (10), and Charlie (8). We have lived in Triple Crown for eight years and have grown strong roots with the community. Tim is from the Northern KY area and I grew up in Louisville, KY. We both graduated from the University of Louisville (U of L) with a Master of Engineering w/ specialization in Math and Computer Science. The city of Louisville holds a very special place in our hearts as it is my hometown and where Tim and I met. In fall of 1998, we married and started our lives together in Independence, KY. At that time we both worked for Procter and Gamble in the information technology (IT) department located in Cincinnati, OH. During our first few years of marriage, we enjoyed traveling to various beaches, University of Louisville games, and Australia. After living in Independence for five years, we decided to move to Triple Crown and couldn’t be happier with the community and our home. Since moving into our custom-built home in late 2004, we’ve had our basement finished and taken on various landscaping projects such as adding patios and landscape beds. I love to work in my garden, so you may see me tending to my flower beds and pots. In fact, my neighbors affectionately call me the “Midnight Potter” because of my passion for gardening – day or night! And speaking of neighbors, truly, it takes a village to raise a child and thankfully we have an awesome “village” of neighbors who support each other in so many ways, big and small. We feel extremely blessed to have Emily and Charlie in our lives. Our daughter, Emily, is a sweet, creative, and caring fifth grader at Shirley Mann Elementary. Whether Emily is playing her violin, hip-hop dancing, or just hanging out with her friends, she is always smiling and having fun. Charlie, our fun-loving, sweet, and charming second grader, always has a positive attitude and gives 110% to everything he does. Charlie recently received his blue belt in karate and loves all things baseball. He also enjoys activities outside with his buddies such as basketball, football and tag. Tim has been at HP for 10 years and is currently an account delivery manager leading multiple teams that provide IT services to Procter and Gamble. Tim enjoys golfing, playing soccer and cycling. I recently left Procter and Gamble after 15-plus years and am very excited to start my own website business called langeDIGITAL. I stay active by running, going to Zum- Emily rehearsing her violin piece for her uncle's wedding, 2011 ba classes, volunteering at the Children’s Home of Northern KY as a member of the Junior Board, and tutoring math at the Learning Curve Tutoring Center. As a family, we love to go camping as it provides a wonderful getaway from the day-to-day grind and quality family time together. We enjoy taking our pop-up camper to various campgrounds such as Big Bone State Park, Camp Rudolph in Santa Claus, IN, and the Horse Park in Lexington, KY. We also enjoy travelling to the beach, where we spend many summer vacations in Myrtle Beach, SC. We are huge U of L sports fans and cheer them on every opportunity we have. If you see us out and about at the pool, working in our yard or taking family walks in the neighborhood, stop and say “hi,” we would love to get to know you! The TCHOA has teamed with a contractor to put in a new kids play area and refurbish the basketball courts. We anticipate that the residents and their families will be able to enjoy these new amenities late spring or early summer. Discussions regarding the tennis courts and a new shelter continue. These amenities are costly. One or both may be pushed into next year or beyond. Corporate and/or private donations would help immensely and could be designated for the shelter, tennis courts, or naming rights to the park. However, I was lucky: my grandfather managed a horse farm, LookOut Stud Farm in Ft. Mitchell, KY. So I could visit every weekend and get my horse fix. This continued until I graduated high school, started working and got married. Unfortunately, the marriage did not work out. I spent the next thirty-plus years working in corporate America. And what better time to talk about injury prevention and safety? Bike safety: The CDC estimates that 44.3 million children and adolescents ride bicycles, yet only 25 percent of children between the ages of 5 and 14 always wear a helmet. Bicycle helmets can reduce the risk of a head injury by 85 percent and brain injury by 88 percent. Bicycles are responsible for more injuries to children than any other product besides the Triple Crown Life May car, according to the National SAFE KIDS Campaign. The rate of bicycle-related injuries in highest for children between the ages of 5 and 15. So what's the moral of the story? Start “mandatory” helmet use early, so it becomes second nature, just like seatbelt use. Also, make sure appropriate footwear is worn. Last year, I pulled a 2 year old from the Triple Crown pool after he jumped into water over his head. Where were the parents? On the other side of the pool, talking to friends. Lifeguards are a safety net, but can't possibly keep an eye on everyone. And for those that swim in ponds/lakes/rivers/oceans - always heed the warnings, and know your surroundings. Limit talking on the phone while driving to urgent matters. Children less than 12 years need to ride in the back. Children under 9 need to be in a booster seat. Toddlers less than 2 years need to be rear facing. STOP AT STOP SIGNS! Have a wonderful and safe summer everyone! 29 kids kids Boating safety: The Coast Guard requires that children under Sun safety: The best time to apply sunscreen is about 30 minutes prior to exposure, so apply before you leave your house. Re-apply frequently - every two hours. Sunscreen should be used anytime one is going to be outside for more than 20 minutes, even if it is a cloudy day. Infants less than 6 months of age should be kept in the shade as much as possible. A minimum SPF of 15 is recommended, and there isn't a significant difference between 30 and higher. Look for one that protects against UVA and UVB rays. For those with sensitive skin, I have found the Blue Lizard brand to work well. Don't forget to protect the eyes, sunglasses are recommended for all ages. Also, look to your younger children for cues that they are “done with the sun.” They don't share the same “sun worshipping” culture that some adults do, and can become overheated more easily. Understanding personal finance is crucial to this country’s success, and it will affect every student throughout his or her life. It’s time we made personal finance a part of our core curriculum. How bad is the problem? In the news, you constantly hear about how awful the savings rate of the average American is or how the youth of this country have serious financial problems. Here are some alarming statistics: • America’s personal savings rate fell to 4 percent in May 2012.i • One-third of working Americans have less than $1,000 saved; 60 percent have less than $25,000.ii • Two out of three college graduates owe $24,000 or more in student loans.iii • Credit card debt for 25- to 34-year-olds has increased 81 percent during the last two decades.3 Finding a solution The problem in America is education. Personal finance is simply not being taught at home or in our school systems. In fact, according to the Council for Economic Education, only 13 states require a personal finance course be taken in order to graduate high school. The back swing coil is further enhanced by the left foot, which should remain firmly on the Director of Golf, ground. Caring for some of the finest home and brands in the area since 1999 38 NeighborhoodNews Resident Recipe Triple Crown Life May May Triple Crown Life Grilled Peachy-Keen Salsa Banana Pudding Poke Cake Pork tenderloin is nearly as lean as skinless chicken breast, and it grills up beautifully. This simple spice rub gives it loads of flavor without the calories or wait time of a marinade. The peachy sweet-tart juicy balance makes for a delightful salsa that pairs perfectly with the pork. Grill the peaches first to give them gorgeous grill marks and deepen their flavor. (Also, there really aren’t that many ingredients. Use FRESH-you will be so glad you did!) • • • • • 1 tsp. ancho chili powder ½ tsp. ground cumin ¼ tsp. each: garlic powder and salt Pinch of cayenne pepper 1 pork tenderloin (about 1 ¼ lbs.) Directions: In a small bowl, combine all the dry ingredients and then rub the mixture all over the tenderloin. Allow it to then come to room temperature. Preheat a grill over medium-high heat. Oil the grill’s surface. Grill tenderloin, turning once or twice. Until a meat thermometer inserted into the thickest part reads 155 degrees. Probably will take about 20 minutes. Remove from heat and let rest five minutes before slicing into half-inch thick slices. Serves about four, with my Grilled Peachy-Keen Salsa. Salud! • • • • • • 2 firm, ripe peaches or nectarines ½ small red onion, finely diced 1/3 C fresh, chopped cilantro leaves 1 tsp. diced jalapeno (OK, I use the kind in the jar, because the real deal makes me nervous) 2 tbsp. fresh lime juice ¼ tsp. each salt and ground black pepper Directions: Preheat a grill over medium-high heat, and oil the surface. Cut each peach in half and remove the pit. Place the peach halves cut side down and cook until softened slightly and grill marks are formed, about three minutes. Allow to cool for five minutes, and then chop. In a medium bowl, mix the rest of the ingredients, and set aside to room temperature. Fold in the peaches right before serving as a salsa with the pork. About four servings. SnickerDoodle Poppers • • • • • 39 ...continued Chili-Rubbed Grilled Pork Tenderloin • • • • • NeighborhoodNews 1 can of Pillsbury Grands Flaky Layers biscuits 1 box of instant vanilla pudding 1 ½C of cinnamon sugar Oil for frying A flavor injector (usually found by the marinades and BBQ sauces) Directions: Unroll the biscuits and cut them into fourths. Roll each piece into a ball. Prepare the instant vanilla pudding according to the directions and set aside…or feel free to make your own pastry cream! (***If you want to make these for the Derby, simply substitute a ¼ C bourbon and a dash or two of crème de menthe into the total liquid amount called for on the back of the pudding box. Roll in raw or light brown sugar instead of cinnamon sugar.) In a medium pot heat up about two inches of canola oil. Place about four balls at a time into the hot (350 degrees) oil and fry until both sides are evenly golden. Straight from the oil, coat the hot poppers in the cinnamon sugar…and coat them goood! Carefully inject each popper with some of the vanilla pudding. Pile up a gorgeous SnickerDoodle mountain of them, and enjoy! Makes 32 pops. 1 (10 oz.) box yellow cake mix with ingredients needed, as per back of cake box (eggs, oil & water) 2 (3.4 oz.) packages instant banana pudding 4 cups milk 1 (8 oz.) tub frozen whipped topping, thawed 20 vanilla wafers, chunkily crushed Directions: Pour pudding over cake, taking care to get it into the holes as much as possible. Spread it all out and - using the back of the spoon - gently push pudding down into the holes. Put the pudding cake into the fridge to set and cool. Prepare cake mix according to package directions for a 9x13 cake. Once your cake has completely cooled, spread on whipped topping. Once cake comes out of the oven, allow it to cool for just a couple of minutes. If you haven't done so already, crush your vanilla wafers. (I just place mine in a zip-seal bag and crush them with a rolling pin. Leave some of the pieces big. It's nice to have a bit of a crunch when you eat the cake.) Then, with a wooden spoon handle or some other similarlysized object, begin poking holes in the cake. You want the holes to be fairly big so that the pudding has plenty of room to get down in there. In a bowl, whisk together instant pudding with four cups milk. Stir until all the lumps are gone. Let the pudding sit for just about four minutes, so it has just slightly begun to thicken but not fully set; it should still be easily pourable. Spread crushed wafers onto the top of the cake. You can do this part immediately before serving the cake if you like. This will ensure the wafers are crunchy when you serve it. I think this cake gets more delicious over time. To me, it's even better the next day so it's a great dessert to make ahead of time. Serve with freshly sliced bananas. Keep refrigerated.
