Ning is the restaurant brand of Europe’s leading Malaysian
chef Norman Musa. Together we are passionate about
Malaysia & especially Malaysian food.
We pioneered Malaysian cookery classes in our Manchester
restaurant since 2007 and in 2009 published our best-selling book,
Malaysian Food, which is now in its third edition. In 2010 Chef
Norman, Ning’s co-founder, became the first Malaysian chef to tour
with a Formula One team and in 2011 and 2012 promoted Malaysian
food around the UK & Ireland at over 50 food festivals and shows,
with the support of the Malaysian government. His relentless efforts
to popularise Malaysian cuisine have been rewarded by his award of Young Asian & Oriental Chef of the Year
in 2012, entering into the Hospitality Guild’s Young Hall of Fame.
Today, Chef Norman continues to cook and teach in his restaurants, has launched his own range of Malaysian
food products and is planning a move into the London restaurant scene. He and co-founder Andy Spracklen,
who has travelled extensively around Malaysia and edited the Ning cookbook, are sought-after experts in
Malaysian cuisine, educating the food and hospitality industry about it, including leading UK supermarkets.

down from Asia, which borders Thailand and Singapore. The South China Sea separates the mainland from
the less populated East Malaysian (Malaysian Borneo) provinces of Sabah and Sarawak.
It is the Peninsula that seems to attract the most visitors, probably because of the diversity it offers in the way
of people, activities and climates. The highland regions offer cool relief from the clinging humidity of the
mainland, while Langkawi is a popular choice for sand and surf enthusiasts. The east coast, particularly the
northern Kelantan province, offers the chance for an interesting cultural exploration of traditional Malay life.
The west coast is favoured for historical interest, and is where Malaysia’s capital city, Kuala Lumpur is to be
found, the icon of Asian prosperity and the meeting point for expats and young Malaysian urbanites who enjoy
the energy of urbanity. The city is a powerful mesh of tradition and technology, vying for equal status.
It is the West Coast that we will be concentrating on for the Ning culinary tour, both by way of its culinary
heritage, varietyease within the time available. Featuring Kuala Lumpur, Malacca and Penang – and great
locations in between – the tour will embrace the full diversity of Malaysia and its amazing cuisine. Taking you
on a culinary journey from the birthplace of Malaysian cuisine, in Malacca, to the British colonial days in

Itinerary Details.
Day 1: Departure
You will depart London Heathrow on your direct flight to Kuala Lumpur with Malaysia Airlines and your cohost Andy Spracklen. Please enquire for details of regional airport connections.
Day 2: Arrive Kuala Lumpur (D)
You will arrive at the award-winning Kuala Lumpur International Airport (KLIA) around breakfast time.
Once through immigration and customs, we will all rendezvous and be chauffeured to our city centre hotel,
Traders, where we have arranged for an early check-in to your room. Traders Hotel offers a stylish and
luxurious introduction to your stay in Malaysia with views of the famous Twin Towers.
You will have the opportunity to rest, refresh, acclimatise, make use of the hotel’s facilities or explore the local
area for the remainder of the morning.
We will all meet over lunch locally for introductions and briefing, before Andy will lead a guided walking and
public transit tour of some of the local sights and heritage. Aside from its food, Malaysia is famous for its
diversity and so Andy will be showing you some key sights for the rest of the day that demonstrate the multicultural life of Kuala Lumpur (KL) including places of worship and Chinatown.
If you prefer, you are welcome to do your own thing in the afternoon.

The poolside bar, with amazing views of the illuminated Twin Towers, was named ‘Best Malaysian Bar’ by
Malaysia Tatler magazine. We will have a chance to relax and get to know each other.
From there we will head to Rebung restaurant for our evening meal.
Restoran Rebung incorporates vivid colour combinations and contrasts,
contemporary furniture and a collection of traditional Malay household
utensils and accessories. The aptly decorated establishment is owned by
flamboyant celebrity Chef Ismail and his business partner, Sheikh
Muszaphar, the first Malaysian astronaut.
The menu features a wide range of authentic Malay dishes and true to its
name, Rebung dishes are always available every day at the restaurant.
Chef Ismail is known to Chef Norman and we hope that the fabulous, larger-than-life chef-restaurateur will
join us for part of the meal to tell you more about the banquet he will lay on for us.
You will be able to return to the hotel for your overnight stay, or to make the most of the local night life!
Day 3: Kuala Lumpur (B)
You will enjoy a fantastic banquet of Malaysian and Western breakfast delights in the hotel in the morning.
Hotel breakfasts in Malaysia are always a sight and taste to behold, filling you up the day – well, let’s make
that just the morning!
You will then experience a packed day of the sights, sounds and smells of this bustling city full of contrasts.
Our driver will take us to the famous Chow Kit wet market in the morning, where the never-ending cavernous
rows of stalls selling fresh produce of lots of exciting variety will give you a full and ‘rustic’ introduction to
many of the ingredients that go into Malaysian food. There will be plenty of photo opportunities here and Chef
Norman will be on hand to assist in explaining how the exotic fruit, vegetables, herbs, spices, seafood and
meats are used.
After filling up for lunch, we will spend a more civilised afternoon absorbing some of the culture and crafts of
Malaysia at the highly recommended Islamic Arts Museum and National Mosque, and a visit to a traditional
Malay House, before retiring to the hotel early evening for a spot of relaxation or shopping.
Shortly after dusk we will head off on an evening food adventure of the city’s night markets and best hawker
stalls.
Day 4: Malacca (B/L)
Today you will be driven overland by mini-coach from Kuala Lumpur to Malacca, in many respects the cradle
of Malaysian food. En-route you will stop to enjoy a wonderful organic lunch (leave plenty of room!) with
Aunty Aini at her popular Garden Café in the small town of Nilai. Serving excellent traditional Malaysian
food, using many ingredients from the local market and her own herb garden, the detour is well worth it.
Aunty Aini featured in Gordon Ramsay’s Great Escape TV series, infamously talking about her Clittoria plant
from which the dye for blue rice is derived.

Your Hotel: The Majestic, Malacca
The Majestic Malacca is an integral part of Malacca's colourful history. The hotel was originally a serene mansion built in
the 1920’s. Today, a new building has been created that mirrors the original architecture, housing 54 spacious rooms
and suites.The design integrates the old with modern, ensuring that the total experience of guests is one that is culturally
and historically authentic while including the pleasures of modern conveniences.The original porcelain flooring,
teakwood fittings, intricate artwork, antiques and finely crafted Nyonya cuisine echo the cultural and historical aspect of
Malacca, enabling guests to experience as much of it as possible in a hotel.
On arrival in Malacca, we will head out for an afternoon/early evening stroll around the walkable, historic city
– with plenty of interesting shops and heritage photo opportunities – and a chance to spot a great restaurant
for your evening meal. No doubt, Chef Norman will also want to introduce you to famous Cendol dessert for a
pick-me-up.
With rich history and beautiful architecture influenced by the Portuguese and British, Malacca is famous for
its Nyonya and Portuguese communities and their cuisine.
Peranakan or Nyonya cuisine combines Chinese, Malay and other influences into a unique blend. Peranakans
are descendants of early Chinese migrants who settled in Penang, Malacca, Indonesia and Singapore and
married local Malays.
Nyonya cooking is the result of blending Chinese ingredients with spices and cooking techniques used by the
Malay/Indonesian community. This gives rise to Peranakan interpretations of Malay/Indonesian food that is
similarly tangy, aromatic, spicy and herbal. Key ingredients include coconut milk, galangal, candlenuts, laksa
leaf, pandan leaves, belachan, tamarind juice, lemongrass, jicama, fragrant kaffir lime leaf, rice or egg noodles
and cincaluk - a powerfully flavored, sour and salty shrimp-based condiment that is typically mixed with lime
juice, chillies and shallots and eaten with rice, fried fish and other side dishes.
For this and tomorrow evenings, we will produce a little food trail for you to enjoy exploring at your own
leisure as you wish. You can also join Andy, your host, for a spot of live jazz at the Geographer’s Café in Jonker
Street.
Day 5: Malacca (B)
Today you will enjoy a full day exploring the city further on foot, accompanied by Chef Norman, starting
with a traditional breakfast of Roti Canai on the streets and taking in the local market, Portuguese
neighbourhood, Malay Village and historical monuments. We will meet a local guide who will join us for part
of the day and give us historic insights.
In the evening, head out for dinner, at your own account.
Day 6: Malacca / Cameron Highlands (B)
You will experience a Malaysian road trip as we take you on a journey to the north via the enchanting Cameron
Highlands heights. We take some rest stops along the way, enjoying yet more great food including from a
motorway service area, which is way better than anything you’ll experience in the UK!

Located in the state of Pahang, approximately 200
kilometres north of Kuala Lumpur, Cameron Highlands
is a beautiful holiday destination and the only place
where you can find tea plantations and strawberries in
Malaysia. At about 1,500 metres above sea level, it is
the highest area on the mainland and enjoys a cool
climate and fresh air, with temperatures ranging from
15° to 25° Celsius.
Much of the character of the highlands remains
unchanged since colonial times. It is endearingly
known to some as the 'little corner of England in Asia'. The cool climate on the picturesque plateau and its surrounding
hills and forest make this a popular retreat for jungle trekking and exploration of the many plantations and gardens.
Cameron Highlands Resort is ideal all year round.
Day 7: Cameron Highlands / Penang (B/L)
This morning you will be collected and transfer to the BOH Tea Plantation.
More than 5000ft above sea level, on the main mountain range of
Malaysia, is one of the most fertile agricultural spots in the country:
Cameron Highlands. Nicknamed 'Malaysia's Green Bowl', the
Highlands possess all the right attributes of prime cropland moderate temperatures, high altitude, abundant rainfall, long hours
of sunshine and well-drained soil.
Here you will find the BOH plantation, one of the largest plantations
in the Highlands. Enjoy a tour of the plantation followed by a cream
tea with views over the magnificent plantation.
From here, we continue our journey to Penang, the food capital of Malaysia. Enjoy a small (?!) taste of what
Penang has to offer before your bedtime at a local hawker centre.
Your Hotel: Eastern & Oriental Hotel
This famous hotel is set in the heart of historic Georgetown overlooking the Straits of Malacca. It was founded in 1885 by
the famous Sarkies brothers (who also founded ‘Raffles’ in Singapore), and by 1927, the hotel was billed as ‘the premier
hotel east of the Suez’.
Beautifully furnished in a colonial style, the hotel is the perfect reminder of bygone days.

Day 8: Penang with Chef Norman (B)
Today enjoy a grand tour of the best of the food capital hosted by Penang born and bred Chef Norman
Musa. He will take us on our an exciting journey off-the-beaten track into the rural areas of his upbringing,
taking in rice paddies, farms, village markets and hawker stalls.
The full detail of this day is being finalised, but it promises to be one of the most unique
aspects of this culinary tour, meeting real-life locals along the way. Expect to be treated
like ‘celebrities’ as most villages rarely see Western tourists!
In the evening, you are free to explore the vibrant city streets at your leisure or join your
hosts for another street food extravaganza.
Born and brought up near Butterworth, Penang, Norman Musa is the creator, co-owner and
Executive Chef of Ning Restaurant in Manchester, UK. A kampung (village) boy by upbringing,
he came to the UK in 1994 to train as a quantity surveyor at the University of Portsmouth.
It was as a student that, despite his family’s restaurant and food
stall business, he discovered that he did not know how to cook!
Being a resourceful, tenacious sort, he was soon in regular touch
with his late Mum who mentored him over the phone and when
back home in Malaysia in the art of fabulous home cooking. With
such a passion for his native food and having been mentored in his
cooking skills by his Mum, he and his friends started to dream
about running a restaurant which would showcase the wonderful
food that he grew up with. But it was not until 2003 when Norman
moved to Manchester that the dream became a reality.
Day 9: Penang (B/L)
This morning, you will rise early for a fabulous tour of the local ‘wet’ market to buy
ingredients for a special cookery class with Chef Norman and his local cookery
aficionado Nazlina; a chance to put all your new-found knowledge to delicious effect.
We will enjoy lunch of what you’ve cooked!
For the rest of the afternoon you can choose to join co-host Andy on an urban
exploration of the city, taking in the many cultures, heritage and architecture of the
city, or simply relax by the pool!
We will end our vibrant few days in Penang with a trip to one of Chef Norman’s favourite local seafood
restaurants (not included in package price).
Day 10: Kuala Lumpur (B/D)
This morning, you will transfer to Penang airport for the flight to Kuala Lumpur and on arrival, you will be
met and transferred to Traders Hotel, where we started.
Enjoy the day at leisure to explore the city at your own pace, maybe enjoy a spot of last minute shopping.
This evening, you will head out for a lavish final night dinner at Bijan Bar & Restaurant, whose owners are
friends of Norman (so expect some VIP treatment!).

We have arranged for you to have a late check-out today, so you can relax or explore KL at your leisure.
Perhaps take in some last minute shopping? You will be collected early evening for your return transfer to the
airport for your return flight back to London Heathrow, Terminal 4 with Malaysia Airlines.

Arrive London Heathrow, Terminal 4 this morning. Please ask us for onward flights to Manchester.
