Dice 6-10 rinsed heirloom tomatoes to any size you like and place in bowl (we’ll say about ½” and it should be at least 3 cups). Add fresh, rinsed basil leaves which can be chopped if desired, approx ½-¾ cup. Heirloom tomatoes at Lancaster Farmer’s Market There are at least 3 things we can all agree that we love: summer, the opportunities it brings to enjoy our outdoor living space, and food. Since grilling in your backyard is a favorite for many, we thought we would share an easy way for you to enjoy that even more. Yes, easy, that’s something we can all enjoy too. Another highlight of summer harvest is the bright colors, festive atmosphere, and wholesome, great tasting food at the local farmer’s markets. Not only are you supporting local agriculture, you just can’t beat the taste of real fresh food from the garden. If you’ve not experienced heirloom tomatoes, this is your chance to discover not only the rainbow of colors, but the different taste character unique to each one. Be sure to treat yourself to a wide color spectrum: not just red, but green, yellow, purple, white, and orange, maybe even zebra like those pictured above. While you’re there, pick up some fresh basil leaves too. Now mince 2 garlic cloves and add to mix. Also add a tablespoon of Balsamic vinegar and a tablespoon of extra virgin olive oil to the mix. Gently toss and set aside. Next, cut the loaf of Italian bread lengthwise as if you are making a sub sandwich with it. Brush or drizzle extra virgin olive oil lightly on each half and place on your grill with the oiled inside facing down. Toast it on the grill until golden brown, flip, and toast the crust to a nice golden brown. Cut the toasted bread into large croutons about 1” or so and place in large pan or bowl. Add your tomato mix over the croutons so they will begin to soak up the juice. Slice the fresh lime in half and squeeze half the fresh lime over the mix using a circular or back and forth motion. Sprinkle with course ground kosher salt and fresh cracked black pepper to taste. Toss the entire mixture and serve immediately. This recipe is very easy to make and can be prepared in about 15 minutes or so. But don’t let the ease and short list of ingredients fool you. You’ll feel like a 5 star restaurant delivery has been brought to your backyard.
