KAT’S KORNER
Can you feel it? The Holiday Season is upon us. I feel crazy for saying
that since I only feel the warmth of this tropical paradise that we
live in. But I have been to the mall and I have seen that Christmas is
already there. So, as we put away our costumes and jack-o-lanterns
and prepare for the holiday chaos, I hope you are also looking
forward to more fun with the Hui. As you read through this issue of
the Lei you might notice that we are in the beginning stages of the
Mock Dinning In planning. If you have not attended this event in
years past, please make sure you join a team this year. It is always
the highlight of the year. And in the nearer future, I am so excited
about the November luncheon as we are going on a cruise in the
Nehelani Ballroom! I hope to see you there.

2016 MOCK DINING IN
The Hui ‘O Na Wahine Presents
The 2016 Mock Dining In
On Saturday, March 12, 2016, the Hui will host its 4th Annual Spouse’s Mock Dining In conducted at the
Nehalani Club.
A Dining-In is an assemblage of the soldiers of a unit on a social basis, fostering esprit de corps and unit pride.
Normally each unit holds at least one Formal Dining-In a year. Soldiers attend this without their spouses/
significant others. As with a Dining-In, this event will be for spouses only. Think of it as a “girls night out.” So
leave your soldier at home to watch the children or make plans for a babysitter! This is a night for us to
celebrate whatever you want to celebrate and build spouse esprit de corps!
Our Mock Dining In will have the same traditions as a Dining-In to include: invocation, toasts, grog ceremony,
mistress of ceremony, a madam vice, judges etc. Be prepared for controlled chaos and fun! The sequence of
events and rules of the mess will be published in the next newsletter.
Your mission is to rally up as many of your friends, book club, FRG, or whatever group you decide to join
forces with and arrive as a team. You will decorate your table in a common theme as well as come in
costume. Let your imagination run wild! Tables will hold 10 people.
Prizes will be given for the following: Most items brought by a group for donation to the Charity of the night,
Best Table Decorations, Best Costumes, and Most Spirited. So keep your plans secret from other groups!
There will be opportunities and doorprizes throughout the evening.
Ticket sales begin on February 1st. Tickets will be available at the February Luncheon and sales will close on
March 4th. Cost is $25 for a delicious buffet dinner.
We will be forming a planning committee soon. If you are interested in helping with the fun please contact Kat

RACE FOR THE CURE
October was Breast Cancer Awareness month and the Schofield Spouses Club, known as Hui ‘O Na Wahine, accepted
the challenge. For the 3rd year in a row the Hui participated to raise funds for the Susan G Komen Organization. After
creating our team, all members were invited to participate in the 2015 Race for the Cure, which was held in Waikiki.
Eleven spouse members of the Hui committed to the race on October 18th, getting up as early as four in the morning
to drive from Schofield, Ewa Beach, and Mililani to be at Kapiolani Park in Waikiki by 6:30AM. It was great to see
hundreds of people in pink who were all in the park for the same reason, with the Hui O’Na Wahine Team right in the
middle of it all. At 7:00AM the race began and everyone finished after having a great time running or walking. But
that’s not all that the Wahines did to support the fight against breast cancer. On October 20th, the Hui held a luncheon
and Thrift Shop Fashion Show. During the luncheon the Susan G Komen Foundation was recognized as the Charity of
the month. The Hui Club members and their guests continued to show their support in the fight against breast cancer
by making even more donations. The culminating event for the Hui support to the Breast Cancer Awareness Month
was the “After Race Game Party”, a club event that was held at the Wheeler Community Center on October 29th.
Families and friends of the Hui were invited to the event where games were played and pink food and drinks were
served. Through the generous donations of the Hui members and friends, $656.00 was donated to the Susan G.
Komen Foundation.
I would like to express a personal thank you to the Hui ‘O Na Wahine race team members and all club members for
their support during Breast Cancer Awareness Month and their continued support to our community.

A Holiday Recipe from Laura Musico’s Kitchen
Pumpkin Walnut Cheesecake
Makes 12 servings:
Crust:
1 and 1/2 cups crushed vanilla wafers
(36 to 40 wafers)
1/4 cup granulated sugar
6 tablespoons butter or margarine, melted
Filling:
3, 8 ounce packages cream cheese, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
Directions
1. Preheat the oven to 350 degrees.
2. To prepare the crust: Combine the crushed vanilla wafers,
the 1/4 cup granulated sugar and the 6 tablespoons
melted butter or margarine. Press the mixture firmly into
the bottom and 2 inches up the sides of a 9 or 10 inch
springform pan. Place the springform pan into a shallow
baking pan; set aside.
3. To make the filling: In a large mixing bowl, beat the
cream cheese with an electric mixer until creamy. Add the
1/2 cup granulated sugar and the 1/2 cup brown sugar.
Beat in the pumpkin, cinnamon, nutmeg and cloves.
Add the eggs all at once and beat on low speed just until
combined. Stir in the whipping cream.
1 16 ounce can pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
4. Gently pour the cream cheese mixture on top of the crust
Bake in the 350 degree oven for 1 hour.
5. Meanwhile, to prepare the topping: In a small mixing
bowl, using a pastry blender, cut the 3 tablespoons butter
or margarine into the 1 cup brown sugar. Stir in the
walnuts.

Topping:
3 tablespoons butter or margarine
1 cup packed brown sugar
6. Carefully sprinkle the mixture evenly over the hot
cheesecake. Bake 25 minutes more. Cool on a wire rack
for 15 minutes.
7. Using a thin metal spatula, loosen the crust from sides of
the pan. Cool for 30 minutes more, then remove the sides
of the pan. Cool completely. Cover and refrigerate for at
least 4 hours before serving.

Whale Watching
We know it is only November but we
wanted to make sure that you are aware
that from December to May, you may
catch a glimpse of a majestic kohola, or
humpback whale in Oahu's southern seas. The gentle giants come to
the warm Hawaiian waters every year to breed and give birth to
new calves.
Schedule a tour or charter a boat to spot these magnificent
creatures. Treat yourself to scenic ocean views as expert guides take
you to the best spots to observe whales playfully surfacing, tail
slapping, or blowing spouts in the air. Regulations prohibit boats
from approaching within 100 yards of a whale and you should never
swim with or touch whales or any other marine mammals.
You can also spot whales from Oahu’s many beaches and from
southeastern Oahu spots like the scenic Makapu’u Lighthouse,
Hanauma Bay, and along the seaside overlooks near Leahi (Diamond
Head). Whale watching tours and cruises depart from various ports
along Oahu’s southern and western harbors.

Ingredients: 1 pound cranberries, ground
1 cup sugar
Mix and set aside
Directions: Whip 1 pint whipping cream. Slowly add 1/2 cup
sugar. Mix 1 pound bag small marshmallows
into whipped cream mixture.
Let each dish set for 2 hours then add 1 cup
crushed pineapple (drained). Mix altogether.

Babbling Bookends
Broke da Mouth Club
We are an evening group that
meets monthly on the second
Thursday at the home of a
volunteer hostess. Members bring
a snack or wine to share for an
evening of relaxation and wide
ranging discussions. Sometimes
attendees plan genres for the
month; other times it is just a
book that seems interesting.
Topics can be serious, but most
often there’s a lot of laughter as we enjoy each other’s
comments. If you are interested in reading and evening adult
conversation this is the group for you.

Wine for Wahines
It is a traveling wine club that meets
once a month for the chance to sample
different wines. Whether they are
meeting up in someone’s home or at a
bar, these ladies always have fun. But it’s
not all drinking; we are going throw a
little education your way. The goal is to
learn about wines and wine regions,
select wines that are budget friendly but
still well made, determine how to pair
wines with different types of cuisine, and learn how to grade wines.
Craft Club
Do you like to craft? Want to share your ideas and talent with other
crafters? Join the Craft club! Meet once a moth to share your favorite
craft or just to be around other creative minds.

DEADLINE: The deadline for each Hui luncheon reservation is 12:00 PM on

DID YOU KNOW?
The Kolekole hiking trail on Schofield has beautiful views of
central Oahu and the Waianae Coast. It is about a half mile
in length each way and is of medium difficulty, as it is
quite steep in places, has drop offs close to the path, and
has stairs. The trail is not stroller-friendly. The trial is open
on select dates when live-fire training is not scheduled.
