Beginning with the purchase of a 55,000-acre ranch northwest of Albuquerque in the 1960s, AMREP Southwest laid the foundation for what would become “The City of Vision,” culminating with a city that incorporated in 1981. By comparison, Santa Fe, the capital of New Mexico, was founded in 1680. In 1980, the Intel Corporation chose Rio Rancho to build one of its main fabrication facilities. Not being burdened by history, tradition or custom, Rio Rancho welcomed this high-tech giant, and the huge industrial complex that Intel built, and continually renovated over the years, which produces and exports their cutting-edge products to this day. Rio Rancho has always had its focus on the future, as evidenced by the bold creation in 2006 of a new City Center on what was just a desolate mesa in the geographic heart of the city. Anchored by a modern Rio Rancho City Hall and the state-of-the-art Santa Ana Star Center, this forward-looking development has welcomed the likes of Hewlett-Packard, Central New Mexico Community College, UNM West and the UNM Sandoval Regional Medical Center. Gazing Upon The City of Vision Since It All Began 1 Turtle Mountain Fat Squirrel Timbuctu When we opened our first restaurant in Rio Rancho back in 1999, the city had 50,000 residents yet very few dining options. The growth in population to today’s 87,000 residents has thankfully allowed the culinary landscape to expand, and our restaurant operations have expanded to follow suit. We now operate three of the most popular restaurants in the city, each providing an experience that is unmatched anywhere in Rio Rancho. Liz and Nico Ortiz, Proprietors 2 Our original restaurant, Turtle Mountain Brewing Company, has been Rio Rancho’s neighborhood brewpub since 1999, serving up the best pizzas, calzones and grinders from our wood-fired oven and hand-crafted ales and lagers from our on-premise brewhouse. It also offers a wide variety of appetizers, salads and pub favorites. Come join us for a pint of one of the dozen or so beers we have on tap daily. You’ll find our atmosphere welcoming, our staff friendly, our fare hearty and delicious and our beers exceptionally flavorful. If you are interested in watching soccer, we are the only official U.S. Soccer Bar in New Mexico. And we also offer the games of NFL Sunday Ticket on our two 120” high definition projection TVs. Being fans of the show “Cheers,” we envisioned a place where regulars and visitors alike could come in and feel like they are part of the family. Our employees are encouraged to get to know customers by name as well as background and interests. Opened in the fall of 2008 in the space originally occupied by Turtle Mountain, the Fat Squirrel Pub & Grille quickly became Rio Rancho’s most comfortable place to eat and socialize. It is a casual, family-friendly and affordably upscale pub offering a wide variety of traditional pub fare ranging from hearty appetizers, salads and sandwiches to pub favorites like fish and chips and hand-cut USDA Choice steaks. In 2009, Albuquerque the Magazine recognized our quality menu by voting our half-pound Angus burger one of the best burgers in the city. If you are interested in something sweet, we have several house-made desserts, including New York cheesecake, potato bread pudding, apple crisp and a stout chocolate brownie. To complement your meal, we have a selection of 20 draft beers as well as many more in the bottle. We also offer a hand-picked selection of wines by the glass or bottle. Map #36 b Our most recent expansion took us out to the Mariposa community in northwest Rio Rancho, where we opened Timbuctu at Mariposa in May of 2012. The 44 seat bistro serves only the finest USDA Choice steaks, veal, duck, seafood, sandwiches, burgers, salads and pastas, a selection of delicious appetizers found nowhere else in the city, plus house-made desserts and a full brunch menu on the weekends. No matter what you fancy, you will find a great interpretation and offering of your favorite dishes right here in Rio Rancho. 4 Toro Bar & Grill New Mexico Flavors The restaurant’s constantly evolving menu is filled with variations of traditional dishes and brand new ones, too. “We work with New Mexican flavors, but our dishes are not just smothered in chile and cheese. We take all those flavors, add new ideas to the dishes, and combine flavors together. We offer a selection of hand cut steaks, chicken and seafood while playing with familiar flavors and present them differently,” said Chef Dan Brittingham. Handmade dishes and ever changing menu items with the changing seasons has become an important part of Toro’s new philosophy, not only in the kitchen, but in their bar as well. “We prefer actually cooking our dishes and being creative instead of just taking items out of the box and warming them up. Where is the fun or love in that? When it’s 90 degrees outside, personally I don’t want a really heavy and savory dish. I want something filling but with lighter and brighter flavors. During the winter, I want to feel the comfort and warmth of a good meal or a great cocktail,” Brittingham said. The dessert menu is always changing at Toro. But one of their dishes, the green chile cheesecake, always remains. “It’s a crustless cheesecake that we make in house, but we use fresh sliced Granny Smith apples to mimic that snap as your fork cuts through it. It’s topped with a green chile and apple compote. Then we add a little caramel and more fresh apple slices. The heat from the green chile and the tartness of the apples are really lightened by the creaminess of the cheesecake. It’s a fun dish,” Brittingham said. “The handmade concept continues in the Toro Bar with award winning margaritas, an extensive tequila selection, and a variety of other spirits, beers and wines.” Brittingham said. “Some drinks do better and some do worse, but people’s tastes are constantly changing and evolving, so we try to change and evolve as well.
