ARTIST STATEMENT
My first successful drawing was of a hot air
balloon in the third grade. When my teacher
returned it, there was a big check-plus
scrawled on the back with a smiley face. It
was at this moment that I knew art was
going to be my lifelong companion. There
was no going back.
Since that moment, I have had the pleasure
to work as an illustrator and painter for most
of my adult life, and with each new painting
or drawing, I relive that same feeling of magic.
I am an artist who likes variety. I live for the
ethereal moments that I experience in this
great pool of life as much as the whimsical
moments I experience in the kiddy pool of
my imagination. I have been advised in the
past to limit myself to one style, but I can no
more do this than I can limit myself to one
kind of food to eat or one style of music. The
world we live in is teeming with variety and
spice and I am proud to reflect this as an
artist.

Our Nov/Dec issue takes us to the end of our first year of GreenList Louisville. We
feel a sense of accomplishment and joy that brings me close to tears. GreenList has
been embraced by Louisville. Our list of earth-friendly businesses and organizations have largely become real entities to us with familiar faces. We’ve heard the
love and passion people pour into their lives’ work. We started out to create a gift
to Louisville and to our planet Earth. What a gift Louisville has given us!
So in this season when we feel so much gratitude for the blessings in our lives, we
want to thank all of you who are part of GreenList: our members and our readers
– many of whom we’ve met at Louisville’s many eco-events. Money pays our print
bills, so we thank our advertisers who have supported our venture, many faithfully
and from the very start when even we weren’t sure what we were doing or where
we were going with this. We want to thank Ben Payne of Blackbird502 who created
our amazing website and worked long and hard to make it work for both us and
its users.
In this issue, we celebrate all the wonderful holidays that come in the waning of
the old year and the budding of the next – 2010! Can you believe it? We celebrate
by seeking out and acknowledging gift-givers in our community who have quietly
been giving to us all year long. We meet a young woman who is teaching us to
save the Arctic ice, home to the dying polar bear population. We meet a passionate teacher who sees that lives can be re-routed even in those we’ve lost hope
for, and another educator who walks the walk every day to show that we truly
can live differently in the world. We introduce you to a businessman who reuses
people’s trash and with it rebuilds lives, and an organization that is rebuilding our
ecosystem. We’re given health advice from our masterful herbalist and introduce
a dentist with a big message. Our cover art is generously offered by a newly-local
artist/musician whose whimsy gives us all a smile.
We wish you all a beautiful end to an amazing year of life on this precious planet,
our Mother Earth.

14th Annual Festival of Faiths! Sacred Water: Sustaining Life Nov 4-13

Nu Yale Cleaners receives Governor’s Award for Environmental Excellence
Nu-Yale Cleaners received a 2009 Indiana
Governor’s Award for Environmental
Excellence during the annual Pollution
Prevention Conference and Trade Show
Sept. 16. Nu Yale is being recognized
for installing the Solvair dry cleaning
machine, an environmentally friendly
cleaning process that, unlike other dry
cleaning processes, does not pollute
the water and air. Liquids and supplies
are recycled and reused, and process
wastes are managed with a system
that eliminates emissions and ensures
reclamation of recyclable materials. Nu
Yale has only the ninth facility in the
world to offer this truly green technology.

West End School: The Gift of a New Future
The former Carter Elementary School in
the West End of Louisville is now home to
West End School where 14 bright, healthy,
inquisitive young boys board and attend
classes. It is also home to founders and
resident faculty Deborah and Robert
Blair who are life-long educators. Robert
was previously Headmaster of Kentucky
Country Day School for 11 years. Former
KCD student, Benjamin Payne and his
wife Amanda recently joined the close
knit family of students and faculty as
resident instructors.
The West End School is an academically
rigorous, college preparatory, year-round
boarding school for at-risk middle school
boys. Admission is open to boys entering
sixth grade who are on free or reduced
lunch, are capable of doing academic
work at grade level or above and who
would benefit from a stable, structured
and safe environment.
The school opened its doors in 2005
because of the growing need for
alternative forms of education, particularly
for African-American male students. Just
39% of African-American males graduate
from Jefferson County Public Schools.
For these students, the middle school
years are a transitional ‘tipping point’
both socially and academically. AfricanAmerican, male students are at an
especially high risk in nearly every index
of failure reported by JCPS: academics,
achievement levels, truancy, dropout
rates, school suspensions and expulsions,
delinquency, and incarceration.
West End School is not the right answer
for all students. WES aims to serve the
students in need of more than nine

in a dormitory modeled in the tradition of
English boarding schools. Academically,
students entering the school are
frequently two or three grade levels
behind, and the majority of the students
are engaged in some form of counseling.
The West End School strives to address all
of these issues by creating for its students
a culture of expectations not dependent
on the culture at large and by giving them
access to a year-round education that is
on par with the best private schools in
the country.
When these standards are in place, it is
remarkable the progress students make.
Many of the 8th graders at WES are taking
Algebra I and are reading several grade
levels above expectations. In fact, all of
the West End School alumni have received
full scholarships to prestigious schools
throughout Kentucky. West End School
continues to be counsel for students after
they leave the school, intent on its mission
as a stable and structured influence in
every student’s life.
WES benefits from its home in the heart
of Louisville’s west end. The building we
occupy has been a school of one form or
another since 1928. The original building
was designed by Samuel Plato, one of
the first African American architects
in the country, and designer of many
notable homes in Louisville, including
many adjacent to Shawnee park. Many
great Louisvillians attended school in our
building including Muhammad Ali and
Darryl Griffith. Our place in Louisville
provides the students direct and indirect
links to our city’s past and present and a
direct appreciation for their community.

Trash to Treasure: Re-gifting at Its Finest

Classifieds, hey – even putting a For Sale
sign in your front yard beats throwing it
away. If you’re willing to hold onto it for
a little while, chances are you can convert
your leftovers into cash.
2) Give it away. Again, Duh. The reality is
that if it’s usable, someone wants it. Craig’s
List and Freecycle.org are a good way to
spread the word. Or, just ask your neighbors.
Chances are that someone you know wants
the item that you need to get rid of.
Have you ever asked yourself what
happened to your neighbors’ cabinets
when they remodeled their kitchen? Or
those light fixtures your relatives replaced
because your aunt didn’t think the “ultramodern” design went with their Craftsman
style bungalow. They sure would have
worked great in that basement project
you’re trying to finish up on a shoe-string
budget.
The EPA reports that as much as 35%
of our landfill comes from construction
and demolition waste in a city the size
of ours. In fact, I read recently that if you
stacked up all the annual US construction
and demolition waste 4 feet high and the
width of a city street, you could build a
wall about six times the distance from New
York City to L.A. – an estimated 136 million
tons.
We’ve got to think of another way.
We’ve gotten pretty good at thinking about
where new products come from and how
they’re manufactured. We’re replacing our
light bulbs with CFLs and LEDs. We’re even
starting to think about how far our food
travels before it ends up in our grocery.
But we need to get a lot better about
determining where our construction and
remodeling remnants go. We have choices
that can be made, but they have to be
made before those materials go into the
big green monster (a.k.a. the Dumpster).
3) Donate it. Organizations like Habitat
for Humanity’s Habitat ReStore offer the
public a way to keep these usable materials
out of the landfill and in use. ReStore is a
not-for-profit thrift store concept that
accepts and sells new and used building
materials, furniture, tools, appliances and
landscaping.
In 2008, the Habitat ReStore in Metro
Louisville kept 759 tons of usable material
from our landfill. That salvaged material
was donated by regular people doing
regular projects, but it created spectacular
results.
ReStore sold those donated materials
and generated close to $200,000 (or the
equivalent of almost 6 house sponsorships)
for Habitat for Humanity of Metro
Louisville.
Habitat for Humanity staff and volunteers
build about 25 houses in Louisville each
year. The houses are sold to qualified
families who are willing to put in 400 hours
of sweat equity building homes for others,
and on their own home.

help the community by reducing our
landfill, but you help to create affordable,
energy efficient homes.

The Pine Mountain Wildlife Corridor-the counterpoint

to coal mining: A Gift of the Earth
Kentucky is a forested state and the most
important remaining natural areas are
parts of larger blocks of land that remain without roads or houses. Most of
Kentucky’s forest land is now in tracts of
forty acres or less and no longer support
the wildlife, biodiversity, and sustainable
natural systems that once dominated our
state. One of the largest forest blocks remaining runs 120 miles through the eastern coal fields from Virginia to Tennessee
through five southeastern “coal counties”. The land and counties surrounding
Louisville boast the largest forest block
remaining in the Bluegrass, ranging from
Bernheim Forest to Fort Knox. These are
the current targeted projects of the Kentucky Natural Lands Trust.
KNLT was established to protect Blanton
Forest, Kentucky’s largest old growth forest. Once Blanton was protected (with a
majority of the donations coming from
Louisville), we expanded its mission to
the Pine Mountain landscape. Blanton
serves as a centerpiece along the first of
the Appalachian uplifts known as Pine
Mountain. Pine Mountain is not a mountain. It is a 120 mile long, 150,000 acre
forest with a steep north face ranging
between two and three thousand feet
in altitude. By most standards, this area
remains one of the best natural area projects in our state with very high rare species count. The mostly unbroken forest
provides a “coal free” north-south connection between Virginia and Tennessee
through the ever more broken-up landscape of southeast Kentucky, providing a
migration route through the coal fields.
Kentucky owns less of its own state than
the other southeastern states and continues to have a poor record when it comes
to public land, especially natural lands.
Pine Mountain is an exception. Five state
agencies have received through gifts and
acquisitions over 30% of Pine Mountain
beginning in the 1930s. KNLT recognized
the value of connecting the scattered
tracts of state forest, parks, and wildlife
management lands along the mountain.
We have concentrated our protection efforts on the areas with known rare species and tracts that add to the existing
larger blocks of public land. We picked
the best remaining project in Kentucky
rather than the easiest.
Local financial support is limited, and
most of our donors have to understand
why it is worth investing in an area so far
from Louisville. Land value is depressed,
making the land purchases a great investment in our future. However, negotiation
for the most critical areas of Pine Mountain can be very difficult. Although coal is
found north and south of Pine Mountain,
limestone quarries, oil and gas road construction, erodible soils, and a history of
poor logging practices still threaten the
continuing functions of this landscape,
which provides clean water, clean air, and
productive timber growth for the state.
We are just beginning to calculate the financial value of such ecoservices, which
have been taken for granted through
most of the years since settlement.

Are you ready for flu season? By Jenny Boice
This year, more than ever, people are
worried about getting the flu. People want
healthy alternatives for preventing the flu
but aren’t sure what to do. Here are some
natural approaches to flu prevention and
treatment to help you get started. If you
start boosting your immune system now,
your body will thank you later!
As we all know, there is no “cure” for the flu.
Once you have the flu, at best you can help
your body manage the cycles necessary for
recovery. Sleep is the most important thing
you can do to help your body rejuvenate.
Resist the urge to mask your symptoms
and keep going. Allow your body the time
it needs to heal. Eat foods that are easily
digested, warm and nutritious. Soups are
ideal for this process.
You can also take herbs to shorten the
duration of the cold or flu and decreases
the severity of symptoms. For cold and
flu - Astragalus, Echinacea and Elderberry
are our best allies. All of these herbs work

to strengthen the immune system. In my
family, when we start getting sick, we start
taking a teaspoon of Elderberry every 1-2
hours for a couple of days. I usually take
a tablespoon before bed the first night.
About 8 times out of 10, I feel better the
next morning. Regardless, I keep taking a
teaspoon at least three times per day until
I feel I am out of the woods. The key is to
start taking it as soon as you think you are
coming down with something. Others
use Astragalus and Echinacea in the same
way. These herbs can be just as beneficial.
Again, the key is to start taking them at
first onset. Astragalus is contraindicated
with fever.
Of course, the best way to deal with the
flu is to prevent it all together. Be sure
to get enough rest. If you are run down,
your immune system is weaker and you
are more prone to catching the cold or flu.
Some say getting sick is the body’s way of
forcing you to slow down and rest. Dress
warm, eat warm foods and drink warm
drinks. This will help maintain your body
heat so your body doesn’t have to work so
hard. Keep stress to a minimum. Our lives
tend to be full of stress these days. Try some
relaxation techniques while drifting off to
sleep. Exercise is another stress reliever.
Wash your hands frequently, especially
after being in public. Many germs are
passed by people sneezing then touching
doors, gas pumps, etc. Keep some hand
sanitizer in your car. Eating a good diet is
also important. We need to make sure our
bodies are properly fueled.
Astragalus and Echinacea are not only
helpful once you have the flu but can
help boost your immune system as
a preventative as well. Astragalus is
known as an adaptogen, which means it
helps your body adapt to stress and has
a balancing effect on bodily functions,
such as supporting digestive functions,
helping to balance blood pressure and
improving circulation. Astragalus is a very
popular herb used in Chinese herbalism
for supporting immune resistance.
Astragalus helps fortify and strengthen
the entire body so you’re more resistant
to viruses and infections. It also increases
your energy which is always an added
bonus! Astragalus has been used in Asia
to prevent cold and flu for more than
1,000 years.
Echinacea is an immune system stimulant
and strengthener. It boosts the immune
system to help prevent cold, flu, allergies
and minor upper respiratory infections.
Echinacea was used by North America’s
Native Indians to treat fevers and by early
settlers to North America for treating colds
and the flu. Both herbs are great to have
on hand and to take regularly throughout
the winter. You can make tea with them,
cook with them, throw them in your soup,
or take them in tincture form.
Stay healthy this winter. Check out our

Apple Tart Recipe
Apple Compote
Ingredients
•3 Large apples (Winesap, Fuji, or your favorite local organic)
•Lemon Juice 2 table spoons
•Sugar ½ cup or to taste (organic unbleached unrefined )
Procedure
Peel/core apples. Cube apples (approximate ¼ x ¼). Place apple cubes, sugar, lemon juice
in sauce pan. Cook for approximately 20-30 minutes (fork tender), stir occasionally.
Tart Dough
Ingredients
•1 large apple (Winesap, Fuji, or your favorite local organic)
•250 grams (8.8oz) Unsweetened Butter • 125 grams (4.4oz) powdered sugar
•3 Eggs (local organic) • 500 grams (17.6oz) all purpose flour (organic unbleached unbrominated) • ½ teaspoon baking powder (aluminum free) • 2 tablespoon melted butter. This
recipe makes three 8/9” tart shells.
Procedure
Cream butter and sugar until fluffy (use paddle attachment for mixer). Add 1 egg at a time
making sure that each egg is fully incorporated into the mixture. Add flour and baking
powder. Mix until everything is combined. Remove dough and wrap in plastic until firm. Roll
out dough to approximately 1/8” thick and place in tart mold. Place tart shell in freezer.
Remove frozen shell and add apple compote in tart shell. Peel apple and fan over compote.
Brush fanned apples with melted butter and sprinkle with sugar. Bake at 350◦ 20-30 minutes
or until bubbling. Remove from oven and let cool. Serve.
