In 2007, Wendy Van Wagner founded In the Kitchen Cooking
School in her San Francisco home-kitchen. The classes
started as a humble offering to other cooks, non-cooks and
passionate eaters as a way to learn, create and enjoy a meal
together with friends. In 2008 she moved In The Kitchen to
Nevada City, CA. and most recently has devoted much of her
time to the organization Live Healthy Nevada County which
improves access to healthy, local foods as well as farm to school
connections. Wendy also teaches cooking and nutrition classes
through the Department of Public Health in Nevada County
with a emphasis on obesity prevention.
She is a certified Nutrition Educator and has been member of
Slow Food, the Weston A. Price Foundation, and the National
Association of Nutrition Professionals.

This system is the number one tool used by avocado harvesters
and other harvesting companies who need to harvest difficult
fruits and nuts such as mangos, persimmons, chestnuts, and
other types of hard to reach specialty fruit. The top of the boat
shaped net basket (Head) contains two blades which cut the
fruit at the stem and allow it to gently fall into the basket.
This handy little tool provides “hand picked quality” on fruit
types such as mangos, avocados, citrus, and other delicate fruits.
It is also ideal to use for maturity testing and early spot picking.
Replaceable mesh bags are heavy duty and are tear, abrasion &
mildew resistant. The pole picker comes in two parts which can
be ordered separately. The harvesting pruning part is the boat
shaped net basket which comes with a replaceable net basket
and replaceable blades. The handle part is the 6’ to 12’ foot
telescoping pole.

This 6’ to 12’ telescoping pole handle is ideal because it is
specifically designed for the picker head and they fit together
securely, leading to increased stability by distributing the weight
of a full bag more evenly. Shipping companies consider the
pole handle to be an oversized item because of its length and
therefore they calculate the shipping cost as if the pole weighed
35 lbs. The frame can be attached to a locally bought pool pole
and instructions are included with the head explaining which
how to drill the appropriate holes.

Prepare your canner, jars, lids & seals according to the manufacturer’s
instructions. This jam will be processed using a hot water bath
method.
Gently wash the blackberries.
Using the Roma Sauce Maker and the second finest screen that comes
in the Accessory Kit, “juice” the blackberries. This process is quite
simple: Place the berries in the hopper and then turn the crank to
extract your seedless berry syrup!
Transfer your berry syrup to a stainless steel pot.

Stir in the sugar.
Bring the mixture to a rapid boil, stirring frequently to prevent
burning. Continue boiling & stirring for approximately 30-40
minutes or until the mixture reaches 220˚F or thickly coats a spoon.
Remove from heat. Skim off and discard any foam.
Carefully pour into jars using a canning funnel. Leave ¼” headspace
in the jar. Wipe off any drips that may have gotten on the rim of the
jar.
Secure the lid according to the manufacturer’s instructions.
Fully submerge the jars in your pre-heated hot water bath. Once the
water comes back to a boil in the canner, process for 10 minutes.
Use a jar lifter to remove jars from the canner.
Allow jars to cool completely, then check the seals, remove snaps or
rings, label, and store (if you don’t give them all away first)!
Fun Fact:
Blackberries naturally contain enough pectin to make a thick jam, so
there’s no need for commercial pectin.

Weck BPA-Free Canning Jars
Discover the Weck home canning system. The Weck
company has been providing canning equipment in Europe
since 1900. Weck does not produce home-canning jars with
mechanical sealing devices and the reason is safety! In case
the contents of a jar should spoil for any reason, the gases
formed by spoilage inside the jar must be free to push up the
lid so that it lies loosely on top of the jar. For this extremely
important reason of personal safety, a reason which is still
more important than the practical ones mentioned below,
WECK has consistently refused to produce jars with
mechanical wire bail seals for home-canning purposes. In
case of spoilage, these mechanical seals cannot produce the
strikingly clear warning signal of the loose lid.

to be in good, viable condition when we sell them. However, because these
items will deteriorate over time, we strongly encourage you to inspect them

quality problem, you must notify us within 3 (three) days of your purchase, or

Brewing your own beer at home can be achieved fairly easily with a
few specialty pieces of equipment, the right ingredients, a little bit
of knowledge and about a month’s time. Once you get the hang of it
you can refine your recipe to your tastes, grow your own ingredients
and even make your own brewing equipment.
The 10 basic steps for home beer brewing:
1. In a stock pot, steep grains in water
2. Mix in Malt extract and boil the solution.
3. Add hops in intervals according to recipe as solution boils
4. Cool the mixture and transfer to fermenter
5. Record solutions specific gravity for future use
6. Add yeast to initiate the fermentation process.
7. Stir or shake solution vigorously to aerate it.
8. After 4 -14 days of fermentation, transfer to a secondary fermenter.
9. Allow it to age for 2-3 weeks
10. Bottle beer and allow it to carbonate until it’s ready to drink.

If you don’t have a bread maker:
Add the grain puree to the bowl of your mixer. Sprinkle the yeast
on top. Let the yeast proof for about 5 minutes and then gently mix
in the olive oil, honey, and salt. Then mix in the 2 cups of sprouted
wheat flour. Cover the mixture and let it sponge for 45-60 minutes.
Stir down and slowly add 1 cup of bread flour. Fill your measuring
cup with the other cup of bread flour and set it next to your bread
board or pastry sheet; use it in the kneading process. To get fluff y,
moist bread it’s helpful to use as little flour as possible, so if you don’t
use the whole cup don’t worry.
Sprouted Whole Wheat Bread
Ingredients:
1¼ Cups warm water
2 Tablespoons active dry yeast
¼ Cup olive oil
¼ Cup honey
1 1/2 Teaspoons salt
1 Cup sprouted grains
2 Cups sprouted wheat flour
2 Cups organic bread flour.
Turn out the dough on a floured surface. Knead 10-20 minutes.
Directions:
Blend 1¼ cups of warm water with 1 cup sprouted grain until
you get a puree. Blending is optional, so blend to the texture of
your 0liking.

Add the puree, olive oil, honey, salt, sprouted wheat flour, and
active dry yeast. Use the preheat setting on your bread maker or
let the ingredients sit for 45 minutes. Once your bread maker
starts kneading, after the 45 minutes, add the bread flour. Then
let the bread maker do the rest.

New to Beekeeping?
Get a good book, join your local beekeepers’ association, and set-up
two hives! Why two? How will you know what’s normal? Comparable
observation is the best tool for beginning beekeepers. Paint the outside
(only the outside) of your hives with a clear varnish (try PolyWhey) or
paint to increase the durability of your hive. Did you know that bees
can distinguish between colors? If you’re getting more than one hive,
consider painting them different colors so the bees can easily identify
their home & colony.
Where Do I Get Bees?
There are hundreds of apiaries or bee yards nation-wide. Many sell
packaged bees and some can mail bees through the postal service!
We recommend one three pound package of bees with a queen per
hive. Depending on the weather, these packages may be available
in April or May and reserving your package of bees ahead of time is
recommended. You may also be able to collect an unwanted swarm
of bees from a neighbor. Contact your local beekeepers’ association to
find out if there’s a swarm catching crew and whether you can assist.

No shortcuts! Our assembled 8-frame beehive kit includes everything you need for the first
two years of beekeeping and is more comprehensive than beginner kits found elsewhere. This
GrowOrganic exclusive was designed by our staff beekeeper.
Why 8-frames and not 10 like commercial bee yards? Once full of comb
and honey, a super (the wooden box full of frames) can weigh up to 90 lbs! This is an
unmanageable amount of weight for many people. So we’ve designed this hive to hold 8
frames per box which is more manageable for a hobby beekeeper.
Beautiful copper roof makes your new beehive a decorative addition to your garden!
You’ll benefit from higher fruit & vegetable yields (due to increased pollination) and be able
to enjoy homemade honey in years to come.
We’re proud of the quality of materials used to construct our beehive.
With the exception of the cedar hive stand, the hive is constructed from hand selected
Ponderosa pine from the Northwest. To prevent warping, each board is moisture metered
before it is precision milled. Uniform interlocking joints add strength and holes are predrilled before nailing to prevent splitting during assembly. You’ll receive a fully assembled
hive and we want you to know we’ve done our best sourcing our materials.
What’s in a frame? A beehive with top bar frames allows you to remove and inspect
the comb for brood development, pest monitoring, and honey production. Our frames
come pre-assembled with a plasticell foundation coated in beeswax. Bees can more quickly
draw their honey comb when given a foundation to work off of and this is most common in
commercial apiaries. Given a little extra time, honey bees can draw their own comb within
an empty frame.
What’s in the Beehive Kit:
Copper Roof This hive cover protects the hive from the weather and invaders with style.
Inner Cover constructed of wood frame & sturdy masonite is strong, durable & will not
shrink thanks to mortise and tenon construction. Helps insulate hive from heat and cold.
Two 6 5/8” Tall Honey Supers with taper cut handholds made from ponderosa pine.
This is where the bees will store their extra honey which may be harvested by the beekeeper.
Add the first super after both brood boxes have at least 12 frames full of comb. Add the
second super after the first super is half way full of honey.
Sixteen 6 1/4” Top Bar Frames with plasticell foundation (which is easily removable).
Metal Queen Excluder Precisely spaced welded wires and bound metal edges will keep
your queen in the brood boxes and prevent her from laying eggs in the honey supers.
Two 9 5/8” Tall Brood Boxes with taper cut handholds made from ponderosa pine.
This is where the bees make their home, where the queen lays eggs, and the bees store enough
honey and pollen for the hive to survive during winter. The beekeeper should not “harvest”
honey from the two brood boxes. Start with one brood box. When 6 frames are full of comb,
add the second brood box.
Sixteen 9 1/4” Top Bar Frames with plasticell foundation (which is easily removable).
Solid Bottom Board & wooden entrance reducer made from ponderosa pine. Seal up the
bottom of your hive with a bottom board. Use the entrance reducer to keep critters out and
to help the guard bees keep other insects out of their hive.
Rustic Cedar Hive Stand Keep your hive dry and off the ground with rot-resistant
cedar. Either the solid bottom board (included) or a screened bottom board (see online) will
fit atop this stand.
Boardman Entrance Feeder When pollen supplies are low, you may need to feed your
bees. This feeder makes refilling easy without opening the hive. Simply put a sugar syrup in a
standard mason jar (not included), screw on the perforated metal cap (included), and set it in
the boardman stand. Fits very snugly at the entrance of the hive.

You can use this screened bottom board in place of the solid bottom board that
come in our 8-frame beehive kit. Screened bottom boards are designed for use
over a sticky mite observation board. If mites are present in the hive, when they

Beekeeper Hat & Veil
