Fruit Skewers Strawberries, pineapple, honeydew, red grapes, and canteloupe on a skewer, with a creamy Kahlua dipping sauce. Caprese Salad Skewers Fresh pearls of mozzerella cheese, cherry tomato, and a fresh basil leaf, drizzled with a balsamic reduction. Beef Tenderloin Canapes Herbed goat cheese, red onion balsamic jam, and smoked beef tenderloin served on a toasted crostini. Avocado & Feta Crostinis Fresh avocado, feta cheese, and tomatoes served on a toasted crostini. Tequila Lime Shrimp Shooters Smoked shrimp marinated in tequila and lime juice, layered with fresh avocado and pico de gallo, served in a shot glass. Veggie Shooters Fresh matchsticks of carrots, celery, bell pepper, and cucumber served in a shot glass with homemade buttermilk ranch dressing. Barbecue Sliders Station Pulled pork, shredded sh chicken, or beef brisket, topped with cole slaw and served with Pok-e-Jo’s BBQ Sauce, pickles, onions and jalapenos on the side. Loaded Mashed Potato Bar Creamy mashed potatoes, served with smoked sausage gravy, bacon, shredded cheddar cheese, sour cream, chopped green onions and butter. Mac n’ Cheese Bar A homestyle favorite, dressed up with a variety of toppings, such as bacon, fried onions, smoked chopped chicken, diced tomatoes, and parmesan cheese. Chilled Smoked Shrimp Display Smoked jumbo gulf shrimp, served on a chilled platter, with lemons and a spicy cocktail sauce. Texas Chili Cheddar Pecan Spread A Texas shaped spread, made with cheddar cheese, cream cheese, chopped Texas pecans, green onions, herbs, and spices. Served with assorted crackers. Perfect Prime Rib Buffet Our Prime Rib Buffet Bu includes any one of our Signature Smokehouse Meats and our Smoked Prime Rib with au jus and creamy horseradish. Add our Chilled Smoked Shrimp display for an additional charge. DINNER MENUS What’s Included All Dinner Menus include the following services: White disposable silver rim plates, cups, & flatware rolled in premium linen-like white napkins. Iced tea, water, and lemonade station. All food service tables, draped in black floor length linens. All appropriate buffet serving pieces. A Pok-e-Jo’s Event leader and staff sta to take care of your event. Staff attire is all black uniforms. All events include bussing of tables and trash removal. Children between the ages of five and ten will be charged at half an adult price. Five free Vendor Meals (if necessary, for DJ, photographer, etc.) are provided. Complimentary menu tasting and personal consultations available by appointment. Gratuity is left to the discretion of the client. AFTER-TIZERS Late Night and Post-Dinner Snacks, Sweets, and Treats Gourmet Popcorn Bar Select three flavors of popcorn for guests to create their own custom bags. Perfect for cocktail hour or as a take-away party favor. Homemade Cobbler Bar Choice of Peach, Cherry, Blueberry, or Apple Cobbler, Cobble served a la mode. Mixed Fruit Display A mix of seasonal fruits, served with a Creamy Kahlua Sauce, perfect for dipping. Pecan Pie Crumble Hand crumbled bits of Southern Southe Pecan Pie, served in a small bowl and topped with a decadent Bourbon Cream Sauce. S’mores Station Hershey’s Milk Chocolate, Marshmallows, and Graham Crackers. Comes with skewers, small plates, and an elegant firebox for toasting.
