I know you are getting old, and I hope you will meet someone special soon. You need to learn how to take care of yourself, and learning how to cook is the greatest way to start. This is why I am writing a recipe book for you. The recipes in this book are very simple, and I wrote exactly what you need to cook them. I also wrote steps to cook all these recipes that are really easy to follow. When you follow the steps to cook the recipes, you will gain experience, knowledge, and good cooking skills. I hope that you enjoy cooking as much as I do. I wrote the recipe book with all my heart. I promise if you cook at least four times a week, soon you will be doing your own recipes and crazy cooking inventions. You know how much I love you and that I want the best for you. When you have a baby girl, I hope that you name her after me. And when she grows up, and she asks you how to cook her mom’s delicious food, you will give her this recipe book. Of course you will have to tell her that her cool aunt wrote it. I hope you enjoy everything you are going to cook. Chapter 1: Dressings and Salsas Chapter 1: Dressings and Salsas Chapter 1: Dressings and Salsas Spicy Jalapeño Salsa Ingredients: 4 or 5 Jalapeño peppers (depending on the size) ¼ Cup of olive oil 1 Tablespoon of Knorr Suiza seasoning 1 Tablespoon of water Steps: 1. Grill the jalapeño peppers until they are completely or almost completely black in every side of them.* 2. Wait for them to cool off. 3. Leave 1 or 1 ½ jalapeño peppers with the seeds (depending how spicy you want it, you can leave more or less seeds). 4. Blend all the ingredients with the grilled jalapeño peppers until everything is dissolved. 5. Pour the sauce in a container of your choice. 6. Wait for the sauce to fully cool off before you refrigerate it. 7. Refrigerate for future use. *Be careful with the grill, it is hot! Vinaigrette for Salads Ingredients: ½ Cup of olive oil ¼ Cup of red wine vinegar 1 Tablespoon of Knorr Suiza seasoning 1 Tablespoon of mustard 2 Garlic cloves Steps: 1. Blend all the ingredients together until everything is dissolved. 2. Pour the dressing in a container of your choice. 3. Pour a trickle of water in the blender to clean the rest of the dressing and pour it in the container. This will make the dressing watered-down and be easily to put in salads. 4. Refrigerate the dressing for future use. 3 4 Recipe Book Basil Vinaigrette Ingredients: 2 Garlic Cloves ½ Cup of basil leafs 1/3 Cup of white wine vinegar or 2 limes ¼ Cup of olive oil 1 Pinch of salt 1 Pinch of pepper Steps: 1. Blend all the ingredients until they are dissolved. 2. Pour the vinaigrette in a container of your choice. 3. Refrigerate for future use. 4. Shake the dressing next time you use it until everything is dissolved. Cilantro Dressing Ingredients: 2 Bundles of cilantro 4 Garlic cloves 8 Tablespoons of olive oil 4 Tablespoons of White wine vinegar 1 Tablespoon of Knorr Suiza seasoning Steps: 1. Blend the ingredients until they are dissolved. 2. Pour the dressing in a container of your choice. 3. Refrigerate of future use. NOTE: Cilantro dressing is also good to flavor chicken and grilled vegetables. Chapter 1: Dressings and Salsas Honey Mustard Dressing Ingredients: 3 Tablespoons of any vinegar 2 Tablespoons of olive oil 1 Tablespoon of honey 1 Tablespoon of mustard ½ Teaspoon of salt ¼ Teaspoon of pepper Steps: 1. Blend the ingredients until they are dissolved. 2. Pour the dressing in a container of your choice. 3. Refrigerate for future use. 4. You may also heat it up for a couple of minutes and serve it hot. 5 Chapter 2: Salads and Vegetables Chapter 2: Salads and Vegetables Chapter 2: Salads and Vegetables Lettuce with Chicken Salad Ingredients: ½ Pound of grilled chicken ½ Lettuce 1 Cup of mixed organic leaves of your choice (spinach, escarole, endive) ¼ Cup of dried cranberries ¼ Cup of sunflower seeds or wallnuts ¼ Cup of blue cheese or parmesan cheese ¼ Cup of red onion 5 Baby corns Steps: 1. Cut the lettuce, the baby corn and the grilled chicken. 2. Cut the red onion in little squares. 3. Mix all the ingredients in a big bowl. NOTE: This Salad goes well with vinaigrette for salads or honey mustard dressing. Tomato and Mozzarella Salad Ingredients: 2 Large tomatoes 8 Ounces of fresh mozzarella cheese A pinch of salt A pinch of pepper Steps: 1. Slice the tomatoes and the mozzarella cheese in a quarter-inch thick round shape. 2. Add the salt and pepper. NOTE: The Basil Vinaigrette will go well with this salad. You may also only use olive oil by itself, or with balsamic vinegar as a dressing; if so, add basil leaves. 9 10 Recipe Book Mexican Style Squash Ingredients: 3 Squashes 2 Medium size tomatoes ¾ of Onion 1 Cup of sweet corn ½ Cup of mozzarella cheese Salt and Knorr Suiza seasoning Oil Steps: 1. Cut the squashes in medium-size squares. 2. Cut the tomatoes and onion in small-size squares. 3. Pour a little bit of oil in a big pan to make sure the ingredients will not stick to the pan. 4. Start by putting the cut squashes in the pan because it is what takes longer to cook. 5. Stir continuously. 6. Add the tomatoes and onion once the squashes are more than half way cooked. 7. Cover the pan for the squashes to cook faster. 8. Wait a couple of minutes and then add the corn. 9. Cover the pan again. 10. Add the mozzarella cheese once the squash is completely cooked. 11. Do not cover the pan again. 12. Add Salt and Knorr Suiza seasoning until it tastes good for you. NOTE: Do not refrigerate while it is still hot. Wait for it to completely cool down first. Chapter 2: Salads and Vegetables Mashed Potatoes Ingredients: 3 or 4 potatoes A pinch of salt ¼ Cup of butter A pinch of pepper ½ Cup of milk Steps: 1. Peel the potatoes. 2. Boil the potatoes. 3. Mash the boiled potatoes. 4. Add the rest of the ingredients while you are mashing the potatoes. 5. Continue to mash until it is smooth. NOTE: It may need a little bit more salt. You may also want to put a little bit of olive oil when you are serving it. 11 Chapter 3: Chicken Chapter 3: Chicken Chapter 3: Chicken Chicken salad Ingredients: 3 Chicken breasts 4 or 5 Carrots (depending on the size) 1 Cup of peas 2 Celery sticks Mayonnaise Steps: 1. Boil the chicken (You may add a little bit of salt and garlic). 2. Cut the carrots and the celery in small squares. 3. Boil the carrots. 4. Wait for the chicken to cool off and shred it. 5. Mix all the ingredients in a bowl. 6. Add as much mayonnaise as you want to and mix it all. 7. Enjoy! NOTE: I recommend that you refrigerate the salad for a couple of hours before you eat it. Chicken Ranch Style Ingredients: 4 Chicken breasts 4 Tablespoons of olive oil 2 Tablespoon of red wine vinegar 1 Package of ranch seasoning 15 16 Recipe Book Steps: 1. Mix the olive oil, the red wine vinegar and the ranch seasoning in a flat container wide enough to fit the chicken as well. 2. Leave the chicken to soak the ingredients for at least 2 to 4 hours in the refrigerator. 3. Grill the chicken in a virgin pan (this means not to add any more oil).* *Be careful with the grill. It is very hot! NOTE: This chicken would go great with steamed vegetables and rice. Baked Chicken with Potatoes Ingredients: 1 Entire chicken (8 pieces) 250ml of Thousand Island dressing 5 Tablespoons of apricot jam 2 Tablespoons of Maggie sauce 2 Tablespoons of Worcestershire sauce 3 potatoes 1 Teaspoon of Knorr Suiza seasoning ½ Cup of water ¼ Of onion Steps: 1. Pre-heat the oven at 450°. 2. Butter a glass container that can go in the oven and that is big enough to fit the chicken. 3. Lay out the 8 pieces of chicken in the glass container with a pinch of salt and pepper in each piece. 4. Cut the potatoes in large squares and put them in the glass container as well. 5. Blend the rest of the ingredients. 6. Spread the blended sauce on top of the chicken and the potatoes. 7. Put the chicken in the oven at 400°. NOTE: Check the chicken an hour after you put it in the oven. Make sure the chicken is fully cooked before you take it out of the oven. You can do this by cutting a piece and looking at the inside of it. If it is somewhat red, it is not ready yet. It has to be completely white. Chapter 4: Meat Chapter 4: Meat 19 Chapter 4: Meat Meatballs Ingredients for the sauce: 6 Tomatoes 1 Garlic clove ¼ Of onion 2 Chipotle peppers Oil Ingredients for the meat: ½ Kg of ground beef ¼ Of onion ½ Of tomato A pinch of pepper 1 Garlic clove 3 Big sprigs of peppermint A pinch of salt 2 Eggs Steps for the sauce: 1. Blend all the ingredients together. 2. Put the sauce in a strainer, so you will not have the seeds of the tomatoes and the chipotle peppers in your sauce. 3. Fry the sauce in a pan with a little bit of oil. 4. Turn the fire or temperature of the grill down to low when the sauce starts boiling. Steps for the meat: 1. Add salt and pepper directly to the meat. 2. Blend the tomato with the onion, the garlic glove, and the peppermint. 3. Add the blend to the meat. 4. Add the 2 eggs so the meat will stay together. 5. Grab a handful of the meat, now with the mix of everything, and give it a ball shape. 6. Boil the meatballs to cook them. 7. Add a pinch of salt to the meatballs as they boil. 8. Add the meatballs to the sauce after they cook completely. 9. Check the salt. The meatballs may need a little bit more of it. NOTE: You may also eat the meatballs with plain spaghetti. Chapter 5: Pasta Chapter 5: Pasta Chapter 5: Pasta Pasta with scallops Ingredients: ½ Pound of scallops Butter Knorr Suiza seasoning Pepper 2 Bundles of cilantro 1 Chile guajillo Spaghetti (a portion for one or two people, read the box) Salt Oil 1 Garlic clove Steps: 1. Boil the spaghetti with a little bit of oil, the garlic clove and a little bit of salt.* 2. Put a tablespoon of butter in a pan and cook the scallops until they look brown on the outside. 3. Add pepper to the scallops. 4. Add the spaghetti after it is well cooked** and mix it well with the scallops. 5. Add another tablespoon of butter. 6. Add the cilantro and chile guajillo chopped in small pieces. 7. Cook for no longer than five minutes. This is just to mix the ingredients. 8. Add as much Knor Suiza seasoning as you want to give your pasta flavor. *BE CAREFUL! Everything will be very hot so make sure you do not burn yourself! **You will know the spaghetti is cooked if it is no longer hard and it adheres to the wall when you throw it. NOTE: You should choose a good white wine to drink with this meal! 23 24 Recipe Book Noodles with sausage Ingredients: ½ Kg. bag of noodles ½ Of sausage 2 tomatoes 1 Garlic clove ¼ Of onion Oil 1 cup of water Salt Mozzarella Cheese Steps: 1. Blend the tomatoes, onion and garlic. 2. Fry the sausage in a pan with a little bit of oil until it is torn apart completely and fried.* 3. Add the noodles in and stir the mix until the noodles are color light brown. 4. Add the blend and mix it. 5. Do not stir! 6. Wait for five minutes and add the cup of water. 7. Turn the stove or fire in the stove down to low. The noodles will be ready when you see they are almost completely dried. 8. Add as much salt as you think it needs. 9. Put some mozzarella cheese on top. *Be careful with the oil when you are frying. The pan is very hot. Do not burn yourself! Glossary 25 Glossary A pinch: A small amount measured by what two fingers can grab. Add: To unite, join or include. Blend: To mix smoothly and inseparably together. Boil: To change from a liquid to a gaseous state, producing bubbles of gas that rise to the surface of the liquid. Cover: To place something on top for protection. Cut: To divide with or as if with a sharp-edged instrument. Fry: To cook in a pan or on a griddle over direct heat, usually in fat or oil. Grab: To take. Mash: To crush. Mix: To combine or put together. Oven: A chamber or compartment, as in a stove, for baking, roasting, heating, drying, etc. Peel: To strip off its skin, rind, bark, etc. Pour: To send (a liquid, fluid, or anything in loose particles) flowing or falling, as from one container to another, or into, over, or on something. Stir: To move one's hand or an implement continuously or repeatedly through (a liquid or other substance) in order to cool, mix, agitate, dissolve, etc., any or all of the component parts. Turn: To rotate.
