Hannah Harris is an honor student
who likes swimming, music, and
the arts. She enjoys traveling and
writing about her adventures. She
loves to spend time with her family,
cat, Noodle, and dog, Marco.
Fiddling with furniture painting,
faux finishing, and browsing for
perfect pieces for her antique booth
are some of Lisa Barry’s favorite
pastimes. She is sweet on fabric,
color, paint, and anything related to
design and decorating. Oh yes, did
we mention that she loves color?
A prerequisite for Lisa’s projects is
that they must spark cheerfulness as
she works—it is a must! She fancies
that her designs sprinkle happiness

Aimee Hale is a born and raised
Nashvillian. Aimee graduated from
Nossi College of Art in graphic
design and is continuing her degree
at MTSU. Her interests include
painting, sculpting, outdoor sports,
and good music.
Sarah Shepherd is finally calling
Nashville home after residing in the
rustic mountains of East Tennessee
for the whole of her spirited
childhood. Currently she pursues
a degree in English writing from
Belmont University. When the free
moments flow, she enjoys biking on
breezy nights, travel, Whole Foods,
and grooving.

The
Bakes Up Memories

For many families, the Christmas season brings
with it the scents of sugar and gingerbread cookies rising from the oven. The Bennett family is no exception. For
more than thirty years, Sally Bennett has been collecting her favorite Christmas cookie recipes to enjoy with her eight children and their families. “Making cookies together is one of our favorite holiday activities,” Sally says as
she looks through scrapbooks of Christmases past. The family has a canon of
about seven different kinds of cookies they make: Pealing Bells, Mushrooms,
Candy Canes, Robins’ Nests, Granny’s Fruitcake, Lemon Logs, and Chocolate
Stars. To make the cookies, Sally first makes large batches of the different
kinds of dough and then freezes them. When company calls, she thaws the
dough and together she and her children, grandchildren, and other friends
and family members will make the cookies together. Sally and Cliff, her husband, emphasize that it’s a project everyone enjoys: “When our baby grandson Patrick comes into town, he makes cookies, and when Granny comes
into town, she makes cookies. It’s an intergenerational activity.” Year after
year, the Bennett family and friends are brought together by, among other
traditions, the shaping and baking of delectable Christmas cookies. Spreading
the holiday cheer, Sally has shared some of her favorite recipes with Southern Inspired so that you, too, can enjoy them with your friends and family:

LIGHT COOKIE DOUGH
BUTTERCREAM ICING
2/3 cup butter
2/3 cup sugar
1 cup honey
2 eggs
2 teaspoons lemon or vanilla flavoring
5 1/2 -5 3/4 cups white whole wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter
1/3 cup vegetable shortening
1/8 teaspoon salt
1 1/2 teaspoon vanilla
5 cups confectioner’s sugar (1 box = 4 cups)
1/3 cup milk
Cream butter, sugar, and honey. Add eggs and flavoring
and beat well. Combine flour, baking soda, and salt
and beat into creamed mixture. Chill in 3 or 4 small
packages.
Cream butter and shortening. Add vanilla and salt.
Gradually add in sugar, one cup at a time, beating well on
medium speed. Once all sugar is mixed, icing will appear
dry. Add milk and beat at high speed until light and fluffy.
On a floured surface, Roll out dough on a floured
surface to 1/4 – inch thick. Cut out cookies and place
on parchment paper-lined baking stone or cookie
sheets.
Bake at 375 degrees (325 convection) for 9 minutes.
Watch carefully. Remove cookies andd place on wire
racks to cool. Store in airtight containers.
Cookie Decorating Party
Make 2 recipes of Light Cookie Dough and 2 recipes of
Buttercream Icing. Divide one recipe into 5 plastic bowls
and color different colors with food coloring. Divide the
second recipe reserving 2/3 for white frosting and 1/3 for
chocolate frosting. Add melted squares of cocoa and
more milk to frosting mixture to make chocolate frosting.

COOKIES
Yield: 3 dozen
1 cup butter
1 cup confectioners’ sugar
1 egg
1 teaspoon vanilla
1 teaspoons almond extract
1 1/2 cups plain flour
1 teaspoon salt
1/2 teaspoon red food coloring
1/4 cup crushed peppermint candy
1/4 cup granulated sugar
Mix butter, sugar, egg and flavorings in a large bowl. Add flour and salt and combine to make
dough. Divide dough in half and blend the red food coloring into one half of the dough
mixture. Refrigerate the dough for two hours.
Preheat oven to 375 degrees.
Using approximately 1 teaspoon of dough, roll a 4 inch strip from each color. Place the strips
side by side, pressing lightly together, and then twist the two strips like rope. Crook the top
to make a candy cane shape. Complete the cookies one at a time because pre-rolled stips of
dough will become too dry to shape. Place on parchment- covered baking sheets.
Bake 9-10 minutes or until lightly browned. While still warm, sprinkle the cookies with a
mixture of crushed peppermint candy and granulated sugar.

LEMON CHEESE LOGS
1 cup sugar
1 cup butter, softened
1 3 ounce package cream cheese, softened
1 egg yolk
2 1/2 cups white whole wheat flour
1 cup finely chopped almonds
1/2 teaspoon salt
1/2 teaspoon grated orange peel
1 teaspoon almond extract or cherry extract
25 maraschino cherries, halved and well
drained
1 cup sugar
1 cup butter, softened
1 3 ounce package cream cheese, softened
1 egg yolk
2 1/2 cups white whole wheat flour
1 cup finely chopped pecans
1/2 teaspoon salt
1/2 teaspoon grated lemon peel
1 6 ounce package semisweet chocolate
morsels, melted
Colored or chocolate decorating sprinkles
Cream sugar, butter, and cream cheese. Beat
in egg yolk. Stir in flour, nuts, salt, orange
peel, and almond extract. Shape dough into
two 8-inch rolls. Wrap in plastic wrap and
refrigerate at least 2 hours.
In a large bowl, cream sugar, butter, and
cream cheese, then beat in the egg yolk. Stir
flour, nuts, salt, and lemon peel into creamed
mixture. Cover and refrigerate for at least 2
hours.

Cut logs into 1/4 –inch slices. Place the rounds
on parchment-lined baking sheets. Place a
cherry-half near the bottom of each slice for
a bell clappers. Fold in the sides of each slice,

long. Place logs onto parchment-lined baking
sheets and bake until light brown, about 12

Tennessee is a wonderful place for Christmas. The Opryland Hotel
recently reopened, downtown Nashville has gotten its holiday makeover. Locals and visitors might be looking for holiday activities that are
off the beaten path.
Nestled off Harding Pike in Belle Meade sits the Belle Meade Planta-
tion, the former home of General William Hicks Jackson and his family,
The thirty-acre historic site offers a unique look at the way Christmas
was celebrated in the 1800s.
The plantation’s original mansion was restored and now serves as
a museum where visitors can take a tour guided by experts dressed in
Civil War era garb.
The mansion is currently decorated for the holidays. Decorations
remain somewhat simple in comparison to modern -day standards but
stay true to the time period.

“The Victorians had a morbid
sense of life and death, and
Christmas was usually a time
for reflection in addition to
celebration,” says John Lamb,
plantation curator.
Frothy syllabub, a traditional winter drink, waits
in the parlor room for
guests. Syllabub comes
in many variations. The
Belle Meade recipe includes
white wine and eggs. The
mixture then sits for a few
days to allow the cream to
rise and froth.

Before the Civil War, the Christmas holiday was a simple affair, but after the war was over there was a desire to
be modern and forward thinking. This new outlook combined with mass production and the importation of goods
sparked the commercialization of Christmas. According to
Lamb, the change was not received well by the press, and
families such as the Jacksons were criticized.
The Belle Meade Plantation offers an educational
experience. Today's guests learn about the Jackson
family and other residents of the plantation. Lamb notes
that the Jackson family hosted well-known guests during
the holiday season such as President and Mrs. Cleveland,
Robert Todd Lincoln, Charles Dudley Warmer, and William
Howard Taft.

After touring the mansion and plantation grounds,
guests can relax at The Winery, open Monday through
Saturday 11:00 a.m. to 4:30 p.m. and Sunday from 12:00
p.m. to 4:30 p.m. All the wines offered come from grapes
grown near Hohenwald, Tennessee, and the wine is
made by award winning vintner Brian Hamm. Director Alton Kelley and his wife Sheree, run the non-profit
winery. All bottles of the local wine selection are under
twenty dollars, and all proceeds go back to the plantation
to help preserve local history.

BELLE MEADE BLACKBERRY WINE JAM CAKE
1 1/2 cups sugar
3/4 cup oil
1/2 cup Belle Meade Plantation Blackberry Wine
3/4 cup buttermilk
3 eggs
1 1/2 cups blackberry jam (I prefer seedless)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon all spice
1 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon salt
1 cup chopped pecans (optional)

Preheat oven to 325 degrees F (165 degrees C). Grease and flour three nine inch round cake
pans. In a small bowl, stir together flour and next seven ingredients. In a large mixing bowl
combine sugar, oil, wine, buttermilk, eggs and blackberry jam; mix well. Gradually add flour
mixture to wet ingredients. Beat on low speed until blended. Scrape bowl, add vanilla and
beat four minutes on medium speed. Stir in nuts if desired. Pour batter into prepared pan.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center
of the cake comes out clean. Let cool in pans on wire racks 10 minutes. Remove to wire
racks; cool completely.
Prepare Blackberry Wine Filling and Blackberry Wine Frosting. Place one cake layer on serving
plate; top with Blackberry Wine Filling. Top with second cake layer; top with Blackberry Wine
Filling. Add third layer; frost the top and side of cake with Blackberry Wine Frosting.
BLACKBERRY WINE FILLING
1/3 cup sugar
3 tablespoons cornstarch
2/3 cup Belle Meade Plantation Blackberry Wine
1/2 cup blackberry jam (seedless)
2 tablespoons lemon juice

Combine sugar and cornstarch in small saucepan. Stir in wine and blackberry jam; cook over
medium heat, stirring constantly, until thickened. Do not boil. Remove from heat; stir in
lemon juice and butter. Cool completely.
BLACKBERRY WINE FROSTING
1/2 cup butter or margarine, softened
1/4 cup Belle Meade Blackberry Wine
4 cups (about 1 pound) powdered sugar
Beat butter and wine in medium bowl until creamy and well blended. Gradually beat in
powdered sugar until smooth. Makes about 4 cups frosting.

SOY STIR FRY SAUCE
Yield: 4 ½ cups
1 1/2 cups dry white wine
1/2 cup dry sherry
1 15-ounce bottle soy sauce
1/3 cup firmly packed brown sugar
1 clove garlic, quartered
2 tablespoons chicken-flavored
granules
2 teaspoons grated fresh
gingerroot
1 1/2 teaspoons black peppercorns
1 1/2 teaspoons sesame oil
Combine all ingredients. Cover and
refrigerate for 6 hours. Strain and
pour into a sterilized bottle and
cork. May be refrigerated for up to 3
weeks.

GRANDMA SMITH'S FUDGE
1 pound powdered sugar
1/2 cup cocoa
6 tablespoons butter
Pinch salt
4 tablespoons milk
1 teaspoon pure vanilla extract
In a saucepan melt butter with cocoa and
salt, then alternately add powered sugar
and milk stirring constantly. Cook until
mixture forms a ball. Remove from burner
and add vanilla. Grease the bottom of a
10X10 glass dish with butter and spread
fudge to corners. Allow fudge to set and
cut into squares.
TIP: For thumbprint cookies, spoon fudge in cookie center while cookie is cooling
on wire rack. We used store bought peanut butter cookie rolls for cookies shown
below.

PEPPERMINT PRETZEL TWISTS
1 10-ounce package of thin pretzels
1 24- ounce package vanilla -flavored candy coating
1 small package peppermint candies
Place vanilla candy coating in a glass bowl and microwave on high
for 2 minutes or until melted. Coating melts faster when stirred.
Dip pretzels into candy coating, covering completely. Place coated
pretzels on wax paper and sprinkle with crushed peppermint. Coated
pretzels will dry in approximately 5 minutes. Garnish with whole
peppermint candies.
*TIP Peppermint Twists were easier to crush.

Howard Wiggins of Hearthstone Interior Design was given the opportunity to set up a
Christmas tree display at Copper Steel Farms, former residence of country music singer
and songwriter, Kenny Chesney. The twelve- foot Christmas tree will be on display in
the home through the Holiday season. The Christmas tree is covered in sterling silver
ornaments, a display which has been a lobor of love for many Christmases as Wiggins
has been collecting the ornaments since th 1970's. The collection features various
ornaments by American Heritage, Boston Museum, Buccellati, Christopher Radko,
Gorham, Halls, Hand and Hammer, Lunt Silversmiths, Neiman-Marcus, Reed and Barton,
Sculpture Workshop, Tiffany, Towle Silversmiths and Wallace Silversmiths. Buccellati, an
Italian company, introduced its first sterling silver ornament to the U.S. market in 1986.
The 1988 Buccellati Santa showcased on the Christmas tree at Copper Steel Farms has
been one of the most sought-after sterling ornaments in the country, and the Nashville
designer considers this to be his most prized ornament. Other favorites include those
by Christopher Radko, who produced only three ornaments from 1997 to 1999. The
1998 Regal Reindeer from this collection was designed to double as a pin. NeimanMarcus introduced a three dimensional ornament comprised of moving parts featuring a
reindeer, an angel and a jack-in-the box. Also gracing the tree at Copper Steel Farms
are the large and impressive Archive Series ornaments produced by Gorham from 1988
until 1993. Gorham was the first of the U.S. Silversmiths to introduce a series of sterling
ornaments. Yet the very first sterling silver ornament ever produced was not part of a
series. This was the1964 Pieta made by Towle for the New York World’s Fair and is one
of the many rare ornaments crepresented in Wiggins's collection. Towlel's later series,
The Twelve Days of Christmas, set the stage for the beginning of the sterling ornament
collector's market as it exis today.

I just moved to St. Louis, so I wanted
to see the sights. If you ever visit St.
Louis, the first place you should go is
to the Zoo. IT’S FREE!!!
The zoo has almost every animal you
can imagine, from kangaroos to grizzly
bears! Plus, you can see all of the animals
you normally think of at a zoo, like lions ,
giraffes, tigers, and zebras. The zoo also has
endangered and rare animals, like Bongos.
My favorite part was the penguin exhibit.
It was FREEZING in there, so bring a
sweater!
They also have a butterfly exhibit, where
you walk into a giant glass dome with
plants everywhere. The butterflies live in
a natural habitat and fly around freely.
They land on people, too! They even

have insects and reptiles…but they don’t
run around freely.
In the summertime, you can feed stingrays
and see a sea lion show where the sea lions
go on stage and perform tricks!
There is also a train that takes you all over
the zoo. It is so much fun! It goes through
dark tunnels, past the elephants, and saves
you from a LOT of walking!
So, if you visit St. Louis, plan a day to go to
the zoo!

ADMISSION: Admission to the Saint Louis Zoo is free to all. There are
fees for Zooline Railroad, Sea Lion Show, Children’s Zoo, Conservation
Carousel, Wild Adventure simulator, 3-D movie, and Zoo parking lots. The
Conservation Carousel and Children’s Zoo are free the first hour the Zoo is
open. Limited street parking is available for free.
ZOO HOURS: The Zoo is open year round, except December 25 and

One Year Ahead
· Hit the post-Christmas sales. Stock up on stockings, wrapping paper, bows and Christmas
decorations.
· Have a plan. Consider new ideas to enhance your Christmas traditions for next year.
Six to Three Months Ahead
· Prepare your guest list.
· Select your menu.
· Draft a budget.
· Christmas goodies can be baked ahead and stored until the Holidays. Take care to wrap securely and
store in an airtight container in the freezer.
One Month Ahead
· Order turkey or ham.
· Purchase wine, beer and soft drinks if you have room to store.
· Purchase or make your table decorations.
· Plan your table settings.
One Week Ahead
· Make your fudge and jams and store in the refrigerator.
· Pull out turkey roasting pan, baking dishes and other serving dishes and make sure they are in good
condition and large enough for assigned use.

· Make sure cloth napkins are clean and place in attractive baskets for containers if you are having a

· Fill your salt and pepper shakers, sugar bowls and other table container.
· Defrost in refrigerator baked goodies or casseroles made earlier.
One Day Ahead
· Buy all fresh produce, seafood and flowers.
· Make stuffing and refrigerate in a sealed bowl.
· Prepare glaze for your ham.
· Refrigerate your drinks and purchase ice if needed.
· Polish your silver and glasses and cover with a soft clean cloth.
· Iron your tablecloth and set your table if not done earlier.
Christmas Day
· Turn on the music, put on your apron and good attitude and relax.
· Preheat your oven.
· Put the ham or turkey in the oven or roaster to cook. Do not stuff your turkey ahead of time. Bacteria
can develop in the cavity even if refrigerated.
· Vegetables to be roasted should go on one hour before the meat is cooked.
· Other sides that do not need long to cook should be cooked while your meat is cooling.

Red Nose Lighting
WSMV News Channel 4 we have done for the last
couple years. We go early in September and set up
the angel tree set because they do all their video
shots early to begin airing in November. We then
return right around Thanksgiving to decorate the
news studio, kitchen and interview set.
The District The DISTRICT began in 1989 as a
collaboration between the Metropolitan Historical
Commission, Historic Nashville and the Historic
Riverfront Association. Patterned after the National
Trust for Historic Preservation's successful "Main
Street Program," the organization focuses on the
historic areas of Nashville, specifically 2nd Avenue,
Broadway and Printer's Alley.
