March/April2011 platinum logo here The Club Broken Sound Earns Nation’s Second GEO Certified™ Award International Golf Organization Recognizes Club’s Sustainability Initiatives Broken Sound Club’s latest distinction is becoming only the second golf facility in the U.S. to be GEO Certified™ — the sustainability assurance of the international Golf Environment Organization (GEO). What is normally a three-year process to become GEO Certified™ was shortened to a year and a half through the efforts of John Crean, General Manager, and Joe Hubbard, Broken Sound’s Golf Course Superintendent. A vast amount of data from the club’s operations was coordinated in order to complete the application process, and recertification is required every three years. Jonathan Smith, the Scotland-based CEO of GEO, was at Broken Sound for the Allianz PGA Seniors Championship to make the presentation in person to John Crean’s team. The Golf Environment Organization is an international non-profit dedicated to supporting sustainability in the sport of golf. As required for the GEO Certified™ award, Broken Sound’s golf facility met advanced sustainability requirements and is committed to continuous improvement in areas such as landscape and ecosystems, water, energy, products and supply chains, and environmental quality. GEO works with a global network of golf organizations, environmental groups, scientists and corporate and individual sponsors. Supporters include the European Tour and Golf Association, United Nations Environmental Program, Club Managers Associations of Europe and America, International golf course architect groups, Rolex, UPS and others. To become only the second club in the United States to receive GEO certification is a huge honor. GEO’s stringent certification requirements reflect our own philosophy in maintaining environmental responsibility. GEO sets the international ‘gold standard’ in the field of golf course sustainability, and to be recognized by them is an incredible distinction. The GEO certification is the latest example of Broken Sound’s leadership in resource efficiency and environmental stewardship since launching “green” initiatives three years ago. This is Allianz week as I am writing this column. Some members have questioned me and others as to how the Tournament impacts the finances of Broken Sound. Initially, the Club signed a three year contract with the Tournament and then extended such contract for three additional years. We are currently in our fifth year and have one more year to go on our current contract. The contract calls for the payment of $200,000 to Broken Sound. This sum is composed of a $150,000 fee and other payments of $50,000. In addition, we provide catering services to the Tournament such as their Draw Party (held the Tuesday night prior to the actual tournament). There are other catering functions at the Old Course such as breakfasts, lunches and dinners during tournament week. We receive approximately $100,000 for combined food and beverage services and our gross profit on such sum is approximately $83,000. Yes, we do have labor associated with the serving of these meals but that labor cost is in our regular budget and no incremental labor is used. If we add up these amounts, Broken Sound’s annual budget is reduced by approximately $283,000 per fiscal year. This translates into a dues reduction for every member of our club of approximately $200. As I mentioned above, the Draw Party for Allianz is a catering event. The word “catering” creates some discussion amongst our members, so let’s discuss this subject. In our last fiscal year ending September 30, 2010, we have realized $1,400,000 in gross revenue and a gross profit of $1,023,000 from Catering events. Adding in other costs such as incremental labor, linens, etc. of $436,000 we realized net revenue of approximately $ 587,000. This equates to a dues reduction of approximately $400 for every member. Some members do not like the inconveniences that this has caused us but we believe that a considerable dues reduction of this size per member per year is well worth some slight modifications of our activities. What does the future hold…. our card room/ function extension will be completed by June 15th that will offer management the flexibility to have a catered function on our premises on days the new card room extension is not being used and serve you in the manner in which you are accustomed to with no inconveniences. When the Board of Governors presented the expansion plans, we advised you that the incremental costs of running this facility would be increased by approximately $135.00 per year per member. However, if we can increase our catering business by 25% we can offset these increased costs. In that manner your Club can offer you the additional services you want in the manner you are accustomed to at no incremental cost to you. In other words, we will have bettered your life style at no increase in your dues. The Board has to discuss this fully before management is given any approval and the opinions of you, our members, will be taken into consideration. My vision for Broken Sound and one of my goals is to offer our members everything that a club possibly can while maintaining a budget that is fiscally responsible and controls our every expenditure. We expect all of the construction to be completed by June 15th, on schedule and on budget. The next couple of months will be hectic as your card games are transferred to the Centre Court on March 7 th , at which time construction will commence on the 2nd floor, the Administration personnel will move upstairs, and renovation begins on the old Administration office area. This will create a new area for our members to utilize on the main floor. Food and beverage (catering) will also remain on the main floor. At times we forget to thank individuals who go out of their way to help make your Club function in the manner it does and devote their time and energies. So I hope all of our members will join me in thanking the 110 members who work on our 11 committees to help make Broken Sound what it is. So if you see someone you know who is on a committee, join me in saying “thank you, we appreciate your efforts”. Until my next column, enjoy yourselves, take advantage of all the wonderful activities that Broken Sound offers and live life to the fullest. Best wishes, Ivan Snyder President Board of Governors Staff In The News Beyond The Call Of Duty Dieumerite Etienne’s quick response in assisting a victim of an auto accident on club premises gained him the CMA Outstanding Employee Service Award. Mr. Rebok, the Green Chairman for the Club Course has requested the reduction of stakes and standing ropes throughout the course for aesthetics and in some cases safety of members walking to their balls that must step over or around ropes. We have high hopes that carts will scatter past the yellow ropes once off the tees and not follow the same tracks you may see. Some ropes will be left in place, as will signage and some green-white small stakes with the warning all will be adhered to. Please remember, that all the yellow balls around the greens are for Handicap access only. From the looks of the amount of carts going inside the restricted areas currently that would be 80% which isn’t exactly what we should see. Joe Hubbard, CGCS Well the big news will be old news by the time you are reading this article about the GEO (Golf Environment Organization) certification and our distinction as the second club in the United States to achieve it. With this certification in sustainability and environmental awareness goes responsibility in everything we do as it relates to our operations, recycling, waste reduction, electricity consumption, expansion of golf course buffers and how we keep records for tracking and compliance. It is a great honor to be one of the trailblazers in this endeavor and took a lot of work and planning to get to this point. The other news I wish to share with you, is that by March or April we will have achieved full Audubon Sanctuary Certification for the Club Page. 8 Course, which we have been working on the past couple of years. The Old Course was just re-certified for another two years. The Allianz Tour Event is over and almost all the main tournaments for the members are completed on the Club Course. However, the next couple of months we have a very busy schedule on the Old Course. As of today I have only one project on my radar besides the ongoing compost distribution for both courses. That project is to run a coquina path from the concrete cart path to the right of #13 green on the Club Course out of play but it will, like hole #5 and #16, speed up play and help members achieve better access to the green. There will be some beds and plantings here and there for both courses that will be discussed with both Green Chairmen which we will list in the next newsletter. Broken Sound Club Food & Beverage Tim Nelson, Director of Food & Beverage 241-6831 Food For Thought Lorant Botha, CHSP Catering Manager Dear Members, Born This Way! Working in the Catering industry is not every person’s cup of tea. Tough skin is a major requirement, or is developed with endurance. Often times, I meet event planners who have decided to join the industry after orchestrating their own celebrations. Those educated in hospitality have the same rate of success. The best method for educators in this ever-changing field is to design internships for the students where they can fully experience the day to day grit of hospitality. Beyond the glitz and the glam, there is lots of hard work. Luckily, many of our servers are part of superior education programs that include internships. The hands-on training they receive at venues such as Broken Sound Club is priceless, as no manual, no audio CD will fill them in on the requirements and behinddoors reality of our industry. Beyond the fabulous façade of an event, there is thorough planning, agile preparation and fast- paced delivery. Catering is more than foodservice at Broken Sound Club; it means elaborate planning, guidance, passion, sweat and sometimes even tears. I can proudly say, that our club is and has been the talk of the town for all the right reasons. The events that we create resonate far beyond our fellow Boca country clubs, but as far as neighboring counties and states. As a consequence of the most recent Club Course Ladies Member Guest, we have received numerous inquiries on what we did, as other clubs would like to duplicate the event for their own members. This year’s Hadassah Women of Valor Gala made Broken Sound shine proudly amongst an elite tier of clubs, whereas the plethora of celebrations make our club desirable not just for parties, but also a community people pride themselves on and enjoy. Lorant G. Botha, CHSP Catering Manager 241-6892 To Go Meals To place orders for To Go meals, Shiva Platters etc. please call Alexandra Stewart at 561-241-6824. Keep an eye out for the Catering To Go brochure around the club! Many times we’ve been asked “What do you do over there?” The answer has always been the same: “We think outside the box.” But it recently dawned on me that what we do differently from other caterers is the fact that we are not here to hype and excite people over what they are about to embark on, but most importantly we genuinely get excited with them. Defending two players at the net Here is the scenario, a very common one when playing doubles: You are at the baseline while your partner is at the net, and both of your opponents are also at the net. I know this situation may seem a little intimidating and you feel as if you have no place to hit the ball, but you may be surprised with the number of great options you actually do have. Page. 10 60 Love League Broken Sound Club Fitness / Spa DIRECTORS NOTE Michael Tompkins, Director of Fitness and Spa Workout Mistakes You Probably Make When it comes to working out, getting to the gym on a regular basis is only half the battle. The other half is making the most of your time while you’re there. By paying closer attention to your exercise form, routine, nutrition and more, you’ll be better able to achieve your fitness goals, not to mention avoid injury and weight-loss plateaus. Make sure you’re not committing any common fitness flubs, and if you are, learn how to correct them. Mistake: Not Stretching. You’ve probably heard how important warming up and cooling down is, but the most important part of both is stretching. “Not stretching after your workout may cause uncomfortable soreness and impingements—consequences that will hinder the effectiveness of your next workout.” Solution: Yoga is one of the easiest ways to incorporate stretching into your fitness program. “The poses will help you release a significant amount of tension in your muscles and will help you feel more relaxed.” In addition to this, working with a personal trainer and / or massage therapist could also be very beneficial. Mistake: Not Incorporating Resistance Training. You might be intimidated by those huge weight machines and dumbbells, but next time you hit the gym just for the treadmill, reconsider. The benefits of resistance training are endless, “Resistance training helps build muscle, which in turn promotes fat burn, leading to a lower body fat percentage in the long run.” In addition to cardio, strength and resistance training are essential to getting in shape. Solution: Don’t be afraid to approach an available trainer, or floor person. That’s what they’re there for! He or she can demonstrate how to use the equipment and also discuss how to incorporate those types of workouts into your fitness plan two to three times per week. He uses the fitness facility at the club at least 4 days per week. Under the recommendation from his Doctor to seek out an experienced massage therapist to aid with his neck issue, Mr. Swedko started seeing Ronald Gallego at Broken Sound’s spa. It has been two months since Mr. Swedko has started seeing Ronald and has noticed an increase in flexibility and range of motion in his neck area. He feels that the increase in flexibility has also attributed to improving his golf game as well. He finds that after his deep tissue massage, he comes out feeling very relaxed and feeling great. He finished by stating, “It feels as if he’s greased my joints and I leave there walking on air.” 2 one hour (one-on-one) Private sessions with a certified nutritionist Special Introductory price= $500.00 For further information contact Dr. Jeff Fields at 561-241-6890 or e-mail jeff_fields@brokensoundclub.org St Jude’s Aerobathon- Thank you to all the participants who helped raise money for the St. Jude’s Children’s Research Hospital.
