Our private dining room comfortably accommodates up to forty guests, or for groups of 100 or more, the entire dining area may be reserved. Whatever the occasion, we will create a personalized dining experience ranging from elegant buffets to multi-course gourmet dinners. Just relax while we take care of all the details. 3½ qt. chicken stock 2 lbs. chicken breast, medium dice 3 egg whites 1 small carrot, diced 1 small onion, diced 2 plum tomatoes, diced 1 qt. crimini mushrooms, sliced 1 garlic clove, crushed 1 t thyme leaves 3 T parsley, chopped 2 T dried morel mushrooms, ground 2 T dried porcini mushroom, ground salt and pepper Method: Place the chicken, vegetables, herbs and spices in the bowl of a food processor and pulse until combined. In a separate bowl, beat the egg whites until frothy and then fold into the other ingredients. Place all the ingredients in a 6 qt. stockpot with the cold stock and whisk together. Place the pot over medium heat, and slowly bring to a simmer. After 5 minutes, gently scrape the bottom of the pot with a wooden spoon, ensuring nothing sticks to the bottom of the pot. Continue to simmer the soup for around an hour. A thick coagulated ‘raft’ will form on the top of the soup; do not stir it. Poke a hole in the raft with a cooks spoon and simmer for another 10 to 15 minutes until the broth is clear and flavorful. Line a strainer with a triple layer of cheesecloth and place it over a clean pot. Gently ladle the consommé through the strainer, taking care not to break the raft. Season with salt and pepper to taste. Chef Ryan states, “This winter I am very excited to present some modern interpretations of classic Austrian cuisine in addition to our more traditional Alpine fare. I look forward to seeing you and serving you for lunch, après ski, dinner or all three!" Billy was the previous owner of Bear Dance restaurant in Midway/Heber City and also the GM & managing partner for Butcher’s Chop House of Park City. “I’m looking forward to greeting many of my new & old friends to The Hirsch!” Doug Whitlock, Front Office & Sales Manager, is going on his 10th year with the Goldener Hirsch Inn and enjoys welcoming back our many families each year and seeing how much their children have grown. “I love hearing how the kids have been doing in school and how anxious they are to get out skiing again.” Kelley Davidson, General Manager, is beginning his 8th season and so enjoys meeting and greeting guests old and new that many times you’ll find him having breakfast with guests on his day off! “I have been in the ski resort business for over 40 years and I love my job at the Goldener Hirsch Inn. Since 1992 it has been owned and operated by the philanthropic Eccles family whose roots date back to the late 1800’s and who have been part of the development of Utah since then. The Eccles family, known for their involvement with the 2002 Olympic Winter Games and the Sundance Film Festival, are usually found greeting guests on Saturday mornings prior to their weekly family ski day.
