Home Canning Rules
1) Know which canner to use: The boiling-water canner - basically a big pot with a lid and a rack in the bottom, is
used for high-acid foods, which naturally resist bacteria growth. Pressure canners are used with low-acid foods and
recipes that are especially prone to harboring harmful microorganisms. They heat food hotter than boiling-water
canners. Recipes will specify which type of canner is appropriate.
2) Choose the right jars: Use jars made specifically for canning. Don’t use glass jars from purchased food, even if
they look like canning jars. Don’t use jars that look different from the canning jars currently on the market. And avoid
jars with chipped edges because that can affect the seal. Use the jar size specified in the recipe.
3) Use lids properly: Use the special two-piece lids manufactured for canning. Reuse rings but do not reuse lids,
which have a sticky compound that seals the jar. Don’t screw on lids too tightly or they won’t create a vacuum seal. Heat
the lids in very hot but not boiling water or the compound won’t seal. Test for sealing on each jar after it has cooled.
4) Choose the right recipe: Modern canning recipes are safer than those from even 20 years ago. Foods may be
processed longer or hotter. Always use tested recipes from reliable, current sources, and follow the recipe exactly.
Don’t alter ingredients. Alterations can compromise food safety.
5) Keep it clean and keep it hot: Keep everything scrupulously clean. Wash and sterilize jars. Pack hot food into
hot jars one at a time, not assembly-line style. Take only one sterilized jar out of the canner at a time. As soon as it
is filled, place it back in the simmering water in the canner.

Homemade Zesty Salsa
Makes 6 (16 oz.) Pints
Traditional salsa with a zesty kick! Use whatever type of chili peppers your family prefers,
and add hot pepper sauce if your tastes are even more daring.
INGREDIENTS:
10 cups chopped cored peeled tomatoes (about 25 medium)
5 cups chopped seeded green bell peppers (about 4 large)
5 cups chopped onions (about 6 to 8 medium)
2-1/2 cups chopped seeded chili peppers, such as hot banana,
Hungarian wax, serrano or jalapeño (about 13 medium)
1-1/4 cups cider vinegar
3 cloves garlic, finely chopped
2 Tbsp finely chopped cilantro
1 Tbsp salt
1 tsp hot pepper sauce, optional
6 (16 oz) pint or 12 (8 oz) half pint glass preserving jars with lids and bands
DIRECTIONS:
PREPARE boiling water canner. Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
COMBINE tomatoes, green peppers, onions, chili peppers, vinegar, garlic, cilantro, salt and hot pepper sauce, if
using, in a large stainless steel saucepan. Bring to a boil over medium-high heat, stirring constantly. Reduce heat
and boil gently, stirring frequently, until slightly thickened, about 10 minutes.
LADLE hot salsa into hot jars, leaving 1/2 inch headspace. Remove air bubbles and adjust headspace, if necessary,
by adding hot salsa. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
PROCESS both pint and half pint jars in a boiling water canner for 15 minutes, adjusting for altitude. Remove jars
and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

INGREDIENTS
4 cups crushed berries
4 1/2 Tbsp Ball® RealFruit™ Classic Pectin
3 cups granulated sugar
6 half pint (8 oz.) jelly jars
DIRECTIONS
1) Prepare boiling water canner. Heat jars in simmering water
until ready for use. Do not boil. Wash lids in warm soapy
water and set bands aside.
2) Combine berries in an 8-quart saucepan. Gradually stir in pectin. Bring mixture to a full rolling boil that cannot
be stirred down, over high heat, stirring constantly.
3) Add entire measure of sugar, stirring to dissolve. Return mixture to a full rolling boil. Boil hard 1 minute, stirring
constantly. Remove from heat. Skim foam if necessary.
4) Ladle hot jam into hot jars, one at a time, leaving 1/4" headspace. Wipe rims. Add lids and bands and tighten.
5) Place filled jars in canner ensuring jars are covered by 1" to 2" of water. Place lid on canner. Bring water to
gentle, steady boil.
6) Process jars for 10 minutes, adjusting for altitude. Turn off heat, remove lid and let jars stand for 5 minutes.
Remove jars and cool. Check lids for seal after 24 hours. Lids should not flex up and down when center is pressed.

Boiling-Water Canning Steps
• Wash empty canning jars in hot, soapy
water. Rinse thoroughly. Place jars in the
boiling-water canner (or another large
pot). Cover jars with hot water; bring to
a simmer over medium heat. For food
processed for less than 10 minutes,
boil the jars 10 minutes and keep warm
in simmering water until needed. Set
screw bands aside; place lids in another
saucepan. Cover lids with water; bring to
a simmer over medium heat (do not boil).
• If using a different pot for sterilizing the
jars, fill the boiling-water canner half full;
bring to boiling. Heat additional water in
another large pot (for topping off water in
the canner); keep it hot but not boiling.
• Prepare only as much food as needed
to fill the maximum number of jars your
canner will hold at one time. Keep the
work area clean.
• Remove canning jars from water with a
jar lifter.
• Remove sterilized jars from the hot water;
place hot jars on cloth towels to prevent
them from slipping during packing.
• Pack food into jars using a wide-mouth
funnel, allowing for adequate headspace.
Ladle boiling liquid over the food, maintaining the adequate headspace.
• Release trapped air bubbles by gently working
a sterilized nonmetal utensil (such as the one
provided in a canning kit) down the jars’ sides.
Add liquid, if needed, to maintain the necessary
headspace; double-check with a ruler. Headspace
allows food to expand when heated and allows a
vacuum seal to form.
• Wipe jar rims with a clean, damp cloth; food on
the rims prevents a perfect seal. Place prepared
lids on jars; add screw bands and tighten according to the manufacturer’s directions (don’t
overtighten).
• Set each jar into the rack in the canner as it is
filled and sealed. Jars should not touch each other.
Replace canner cover each time you add a jar.
• When all jars have been added, ladle hot water
from the extra pot into the canner to cover jars
by 1 inch.
• Cover; heat to a full rolling boil. Begin processing
time, following recipe procedures and timings exactly. (See altitude information below if necessary
to adjust for altitude.) Keep water boiling gently
during processing, adding boiling water if level
drops. If water stops boiling when you add more,
stop timing, turn up heat, and wait for a full boil
before resuming counting.
• At end of processing, remove jars; place them
on a rack or on towels in a draft-free area to cool.
Leave at least 1 inch of space between jars to
allow air to circulate.

Quick Safety Tips
1) Do not set a fan facing the hot jars of any canning project to cool the jars more quickly. You run the risk of cracking the jar
and having to throw away the product.
2) Do not skimp on hand and eye protection when working with peppers. Use something to protect your eyes and never forget
to wear your gloves.
3) Do not try to use flat lids a second time. You risk bacteria and botulism.
4) Don’t change the recipe. Changing the proportions of sugar to fruit in a spread can prevent it from reaching a proper gel.
More importantly, adding a pinch of this or that can change the acidity of the finished product, which can allow potentially
dangerous organisms to flourish.
5) Don’t change the processing time. Like ingredient proportions, the processing times in canning recipes have been carefully
calibrated to ensure that they will kill off all harmful organisms. It’s best to leave the fiddling to the pros.
6) Handpick your fruit and vegetables using only top-quality produce — nothing that’s old or bruised — will really pay off in the
final product. Choose fruit that’s slightly under ripe or just at the peak of ripeness. If it’s overripe, the jam or jelly may not set.
7) Have all your equipment clean and ready before you start. This might seem like common sense, but it’s worth mentioning:
The canning process, with its emphasis on avoiding contamination, can be stressful if your work area is messy. Having all your
utensils clean and at hand, along with a ready supply of fresh towels, will help you breeze through.
8) Boil extra water. Bring a separate kettle of water to a boil and keep it simmering in case you need to add more water to the
canner once the jars are filled.

jars, often break easily and sealing can be a problem.

Boiling-Water
Canning Steps
• Test the seal on each jar after they’ve completely cooled.
• After jars are completely cooled (12 to 24
hours), press center of each lid to check the
seal. If the dip in the lid holds, the jar is sealed.
If the lid bounces up and down, the jar isn’t
sealed. Check unsealed jars for flaws. Contents
can be refrigerated and used within 2 to 3
days, frozen, or reprocessed within 24 hours.
To reprocess, use a clean, sterilized jar and a
new lid; process for full length of time specified. Mark label so you can use any recanned
jars first. If jars have lost liquid but are sealed,
the contents are safe. However, any food not
covered by liquid can discolor so use these
jars first.

screw bands; store for future use. Label jars
with contents and date; include batch number

Spiced Apple Sauce
INGREDIENTS
4 pounds apples
½ cup apple cider or water
Optional spices:
2 pieces star anise
1 tablespoon cinnamon
1 teaspoon grated nutmeg
½ teaspoon cloves
sugar
DIRECTIONS
1) Quarter apples. Put them in a large, non-reactive pot. Add liquid and
star anise (if using), put on lid and bring to a simmer. Let fruit cook
for approximately 15-20 minutes, until the fruit has broken down. Use
tongs to fish out apple skins.
2) Remove star anise. Using a potato masher or immersion blender,
break down the fruit until it has reached your desired consistency. Add
cinnamon, nutmeg and cloves. Taste and add sugar if you feel it is
necessary.
3) Pour apple sauce into your prepared jars. Wipe rims, apply lids and
screw on rings. Process in a boiling water canner for 15 minutes for
half pints and pints, 20 minutes for quarts.
4) When time has elapsed, remove jars from canner and let them cool
on a towel-lined countertop.
5) To store, remove rings and keep in a cool, dark place. Apple sauce
will keep in storage up to one year.

High-Acid and Low-Acid Foods
In canning, the acidity of foods is critical. High-acid foods are naturally less likely to harbor harmful microorganisms; low-acid
foods require either more acid or more heat for safe canning.
High-Acid Foods: These are the simplest to process. Their high acidity levels create a difficult environment for microorganisms
and enzymes to thrive, so processing them in the lower heat of a boiling-water canner is safe. High-acid foods have a pH of 4.6
or lower. Lemon juice, lime juice, and vinegar are very acidic. For that reason, most pickles and most salsas are high-acid, even
though they may contain foods that are otherwise low-acid, such as
green beans and carrots.
Low-Acid Foods: These foods have pH greater than 4.6. Most vegetables
are low-acid, as are most soups, stews, and meat sauces. Unless large
amounts of an acidic ingredient (such as vinegar) are added, these
low-acid foods must be processed in the higher heat of a pressure
canner.
Acidity Boosters: Adding highly acidic elements such as lemon juice to
low-acid foods greatly broadens the types of foods you can process in
a boiling-water canner because they control bacteria that can’t thrive in
acidic environments. That’s why canning recipes for tomatoes, which
have a fairly neutral pH, often call for adding a teaspoon of lemon juice.
It’s also why green beans in a vinegary brine can be processed in a
boiling-water canner. Plain green beans, on the other hand, must be
processed in the higher heat of a pressure canner.
