Broiled Salmon with Market District 100% Pure Maple Syrup Glaze
Compliments of Your Market District Recipe Development Team
For Salmon
• Cooking spray
• 4 skin-on salmon fillets (about 6 oz. each)
• Kosher salt and cracked black pepper
For Glaze
• 1/4 cup Market District 100% pure maple syrup
• 2 Tbsp. Dijon mustard
• 2 tsp. apple cider vinegar
• 1 tsp. Worcestershire sauce
• 1 tsp. cracked black pepper
1. Preheat broiler. Lightly grease baking sheet with cooking spray.
2. Arrange salmon, skin side down on baking sheet. Season salmon as desired with salt and pepper.
3.In a small bowl, combine ingredients for glaze.
4. Broil salmon (about 5 inches from the heating element) for about 8 minutes or until almost done.
Remove from oven and brush with glaze.
5. Return to oven to broil for an additional 1-2 minutes, or until the internal temperature reaches 145°F.

Maple-Glazed Acorn Squash
Compliments of Your Market District Recipe Development Team
Serves
• 2 acorn squash
• 2 Tbsp. vegetable oil
• 2 tsp. sugar
• 1/2 tsp. salt
• 1/2 tsp. pepper
• 1/2 cup Market District 100% pure maple syrup
• 2 Tbsp. unsalted butter
• 1/8 tsp. cayenne pepper

Prep Time
15 min.
1. Preheat oven to 475ºF.
Cook Time
2. Cut each squash in half lengthwise; scoop out the seeds and stringy flesh. Cut each half into

3. In a large bowl, combine oil, sugar, salt and pepper. Add the squash to the bowl and toss to coat.
4. Arrange the squash on a baking sheet, cut side down, in a single layer. Bake 20 minutes, until the bottoms of the
squash are a deep golden brown.
5. While squash are baking, bring syrup to a boil in a small saucepan over medium-high heat. Reduce heat to
medium-low and simmer about 3 minutes, until slightly thickened.
6. Remove from heat and whisk in butter and cayenne. Place over low heat to keep warm; stirring occasionally.
7. Remove the squash from oven, flip and brush with maple glaze. Bake another 15 minutes, until the squash is tender
and deep golden all over.
8. Remove from oven, flip and brush the other side with the remaining glaze. Serve warm.

Pot de Crème
1. Preheat oven to 325°F.
2. In a stainless steel, heavy-bottomed pot, combine half and half, syrup, vanilla bean pod and seeds, anise, and salt;
bring to a simmer. Turn off heat and place a lid on pot, allowing anise and vanilla to steep for 15 minutes.
3. Place egg yolks in a small mixing bowl. Slowly add a steady stream of the warm infused half and half into the egg yolks
while whisking.
4. Strain combined mixture through a fine mesh strainer into a small pitcher.*
5. Place ramekins in a 1-1/2 inch deep casserole dish or oven-proof pan. Carefully pour custard into 6 ramekins to 2/3 full.
6. Carefully pour warm water into pan half-way up ramekins.
7. B ake for 20-25 minutes or until custard quivers slightly when gently nudged.
8. Turn oven off and leave door open, allowing water bath to cool slightly before removing ramekins with cooking tongs.
Place in a lidded container or cover with plastic wrap in the refrigerator until ready to serve. Serve within 3 days.
Maple & Blueberry Balsamic Berries
1.Combine syrup and blueberry balsamic vinegar in a bowl.
2.Right before serving Pot de Crème, add berries to the maple mixture.
3.Stir gently to coat. Adjust sweetness or tartness based on taste, if desired.
4.Arrange berries on custard tops, mounding a bit and garnish with mint and/or edible flowers.

• 12 slices Market District smokehouse bacon
• 2 Tbsp. Market District 100% pure

baguette, split horizontally
• 1/4 cup mayonnaise
• 6 large green lettuce leaves
• 2 Roma tomatoes, sliced

Cook Time
1. Preheat oven to 400°F.
2. Place a wire rack in a roasting pan or a large glass dish; arrange bacon in a single layer on the rack.

Bake for 15 minutes, until bacon begins to brown.
3.Carefully remove from oven, brush bacon with syrup and return to oven for about 5 minutes to crisp.
Transfer bacon to a plate lined with a paper towel to drain.
4.Preheat broiler. Place baguette halves on a baking sheet and spread mayonnaise evenly over halves.
Broil for 1-2 minutes, until toasted. Remove from oven and cool slightly.
5.Layer bacon slices, lettuce leaves and tomato slices over bottom half of baguette. Close sandwich and cut into four.

Valentine’s
with Rich Rosenberg,
Buyer of All Things Decadent
Well, at least three of them. This month, Rich is proposing the ultimate Valentine’s Day
trifecta — Mascarpone (pronounced mas-car-pony), the now epic Iberico ham and classic
Caviar with a little bubbly (which is a requisite, really, so needn’t be counted as part of
the tremendous trio). OK, and a crusty loaf of our fresh-baked bread … and maybe some
chocolate-dipped strawberries. That makes six, but who's counting?

Mascarpone
Hailing from the enchanting Lombardy region of Italy, though made domestically around
the world, Mascarpone is crafted simply from cow’s cream and citric or acetic acid. It
is heated and strained through a finely woven cheesecloth, and what’s left is a 65%-75%
butterfat cheese, which is angelic in both flavor and texture — the ultimate Cool Whip!
Renowned for its role in Tiramisù, Mascarpone is a romance of flavors when mixed with
anchovies, mustard and spices, and spread on the aforementioned fresh-baked, crusty bread
— Mamma Mia!!
We have two versions, the first made devotedly by BelGioioso in Wisconsin. As experts
in the crafting of true Italian cheeses, their authentic Mascarpone is lavished with rich
