Introduction
Wyland Grille Restaurants is a branded restaurant anchored by the Wyland name
and positioned in well-known properties within the travel and hospitality industries. An
innovative restaurant and bar conveying Wyland’s love of the ocean, this restaurant is
designed to reflect his passion primarily through quality cuisine derived from sustainable
resources from around the world. The restaurant theme will invigorate guests with a
respect and sensitivity to the Natural Ocean and terrestrial environment. The Wyland
Spirit is depicted through the exciting restaurant/retail concept with an ocean theme
complemented by visual elements that include a stone oven, high ceilings, wellappointed interior furnishings, an open kitchen, and a full-service raw/oyster bar.

Design
Wyland Grille | Design Concept
The intent is to create a fun, sophisticated, comfortable restaurant with a
contemporary island style concept that is the ultimate premium casual place to
gather and enjoy with friends and family. The Wyland Grille - Restaurants is THE
place to “hang” with your friends and enjoy a sexy atmosphere, first-rate food
and superior beverages. Above and beyond being a great dining experience,
the complete operation of the restaurant is dedicated to preserving the oceans
through sustainable operating practices, raising education and awareness while
instilling an appreciation of the ocean through Wyland’s world-famous art. The
entire interior, both in terms of the design and selected materials, will subtly
convey that our restaurant is devoted to a greater purpose. Guests will sense
that dining at the Wyland Grille - Restaurants is a contribution to a healthier
planet and a healthier self.
Summary of design elements:
• Bronze life size Manta Rays swimming above the entrance of the space
• Sling stone shaped bar, which offers a graceful organic feel, ties to indigenous
South Pacific cultures, and promotes interaction amongst customers and
between customers and staff
• A centrally located and prominent Oyster/Raw Bar, which will allow for low
seating directly in front of the shucking table
• A combination of lounge and various types of table seating, which will provide
a wide range of different seating experiences (lounge seating, bar stools,
booths, low tables, 2 tops, 4 tops, round tables, and standing tables)
• Major Wyland art and branding touches throughout to include a major
sculpture piece at the front entry, the signature “Whale’s Tale” sculpture, and
large scale-framed Wyland paintings
• A sculpture in lobby between the restaurant and retail areas
• Table tops and bar countertops constructed out of recycled materials or
found materials such as glass collected on the beach - countertops to be
constructed with oyster shells, showing how recycled materials can be
incorporated into a classy restaurant
• A large signature architectural piece over the bar, possibly a Wyland piece
to be selected
Wyland Grille | Waikiki
Situated in the heart of Waikiki’s most active pedestrian district at 280 Beach Walk is
the Wyland Grille – Waikiki, a prime destination for dining and shopping. This location
provides a plethora of bustling activities in the midst of beautiful island scenery which
helps to enhance the overall experience of the Wyland Grille Restaurants.
Wyland Grille | Ko Olina
Located on the leeward coast, in an area that was the playground of Hawaiian royalty,
is the site of the Wyland Grille – Ko Olina. Nearby the sacred pools and the inland
passage of the Oahu Railway, the Wyland Grille – Ko Olina is situated in the historic site
known as paradise cove, now considered Hawaii’s most luxurious resort destination.
Ko Olina is home to premier residential development for families, young business
professionals and retirees. Industrial development is also on the rise which includes
Oahu’s largest shopping center with plans to include hotel rooms and office space as
well as smaller shopping centers, and upscale condos. This commercial development
is expected to generate more jobs and boost the island’s economy. This location
offers the advantage of growth in a historical and naturally beautiful island setting that
encompasses the spirit of the Wyland Grille Restaurants.

Combining a mission to encourage environmental awareness through art and the
delivery of exceptional food, while supporting sustainable agriculture, will become the
essence of The Wyland Grille Restaurants appeal. We realize that the journey from
farm to table has become nebulous over the years. The Wyland Grille will drive the
move in putting the journey back on track, and by doing so, create a restaurant that
celebrates our artisan farmers, ranchers and friends working on the land who deliver
the exceptional ingredients that go into making our meals.
Our menus are designed to be appropriate to the season, showing off the finest
ingredients obtainable, including grass fed beef, long line caught seafood and free
range poultry. This helps bring a rainbow of color to our diners. Wyland Grille diners
are not only enjoying a world-class meal in an environmentally sustainable setting,
prepared with the finest and freshest ingredients available, but they are also supporting
small family farms around the region. A dining experience at Wyland is something which
diners and their taste buds can feel good about. WG features hand crafted stone oven
flatbreads, a raw/oyster bar and array of island style lunch & dinner entrées inspired
by our handmade sauces and seasons.
Our tropical drink “alcoholic & non-alcoholic menu features a creative mixologist dream
of fresh fruits from islands around the globe. In addition to our hand-crafted tropical
drink selections; Wyland Grille will also exclusively serve Waialua Soda Works inspired
by the elements familiar to the Hawaiian Islands. Reviving a local soda bottling tradition
that goes back more than 100 years, the company uses only clear glass bottles, pure
cane sugar, and natural flavors to make its pineapple, mango, root beer, and vanilla
cream sodas.

The popularity of the Wyland brand and increasing awareness of the global environment
combined to stimulate retail merchandise interest and fine art sales. The Wyland Studio
Store will sell the finest merchandise that incorporates Wyland art, private labeled food
line and popular well anchored co-branded retail goods.
Co-Branded Retail
Wyland Grille will work with its Hawaii based retail partners utilizing already popular
proven retail goods from the following companies:
Crazy Shirts, Maui divers, Honolulu Coffee Company, Big Island Candy Company. In
addition to these items we will create custom designed items and goods to join the
assortment mix.

The restaurant will be fully designed with Wyland fine art and sculptures most of which
will be original designs determined during the design process.
The studio store will carry the Wyland Collectable figurines, accessories, gifts and
apparel items. Wyland animated art “Disney” i.e. Spouty and friends etc…

The Wyland Grille culinary team has created a complete private label food line that is
used to prepare many of our island style dishes. Our assortment includes handcrafted
olive oils and vinegars, Kobe mustard, grilling sauces, spice rubs and island style
salsa’s. We are also in the process of designing and writing the first addition of many
Wyland Grille cookbooks.

Wyland
Marine Life Artist Wyland has earned the distinction as one of America’s most unique
creative influences, and a leading advocate for marine resource conservation. An
accomplished painter, sculptor, photographer, writer, and SCUBA diver, he has traveled
the farthest reaches of the globe for more than twenty-five years, capturing the raw
power and beauty of the undersea universe.
His non-profit Wyland Foundation has supported numerous conservation programs
since 1993, including Wyland’s monumental Whaling Wall mural project — an epic
series of more than ninety-one life size marine life murals that spans twelve countries
on four continents, and is viewed by an estimated 1 billion people every year. The
artist’s efforts, moreover, have been recognized by the United Nations, Sierra Club,
the Underwater Academy of Arts and Sciences, where he is listed among its Diving
Hall of Fame, and private and public institutions throughout the world.
Hailed a “Marine Michaelangelo” by USA Today, Wyland’s work is sought by millions
of collectors and his galleries throughout the United States are considered a must-see
on the itineraries of travelers everywhere. His equally successful Wyland Foundation,
in partnership with the Scripps Institution of Oceanography, is actively engaged in
