Clos de l‘Oratoire des Papes Blanc 2012 13.5% ALC, 750ML Since acquisition by Ogier in 2000, the reputation of Clos de l’Oratoire des Papes has grown across five continents, yet is still crafted in respect to a great heritage. The distinctive label, created in 1928, has remained unchanged to this day. A continuous quest for perfection has been honoured by the international press, making Clos de l’Oratoire des Papes a reference wine in Châteauneuf-duPape, and a presence in top restaurants and exclusive retailers. From April to July 2012, prior to the 2012 harvest, Chateauneuf-du-Pape had a temperature ranging between 55º and 76º F and received two inches of rainfall. Late summer was hot and dry, with the temperature ranging between 61º and 83º during August and September. It was an exceptionally sunny year, with the vines receiving 1,811 hours of sun. Periods of rainfall at the end of both August and September, however, proved adequate to save the vines from hydrostatic stress, with the second rains allowing sufficient maturation of the later grapes. Overall conditions proved quite satisfactory for the 2012 harvest. Clos de l’Oratoire des Papes Blanc is ideal with fish, crayfish, quenelles of pike in nantua sauce, and exotic dishes. Intense and mineral on white peach and pear; a spicy yet elegant base of white pepper, licorice and wild flowers. Marries harmoniously with a rounded attack – an intensity of fruit and freshness. Beautiful mineral length on noble aromas of tea. VARIETALS VINIFICATION White Grenache 30% Clairette 30% Roussanne 30% Bourbalenc 10% Skin maceration for six hours; fermentation in new oak barrels of 300L for the Roussanne only. Direct pressing in a pneumatic press of 30 hl. Settling on the White Grenache, Clairette, and Bourbalenc, and fermentation in stainless steel vats at 64-66°F.
