AVIGNON
vaucluse covers 3574 km² and is the
smallest county in the Provence-alps-
Riviera region. vaucluse is bordered by the
Rhône river to the west, the Durance river
to the south, and the foothills of the alps to
the east.
The luberon range, the monts-de-vaucluse
and mont-ventoux dominate the plains filled
with orchards and vineyards and lined by
many rivers.
The climate is mediterranean, with 2800
hours of generous sunshine a year.
vaucluse is one of the top producers of
melon, cherries and table grapes in france.
It is the number one producer of truffles
with 70 % of all french truffle production.
It produces also 3 a.o.c. vintages (côtes du
Rhône, a.o.c. luberon and a.o.c. ventoux)
among them 5 “Grand crus”.

Organic farming in the Vaucluse

Vaucluse county has a dynamic
organic farming sector. There
are 618 ic farms in Vaucluse,
which makes it the number one
county in the PACA region for
farms which have made the
transition to organic food
production. Vaucluse is the
number 3 county in all of France
for organic food.
The effective organicallyfarmed agricultural area in
Vaucluse came to 11.4 % in 2010
whereas the national average for
the same period was only 3 %. In
Vaucluse this means 13,776
hectares that are organically
farmed or in the process of
conversion. This is a +32.9 %
increase over 2009. Geo-climatic
diversity in Vaucluse allows for a
wide range of farm production
throughout the county, including
fruits, vegetables, wine, grains,
aromatic plants and medicinal
plants, animal-raising…
Vaucluse is a major vinegrowing county too, with 6,809
hectaresnof vineyards. Here too
organic methods are increasing,
and 49 % of the farmed area is
currently in the conversion
process .
Aromatic and medicinal plants
account for 5 % of farm
production with 659 hectares
dedicated to such plants.
Animal-raising primarily
involves poultry, sheep and
goats.
The organic association Agribio
Vaucluse is a non-profit
association which groups
together 170 organic farmers in
all sectors. The association
emphasises local channels of
distribution and focuses on
productive exchange between
growers and consumers.

produce – primarily at the Farmers’ Markets
and the Growers’ Markets such as the

- Tuesday and Saturday morning all year long

Biodiversity Festival
3 and 4 August 2013 - SARRIANS
Beautiful red ripe tomatoes of course – but so
many varieties! Black tomatoes too, and white
ones too … over one hundred varieties of mint
with different tastes, appearance and smells –
mint for herbal tea and to make candy ! Much
more than a regional celebration, this event is
here to raise awareness and maintain
biodiversity in the varieties of fruits and
vegetables and revive old varieties that are
seldom seen. Lots of fun with flavors from the
past for pleasures of the present.

Meet
in the fields
For over 20 years Rose has been
keeping an eye on sheep, pigs and
hens, on her aromatic herb crop, her
vineyard, orchard and vegetable
garden. A colourful, bustling world
that has kept her busy on the Oiselet Farm in
Sarrians, a 25-hectare farm that primarily grows vines,
farmed organically and with passion by her vine-growing
husband.
Going around the farm with Rose means bending down to
pluck a leaf, taste a plant, feel, touch, smell and generally
marvel at the work of nature. At Oiselet Farm, the
atmosphere vibrates with life, carefully maintained yet free
and overflowing. Countless shades of green surround you.
Tender fresh almonds, the enormous leaf of the
“mammoth basil plant”, the heart-shaped leaves of the
Kiwi. Rose tells the story of a dream become reality, bit by
bit, plant by plant, by sheer dint of hard work and
perseverance.
Seven people work full time on the farm, and in the high
season there can be up to 20 people to work with the
visiting families, offering gardening workshops, cooking
classes using farm plants, spinning and braiding
demonstrations, or harvesting the old-fashioned way…

Wines
September. On the steps to the Palace of the Popes in
Avignon, the harvest ban is proclaimed. The careful
choreography of the grape harvesters begins, tractors
coming and going, on the country roads, between cellars
and vineyards of the Rhône valley. From its towering
1912 meter altitude, Mont Ventoux overlooks the
vineyards which bear its name. The rounded back of the
Luberon range huddles over its vineyards, protecting
them from the mistral wind.
At twilight, when the suave scent of the vintages to
come fills the evening air, Châteauneuf-du-Pape gives
back to the soil the heat stored by the pebbles which
protect its vines, warming the last clusters of grapes to
go into the symphony of 13 varieties which can make up
the powerful reds and delicate, ample whites. Soon the
wine will start aging in the beautiful Chateauneuf
bottle, struck with the Pontifical coat of arms
“2 intersecting keys, Saint Peter’s keys, indeed, the keys
to paradise”.

In Vaucluse, the Côtes du Rhône
vineyards are the largest A.O.C.
producers.
The appellation sub-divides into
regional Côtes du Rhône wines
comprised of Côtes du Rhône
Villages - Cairanne, Valréas, Roaix,
Sablet, Séguret, Visan and Gadagne
- and 4 grands crus, Châteauneufdu-Pape, Beaumes de Venise (that
received the label “Site
Remarquable du Goût” in 2006),
Vacqueyras, Rasteau and Gigondas.
Beaumes-de-Venise and Rasteau has
proudly borne the A.O.C. label “Vin
Doux Naturel”.
The greater part of the Vaucluse
vineyards stretch over an area
bordered by the towns of Valréas,
Bollène, Avignon and the Dentellesde-Montmirail.
The wide variety of soils is one of
the keys to the originality of the
Côtes du Rhône wines. Here in the
Rhone valley there are many
different terroirs, with sand,
limestone, sandstone, and round
river pebbles rubbed smooth by the
flowing waters of the Rhône. Red
wine accounts for 95% of the
production, and white and rosé
account for 3% each. For the red
wines, the most widely used
varieties are Grenache, Syrah,
Mourvèdre and Cinsault.
The calcareous soils in Vaucluse,
along with the hot and dry
Mediterranean climate are also very
conducive to producing the
pleasant, smooth wines found in the
A.O.C. Ventoux and the A.O.C.
Luberon appellations.
The A.O.C.Ventoux appellation,
covers 51 towns, from Puyméras to
Apt and including Carpentras,
which is 6236 hectares. Here, red
wines account for 68% of the
production, rosés wine for 28% and
the remainder in white.
Looking now at the A.O.C.
Luberon, they cover 3200 hectares
of vineyards growing on land in 36
different towns, all of which are
located in the confines of the
Luberon Regional Natural Park.

through the a.o.c. luberon vineyards, and the a.o.c. ventoux vineyards.
These itineraries wind through dozens of wine-making villages such as
Gigondas, Beaumes de venise, vacqueyras, cucuron, Bonnieux, Bedoin.
There are over 200 selected winemakers on the way, members of the Rhone
valley wine charter – “vallée du Rhône, Terroirs d’accueil”.
The winemakers are open to the public and have been ranked 1 to 3 “grape
leaves”.

have been kept and maintained, and are

Food lovers and wine lover scan now identify the restaurants in Vaucluse whose wine
lists emphasize local growers making Côtes du Rhône, AOC Ventoux and AOC
Luberon wines. These restaurants sport a pictogramme on their front window.
Vaucluse Tourisme, Inter Rhône and the Union des Métiers de l’Industrie Hôtelière
have forged a quality charter that many restaurants have chosen to sign. These
restaurants must comply with a number of criteria, including the following:
• The wine list must have a minimum of 60% Rhone Valley wines.
• Red, rosé and white Rhone Valley wines must be available by the glass
• Wine must be served in INAO type, quality tasting glasses.
• The wine list must offer 37.5 cl or 50 cl format bottles for at least some of the
wines.
• If wine remains in the bottle, the restaurant must enable clients to take their wine
bottle home with them in an appropriate bag.
• At customers’ request, the restaurant must provide a breathalyzer to promote a
safe driving attitude.

This “living museum” is an absolutely unique venue, ideal for fun
and learning, entirely dedicated to fruits and vegetables it explains
from the seed to the processed product.
The label “Bienvenue à la Ferme” is a registered French label
managed by the County Chamber of Agriculture and symbolized
by a “little flower” which indicates a member of the Quality
Charter.
The exhibition changes with the seasons and is completed by a discovery trail
in the vegetable garden and orchard that takes visitors to the heart of the living
world of fruits and vegetables. On more than 8,000m², the trail is punctuated
with 7 stages:
- sensory immersion
- images and stories from all five continents
- what is a fruit and what is a vegetable?
- fruits and vegetables in our diet
- from culinary practices to industrial processes
- the diversity of varieties, past and present
- farming practices outdoors and in greenhouses Seasonal products
and Provençal varieties naturally have a very special place in the garden where
hundreds of varieties of fruits and vegetables are displayed. Throughout the
tour, all five senses are stimulated by interactive activities intended to promote
a lively concrete approach to fruits and vegetables. See the transparent beehive
in the garden, where you can watch the fascinating work of a bee colony.
The Epicurium also offers an annual programme of workshops and activities
for everyone around a Chef or a gardener, lecture cycles, meetings with
producers, special activities for children…

Truffles
When November rolls around, throughout the winter and
up until the middle of March – that’s truffle season, when
the fragrant black truffle – rabasse in the Provencal
language – thrives. Truffles grow at the base of Mont
Ventoux, in the Luberon and in the Papal Enclave – here in
Vaucluse, the truffle is the object of something close to
worship. There are truffle markets. There is the Truffle
harvesting proclamation. Truffles even fill the collection
basket at a very special truffle Mass in Vaucluse.
Truffle markets in the winter months draw chefs from far
and wide. Although truffles are often referred to as being
from Perigord, the truth is that 70% of the truffles in
France come from Vaucluse. The term truffle “de Perigord”
is a botanical name, and in no way a geographical
description. Indeed, 70% of the black truffles sold in France
come from Vaucluse markets.

Olives
The dominant variety in Vaucluse is the “Aglandau” variety,
also called “Verdale de Carpentras”.
This variety provides a very flavorful oil, with hints of
artichoke and almond
(A.O.C. Huile d’olive de Haute Provence). Toward the north
of Vaucluse, you find the variety called “La Tanche”, with a
round, fleshy fruit which wrinkles up when ripe, and provides
excellent black table olives. This variety is also protected by a
guaranteed label, called an appellation d’origine contrôlée
(A.O.C. olive de Nyons). This label, a guarantee of quality,
covers 18 towns in Vaucluse.
Since 2006, the new AOC “olive oil from Provence” includes
115 towns in Vaucluse in the Ventoux and Luberon areas.

Tapenade
This dish often accompanied the harvesters into the fields, where they
made a meal of the olives blended into a puree with anchovies and capers
with olive oil. Today tapenade is most often served on slices of toasted
bread. It is the “caviar” of Provence, and can also be made with green
olives.
Did you know?
A tree produces between 15 and 50 kilos of olives. It takes four to five kilos of
olives to make 1 litre of oil.
advice from the master miller
Always choose “extra virgin olive oil”, (huile d’olive vierge extra)
with its flawless taste and acidity under 1%. Keep away from light
and heat (at approximately 180oC), and use the oil within the year.
That way, it remains at the peak of its flavor.
The benefits of olive oil are best when used raw. However, contrary
to what is often heard, olive oil is the best oil to use for deep-frying.

Garlic
Garlic growers are concentrated in 14 towns between Orange and
Avignon, and the town of Piolenc is the garlic capital.
Two types of garlic are grown – the white, autumn garlic
(Messidrome) and the purple, autumn garlic whose skin varies
from red to copper tints. Here the varieties are Primor, Sprint and
Germidour.
Garlic can be harvested by machine or by hand, and at different
times:
- green, from mid April to late May, depending on the varieties
- half-dry, from late May to mid-June, depending on the varieties
- dry, for long-keeping, from mid-June to mid-July.
To dry the garlic, the bulbs are left a few days in the field, with
the tall stalks pulled over the bulbs of garlic to protect them from
the sun. The garlic is then gathered into bunches, and stored in
dry, airy rooms.

It is customary the day after a heavy
meal to “take a breather”.
In Provence, people simply drink
“Aïgo Boulido” (boiled water).
An adage declares: “L'aïgo-boulido
sauvo la vido" (boiled water saves
lives).
Ingredients:
1 litre of water, 5 crushed garlic
cloves, 1 bay leaf, 1 sprig of medicinal
sage, 2 egg yolks, 1 slice of toast per
person (optional), olive oil, salt,
pepper.
Recipe:
Split the garlic cloves in 2 and crush
with the blade of the knife laid flat.
Put the water and garlic in a
saucepan with salt, and a little olive
oil. Bring to a boil, add the bay leaf
and sage, then cook for 15 min.
Remove the garlic, then add in the
soup bowl, while stirring, the two
beaten egg yolks.
Serve with slices of toasted bread, if
you like.

known as false fruit or accessory fruit. The
true fruits of the strawberry plant are
actually the small seeds, or achenes, found
on the outer surface.

In Pernes-les-Fontaines, Alexandre
Fligeat raises all his fruits and
vegetables in the field, perpetuating
the family tradition. “Here, we are in
the Golden Triangle for growing
strawberries, between Carpentras,
Pernes and Monteux. The terroir is
ideal.
Indeed, this part of the Vaucluse countryside is a
series of fields and greenhouses as far as the eye can see.
I taste ripe fruit, freshly picked. Three varieties of
strawberries are grown here: Cléry, fairly prolific, totally
sweet and somewhat crisp; Garriguette, smaller, very
fragrant and slightly acidulous; and Dély, a new variety
which is quite big, sweet and fragrant. In the
greenhouses it is hot and very humid – over 30° on this
soft spring day. The heady scent of the strawberries
sends me into a dream world full of clouds of whipped
cream, strawberry shortcake and strawberry ice cream…
Mme Fligeat has given us a few pointers on how best to
enjoy the strawberries – she suggests nice and ripe in a
strawberry salad with just a drizzle of olive oil and a
hint of vanilla – and the strawberry will be at its best!

With nearly 2,700 hectares of cherry trees, and an annual harvest
of approximately 14,500, Vaucluse is right at the top of French
production.
Nearly 45% of the cherry crop goes to the candied fruit industry.
The rest is gobbled up, fresh and juicy. Cherry orchards are most
often planted on slightly sloping fields, at the base of Mont
Ventoux, in the Nesque river valley, the Venasque hills and in
the Luberon, primarily in the Calavon river valley. Cherries are
harvested from mid-May to early July.
The top of the line French cherry is indeed the “Cerise des
Monts de Venasque”, juicy and fleshy – the very best.
2,000 tons of Cerise des Monts de Venasque are harvested in 21
towns in the in the Comtat Venaissin-Mont Ventoux area. A
road sign identifies these cherry-producing towns !

Black Fig
from Caromb
The Long Black Fig of Caromb, also known as Douqueira
Negra or Perroquine, is a variety of large elongated fig that is
very sweet with a potent delicious flavour. It has fine skin of a
lovely deep violet-blue and rosy-red flesh. Juicy and tasty, it
holds up well and has remarkable qualities in terms of
preservation.
The Long Black Fig of Caromb is generous and can be
harvested twice a year, first in early July, then again around
20 August.
In the South, production of long black figs of Caromb
amounts to some 100 metric tons of fruit. Just in Vaucluse,
this production capacity should double very soon to reach
40 metric tons, thereby propelling the Vaucluse to 3rd place
for fig production in France.

The Petit Epeautre from Haute Vaucluse is also known as the “wheat
of the Gauls”, or “engrain”. It is a rustic, hardy plant which grows best
on poor soils, akin to those lavender likes.
In Vaucluse, Petit Epeautre is grown between the Luberon and the
Sault highlands. Fields of spelt stretch side by side with fields of
lavender blue. The specifications for the spelt crop are quite strict, for
spelt benefits from a “Protected Geographic Identification” which
guarantees its origins and qualities.
Petit Epeautre from Haute Provence has extremely high nutritional
value, much better than other grains. Long abandoned as a crop, this
little spelt has come back into the spotlight, and is sought after by chefs
and fine diners alike.

On the Sault highlands, I met one
of the apostles of spelt.
“Not all that long ago, the older
generation wanted nothing to do
with spelt” young farmer
Guillaume Liardet told me. Spelt is a rustic,
nutritional variety of wheat which has proved itself again
and again in Provencal gastronomy. Spelt is used in soups,
risotto, salad, bread and other dishes. It has fantastic taste and
it is not all that rustic after all. Many chefs have caught on
and use it very creatively and deliciously. Guillaume grows
ten hectares of spelt near his lavender fields, where he raises
lavender for distillation. Growing spelt enables him to
diversify his production. Plus spelt presents the advantage of
restoring and cleansing the soil. In his field of ripe spelt, the
fine ears nod in the warm breeze, blanched by the sun. Spelt
harvest takes place tomorrow, and a few beautiful sheaves of
spelt will go to the September Spelt Festival in Monieux.
The “miller weath” from Apt
In 1985, the technicians working with the Luberon Regional Natural Park
discovered seeds for the wheat known as the "blé meunier d’Apt” in the
barn of a retired farmer in the village of Buoux. Miller wheat from Apt,
also called “touselle blanche de Pertuis”, used to be grown in the Apt basin,
in the Luberon and in Haute Provence.
The older generation retains strong memories of the quality of the bakery
goods and breads made with this wheat. The special label "Pain du
Luberon" is now a registered trademark. This is a very healthy bread that
gluten-intolerant persons can eat. It is currently made by 9 bakers who are
members of the quality charter.

Aromatic herbs
The appellation “Herbes de Provence” has unfortunately often
been overused, and the blends and origins of the herbs
themselves could be highly varied. Now, there is a “Label
Rouge”, in existence since late 2003, which governs the label
“Herbes de Provence” and guarantees top quality in the blend,
without necessarily guaranteeing origin. The Label Rouge
blend consists of 19% thyme, 26% rosemary, 26% sarriette,
26% oregano and 3% basil. The choice of plants, strict
production methods and the drying process ensure top quality.

Salt
A mortar and pestle is best – and of course a blender is easier ...
Stem the basil leaves.
Crush or chop the garlic.
Add the basil leaves and a pinch of salt to the garlic. Crush with the mortar and
pestle, or blend.
Add the olive oil.
Chill.
Info : the word Pistou comes from the Latin word pestare which means to crush
with a pestle. Pistou is a condiment in Provencal cuisine and goes into the
famous “soupe au pistou”.
Be sure to remove any germinating green sprout from the garlic, and blanch the
garlic a few seconds in boiling water if it is too strong.
a Provencal cook’s advice:
Gather the basil early in the morning in spring and summer. When you buy basil
in a shop, buy it in transparent film so you can see that it has good green colour
and that no dust falls to the bottom of the packaging when you shake it.

in the fields
In Provence, basil is commonly grown in our
vegetable gardens, or on the balcony for city
dwellers. Basil brings great freshness that goes
with the greatest vegetables, tomatoes and
aubergines, and it scents Soupe au Pistou,
without a doubt a local gastronomic treasure.
In the village of Roussillon, in the Luberon,
La Ferme aux Basilics is devoted to basil. In
summer, you can see up to 30 varieties – each
one with a fabulous scent. At La Ferme aux Basilics, I
met Catherine Pisani, a collector and grower of basil.
She took me to gather a few leaves in a small patch that seemed
to be a true basil conservatory. An impressive variety of basil
spread humbly at my feet – lots of colours, lots of delicate
aromas… Catherine was first intrigued by the medicinal
properties of basil some 15 years ago when she fell in love with
basil. “Basil is acknowledged to be a powerful anti-depressant”,
said Catherine, “like chocolate”. She described chocolate-basil
ganache, and leaves of the Giant from Genoa, a variety of
enormous basil, confite in dark chocolate – great for chasing the
cobwebs and increasing the zygomatics. Catherine Pisani has
compiled her knowledge and some sumptuously simple recipes,
such as her famous Summer Vegetable Soup with Pistou, in a
delicious cookbook entitled “Petit traité savant du basilic”
published by Équinoxe.

Melon
from Cavaillon
There are many chapters to the story of the melon from
Cavaillon, and nearly as many varieties! The most popular
however, the one which has contributed to the glory of
Cavaillon today, is the Cantaloup or Charentais variety,
which has been grown since 1925. The Cantaloup or
Charentais variety can have smooth skin or “embroidered”
skin, and can be grown in greenhouses or open fields. It is
the only French melon whose growing period stretched from
May to September. The melons are harvested by hand, gently
and delicately. Growers and packer-shippers have worked
together in recent years to obtain the “Protected Geographic
Indication” label for the “Melon de Cavaillon”. Melon from
Cavaillon is enjoyed as a starter, dessert or sherbet, with
prosciutto or lovely Muscat de Beaumes de Venise wine.
Melon is most often served raw, but can also be candied and
is widely used by the candied fruit makers in the Apt area,
particularly to make the calisson candy, a specialty of Aix en
Provence.

Tips from a cavaillon housewife
To select a good melon, first trust your nose. A ripe melon

It was with the arrival of the Popes in the 14th century that
saffron (Crocus sativus) was introduced to the Vaucluse
and grown intensively at the foot of Mont Ventoux. In the
following centuries, the Vaucluse became the main producer
in France, with over
160 “safraniers” (saffron growers) in Carpentras in the 17th
century. The delicate farming of this precious spice
disappeared in the course of the 19th century, only to be
reinstated today thanks to five producers.

Though of course you know that the vineyards in Vaucluse
are famous for the wines they produce, did you also know
that table grapes too are justly famous in their own right.
Today, Vaucluse produces more than 50 % of the entire
French production of table grapes, and is the number one
French grower, with over 32,000 tons grown in Vaucluse.
Among the many varieties, the most prestigious table grape
produced in Vaucluse is the outstanding “Muscat du
Ventoux”, with its delicate, captivating flavour.
The rigourous work done by the grape growers was
rewarded in 1997 with the bestowing of the AOC Muscat
du Ventoux label, a distinction further reinforced by the
European Union in 1999, when they awarded an AOP
(Protected Origins Appellation) label. Production of the
AOC Muscat du Ventoux is concentrated on the slopes
of Mont Ventoux and the Calavon river valley. Fifty-six
towns are part of the Appellation area which covers 1200
hectares and 250 producers.
The natural sweet Muscat du Ventoux is made solely
from the grape variety known as Muscat de Hambourg.
The grapes ripen from late August to early October. The
grape clusters are delicately cut with shears and gently
packed on trays in the field, so as to preserve the bloom
that covers the grapes and is part of their quality.

Berlingots
The Berlingot is a tiny sweet in the shape of
a cube, or dice. Its name is said to come from
the game of jacks, or “osselets” which was
called berlingaù in Provençal. A lovely
legend attributes the origins of this candy to
the pastry maker for Pope Clement V
(Bertrand de Got). At any rate, a more
recent origin is also known, that of a pastry
chef/candy maker born in Carpentras in the
1800’s. He thought up the idea of using the
left-over syrup from his candied fruits to
make a candy. In 1962, there were 5
companies making the Berlingot in
Carpentras. Today, there remains only one.
The Berlingot is actually a caramel, in that it is
cooked sugar. It is a hard, translucent candy
that is colored and striped with white.
Berlingots are entirely made by hand. The
syrup is blended with the sugar and is heated
to 150oC. The resulting paste is poured onto
an oiled marble slab, flavored and colored. The
roll of candy paste is then folded with a thin
ribbon of white sugar. The paste is hung from
a hook and pulled, stretched and re-folded so
that the white sugar ribbon runs all through it.
It is then rolled into strips, and cut into its
traditional shape with the “Berlingotière”, a
machine which was invented in the late 19th
century to imitate the cut made with scissors.

in princes’ homes. Candy was served at the end
of the meal, to leave the table with, or it was
placed in candy dishes and called “room spices”
to sweeten the breath and help with digestion.

Honey
The bees move with the changing flowers of
the seasons, and each area contributes shades of
taste. While the cicadas sing away, the bees are
working. In March-April, honey comes from
rosemary and thyme. In May, you find “allflower” honey. In July and August beekeepers
are busy harvesting the subtly flavored lavender
honey, with its unequaled taste. Lavender
honey is truly one of the best symbols of
Provence. After the transhumance, you find
acacia flower honey, oak honey, or mountain
honey.

There are two “label rouge” awarded to
honey from Provence. One
distinguishes honey made from many
different flowers, and is called “miel
toutes fleurs de Provence”, and the
other is honey made from lavender
flowers, called “miel de lavande”. These
two types of honey should be preferred
to honey from many different origins,
labeled “origines diverses”!
Nougat
A heady smell of honey fills the air... for
nougat is being made. When the nougat is
white, it is soft, chewy and unctuous. Dark
nougat is lightly caramelized, and crunchy.
Purists argue that the best nougat is dark
nougat. Whether hard or soft, nougat is made
from honey and unroasted almonds, and the
flavor of its ingredients shines through.

Papaline
The Papaline was created in 1960, and named
after the Avignon Popes. It forms a small thistle,
made of 2 thin layers of chocolate which are
filled with the Comtat liqueur made of oregano.
The recipe for this herbal liqueur remains a
secret. The liqueur was created in 1870, and is
made from plants which have been macerated in
a selection of fine spirits. They are then distilled,
and excellent quality honey is added.

The oldest distillery in Provence, founded in
1835. The Blachère Distillery is specialised in
the preparation of brandies aged in oak
barrels. It also makes Provencal liqueurs

The Blachère Distillery created Pastis Marra
and Camarguais, fruit brandies and the
highly popular syrups such as Pac citron,

- 250 grams white flour
- 5 grams fine salt
- 10 grams baker’s yeast
- 150 grams lukewarm water
- 125 grams good butter
- Black olives, country bacon or
trimmings from Provencal lamb
Preparation
Soften the yeast in the warm water.
In a mixing bowl, put half the flour
with the softened yeast and warm
water and mix to obtain sticky
dough. Add the salt then the rest of
the flour. Knead by hand or by
machine for 3 minutes to aerate the
dough and make it smooth.
Form a ball and treat it like puff
pastry dough by giving it two simple
“turns”. Once it has been turned, put
the black olives and the country
bacon (or leftover roasted lamb …)
Roll out this foccacia until it is 2.5
cm thick. Place it on a non-stick
oven tray and let rise approximately
30 minutes. Bake 20 minutes at
200°C.
Garlic cream with tomato

Garlic bread crumbs and 4 confit
tomatoes
Preparation
Blanch the 20 garlic cloves 7 times in
milk /
For 50 ml half-and-half over them
Bring to a boil
Add the water from the tomatoes
(water kept from cooking other
tomatoes not used for this recipe.)
Cut the white meat into thick
matchsticks and fry.
Coat with the garlic powder mixed
with bread crumbs
Place in a glass: garlic cream and the
breaded sticks of white meat,
decorate with confit tomato.
50 grams fresh white mushrooms
(champignons de Paris)
1 squeeze of lemon juice
30 grams of UHT crème fraîche
Salt and pepper.
Preparation
Wash the mushrooms, blanch them
in lemony salted water. Drain and
sauté.
Mix the broken truffle pieces and the
mushrooms in the blender. Add salt
and pepper. Blend again to obtain a
homogenous purée.
Whip the cream and add it to the
purée. Chill.
Assemble the Napoleon (millefeuille)
alternating a truffle slice, a spoon of
the purée, and continue. Serve with
potatoes mashed with a fork.
Optional: replace the cream with
truffled mashed potatoes.

Preparation
Peel the asparagus stems from the
middle to the bottom of the
asparagus.
Bring a pot of salted water to boil.
Tie the asparagus together in 2
groups of 10 asparagus, place them
in the boiling water and cook
between 6 and 8 minutes. Remove
and plunge them into a bowl of ice
water.
Place 4 eggs in a pot of boiling water
with a splash of vinegar, for 5
minutes. The eggs must be softboiled. Cool them immediately on
ice.
Peel the black truffles and chop the
peels. Thinly slice the truffles. Mix
the brioche crumbs with the
chopped truffle peel and make fine
crumbs. Break 2 eggs in a bowl, beat
with the milk. Put the flour in
another bowl, and put the truffle
crumbs in a 3rd bowl.
Remove the shell from the softboiled eggs, roll them in flour, then
in the beaten egg-milk mixture, and
then in the truffle crumbs. Heat the
olive oil in a frying pan and brown
the eggs delicately on all sides.
Finishing touches
In the plate, place 5 asparagus like
pick-up sticks, place the breaded egg
on top. At the very last minute,
pierce the egg so that the yolk runs
out. Add a few slices of truffle, and
parmesan.
Chef’s recommendation:
Cook the asparagus upright to keep
the tips intact.
Serve the truffles barely warmed to
retain all their flavour.

For 4 persons
1gram of royal Saffron from St
Christol
salt
olive oil
4 thick slices of leg of lamb from
Provence (request from your butcher
or do yourself)
Bone from the leg of lamb (request
from your butcher if you cannot not
do it yourself)
500 grams of lamb flank meat, sliced
2 glasses of white wine and 4 glasses
of water
1 handful of snow peas
1 bunch of green asparagus
200grams peas
200grams green beans
250 grams spelt from Sault
Preparation
Lamb jus:
The night before, brown the bones
and lamb flank meat in a hot oven
(200°C). Deglaze with the white
wine and water to recover all the
juices. Pour into a pan and reduce
over a low flame for about 2 hours.
Filter the jus and put it to chill.
Spelt:
In a large pot, cook the spelt in 1.5
litres of water with a pinch of
bicarbonate of soda to reduce
cooking time. Bring to a boil for
approximately 30 minutes. Rinse in
cold water. Reheat in the lamb juice
to which saffron has been added
before serving.
Spring vegetables:
Bring a pot of salted water to a boil.
Plunge in the water, one by one, the
varieties of vegetables until each has
returned to a boil. Chill immediately
in iced water to set the colour and
retain firmness. Put to the side.
Reheat in the lamb juice to which
saffron has been added before
serving.
Remove the lamb jus prepared the
evening before and remove any fat.
Heat the jus to boiling then turn off
the heat. Add the saffron and let it
infuse while you cook the meat.
Lamb steaks:
Remove from the refrigerator 1 hour
before cooking. Season with salt and
pepper. Brown the meat on all sides
in the olive oil, in a hot pan. Place
the pan in the oven heated to 150°
for 12 minutes. Remove the meat
from the frying pan and let it rest 10
minutes before serving.
During these 10 minutes, pour the
saffron lamb jus into the pan used to
cook the lamb steaks to recover all
the juices. Let it reduce 2 minutes
over high heat. Use this juice to
reheat the spelt, the spring
vegetables, then pour over the meat
just before serving.

For 6 persons
18 round small tomatoes, 2 kg of
Marmande tomatoes, 10 tarragon
leaves, 25 cl beef stock, 2 cloves of
garlic, 1 onion.
Preparation
Skin the small tomatoes, cut off the
top one-third down the tomato,
remove the seeds.
Place the tomatoes upside down to
drain.
Chop the 2 kg of Marmande
tomatoes (skin, seed, chop).
Sauté the onion and garlic with the
olive oil and chopped tomatoes.
Reduce, add the chopped tarragon
leaves, and stuff the tomatoes. Bake
5 min in hot oven with the beef
stock and serve as is.
The real advantage to this recipe is
that it brings out the true taste of the
tomato. The tomatoes you stuff must
be less ripe and firmer than the
Marmande tomatoes going into the
crush – this brings out the greatest
flavour.

Restaurant la Petite Maison de
Cucuron
For 6 persons
6 aubergines
2 new onions
18 tomatoes
1 head of garlic
Salt, sugar, tomato puree, olive oil,
oregano, gelatine sheets
1 fresh goat cheese
Fleur de sel, cubeb pepper, olive oil,
fresh cream
Preparation
Slice the aubergines (5mm/¼” thick),
brush with olive oil, season and set
aide on baking trays. Bake at
180°C/350°F until slightly browned.
Set aside.
Prepare a “concassée de tomate”
(crushed tomatoes): quarter the
onions, slice the garlic, dice the
tomatoes. In a frying pan, gently
brown the onions and garlic with
olive oil. Add the tomatoes, a
tablespoon of tomato puree and cook
for 10-15 min. Add oregano to the
“concassée”, adjust the seasoning and
weigh. Add the gelatine sheets: 40g
of gelatine per kilogram of
“concassée”. Set aside.
In a terrine: line the sides of the
terrine with slices of aubergine.
Spread 1/3 of the mixture at the
bottom and fill the terrine with
alternate layers of aubergine slices
and layers of “concassée”. Then fold
the slices of aubergine lining the
terrine. Chill for 12 hours before
turning out and cutting into 2cm/1”
slices.
Mash the fresh goat cheese with a
fork after having added some cream,
olive oil, fleur de sel and cubeb
pepper. With two spoons fashion
into small dumpling-like shapes and
place one on each slice of the
preparation. Decorate with a trickle
of pesto (paste made with basil,
garlic and olive oil).

Restaurant ’Oustau de l’Isle
For 4 persons
3 eggplant – long and firm,
6 tomatoes,
2 onions,
2 courgettes
1 cucumber,
2 sprigs of basil,
2 sprigs of mint,
1 sprig of sage salt,
coarse salt,
sugar,
olive oil
sherbet of herbs (buy readymade)
or replace with a salad of field
greens.
Strips of confit eggplant: Peel the
eggplant. Cut 8 rectangles each 1cm thick. Sauté them in the frying
pan to brown them and make
them soft. Drain on absorbent
paper, put aside.
Crushed tomatoes: Wash the
tomatoes and remove the stem.
Dip them in boiling water for 20
seconds, remove the skins, cut in
2 and seed. Slice very thinly.
Place them in a saucepan with 1
spoonful of olive oil, a pinch of
sugar and a pinch of salt, over a
low flame.
Melted onions: Peel and thinly
slice the onions. Cook them slowly
in a saucepan over a low flame
with 1 spoon olive oil and a pinch
of coarse salt.
Zucchini cannelloni: Wash the
zucchini. Using a mandoline, slice
thin strips to make 4 cannelloni.
Overlap the strips. Put aside.
Crushed zucchini: Chop the
remaining zucchini. Sauté over a
high flame with 1 spoonful of olive
oil, just 1 minute so they remain
firm. Put aside. Prepare the basil,
min and sage leaves, chop fine and
add some to the both the cooled
crushed tomatoes and the crushed
zucchini.
Cucumber juice: Blend 1
cucumber with a little salt.
Putting it together Roll the
crushed zucchini in overlapping
zucchini strips.
Place a strip of eggplant on the
plate, cover it with the crushed
tomatoes. Place another strip of

eggplant, cover it with the crushed
onions. Place the zucchini
cannelloni on top. Add one scoop
of herb sherbet to the plate, or a
serving of field greens seasoned
with olive oil.
Drizzle cucumber juice all
around.
saffron and olive oil ice
cream
From the Hotel School in Madrid with
the Safranière L’Or Rouge des Trois
Rivières in Entrechaux
Ingredients
For 3/4 litre of ice cream
(approximately 8 to 10 scoops)
1/2 litre of milk
4 egg yolks
150 grams sugar
12 strands of saffron
50 ml olive oil
Preparation:
Pour the milk into a pan and add
the saffron.
Bring to a boil, remove from the
heat and let steep 5 minutes.
In a bowl, beat the egg yolks with
the sugar and olive oil.
Pour the milk over this mixture,
filtering through a sieve as you pour
to remove the saffron threads.
Return to the pan and heat over
medium heat, stirring all the while,
until the mixture thickens.
When the preparation coats the back
of the spoon, pour into the bowl and
let cool completely.
It is best to leave it overnight in the
refrigerator.
Pour into ice cream maker and
make into ice cream.

aoc muscat du ventoux
purple grape jelly
Ingredients
5 big clusters of dark Muscat AOC
Ventoux grapes
Approximately 750 grams sugar for
1 kilo of juice
1 packet of jellying agent
Preparation:
1 – Wash the grapes and remove
them from the cluster.
2 – Place the grapes in a pan with a
little water, cover and cook for 10
minutes over medium heat until
they burst.
3 – Strain through a fine sieve or
through a dishcloth and squeeze out
all the juice.
4 – Weigh the juice and add sugar
and jellying agent.
5 – Cook without a lid, over high
heat.
6 – As soon as the jelly boils,
continue cooking at a high boil for 7
minutes stirring all the time.
7 – Skim off any foam.
8 – Pour into boiling hot sterilized
jars, put on the tops and turn jars
over.
Let cool for approximately 12
hours).
sherbet of figs from
caromb
Recipe by Richard Bagnol, Maître
Restaurateur, disciple d’Escoffier
Restaurant l’Oulo à Mazan
Ingredients
- 1 litre purée of long black figs
from Caromb
- 150 grams sugar
- 1 dl water
- 30 grams lemon juice
- 2 egg whites
- pinch of salt
- 120 grams sugar
Preparation:
Heat the water and the sugar until
the sugar dissolves. Sieve the fig
purée (or leave it unsieved) and add
to the water-sugar mixture with the
lemon juice. Chill two hours in the
refrigerator. Place in the sherbet
maker.
Prepare the Italian meringue: Whip
the egg whites with the salt, pour
over the cooked sugar (sugar cooked
to the small ball stage: 115 to 117°C).
Whisk until completely chilled.
When the mass starts to take in the
sherbet maker, incorporate the
meringue. Finish making the
sherbet.
“firm and soft” custard
(crème anglaise) with
caramelized melon

Restaurant Prévôt à Cavaillon
For 6 persons
Custard
8 egg yolks
1 litre whole milk
150 grams white sugar
2 vanilla beans
4 2-gram sheets of gelatine
Melon in compote
1 large melon from Cavaillon
100 grams of raw sugar
50 grams salty butter
1 orange
1 lemon
Dark Rum (5cl)
Compoté de melon
1 gros melon de Cavaillon
100g de sucre roux
50g de beurre salé
1 orange
1 citron
Rhum brun (5cl)
Preparing the custard:
Beat the egg yolks with the sugar
until very light. Put to the side.
Slit the vanilla beans and place in a
large saucepan with the milk ; bring
to a boil.
Remove the beans, scraping the
grains out into the milk and pour
the hot milk over the sugar-egg
mixture.
Cook gently 7 minutes stirring
constantly with a wooden spatula.
The cream is ready when it coats the
spatula. Put to the side.
While preparing the cream, soak the
gelatin in cold water with ice cubes,
for 5 minutes.
When softened, drain the gelatine
and add it to the warm custard. Mix
well and put to chill.
Preparing the melon compote:
Remove a few peels from the orange
and lemon, then squeeze the fruit.
Peel the melon and cut into 10 slices.
In a frying pan, melt the butter, the
sugar, the orange and lemon juices
and the peeled zests.
Caramelize. Place the melon slices,
caramelize them on both sides for
approximately 10 minutes.
Flambé with the Rum.
Using a fork, mash the melon in a
compote. Chill.
Presentation:
In a glass, place the melon compote
and pour the custard, which is not
yet entirely firm, over the melon.
Let chill 1 hour prior to serving.
Provencal
strawberries in muscat
with Black Pepper.
muscat de Beaumesde-venise and
Peppermint snowball

Ingredients
500 g of ripe strawberries
75 g of granulated sugar
25 cl of Muscat de Beaumes-de-
Venise
For the snowball:
175 g of sugar
175 g of water
250 g of ice cubes
300 g of Muscat de Beaumes-deVenise
5 fresh mint leaves
Preparation:
For the strawberries in Muscat:
The evening before, hull the
strawberries and place them in a
bowl. Lightly season them with
pepper and add the Muscat and
sugar. Keep in the refrigerator for at
least 2 hours.
For the snowball:
Bring the sugar, water and mint
leaves to the boil. When the syrup
has completely cooled, blend it with
the Muscat and ice cubes; (keep the
mixture in the freezer in an air-tight
box).
The ‘snowball’ will keep several
weeks in the freezer and can be
served with any fruit salad or replace
the classic glass of spirits served
between courses – the ‘Trou
Normand’
