Two Birmingham/Bloomfield restaurants, upscale yet approachable, more than fill the bill with their creative individual menus and chalkboard specials at breakfast, weekend brunch, lunch and dinner. Bill’s, on Woodward Avenue at Long Lake Road in Bloomfield Hills, and Beverly Hills Grill, on Southfield Road north of 13 Mile Road, are among six distinctive Roberts Restaurant Group (RRG) properties in Oakland County. Last year, Detroit Jewish News readers chose the clubby yet whimsical Bill’s as Best New Restaurant in the JN’s Best of Michigan poll, tied for the honor with another RRG property – Café ML in Bloomfield Township. The innovative Beverly Hills Grill, sporting a fresh design this fall, remains a local favorite since opening in 1988. RRG proprietor Bill Roberts says “consistency” is a key to his company’s success. “We’ve tried to use the same standards of hospitality and food quality at all six restaurants, even though the menus, design and neighborhoods are different,” he said. After Roberts secures a location, he and Birmingham designer Ron Rea brainstorm about the individual look and style of the restaurant they want to create. “He has a great feel for what people respond to,” Roberts said. Corporate Chef Patrick Roettele and Director of Operations Carl Volk assist with developing each kitchen’s layout, menu, wine list and staffing needs. The RRG team develops menus and recipes, relying on staff feedback. Seasonal food, often from local sources, is the byword. Opened in August of 2014, Bill’s stands on the site of the legendary Fox & Hounds steakhouse. In the vestibule, a green wingtip leather chair, framed photos and café curtains with views of the bar set a classic tone. Beverly Hills Grill Bill’s The dining room’s dark ceiling features barn-wood rafters and a large brass chandelier near the fireplace. Deep navy walls provide a neutral backdrop for the carefully edited wall display, unified by antique mirrors and artwork in gold frames. A photo of hometown girl Madonna coexists with historical portraits and school rosters, old plat maps and signs, steering wheels, blown-up portions of a $50 bill and mounted deer and moose heads. Diners sit at wood high-top or low tables. Place settings rest on black leather chargers at breakfast and lunch, and checkered tablecloths are brought out to change the look of the restaurant during dinner. Sturdy wavy glass divides the bar and dining room. By comparison, Beverly Hills Grill is “upscale but with a neighborhood feel,” said Volk. The restaurant‘s recent renovations introduced new windows, new carpeting, refreshed mahogany, a new bar and a great art piece by local artist George Vihos. Menu specialties for a power breakfast at Beverly Hills Grill include Jumbo Lump Crab Cake Benedict with tomato and Hollandaise sauce and housemade Corned Beef Hash topped with poached eggs, Amish sharp cheddar and scallions. A Wolferman’s English muffin accompanies this dish and the omelet of the day, which is served with fresh fruit. The BHG BLT is another breakfast option, consisting of hickory-smoked bacon, scrambled eggs, avocado, sharp cheddar, tomato and arugula on multi-grain toast with fresh fruit. Delicious breakfast choices at Bill’s include Prime Rib Hash and Eggs, King Crab Benedict with Maltaise sauce and grilled asparagus, Egg White Frittata, featuring basil, chevre, tomato and arugula/avocado salad, and Whole Wheat Oatmeal Pancakes with cranberry-apple compote and orange-honey butter. The hearty Bill’s Breakfast is two eggs, crispy hash browns, choice of meat and an English muffin. Steak and Eggs features a petite filet mignon. Despite the wonderful menus, many of the guests choose to order the daily chalkboard specials, giving “our chefs a chance to show their creativity,” Volk said. Esther Allweiss Ingber Contributing Writer hefs passionate about using fresh, wholesome ingredients in interesting combinations have kept Steve & Rocky’s in the Novi Town Center Complex at the forefront of popular destination restaurants between Detroit and Ann Arbor. Gourmet magazine has called it “one of the best restaurants in America.” The delicious Americancontinental cuisine starts with Chef Steve Allen, the restaurant’s co-owner, who also answers to the name “Farmer Steve.” The city boy, born and raised in Detroit, owns around 6 acres in the Hartland area, where his pleasure is raising, butchering and selling a variety of free-range poultry and livestock — including 350 freshly dressed turkeys for his customers’ Thanksgiving dinner this year. Fresh organic produce from Allen’s gardens is served at the Novi restaurant and also Rocky’s of Northville, owned by Allen’s business partner, Chef Chuck (Rocky) Rachwitz. In season, Allen also sells his heirloom tomatoes and other vegetables to chefs working at places like Henry Ford Museum and Livonia’s Schoolcraft College. He sometimes judges culinary competitions at Schoolcraft. On Oct. 22, Oakland Community College celebrated Allen and Rachwitz, distinguished graduates of its culinary arts program, at a sold-out Farm-to-Table dinner event. Explaining his purpose with Steve & Rocky’s, Allen said, “If you grow a good product, it’s reflected in what you’re cooking.” Restaurant general manager Duane T. Brady added, “Our niche is: We do simple food, done well. We offer quality service and keep prices reasonable, without breaking the bank.” That ideal combination is responsible for Steve & Rocky’s loyal following since opening in January 1998. “We’re still here, while other places have gone and went,” Allen said. The formerly funky, eclectic dining room is more elegant these days, with C 20 | JN Best of Michigan • December 2015 walls painted in dark pine green and jewel colors — “a more grown-up look,” Brady said. Decor holdovers include the fish tank, wine bottle display and extensive array of decorative roosters. Smaller ones sit on glass shelves separating the entryway from the bar. After complimentary hot, herbed rolls, many start their meal with Steve & Rocky’s signature Chef Milos Mushroom Soup. The creamy broth loaded with mushrooms was named for Allen’s mentor, Certified Master Chef Milos Cihelka. Following Chef Milos’ retirement from the renowned Golden Mushroom restaurant in Southfield, Allen spent five years as the restaurant’s executive chef. Other soups in rotation include butternut squash, made with sour cream and toasted almond garnish. Salads are always a good bet. In addition to House, Michigan Kale Salad and Caesar’s, one specialty salad is Martha’s Vineyard. It offers pecans, red onions, dried tart cherries, blue cheese, spinach and a sweet-and-sour vinaigrette. Grilled salmon can be added for an additional charge. Harvest Salad is curly endive, field greens, goat cheese, Port wine-poached pears, yucca crisps, roasted butternut squash and pomegranate brown butter vinaigrette. Fresh fish preparations are emphasized, such as lightly smoked and poached salmon. The dish includes potato-celeriac puree, vermouth sauce and Brussels sprouts. Lake Perch Saute, the No. 1 seller, is rolled in paprika-seasoned flour and plated with wilted spinach, Basmati rice, toasted hazelnuts and shitake mushrooms in a brown-butter vinaigrette. Brady said Steve & Rocky’s sells 100 pounds of perch weekly, so that’s a great choice. Filet mignon is the most popular of several aged meat choices. The filet is served with Cognac and black peppercorn sauce, mashed potatoes and crispy onions. Sauteed beef tenderloin tips and baked meatloaf also have Cognac sauce, plus other accompaniments. Another favorite entree is Chicken Scaloppini Oscar, which comes with a light and tasty crab/shrimp cake (made with no filler), Béarnaise sauce, sauteed potatoes and seasonal vegetable. A recent menu special was Asianinfluenced Five Spice Gulf Shrimp Rice Bowl and Bay Scallops Saute, including spicy tomato ragout, kale, cherry tomatoes and farfalle pasta. The daily quiche featured house-smoked chicken, sun-dried tomatoes and shitake mushrooms with a natural sauce, field greens and red wine vinaigrette. Save room for the tempting, housemade desserts served on a decorative stone. Sous Chef Jeff Evans oversees the pastry operation with its frequently changing pies, cakes, cheesecakes and more. The warm chocolate ganache cake is one delightful choice. Dining room manager Richard Cheaney is part of Steve & Rocky’s winning team, also comprised of attentive and personable wait staff. Esther Allweiss Ingber { Contributing Writer nter Steven Lelli’s Inn on the Green in Farmington Hills — named “Best Italian Restaurant” on the JN’s 2015 Best of Michigan ballot — and it won’t be long until you’re greeted by proprietor Mark Zarkin. “My favorite part of the day is going to every table and talking to each guest,” he says. “That is priority No. 1.” Zarkin opened the Farmington Hills location overlooking Copper Creek Golf Course in 2010 with his business partner and lifelong friend Steven Lelli, whose grandparents, Nerio and Irene Lelli, ran their iconic Lelli’s restaurant on Woodward at Bethune in Detroit for 60 years. Today’s Steven Lelli’s serves the same authentic Italian food and hospitality from that restaurant’s glory days. “I loved the original Lelli’s downtown,” Zarkin says. “Growing up, Steven Lelli and I were friends, and through the years I would help out there on busy holidays, working the floor or the pasta stations.” Zarkin’s interest in food was sparked at a young age, peeling potatoes for his Aunt Shirley at Bloom’s Kosher Catering in Oak Park. He worked for her on and off through the years before opening his own pizza and pasta shop in Troy after graduating Berkley High School. Through it all, Zarkin always retained his interest in fine dining. “Growing up, my parents took us to nice restaurants,” he says. “I would watch the staff and the management, taking mental notes in my mind.” However, after seven years, he left the restaurant business to start a chain of sundry shops. Eventually, Steven Lelli approached him about launching the next incarnation of Lelli’s and Zarkin jumped at the chance. Several longtime employees also came to the new restaurant in Farmington Hills. Some of the professional servers have more than three decades with the Lelli’s organization. “Busboy Louie,” 65, was hired at age 15. Executive Chef Jeff Lyons is a 20-year employee. Zarkin, who had grown up with Lelli’s, took on the challenge with gusto. “My role was to do everything it took to open the restaurant,” he says. “Now my role is to do everything it takes to run it. Three seating times are possible on New Year’s Eve, when a 10-piece band plays from 9 p.m.-midnight. every morning and the one who turns out the lights each night.” Zarkin handles everything from taking reservations to food quality control. “My first priority is taking care of the guests,” he says. “I want my customers to have a great experience and leave with the idea that they can’t wait to come back.” Old-school service like Zarkin’s is what keeps customers coming back and his belief that food is king. Steven Lelli’s Inn on the Green — which celebrated five years in November — is a haven for well-prepared, tender steaks and chops, as well as other staples of Italian and American cuisine. “I like to quote Rodney Dangerfield in the movie Back To School,” Zarkin says. “He said, ‘Don’t worry, if the roast beef is right, they’ll be back.” Zarkin shows his dedication to the Lelli’s tradition by coming to work at 5:30 a.m. every other day to ensure the quality of the famous soups, sauces and recipes. Two signature items are vegetarian minestrone soup, thick with minced 34 | JN Best of Michigan • December 2015 vegetables, spinach and tiny pasta, and Spaghetti Bolognese. Its exceptionally meaty sauce comes from chopped prime tenderloin. A house favorite is their prime tenderloin meatballs. And their famous Zip sauce, true to Steve Lelli’s grandparents’ original restaurant, adds unique flavor to their perfectly cooked filet mignon, veal and lamb chops. Chateaubriand is another customer favorite sliced tableside and cooked to perfection. “We are one of only a few restaurants that deboned Dover sole, tableside,” he adds. Bananas Foster and Berries or Cherries Jubilee, flambéed tableside and served over vanilla ice cream, or carrot cake — the absolute best in the area — make for the perfect ending to a memorable meal. Zarkin is proud of having “award-winning wines from around the world,” noting that his is one of only 11 restaurants in the country honored this year with Wine Spectator’s Best of Award of Excellence. The restaurant received the publication’s Award of Excellence in 2014 as well. You’ll find many a famous name and photo on the wine lockers that line the restaurant’s entryway.
