“I was not a baker nor big cook before I had kids. Once you have kids you realize that you want to feed them the best healthy foods, and biscotti are a good healthy snack. I love to bake them soft for my kids but drier for me to dunk in caffe latte. The crucial moment is on the first baking when you take them out from the oven. Let the log rest, otherwise when you start cutting you will have lots of broken biscotti.” Selli Cito-Rodrigues (left) with her daughter, Erika. SELLI’S FAVORITE BISCOTTI BY SELLI CITO-RODRIGUES INGREDIENTS: 2 and 1/2 cups of flour 2 teaspoon anise seed (optional) 1 and 1/2 teaspoon baking powder 1/2 teaspoon salt 1 stick of butter 1 cup of sugar 1 teaspoon orange zest 1/2 teaspoon vanilla extract 1/4 teaspoon almond extract DIRECTIONS: Preheat oven to 325 degrees. Mix flour, baking powder and salt in a bowl. In a separate bowl, mix butter, sugar, orange zest and all extracts. After mixture is smooth, beat in eggs one at a time, add flour mixture and finally the chopped almonds. Divide dough into two logs and bake for 35 minutes. Remove logs, cool and cut into 1/3” slices, cut diagonally. Place the cookies cutside down on the baking sheet and bake at 250 degrees for 30 minutes or until the biscotti are dry enough to your liking. 2 eggs Cool and store in a glass, ceramic or tin container. 1/2 to 1 cup chopped almonds ENJOY! 1
