Ladies and Gentlemen,
Season is finally here and we’re delighted to see everyone around
the Club. Thanksgiving this year was attended by an even greater
number of Members and their guests than were here last year.
With the holidays right around the corner, the fun has just begun.
We hope you’re ready to enjoy this season’s full line of events that
we have planned for you, your families and friends.
Please join us for dinner, drinks or a snack in our five dining
venues and see what our new Chef has prepared. Enjoy tropical
breezes and dining at Barefoot Café, on the Upper Terrace and
Chill in the Courtyard — there’s no better way to relax and enjoy
life in South Florida.
Our Social and Cultural Arts calendar is full of events to keep you entertained — there’s something for everyone — Improv Nights, the
Annual Street Fair, the New Year’s Celebration, Little Anthony & the Imperials, Broadway Series, Lecture
Series, Community Performing Arts, Valentine’s Dinner Dance, Jukebox Heroes Live, art workshops, theatre,

COOKIE SCHWARTZ
“Being an active Member
of the Board of Governors
of the Polo Club means
that you really care,” says
Elaine Abrams. According
to Elaine, this accurately describes Cookie, who, in her words, “has
been an asset to our Club.” Elaine notes that
Cookie has devoted countless hours to make
Polo better, delving deeply into areas of concern regarding Food and Beverage as well as
the Card Rooms. She was instrumental in ensuring that purchasing procedures were being
followed and spent months rewriting the Polo
Club Member Handbook.
“Cookie is tenacious in what she feels is right,”
Elaine says. “[She] has always been an independent thinker and has supported what is
best for Polo.”
Cookie says she ran for the Polo Club Board in
2010 to help impact the direction that the Club
was heading and to be part of the changes that
would raise the community’s image, the Polo
experience, and the home values.
“As I look back on these past five years,” reflects Cookie, “I am proud to acknowledge that
our goals have been met under the new leadership of General Manager, Brett Morris. Brett
sincerely cares about our club, it’s Membership,
and making Polo the best it can be.”
Prior to her election, Cookie heard rumors about
previous boards and the divisiveness among acting Members. During her term, Cookie describes
the Board as a “cohesive group of Members who
truly care, give of their time, and are respectful of
each other regardless of whether we agree or not.”
Cookie shares, “It was a pleasure serving the
Polo Community as a Member of the Board, listening to all your suggestions, and I thank you
all for your confidence in me.”
PRESIDENT AND CEO
STANLEY GOLDBERG
Stanley Goldberg has been an
active part of Polo Club’s leadership since 2009, when he was
Golf Committee Chairperson. In
2011, Stanley joined the Board
of Governors. In 2012, he was Vice President of the
Board before serving as President and CEO from
2013 to 2015.
Doug Green, former President and 2015 Treasurer recalls, “Five years ago, when I was president of the Club, Stanley got elected to his first
year on the Board. I did not know him very well,
but in short order, it became evident to me that
Stanley had profound dedication and commitment to the Members of the Polo Club. Shortly
thereafter, we separated from our then General Manager/COO and needed someone to step
into an interim GM/COO role until we identified
and hired the new GM/COO. When I reached
out to Stanley, there was never a question in
his mind. He willingly accepted the challenges
that lay ahead, ‘holding down the fort’ for eight
months. It was during that time that we opened
the Family Resort Complex and Barefoot Cafe.
Clearly from a staff morale standpoint and a
Member experience standpoint, I can’t remember a better year at Polo thanks to the dedication and commitment that Stanley brought to
the table. The following year, Stanley became
Vice President of the Board and then served as
President for three years. Polo has never been
better. We will be forever grateful!”
Barry Fienstein, Golf Chairperson, has known
Stanley for more than 20 years. They both lived
in New York and Stanley was president of their
country club there. “Stanley has a way about
him,” shares Barry. “He has mastered the art
of bringing people together on issues. He gets
along with both the staff and the Members and
gets them to work together.”
“Stanley is someone you can trust. He listens
to everybody and then makes a decision. And
even if you don’t agree with his decision, you
understand why he made it.”
Barry says he can’t remember ever seeing
Stanley mad. His personality and the way he
handles people has had an enormous impact
on the security, growth, and stature of the Polo
Club in the greater community.

Spotlight
Passion, Inspiration,
and Humility

Some people are living proof that
it is never too late to follow your
passions. In fact, following a passion
is exactly what has kept longtime
Polo Club resident Ira Rimerman
young. The 77 year old grandfather
of five is a world champion swimmer
who recently represented the US in
Kazan, Russia at the US World Masters Swimming Championships, placing
third and winning bronze medal in the
400-meter freestyle, and medals in the
200-meter freestyle 100-meter butterfly.
While Ira has been swimming his whole life, he
had previously only taken part in competitions
while in high school and college, where he also
lettered for three years. After graduating from
college, he didn’t compete for 50 years through
raising a family and pursuing his career. Then, in
2011 at age 72, when most people are slowing
down, Ira decided to start swimming competitively again.
In the next two years, fueled by his love of the
sport, he won eight over-all US national championships in the butterfly and was named an
All-American both years. In 2014,
he represented the US at the World
Masters Swimming Championships
in Montreal, Canada, taking bronze
medals in the 200-meter butterfly.
IN GOOD COMPANY
Still, despite his impressive accomplishments,
Ira remains humble.
When asked what it’s
like to have achieved
the best recorded times
in the US among his
competitive peers, Ira
replies, “This is age
group swimming,” adding with his wry humor,
“Michael Phelps does not
have a problem with me.”
One of his specialties, the 200-meter butterfly, is considered the most difficult stroke and
most swimmers his age won’t swim it. “So I just
outlast them,” Ira says in his good-natured ease.
“Representing the U.S. was a great experience.
Not a lot of people get to do that.”
A TEAM OF CHAMPIONS
FINA, the International Swimming Federation
and sponsor of the Masters Championships,
is recognized by the International Olympic
Committee (IOC) for administering international competition in five aquatics sports: swimming,
diving, synchronized swimming, water polo and
open water swimming. Rimerman was among
35 Americans in Kazan this year who together
took home 51 gold, silver, and bronze medals.
To what does Ira attribute all of his success?
Obviously, his passion for swimming has kept
him at the top of his game. Quick to share the
credit, Ira says, “I think what has happened is
that I am a really hard worker and good competitor, but I have really good coaching. The
coaching and training is so much better today
than it was in the 50’s.”

“If five years ago when I started my second
swim career someone told me that I would be
able to compete at this level, I would not have
thought that would be possible.” Yet Ira is a living example that when fueled by passion, you
never know what can be possible until you try.

Sharsheret Lecture
T U E S D A Y, N O V E M B E R 1 7 T H
On November 17th, Sharsheret came to the
Polo Club to speak about breast cancer and
it’s genetic link to the Jewish community.
Sharsheret, Hebrew for “chain”, is a national
not-for-profit organization supporting young
women and their families, of all Jewish backgrounds, facing breast cancer. Their mission is
to offer a community of support to women
diagnosed with breast cancer or at increased
genetic risk, by fostering culturally-relevant individualized connections with networks of peers,
health professionals, and related resources.

SIMPLE
STEPS
TO BETTER GOLF
BY TOM HAASE
With the key word being “SIMPLE,”
let’s explore some ways to better
golf. Whether your goal is distance,
direction, lower scores or all three, simple
would mean no swing changes or practice.
Now you’ve gotta love that.
1
WARM-UP
Physical preparation for your round of golf sets the tone for your
ability to perform. For starters, make it a habit to show up early
enough to go through a few routines before you hit a ball.
➤ Stretches: Start with some stretches on our True Fitness Stretching Cage
located on the approach to the driving range deck. The signs on the unit will
guide you through the process (5 minutes).
➤ Putt Around the Clock: Roll some long putts first, keeping the body
and head very still. Feel your metronome pace. Remember that this is not
a practice session. Next, stroke a few one footers into the hole with the
same focus on a measured even pace. Hold the club softly (5 minutes).
➤ Chip and Pitch: Now head to the practice green and chip a few balls with
a focus on watching the clubhead hitting into the ball and then cutting the
grass. Relax. Use our PW, 9, 8 or even 7 for this low rolling shot. Next take
out your sand wedge and feel a smooth shoulder and hand motion to hit
down on the ball, so it will go up. Remember there is not room for the club
under the ball so hit down! (5 minutes)
➤ Head to the Range: Let’s do a couple of more stretches at the cage followed by five practices swings. You are now ready to take some full swings
with your favorite club. Finish with the DRIVER and go to the first tee. Keep
in mind that this is not a swing change or practice session (5 minutes).

GET A GRIP
This step is not about holding the
club properly, but about having grips
that you can hold onto. (In a perfect
world, you have taken enough golf lessons and
hold the club properly). Your only relationship
to the club is the grip. Using old worn, slippery
grips will increase the tension in your hands,
which then transmits to the rest of your body.
Tight muscles don’t make for good golf swings.
Grips come in many sizes to properly fit your
hands. Also, anyone with arthritis should be using
a larger and softer grip. The Pro Shoppe staff
with gladly show you all the options available.

AIM
Polo golfers have probably heard us
say, “you have to be careful; the ball
might go where you are aiming.” One
tour player said, “99.999% of golfers aim
everywhere but at the target; the rest of
us are out here (on tour).”

USE THE
RIGHT CLUB
Knowing the distance you hit each
club is key to lower scores. Ever
notice that there are no ball marks on the
back portion of the green? That’s because
most players do not use enough club. Polo
Club’s GPS units will give you the yardage
to assist your club selection. The system will
not, however, take into account a higher elevation of the green, wind in your face or even
humidity. Be realistic. Learn your distances
with GPS and note the additional influences.
For your short approach shots, distance control is about swing feel and tempo. Staff has
provided pitching nets, which will be 25 paces
in front of the range markers. The idea is to
practice running up to or “Nothing but Net.”
Proper aim through a consistent
on-course and on-range, pre-shot
routine creates the shape of your
swing. It is necessary that the body
and mind are heading in the same direction. For starters, the feet and shoulders DO
NOT point at the target—the club face does. If
you aim your body at the target, you are aiming
well to the right for right-handed players (left for
lefties). Inches off line at setup result in many
yards off line, depending on your distance. Picture railroad tracks. Your ball is on one track,
your feet on the other.

Polo golf pros have placed aim sticks at the
driving range. Set them on the ground about
1 foot apart with an imaginary line drawn to
the center of the flag. Place your club head
in the center and both feet the same distance
from the stick closest to you (parallel). If you
feel as if you are aimed left, you are correctly
lined up to the target (for righties).

5 seconds. You will even
putt better if you hold the
finish point of the putter
(breathe).

GPS-based golf distance devices have become wildly popular, and in addition to providing yardage, they offer hole by hole maps
of the courses. Garmin’s Approach S5 Golf
GPS Watch is newest the top of the line golf
watch and it comes pre-loaded with map data
for more than 38,000 golf courses across
the globe and uses course recognition, so it
knows where you are playing as soon as you
arrive. Unlike many other golf GPS devices,
there is nothing you have to download or do
in advance, and no subscription fee. As additional courses are added or revised, updates
are delivered free for the life of the watch, via
computer or smartphone app. Don’t expect to
see your golfer much, as they test out all the
new things this watch can do.
“I’ll never forget the day I was given the gift
of a brand new Titleist golf ball. I was nine
years old and playing golf with an uncle on
an executive length course near Cleveland
called Green Ridge Golf Course. We were
playing along just fine for the first seven
holes, and up to that point, I had not lost a
ball. A good round was one ball from start
to finish. We lived near the course and all
the balls I played with came from the woods
on the other side of the fence. Next, we
faced the biggest challenge of all, the lake
on number 8. The walk from 7 green to 8 tee
was as frightful as the first day of school.
That lake was huge. Lake Erie had nothing
on it, and while I hadn’t seen the ocean yet,
I’m sure it wasn’t in the same league.
“As usual, when I got to the tee I reached
into my bag and pulled out an old beat up
ball, so its eventual fate would be no great
loss. The good old water ball, as we call it.
Before I had a chance to take my driver out
of the bag, my uncle said, in a very commanding voice, ‘What are you doing? Put
that thing away and use this.’
“I couldn’t believe it, but he handed me a
brand new Titleist. Oh man, I was thinking,
now every relative I have in the world is
going to hear about how I dunked this new
ball into the water. While all this was going
through my mind, he interrupted with the
comment, ‘Only a new ball can make it over
that water. The junk you want to use won’t
make it half way.’ So I took the mightiest
swing I had, and to this day I have never
seen a ball in the air that long. Unreal, I finally made it over that lake.
FOR THE GOLFER WHO HAS EVERYTHING:
Book a trip and send them to one of the best
golf tournaments in the U.S. Few things can
compete with a golden view at The Masters,
AT&T Pebble Beach National Pro Am, or the
U.S. Open. If you have the means and can
brave the weather, cross the pond to attend
the British Open. Obviously, prices vary wildly,
so plan early for a great gift experience.
Fast forward to a few years ago. I was in the
Cleveland area, and decided to take a nostalgic tour of that course. When
I got to number 8, to my
surprise, the lake was not
much larger than the average dining room table.
But that ball still reigns
as my favorite golf gift.”

Resolution to Give
Back to the Sport.
In January 2015, as in many years prior, the
top New Year’s resolutions were all about fitness, wellness and losing weight. According to
Nielsen.com, an online news service, 37 percent
of U.S. consumers surveyed picked “staying fit
and healthy” as their number one resolution. It
was followed by “lose weight,” “enjoy life to the
fullest” and “spend less, save more.”
At Polo, our Tennis team has devised a list of
2016 resolutions that combine enjoying life,
getting active and giving back. Consider them
your top 3 “can-do” promises of the year, and
they require no dieting and no budgeting. We
simply couldn’t make it easier.
#1 RESOLUTION:
Get involved.
“So many opportunities exist to support tennis,
the sport, and tennis, the culture, at Polo,” said
Jean Mills, Polo’s Director of Tennis. “Even if
you’re not an avid or advanced player, there are
several ways you can show your dedication to a
sport that makes Polo such a great place to live
and play.”
Support Polo and tennis during Charity Week,
March 13-20, 2016. For the first time, Polo
will come together to support a local charity
through a schedule of fun activities and events.
Members can participate in the new 2016 Tennis
Calcutta competition, buy a team in the Calcutta or come out and watch the matches being
played by friends and neighbors. To show love
and good wishes to anyone they choose, Members can purchase a sign for $100 and select
the message for the sign that will be displayed
during Charity Week. The tennis competition
will feature a big cocktail party and an auctioning off of the teams.
Enjoy the courts through cheer or play! In addition to Charity Week, the courts at Polo always
offer an opportunity to get involved. Members
have an open invitation to watch the men’s and
ladies team matches and cheer for their friends,
and of course, joining in the fun is always an
option. Players can compete in doubles, intramurals and monthly events that are designed
to appeal to everyone.
Polo brings international talent close to
home with a calendar of tennis events,
such as the Pro Exhibitions for women,
children and with Polo pros, which began in
November and continue monthly through
the winter and spring. If Members want to
travel to different venues, special matches
will be held in Delray Beach in February and
in Key Biscayne in March.

and our staff tries to make it as easy as possible

In our Tennis & Resort Shoppe, Members can
find proper sun-protective gear and accessories,

heat. The Chelsea Computerized System enables
Members to put in a standing reservation for
play for up to six months in advance. Members
can confirm their reservation time and court
assignments via the Polo Club TV channel.

JARC Check Presentation
Ready to Volunteer?
FIND YOUR PLACE AT THE FAIR
On January 22, Polo’s Clubhouse will transform
into an avenue of booths and stations filled with
people and information about how Members
can volunteer. The Volunteer Fair will be held
from 1-4:30 p.m. and all Members are encouraged to explore their options for giving back to
the community.
“We hope to have between 25-30 organizations
out to the Polo Club, bringing information about
their various agencies to give Polo residents
some ideas and information about volunteer
opportunities,” said Community Relations
Chairman Nathan Miller. “We have a great mix
of agencies confirmed to participate, so far.
They address the needs of adults,
children, the disabled, the emotionally ill, forgotten soldiers
and animal rescue.”
Miller volunteers with Ruth and
Norman Rales Jewish Family
Services (ralesjfs.org) and gets
a great deal of personal satisfaction from helping Holocaust survivors complete claims for restitution and
compensation programs.
“I’ve been working with Ruth Rales and
Holocaust survivors for the past 14 years.
Many survivors are isolated and don’t
have children living in Florida. They look
forward to my visit. It’s social contact,”
he said. “Many people at Polo have time to give
back to the community, and the Fair will be a
way to encourage their interest. So many agencies that we don’t know about need volunteers.
The hospitals have lots of volunteers, but the
smaller agencies have great needs as well.”

POLO GIVES TO JARC WITH HIGH HOLIDAY
The season of giving kicked off in September
with the introduction of Polo’s first High Holiday program.
“The holiday period provides us with
an opportunity to memorialize our
friends and loved ones with a gift of
charity in a ‘Book of Remembrance’,”
said Jill Fogelman, the Board Liaison.
“In our first year, our book listed
421 names and raised $7,578.”
Polo donated the money
to JARC, the Jewish
Association for Residential Care. Located
in Boca Raton, JARC provides residential
facilities, case management and vocational
training to adults with intellectual and developmental disabilities. Residents of JARC work
and contribute to the community, and Polo is
proud to support them.

During the week of March 13, 2016, the Polo
Club will host its first “Polo Gives Back” a
weeklong, club-wide charity event. The
new outreach effort was developed to give
the Members of Polo more opportunity to
“make a difference and provide financial
support to not-for-profit, non-denominational, 501 (c) 3, charities close to home,”
said Event Co-chair Libby Goldberg.
“A weeklong array of activities, sponsorships and raffles are planned with the goal
of giving Polo an even greater opportunity
to work together and to have a significant positive impact in our community,”
said Board Liason Jill Fogelman.
POLO WILL SUPPORT FAMILIES
THROUGHOUT THE COUNTY
Two charities have been selected as beneficiaries of the inaugural “Polo Gives
Back” Week – AVDA, Inc. (Aid to Victims
of Domestic Abuse) and The Forgotten
Soldier Outreach. Proceeds of all participation will go to support the work of these
two organizations.
AVDA, a Delray based charity that will celebrate its 30th year of helping the community in 2016, operates 24 hour/365 days
a year. It offers a safe place to victims
of domestic violence and their children.
Residents are provided food, clothing,
safety planning and assistance in achieving

Forgotten Soldiers Outreach is a grass roots
non-profit organization that supports our
deployed service men and women and their
families serving in the United States Military
with care packages, letters of encouragement
and returning Veterans assistance. They work

Golf is in full support by offering individual
programs for women and men. An all-inclusive
Ladies’ Golf Day will feature a tournament
open to both 9- and 18-holers, an All-Club
luncheon, and a Bloomingdales-hosted fashion show. For the men, plans are in the works
for Polo’s First “Pro-Am” tournament with a
cocktail party to follow.
Tennis is hosting a Calcutta for men and
woman. A cocktail party will set the stage
for a Jean Mills hosted auction, where
Members will be given the opportunity
to bid on participating teams comprised
of their friends and neighbors. Prizes are
awarded to the “owners” of the winning
teams and the winners themselves.
Spa & Fitness will host our traditional
Polo Charity Walk. It will be a festive occasion when Polo T-shirts and banners flood
Champion Blvd. Don’t miss it!
The Dog Parade
Polo will “go to the dogs” with our first Pet
Parade. Bring your furry family Members and
beloved barkers of all shapes and sizes to
the red carpet for a day of parades, contests
and prizes.
And in the planning…
A special billiard event, themed play-offs
in the Card Rooms, Pickle Ball, a Finale
Barbecue and so much more!
Members are needed to assist in the event
planning, raffles and sponsorship or to just

The holidays are coming and it’s your turn
to host the dinner party. You have hundreds
of RSVPs and can expect at least as many
unannounced drop-ins. You will be expected to
serve multiple courses, all made from scratch,
of course, and everyone will want different
entrees. You will also need to accommodate
dozens of unique dietary needs and perferences and do it all with a smile.
Impossible, right? Not only is it possible, it’s a
daily reality in Polo Club’s Food and Beverage
department — multiple times per day.

“CONTROLLED CHAOS”
Year-round, Polo’s Food and Beverage
department is one of the busiest areas in
the Club. Come winter, with seasonal residents on property and families visiting
for the holidays, kitchen activities heat up
even more with the culinary staff on full
steam ahead and Chef Edward Leonard,
CMC at the helm.
“It’s controlled chaos,” says Leonard.
New Year, New Tastes
What’s new for 2016? Chef Leonard hints at new
menu items at Steeplechase that will reflect Italian
and Mediterranean flavors, a new dessert concept
for Bistro, and special themed buffets to provide
new experiences that will delight Members.
From an outsider’s perspective, Polo’s
kitchen operations look more like a
perfectly orchestrated symphony than
chaos. With over 90% of items made in
house, including 95% of all breads, pastries, cookies, and gelatos, weekly meetings are held to organize the massive
production involved in serving thousands
of meals per day, seven days a week.
Twelve menus, including five that change
every six to eight weeks, feature more than
240 items available at once, not including banquet and buffet. Chef Leonard
estimates that over 490,000 meals are
served per year, totaling 1.2 million pounds
of food, and over 12,000 dishes, glasses,
and silverware are washed daily.
IT TAKES A VILLAGE
This season’s culinary team includes
more than 65 chefs and cooks, plus 25
stewards working in seven kitchens and a
full pastry shop. This team prepares and
cooks for five full service restaurants, a
banquet and event room that seats up
to 650 guests, the Traditions Lounge
for food and drink, Chill, and the Upper
Terrace for barbeque and grill events.
“Our goal is quality, consistency, and flavorful food presented in an eye appealing
manner and timely fashion for all of our
Members and their guests,” says Chef.
“The whole culinary team enjoys what we
do, and we work our hardest every day to
please each Member and make the Club
special for them. We do not always hit
the mark, but know that we are working
hard every day to do so.”

Trends asked Chef Leonard to share some
favorite holiday recipes Members can try at home.
Here are two crowd pleasers. Bon Appétit!
Chef’s Pecan Pumpkin Cheesecake
Ingredients:
1 3/4 cups shortbread or vanilla wafer crumbs
5 teaspoons butter, melted
1/4 cup chopped pecans
24 ounces cream cheese
1 1/4 cups light packed brown sugar
16 ounces quality canned pumpkin
2 eggs
2/3 cup evaporated milk
2 tablespoons cornstarch
1 teaspoon pumpkin pie spice (recipe below)
1/2 cup pecan pieces
1/4 cup packed brown sugar
1/2 cup corn syrup
2 tablespoons butter
1/4 teaspoon vanilla or pecan extract
1 egg beaten
> Mix crumbs and 4 tsp. melted butter, press
into and up side 1 in of 9 inch spring form.
Sprinkle with pecans. Bake at 350ºF 6-8 minutes. Do not allow to brown. Reserve.
PUMPKIN PIE SPICE
Ingredients:
4 tablespoons ground cinnamon
4 teaspoons ground nutmeg
4 teaspoons ground ginger
3 teaspoons ground allspice
1/2 teaspoon ground clove
Pinch of vanilla powder
Beat cream cheese and brown sugar until creamy.
Add pumpkin, eggs, milk, cornstarch and cinnamon
and beat well. Pour into crust, bake in a water bath at
325ºF for 55/65 minutes or until edges are set.
Warm spices in a pan slowly. Sift together.
Combine pecans, extract, 1/4 cup brown sugar, butter,
syrup in a pan, bring to boil, temper the egg and then
top on the cheese cake. Bake at 350ºF for 6-9 minutes.
White Fish Salad
Mix the following ingredients:
2 lb. whole or filleted smoked whitefish
1/3 cup mayonnaise
1/3 cup sour cream
1/2 cup minced celery stalks (Peel Celery before dicing)
2 tablespoons fresh minced dill
2 tablespoons fresh minced chives
Kosher Salt and pepper to taste
Freshly squeezed lemon juice to taste (1-2 lemons)

Shop and Boardriders Unlimited, BEACH 101 provides an introduction to water sports, including
instruction in Snorkel Safety, Snorkeling, Paddle

to Shore Alliance will also be onsite to discuss
North Atlantic right whales, manatees, and other
Florida marine wildlife, as well as ocean conservation and how we can help our oceans.
