Decide what kind of event you’d like to hold Take inspiration from the six countries that feature in the Project Compassion stories or the ideas in the following pages. 2. Hold your event and have fun! m the day 03 RECIPES FROM BRAZIL The wonderful people from our 2014 Project Compassion stories shared some of their local recipes with us, and we’d love to share them with you … BOLO DE GENGIBRE MACIO (GINGER CAKE) INGREDIENTS: 3 eggs 1 tbsp. grated ginger 1 cup oil 1 cup milk 2 cups wheat flour 2 cups sugar 1 tsp. cinnamon powder 1 tsp. baking powder d sell homemade Hold a cake stall an Macio from Bolo de Gengibre recipe. Maristely ’s family HOW TO PREPARE: 1.Sift all dry ingredients into a bowl and set aside 2.Blend eggs, oil, milk and flour 3.Combine the wet and dry ingredients and beat with a wooden spoon for 5 minutes 4.Pour batter into a greased 25cm baking pan 5.Bake for approximately 50 minutes at 180 degrees 6.When cool, sprinkle with sugar and cinnamon. Serves 10. Archie loves version of chicken home. to cook this dish at TINOLANG MANOK (CHICKEN SOUP) INGREDIENTS: 1kg chicken chopped into pieces 1 tbsp. oil 3 cloves garlic, minced 1 large onion, chopped 1 tbsp. ginger, peeled, cut into strips 3 green papayas, peeled and sliced 1 cup chilli leaves (substitute spinach if you can’t find these) Salt and pepper 1 cup water 1 chicken cube, optional 1 tbsp. fish sauce HOW TO PREPARE: 1.Saute garlic, ginger and onion in oil on a medium heat 2.Add the chicken, with salt, pepper and stock cube and cook for 5 minutes 3.Add water and fish sauce. Bring to a boil. Lower heat and simmer for about 10 minutes or until chicken is half done. Add more water if needed 4. Add the green papayas. Simmer for 10-15 minutes or until the papayas are cooked 5. Remove from heat. Add the chilli leaves 6. Serve with rice. Serves 6. So holding a Caritas Café during this time can be even more fun! Be environmentally friendly and only use free range eggs in your pancakes, eat sustainable fish and buy fair trade chocolate eggs. Heat your pan or griddle to mediu m heat. 2.Combine all of the dry ingredien ts and mix together. Next, add in the liquids and eggs. Mix until smooth. 3.Pour the mix on to the pan or gridd le, 1/3 cup at a time. SIZZLING FISH CAFÉ Take the Catholic tradition of forgoing meat on Fridays in Lent one step further by holding a Fish Friday event and serving a simple meal so others can simply live. Whether it’s wonderfully tasty crispy salmon, or simple fish sticks on the menu, you can run OTHER FISH FRIDAY IDEAS: your café by asking for a donation in return for their meal, selling tickets to a sit down ‘dinner party’ or simply selling your goods at a ‘stall’. MINI FISH SLIDERS FRESH FISH SALAD IN A NOODLE BOX BBQ FISH STICKS TRY MAGGIE BEER’S FAMOUS FISH RECIPE – CRISPY SKIN SALMON WITH PEA PUREE. YOU’LL WOW YOUR FRIENDS WITH THIS ONE. FROZEN PEA PUREE INGREDIENTS: Salt flakes to taste 1 tbsp. lemon juice 1 sprig chervil* 3/4 cup chicken stock 2 golden shallots peeled and chopped 2 tsp. extra virgin olive oil 15g unsalted butter 1/2 cup frozen peas HOW TO PREPARE: 1.Spread peas on a tray to thaw for 10 minutes. 2.Place a large frying pan over medium heat, add the butter and melt with the extra virgin olive oil. Add the chopped shallots and sauté until soft. 3.In another small saucepan, bring the chicken stock to the boil. 4.Add the peas to the shallots along with a sprig of chervil, and add the lemon juice. 5.Pour the hot chicken stock over the peas and quickly bring up to the boil again, then remove from the heat and allow to cool slightly. 6.Pour the pea mixture into a blender and process until fine. Taste for seasoning and adjust if necessary. CRISPY SKIN SALMON INGREDIENTS: 1 tsp. chervil* chopped 4 wedges lemon 1 tbsp. extra virgin olive oil Salt flakes to taste 560g or 4 thick salmon steaks, skin on 20g unsalted butter HOW TO PREPARE: 1.Heat a large frying pan over a moderate heat with half the butter. 2.Season the salmon on the skin side with salt flakes. 4.Return salmon to pan, add the butter and return to heat. 5.Once melted, turn the steaks over with tongs and almost immediately take the pan off the heat and allow to sit in the hot pan. The centre of the fish should be a little rare. 6.To serve, pile a layer of pea puree on to a plate and place the fish on top. Squeeze a wedge of lemon over each piece of salmon, sprinkle the herbs on top and dress with a drizzle of extra virgin olive oil. *chervil: a yummy herb from the parsley family Generosity is so important in life. Project Compassion… reminds us all to think outside of our own day to day lives and remember the power of what can be achieved if our decision making is based on love and compassion. 3.Once the pan is hot, add a dash of extra virgin olive oil and place the salmon steaks skin side down in the pan. Cook for about 2 minutes or until the skin is crisp. Putting the salmon aside, quickly wipe out the pan with a paper towel. Maggie Beer 07 EASTER CAFÉ EASTER IS A FUN TIME TO GET CREATIVE WITH YOUR CAFÉ IDEAS. Hold your own Easter themed bake sale or sweet stall. There are lots of things you could make and sell. Here are a few ideas to get you started. 1. A SPOONFUL OF SUGAR (LITERALLY) Fill plastic spoons with melted chocolate and decorate with brightly coloured lollies. 2. CHOCOLATE EASTER NESTS INGREDIENTS: 100g dark chocolate, broken into pieces 50g butter 2 (very generous) tbsp. golden syrup 80g cornflakes 10 cupcake cases HOW TO PREPARE: ǁǁ Place the chocolate, butter and golden syrup into a saucepan. Over low heat, stir until the ingredients are melted together. ǁǁ Pour the chocolate over the cornflakes and mix until everything is coated with chocolate. Celebrating Easter is great fun, especially with all the chocolate and hot cross buns we get to eat, but when you’re holding your food stall or morning tea remember those that don’t always get to share a snack with family or friends. Lorraine from Project Compassion 2014 misses sharing bush tucker with her family in Kintore due to her dialysis treatment in Alice Springs buts finds comfort in sharing tea and barbecued kangaroo at the Purple House. ǁǁ Line up the cupcake cases on a tray. Spoon some of the mixture into each, squashing it down a little and making a dip in the middle. ǁǁ Cover with cling film and chill in the fridge for a couple of hours then add small Easter eggs to each nest. Recipe makes 10 nests. 3. Fill the kitchen with the wonderful smell of hot cross buns Make them fresh or buy a pack and heat them up. Spread liberally with butter. Yum!
