In order to remove the slicer from the packaging, please proceed as follows: • Cut and remove the plastic bands. • Open the box and take out the instruction booklet. • Proceed as described hereafter. - Remove the protective cardboard covers from inside the box. - Lift the machine with great care and place on a solid surface. - Remove the plastic bag in which the slicer is wrapped. • Check that all components specified in the delivery note and this instruction booklet are present and fully intact. • Should any faults be noted, such as: - dents to the frame or guards; - controls that are either not working or broken; - missing items or other problems; please advise the courier, manufacturer and service centre immediately. • Carefully dispose of packaging components (bands, cardboard, polystyrene, polythene bags, etc.) as reported on page 39. All component parts are adapted to the requirements of the Directive and the CE mark testifiying the compliance. The plate with the identification of the manufacturer, the technical machine and the CE marking is located on the base of the slicer. The plate must never be removed and must always be legible. In case of wear or damage, the user is required to replace it. The staff authorized to make the electrical connection must verify that the characteristics of the power supply line match to what is indicated on the plate. The slice thickness is adjustable thanks to a gauge plate placed before the blade; This plate, against which rests the product to be cut, can be moved transversely with respect to the blade by a value corresponding to the desired slice thickness. All components of the machine are made of aluminum alloy polished and anodically oxidized, stainless steel and plastic material for food use. The cutting blade is driven by an electric motor and the motion transmission is obtained with a longitudinally grooved belt. Start and stop are performed with a button.. Safety devices installed ONLY for version “EXTRA CE” • Funding base, handguard and microswitches ONLY on request (to be considered “OPTIONAL”) EN 2.3 -Residual risks During use and during cleaning and maintenance of the slicer, despite efforts in the design and construction, there is still possibility of damage (cut risk) to which you can be exposed if you do not work with GREAT ATTENTION. DON’T BE DISTRACTED! DO NOT use the slicer if not in perfect physical conditions and NOT allow anyone to approach during the use: when cleaning, lubricating and sharpening the blade ALWAYS wear gloves, cut- and tear-resistant. Slice only products allowed (see section 1.4). DO NOT attempt any cutting test with prohibited products type. GUIDE TO THE TREATMENT OF WASTE EQUIPMENT This product complied with Directive 2002/19/UE. The crossed out wheeled bin symbol on equipment indicates that it must be treated separately from household waste at the end of its working life and therefore taken to a recycling facility for electrical and electronic equipment or handed over to the reseller when purchasing new equipment of the same type. The user is responsible for consigning the equipment to appropriate collection facilities at the end of its working life or face the penalties provided for by current waste management legislation. Separate collection for subsequent delivery of waste equipment to environmentally-compatible recycling, treatment and disposal facilities to prevent possible negative impacts on the environment and human health whilst encouraging recycling of the product’s components. For further information regarding the available collection facilities, please contact your local refuse collection service or the shop in which the purchase was made. Manufacturers and/or importers fulfil their obligations concerning environmentally-compatible recycling, treatment and disposal either directly or by joining a collective scheme. 25 EN INSTALLATION AND PRELIMINARY CHECKS 3.1 -Installation Place the slicer on a well leveled, smooth, dry and stable plane ,suitable to support its weight. 3.2 -Electrical connection Install the slicer in the immediate vicinity of an outlet to CE standards derived from a system that complies with applicable regulations. It is the user’s responsibility to verify the suitability and proper functioning of the electrical system (supply line, outlet, distribution panel, differential thermal magnetic circuit breaker protection, system grounding). ☞ 26 Before executing the connection, check that the characteristics of the power supply network correspond to those indicated on the nameplate of the slicer (see p. 16 fig. 2). 3.3 -Control of operation and of blade rotation direction • Depending on the model, press the green button “I” (3a) or rotate clockwise to “I/ON” the switch (3b) to operate the blade. • The warning light (5) turned on shows that the machine is working properly. • Depending on the model, press the red button “0” (4) or turn counterclockwise on “0/OFF” the switch (3b) to operate the blade. • The thickness of the slices can be adjusted by turning the knob (6), with scale, counterclockwise. • Start the machine and check the warning light operation; check that the blade rotates in the direction indicated by the arrow (clockwise looking at the machine from the side of the blade guard). EN Fig. 6 11 10 6 3a 4 3b 8 17 5 5 6 • Slicer with three-phase power: if the blade (11) rotates in the opposite direction, stop the machine immediately by pressing the button “0” (4) or turn counterclockwise on “0/ OFF” the switch (3b) (depending on the model) and request the assistance of qualified personnel to invert the power cables inside the plug. • Check the smoothness of the product holder (8) and of the product pusher(10). • Check the operation and adjustment of the graduated knob (6) and the gauge plate (17). 27 EN USE 4.1 -Loading the goods on the plate 4.2 -Slice the the goods • Check that the thickness control knob (6) is correctly positioned to “0”. • Back the carriage completely (towards the operator) in the load position. • Lift the product holder (10) and put it 10 cm away from the blade in the rest position. • Lay the product to be sliced (8) against the wall on the operator side; • Lock it with the holder (10) with slight pressure; however such as not to allow the the goods to move during the cutting operation. • With the knob (6) adjust the thickness of the slice. • Start the blade by pressing the green button “I” (3a) or rotating clockwise to “I / ON” the switch (3b) (the light “5” lights up). • Grasp the handle (15) fixed to the plate (8) and start the alternative cutting movement. • After cutting reset to “0” the slice thickness control knob (6) and draw the carriage (8). • Stop the blade by pressing the red button “0” (4) or turn it counterclockwise to “0 / OFF” switch (3b); the light (5) goes out. 5 4 10 3a 3b 5 Fig. 7 28 8 15 6 EN • After processing, remove residual waste from the plate collector (19). WARNING: Cutting hazard! Use protective cut- and tear-resistant gloves and perform all operations with extreme care. PAY ATTENTION AT ALL TIMES! CLEANING 5.1 -Dusassenbling the components • Disconnect the plug from the mains power supply. • Set to “0” the adjustment knob of the gauge plate (6). • Remove the various components as described in the following paragraphs. • Unscrew completely(counterclockwise rotation) the blade guard locking tie rod (16). • If the blade guard (9) is blocked, press on the rod knob (16) to move it • Remove the tie rod (16) and remove the blade guard. • Remove the deflector (20) by removing the two screws. 9 6 16 20 Fig. 8 29 EN ONLY for version “EXTRA CE” • The product holder cart (8) can be easily removed by unscrewing the support (7) placed under the same, and moving all to the outside. It will be also possible a perfect cleaning of this. ONLY for version “CE DOMESTIC USE” • The CE domestic machines are equipped with immovable Czech nut, as per regulations. It is therefore not possible to remove manually the product holder cart (8). 30 blade use only a cloth moistened with water and frothy biodegradable dishwashing detergent with pH 7-8, at a temperature of not less than + 30 ° C. Do not clean the machine with jets of water, steam or similar methods. Do not use aggressive alcohol-based detergents Do not wash in dishwasher. 5.2 -Reassembly of the machine • Proceed to the contrary to what is stated in the previous operations. EN MAINTENANCE 6.1 -Routine maintenance In addition to the above-mentioned cleaning operations, you should also perform routine maintenance in order to guarantee the slicer’s operating efficiency over time. The operator may perform the following maintenance operations: • Lubrication of carriage sliding guides and product holder plate. - Frequency: Weekly. (see clause “6.1.a”) --------• Check and adjust if necessary motor belt tension. - Frequency: Every 6 months. (see section “6.1.b”) --------• Blade sharpening. Sharpen the blade (11) periodically or at least once every 6 months as described in “6.1.c”. How often sharpening is necessary and how long it lasts depend on the type of use to which the slicer is put (operating times and processed product). --------• Check the conditions of the electrical cable and its entry on slicer stand Periodically or at least once a year. Being particularly complicated and hazardous for the operator, other maintenance operations SHOULD only be performed by staff from an authorised service centre. These operations are: • Blade replacement. • Sharpener grinding wheel replacement. • Engine belt replacement. • Replacement of electric crankcase components. • Repair of structural parts, repair and/ or replacement of components located beneath the base. WA R N I N G : B e f o r e p e r f o r m i n g a n y maintenance, disconnect the plug from the socket. 31 EN 6.1.a -Lubrication of carriage sliding guides and product holder plate • Every week you should oil the carriage (29) and product holder guide rails (8) using the supplied lubricant. • Also oil the points indicated in figure 9. We recommend using white vaseline oil. ☞ Do not use vegetable oil. • Apply a few drops of lubricant (maximum 3 or 4) to the guide rails and slide the assemblies back and forth 3/4 times. • Do not exceed the lubricant; wipe the excess lubricant with a paper towel. 6.1.b -Check and eventually adjust motor belt tension. 29 8 Fig. 9 32 29 EN When after a given time the slicer has an unusual noise because of the belt, proceed as follows (check this every 6 months): • Disconnect the plug from the socket. • Lift the slicer and place it on its side (Figure “10”). ☞ Make sure that the slicer is stable and can not inadvertently fall. • • • • Unscrew the feet (2). Loosen the screw (31) and remove the cover (32). Turn the tensioner (34) until obtaining the optimal tension of the belt.. Replace the cover (32) with the screw (31) and then replace the pins (2). Do not over-tighten the belt. ☞ In the rotation, the engine could force and the belt may be damaged. 2 32 31 34 Fig. 10 33 EN 6.1.c -Sharpening the blade Carefully clean the machine as described in the preceding paragraphs before operations. Use protective gloves, cut and tear -resistant (see note on page 29). DON’T BE DISTRATED! Operate as follows: sharpening of the blade (11) can be performed up to a ☞ The decrease of the nominal diameter of 12mm. Beyond this value THE BLADE MUST BE REPLACED entrusting the operation ONLY to personnel authorized by the manufacturer. EXECUTION OF THE SHARPENING Models with sharpener to apply • Carefully clean the blade with denatured alcohol to degrease it after disconnecting the plug from the socket. • Operate the graduated knob (6) by turning it to the left to bring it to the maximum opening. 6 Fig. 11 34 EN • Remove the sharpener from the bag container provided. • Unscrew the knurled knob (23) and insert the threaded metallic pin into the hole (y) (specially crafted on the product carriage “8”). • Make sure that the two emery wheels (x - x1) are toward the blade to be sharpened, helping the operation by pressing the finger on the lower wheel button “x1”. Fig. 12 y 8 x x1 8 23 x x x1 x1 35 EN • The lower wheel (x1) must remain inserted for about half of its diameter between the blade on which it rests, and the regulatory plan • Insert the plug in the socketand start the blade (with the appropriate command) while holding the product holder (8) (and the sharpener) using the handle (15). • Allow the blade to rotate for about 30 to 40 seconds. • Stop the blade by pressing the red button “0” (4). • Check with a slight shift of the tip of a pencil to the outside of the blade, if the burr is formed. We recommend performing this operation with utmost care as the blade is extremely sharp. • Ascertained the formation of the burr, restart the blade and hold for 3-4 seconds the wheel button (x). It should follow the instructions below: • Carefully clean the blade with denatured alcohol to degrease it after disconnecting the plug from the socket; • Loosen the knob (24), lift and rotate 180 ° the sharpener (18). • Lower the sharpener by entering the support (x2) on the blade (11). • Tighten the knob (24). 18 11 18 11 24 18 180° 18 18 11 11 24 Fig. 14 37 EN • Depending on the model, press the green button “I” (3a) or rotate clockwise to “I/ON” the switch (3b) (depending on the model); the indicator light “5” lights. • Press the push-button (x2) to 30 • 40 seconds. We recommend performing this operation with utmost care as the blade is extremely sharp. • Ascertained the formation of the burr, restart the blade and simultaneously hold down the buttons (x2 and x3) for 3/4 seconds. Fig. 16 x2 3÷4 sec. x3 38 EN DO NOT PROLONG THIS OPERATION BEYOND 3 ÷ 4 SECONDS TO PREVENT THAT THE BLADE EDGE WILL TWIST. • After completing sharpening, we advise cleaning the wheels using a small brush soaked in alcohol; • After the sharpening operation return the sharpener to its original position. Fig. 17 2 4 5 1 3 TAKING THE SLICER OUT OF SERVICE 7.1 -Correct procedure A machine comprises: • Aluminium-alloy frame. • Stainless-steel inserts and components. • Electrical parts and electrical cables. • Electrical motor • Plastics, etc. - When commissioning third parties to perform dismantling and demolition, only businesses authorised to dispose of these materials should be employed. - When demolishing without outside assistance, sort the various types of material and hand over to authorised businesses for disposal. 39 EN ALWAYS comply with the current legislation of the country in which the slicer is utilised. ALWAYS consult the manufacturer or authorised ☞ WARNING: service staff as regards removal and disposal of the blade (11) so that this can take place in complete safety. A SERIOUS DANGER FOR PEOPLE, ESPECIALLY CHILDREN, AND ANIMALS. ------------------------- Refer to the “Instructions for treatment at the end of life” on page 25. 40 EN TROUBLESHOOTING • The following information is intended to aid in identifying and correcting defects and faults that may occur during use of the machine. Some failures can be resolved by the user; others require ☞ precise technical skills or special skills, and must be carried out by qualified personnel with recognized expertise and experience in the specific area of intervention.
