What
is a
Super Tuscan
wine?
“Super Tuscan” is a general
term that describes any Tuscan
(originating from an area of Italy’s
western coast) red wine that
does not adhere to traditional
blending laws for the region. Italy
has a strict, complex set of laws
governing
blending,
naming,
minimum alcohol, vineyard yield,
and sometimes even a blind taste
test for quality. These wines don’t
fit the age-old Italian styles, so the
category is a bit of a catch-all of
unusual renegade blends. The laws
in the U.S. are strict as well, but leave
much more room for creativity and
individuality. In our country a Super
Tuscan style loosely means that
the wine contains a core of Italian
varieties such as Sangiovese, with
other “bigger” varieties added for
structure, complexity, and ageability – hence the word “super.”

with scrumptious food samplings which
exemplify the perfect marriage of food

of the Temecula Valley, a passport which
allows a visit to each participating winery
and a souvenir glass.

ample, enticingly complex aromas,
then unhurriedly languishes across the
palate with a crisp, lingering finish and

the palate with flavors of red plum,

1 C Unsalted Butter, Room
Temperature + more for Pan
1½ C Unbleached Flour
1 TBSP Baking Powder
½ TBSP Sea Salt
1¼ C Granulated Sugar
3 Large Eggs, Separated
5 oz. Dark Chocolate
1 C Reflection Red Wine
Black Cherry Sauce
Whipped Cream
½ C Reflection Red Wine
½ C Granulated Sugar
4 C Fresh Black Cherries
2 C Heavy Cream
3 TBSP Confectioner’s Sugar
For the Cake, heat oven to 350°F. Grease springform pan and parchment paper. In a large bowl, whisk flour, baking
powder, and salt. Set aside. In a separate bowl using the paddle attachment on an electric mixer, cream together
butter and ½ cup of sugar until light and fluffy. Beat in egg yolks one at a time, then add chocolate and mix. Alternate
adding 1/3 of flour mix and 1/3 of wine at a time to the butter mixture until both are completely incorporated. Add egg
whites to a clean bowl and ¾ cup sugar and beat until stiff peaks form. Fold egg white mixture into batter. Bake 40-45
minutes or until toothpick inserted comes out clean. Let cool.
For the Cherry Sauce, bring wine and sugar to a boil. Add the fresh cherries and cook until soft. Chill until cake is cooled.
For the Whipped Cream, Combine cream and confectionery sugar and beat with an electric mixer until soft peaks form.
Serve Cake Drizzled with Cherry Sauce and topped with Whipped Cream.

Our Super Tuscan style wine in this club release, the
2011 Reflection, contains 42% Sangiovese, 20% Merlot,
14% Zinfandel, 10% Cabernet Sauvignon, 8% Primitivo,
2% Montepulciano, 2% Dolcetto, and 2% Cabernet
Franc... quite a blend! The Sangiovese/Montepulciano/
Dolcetto provide traditional Italian bright red fruit flavors
of strawberry/cherry and a dash of spice, the Merlot
adds raspberry, and the Cabernet Sauvignon/Franc
adds blackberry, herbal notes, and tannin structure.
Finally, topping off the blend with Zinfandel and
Primitivo brings the jammy kick and extends the finish.
This wine will age nicely over the next five years. Enjoy
now in the liveliness of its youth, and rest assured that its
“super” character will make it endure and age well as
a reliable go-to from your wine cellar. Cheers!
