In 1993, Darcy Padilla, an American
photographer, met Julie Baird while
on assignment at the Ambassador,
one of the hotels in San Francisco’s Tenderloin
district that catch the overflow from the city’s
over-crowded hospitals. Darcy followed Julie
over the course of the next eighteen years,
until Julie’s death, bearing witness to poverty,
shattered families, drug addiction, AIDS,
and domestic violence.
From the backstreets of San Francisco to the
Alaskan outskirts, “The Julie Project” recounts
the life of Julie Baird, marked by births and
deaths, losses and reunions, simple pleasures
and great pain; a powerful tale of life and death
brought to light in Family Love.
How did you discover the photographic work
of Darcy Padilla?
The photography journal 6Mois, which dedicated a section of its first issue to this young American photographer,
contacted me to write a text to accompany the publication
of her photos. When I saw them, I couldn’t tear my eyes
away, practically in tears and I accepted the project, which
seemed the obvious choice.
How did you proceed?
I went to spend ten days in San Francisco. Darcy told me
Julie’s story. We went through thousands of photographs in
chronological order, so I could then re-transcribe what’s at
play in this long, long series of often very difficult images.
How is this project different from the typical
documentary report on urban misery?
What‘s remarkable about Darcy’s work is that it lasted. It’s
really something to spend eighteen years with someone.
A genuine rapport developed between these two women,
though so much separated them. This is the story, both
artistic and human, told through these exceptional photographs, which are published here for the first time. I really
try to bring this across in my text.
Is there a form of complacency
or self-satisfaction to be seen here?
Absolutely not. Certain photos are extremely poignant and
may be disturbing, but there is nothing complacent about
them. Darcy expressed empathy while maintaining a rigor
in her perspective as well as a remarkable moral rigor.
Julie’s life was a series of failures, but said at the end of her
life that there was one thing that hadn’t been so bad, and
that was meeting Darcy. Someone had kept a record of her
life. Photos allow one to see, and also to exist, even from
the point of view of the subject.
Otherwise, the title of the book is not as grim as
Julie’s fate.

Family Love
It’s the story of a family of people who love each another,
in great pain, in distress, but it’s first and foremost a story
of love and connection between people: the love Julie has
for her children and her companions, between Julie and
her father, and the singular relationship that developed
between Julie and Darcy.

ear 6th street in northeast San Francisco, baby. Julie was nineteen years old, and Jack was twenty. Julie
the Tenderloin district is a black ghetto, a den of crime
and misery, an open market for crack—people have
even been seen smoking cigarettes there. Most of the hotels
work in cooperation with the social service system, which pays
their clients’ benefits directly to the hotel, to ensure their
rooms are paid for before they rush to buy their next fix. At
the peak of the AIDS crisis in the eighties, these hotels also
served as annexes for the city’s
overcrowded hospitals: a place for
patients beyond care, except for
their daily morphine injection. Such
was the case at the Ambassador,
which the young photographer
Darcy Padilla began to visit in 1992,
on assignment to shadow a doctor
on his rounds. When she finished
the project, she returned alone and
spent long periods photographing
the patients and building friendships with them. She still speaks poignantly of the transvestite
Brian, so proud of his cleavage; of Diane, who weighed only
65 pounds; of Steven, to whom she gave a volume of Salinger
stories, and who was so afraid of dying alone that she wanted
to promise she would be there, when the time came, but she
knew that you must never make promises you aren’t sure
you can keep, and even though she spent several hours per
day with Steven, reading to him and feeding him vanilla icecream—the only thing he could still eat—she wasn’t with him
all the time, and he did indeed die alone, certainly in horror
and despair, at 3am, while Darcy slept comfortably with her
boyfriend of the time, seven or eight blocks away.

she was more comfortable than in their flea-infested room.
She sat there, in an armchair near the bay window looking out on the street, her pants zipper wide open around her
belly, still swollen from pregnancy. She was wary and belligerent, telling off anyone who dared speak to her. But Darcy
gently asked if she could take pictures of her baby, whom no
one had photographed since her
birth, and she softened. In spite
of her reticence to sign any sort
of paperwork, she agreed to sign
the form Darcy handed her: OK to
take her picture, OK if the photos
are published one day. Soon, Jack
joined them, took Rachel in his
arms, and played the doting young
father; even more touching were
the clumsy efforts he made to play
the role. Ultimately, they were
very happy to be photographed as young parents. It was as if
they were normal people, as if they had a family. That January
day in 1993, Darcy became their family.

The stories of Brian, Diane, Steven, and so many others all
look the same: poor, violent families, early-teen runaways,
drugs, prostitution, living on the street, and then the illness
that befalls them, reducing them to bones and lesions, dragging them to the abyss, in a sordid room at the Ambassador
hotel. Twenty or thirty years old at the time, they are all dead
now, and there is no one to remember them except for Darcy,
who keeps hundreds of photos of them in boxes labeled with
their names. These black and white pictures—which show
them laughing and crying, revealing their wounds, their fears,
and the miseries—are the only trace that remains of their time
on earth. The book Darcy was dreaming up at the time, originally entitled Separate lives, different worlds: living poor in urban
America, was not intended to focus on one person; she was
thinking more along the lines of a portrait gallery, and when
she met Julie she certainly didn’t imagine she would spend
the next eighteen years chronicling Julie’s life, all the way until
her death.
Julie and Jack were residents at the Ambassador like many
others, but they stood out because, though they were both
HIV positive, they had no symptoms and had even just had a

In 2004, Marc Lathuillière began a photographic project to depict and catalogue traditional professions in France. From the anonymous artisan, to
local and national celebrities, each participant agreed to pose wearing a
mask. Using 200 contextual portraits of archetypal professions from all
corners of France, Musée national incessantly juxtaposes the powerful
aesthetic of France’s charms, and the rigidity of the imposed mask—always
the same—which forces the viewer to question the authenticity of the setting and the people within it. As a device, the mask freezes each subject in

How did you come up with
the idea for this book?
SA : It was thanks to two paintings, in succession. The
first by Flandrin, the second by Gérome, which made me
realize that hiding the genitals was a topic as interesting
as it was unknown. Philippe and I discovered that this
question, which is central to the portrayal of the nude, had
not been studied by art historians.

SA : By compiling a significant amount of iconography on
the subject, we realized that the vine leaf, which initially
was a reference to an episode from the Bible, was gradually
replaced, even appropriated, over the centuries.
PC : There is a religious pressure to hide the genitals. Initially, they were simply hidden behind a vine leaf to respect
biblical tradition then, very quickly, artists looked for strategies to avoid this, and used a bouquets, draped fabric, and
seashells as camouflage.
They practiced censorship
so as to better subvert it?
PC : It is indeed interesting to see how certain artists
played with this form of censorship to simultaneously
hide—and thereby respect the censure—and at times
exhibit a lot of humor, as well as a lot of perversity, and
thereby invite a certain subversive reading of the painting. In a way, these paintings become more “obscene”
with the fig leaves than without them. When Mabuse, at
the beginning of the 16th century, hides Neptune’s groin
behind a pointed shell, it naturally becomes the focus of
the picture.

Diabloramas are clay models created in France between 1860 and 1895 (approximately), and photographed for the stereoscope. The photos were printed on very
fine paper and mounted on a parallel frame. Color photography had not yet been
invented at the time. The images were painted from behind and protected by extremely thin paper. When lit from the front, the image appeared black and white. When
lit from behind, it appeared in color. Because they were photographed for stereoscope, they are also visible in 3-D.

What is the idea behind Diabloramas?

What did they depict?
The great majority of the images were realized by two French model makers,
Adolphe Hennetier and Louis Habert. Both men began by initially representing
religious subjects then, very quickly, the images took on a more rebellious character. But the Diabloramas served not only to criticize the regime, they also made
reference to artists and events of the period.
DEAD OR ALIVE
Monsters and marvels began to crowd together in the curio
cabinets of the Renaissance, and their mineral, fossil, and other
“antique” companions were soon joined by the first preserved
animals. The immortalized animals gradually became a tool for
scientific study, observation, and research. Taxidermy was born
and its development is entwined with that of the Paris Museum
of Natural History. Four hundred years of history have witnessed
the refinement of taxidermic techniques, the expansion of specimen collections, and the transformation of the museums’
approach. Jack Thiney’s richly documented texts are amply
illustrated by Jacques Vekemans’ edgy, contemporary photography, which cleverly breathes life into his subjects, and keeps
them from ever seeming dull or dusty.

I am a free woman and I fight for that freedom. It didn’t come about

What do you have in common with them?
A love of books, literature, and reading, in particular. For them,

during childhood—overwhelmed by this feeling and they decided
to take control of their lives, to find their place, and make a place
for themselves.

Is that your definition of feminism?
My saying isn’t: ‘You aren’t born a woman, you become one’ but
rather ‘One isn’t born a feminist, but you have no other choice but
to become one.’ Being a feminist isn’t about being at war with the
other half of humanity or constantly seeking vindication, it’s just
creating, finding, and occupying this celebrated place, the one at
the heart of Jeanette Winterson’s work. It’s something inalienable
and very meaningful.
Has one of these women been especially important
to you?
Certain of them have been particularly important to me, such as Toni
Morrison, Joyce Carol Oates, Karen Blixen or Camille Claudel, but
everyone in the book has truly counted for me at a given time in
my life. The portraits of these women are like a puzzle that comes

Why a book about advertisements
and brands?
I’ve always been crazy about advertising. Marcel BleusteinBlanchet, who founded Publicis in 1926, said that the
advertisement should be developed. After the war, it
became the advertising campaign. I was born in 1945.
I’m a contemporary of the advertising boom. And this
history I grew up with also speaks to subsequent generations because of brand longevity.
You cover thirty years of ad campaigns,
from 1940 to 1969
The book presents documents that are enormously creative
and diverse. There are posters by Hervé Morvan, Raymond
Savignac, René Gruau, as well as Cassandre, who are the
masters of poster ads, and whose creations are now part of
French cultural heritage.

You can follow the evolution of graphics and slogans
through the book’s four main themes. Certain ads are outof-date today, others such as Cassandre’s famous “Dubo,

There’s nothing more beautiful than a logo that lives
forever. Canal+ will soon celebrate its thirtieth anniversary and its logo is extremely pure. As if by accident, the
brands with the simplest, unchanging, most solid logos
have lasted. The LU logo hasn’t changed in fifty years.
Certain ads you feature would
no longer be possible today
Exactly. Although society has become both extremely
permissive and extremely creative, certain ads, such as
Banania’s with the two bananas, wouldn’t fly today.
What do you like to see in an advertisement?
I like advertising that doesn’t overwhelm us, that surprises
us, that informs us, that makes me say to myself ‘That’s a
beautiful idea.’ This was already true in the 1950s.

How did the inspiration for this book come about?
After Jacques Demy’s death in 1990 my mother, Agnès
Varda, undertook the restoration of his films— at first
35mm and now digitally—in order to have DCP (digital
cinema process) copies that could be projected in theatres equipped with this new standard. The exposition “The
Enchanted World of Jacques Demy” held at La Cinémathèque française in 2013 allowed us to finance the digital
restoration of all his films. We were able to display a lot of
archival material, but I felt there were many original documents and photographs that deserved to be brought to the
public eye. This is what sparked the idea for writing a book
about the film Donkey Skin.
How is the book laid out?
I wrote it ‘four-handed’ with author and attorney Emmanuel
Pierrat. We wanted a book that would take the reader on an
entertaining stroll through the world of Donkey Skin. It’s
organized around seven themes. Naturally, these include
the movie itself, and the original fairy tale, but the book
also covers the universe of stage director Jacques Demy:
what he liked in terms of painting, sculpture, photography,
and music at the time he wrote the film adaptation—all of
which influenced the film’s aesthetic. And on a more personal note, I provide anecdotes and recollections of the
filming, which took place in the summer of 1970.

Robert Goosens worked with Coco Chanel in the 1950s, and went on to
design jewelry for the world’s foremost fashion houses, pursuing notable
collaboration with Balenciaga, Grès and Yves Saint Laurent. As well as the
emblematic rock crystal jewelry, baroque pearl brooches and Byzantine
cuffs famously associated with Chanel, Maison Goosens’ designs combine real and faux gemstones, making fashion jewelry both precious and

Why a book about
choux pastry?
I’d wanted to write a book about choux pastry for a long
time. In 2010 I came up with the choux-pastry bar concept
[like a sushi bar]. Having tested the concept, I knew that
it was possible to prepare choux pastry in a thousand
different ways. You can use all sorts of liquids (milk,
bouillon, fruit juice, etc.), seasonings, and flours—chestnut, rice, buckwheat, walnut, cornmeal, or potato starch.
And all cooking methods are possible. As soon as you
begin thinking outside the box, the range of possibilities
is limitless!
So what does the book
give us?
I present 60 recipes, but I could have gone on and on! I
slightly modified a few classics including the chouquette,
the éclair, and the salambo. The point isn’t simply to make
choux pastry and fill it, but to come up with new culinary
sensations using choux pastry as a foundation. I came
up with innovative—and unexpected—techniques to
achieve the results I wanted. Everyone knows the coconut
macaron; well I managed to create a recipe that delivers
the texture of a coconut macaron with the flavor of choux
pastry. This is the quality that makes the book original.
An unexpected combination
of flavors?
I made tiny yam wafers in choux pastry, pan-cooked with
granulated sugar. To die for! All the recipes are really easy
to make and provide new sensations—surprising but
always extremely harmonious and delicious.
The term ‘sensation’ features
prominently in the title of your book
and was also the title of your previous
book. Is this an important word for you?
Yes, it’s essential for me: it’s the pleasure of experiences
when eating, and especially the evolution of flavors in
each mouthful. That reminds me of that great scene in
the Disney film Ratatouille, when the food critic Anton
Ego tastes the ratatouille: the profusion of flavors brings
alive his childhood memory of this classic dish. I found
this film sequence very moving: it’s precisely this message that I’ve been trying to get across for more than
twenty years.

Why a book dedicated to meals for larger groups?
Serving a meal for 10 or 12 comes up fairly frequently
during long weekends or vacations. Keeping this up for
any length of time requires recipes that are simple and
effective. It’s not enough to take a recipe for 4 and multiply the ingredients. It’s a matter of making a dish that is

example, I make in an edged baking sheet. I updated the
crust and the filling to be exactly proportioned.

Why a book about meat, and more particularly, steak?
Your goal?
FR : I’m from a family of livestock farmers, meat has always held a key place
in my life, and I always thought that we ate the best meat in the world at
my house. One day, in New York, I ate a steak that had nothing to do with
what I knew, and I wanted to discover why there was such a difference. By
travelling, I met passionate people and witnessed a revolution.
FR : Our goal was to find where one can eat the best meat in the world, but
also to question ourselves regarding our carnivorous, gourmet nature.
VF : the idea of this documentary and the book is to put pleasure back at the
center of things and to inspire consumers to modify their behavior. The idea
is to eat less meat, but the best meat, and to accept paying a higher price for
it, for the sake of our pleasure as well as for our health.
What revolution?
There is a community of people who are bringing meat back to the center
of the dining experience with a genuine spirit of ecology and a constant
search for pleasure.
Who are these people?
VF : For three years, we traveled the world in search of the best breeders,
butchers, and restaurant proprietors. The movie, like the book, is a gallery of
colourful characters: from the modern cowboy and his 20 000 animals to the
demanding French cook with his three stars, from the Japanese breeder who
lovingly massages his cattle with beer, to the Argentine gaucho who happily
gets lost in the Pampas. We spent unforgettable moments with people proud
of their land and their region, their animals, and their cooking.
What is the best beef in the world?
FR : The best beef of the world is everywhere. But our Number One is
a Spanish breeder who produces a very particular meat. He chooses his
animals according to their character because he works on the principle that
happy animals produce good meat. They especially produce a lot of fat,
which allows the meat to mature and thus yield impressive results. There is
no good steak without a happy cow.
And the best French steak?
VF : In several places, but France is lagging behind. The best in France is
to be found at the Maison Bras, a three-star restaurant in Laguiole. Among
our Top Ten, it is in sixth position.

How did the idea for this book come about?
ROAD TRIP
I wanted to create a book about the cooking of my childhood, about my region—I’m a native of Michigan. We eat
very well there, and mostly home-cooking, because the
distances are so great from one city to another. Driving an
hour to get to a restaurant or dinner at a friend’s place is
perfectly normal!
Is there an interest in American cooking
right now?
There is a craze in France for American cooking. Hamburgers are popular, and some are truly delicious. It is a sign
of the times! I also notice it in the temporary restaurants I
set up in Paris and in Trouville, where I offer breakfasts and
brunches. There are sincere amateurs of American cooking.
Is this American cuisine without the clichés?
North American cooking is rich and complex: beyond the
burgers, hot dogs, and cookies that everyone knows, there
is an infinity of dishes, ingredients, preparations, and especially a great wealth of regional foods. It is a healthy and
varied cuisine, with vegetables, fish, and more.
Is this book designed to be a gourmet road trip?
I not only wanted to share my recipes—and those of my
family and my friends—but also to make it possible to
discover the great diversity of American cooking, from the
Caesar salad of California to the lime pie of the Florida Keys.
It is a delicious tour of the United States.
