SEPTEMBER LADIES DISCUSSION GROUP RECAP Twelve ladies had lunch in a private room at the Cafe D’Art on the grounds of The Tucson Museum of Art, after which we started our tour of the museum. It had several floors of exhibits, including a lot of Southwestern art. We saw the modern art exhibit, the Columbian exhibit and several others. Then there was a tour of the Corbett House, which was furnished in the original way of the early Tucsonans, and brought back a lot of memories for many of us. All in all, it was a lovely, educational experience and everyone was pooped toward the end, due to a lot of walking. Also, for anyone interested, their gift shop has a lot of great interesting gifts! Watch for an email blast a little later about the October group meeting. Be sure to mark your calendar for OCTOBER 21, 2:00 (red please) at the Journey Model. There will probably be a guest speaker. Keep spreading the word to the new ones about our group and bring a new homeowner with you! Pumpkins are good for more than carving When you think about pumpkins, you probably think Halloween jack-o’-lanterns and pumpkin pie. But there are other ways to use pumpkins. They can grace doorsteps or be part of a centerpiece on your Thanksgiving table. Pumpkins are so much more than decorations, though. They’re packed with antioxidants and nutrients. The pulp is an abundant source of vitamin A and the seeds full of zinc. You can eat any pumpkin, but the smaller pumpkins — often referred to as pie or sugar pumpkins — are sweeter. Wash and then cut pumpkin in half. Remove and reserve the seeds. At this point, you can microwave or bake the pumpkin halves to make it easier to remove the skin and cut up the flesh. Then try these creative ways to enjoy pumpkin: • Roast with other squash or root vegetables • Dice and add to soups or stews • Roast and puree to use in lasagna or as ravioli filling • Toast the seeds and eat as a snack or use as toppings for soups and salads Morning Walking Group BOCCE BALL Starting October 1st! Light & Fluffy s e Pumpkin Pancak Mark your calendar for each Wednesday evening at 5:00! recipe Ingredients 1 1/4 cups all-purpose flour 2 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon cinnamon Directions 2 1/2 teaspoon ginger 1/2 teaspoon nutmeg 1/2 teaspoon salt 1 pinch clove 1 cup 1% low-fat milk (can be any kind) 6 tablespoons canned pumpkin puree 2 tablespoons melted butter 1 egg 1. Whisk flour, sugar, baking powder, spices and salt in a bowl. 2. In a separate bowl whisk together milk, pumpkin, melted butter, and egg. 3. Fold mixture into dry ingredients. 4. Spray or grease a skillet and heat over medium heat: pour in 1/4 cup batter for each pancake. 5. Cook pancakes about 3 minutes per side. Serve with butter and syrup. 6.
