Adorned with an exquisite fireplace and 17th century antiques, this renewed dining experience can only be defined as a culinary delight immersed in the dramatic surroundings reminiscent of old France. We have a fantastic line-up of special guests throughout 2013 who share outstanding expertise from fitness, beauty, life coaching, and more. In addition, we are offering two special Mom & Teen weeks featuring Victoria Justice from Nickelodeon (May 26) and Jackie Emerson from Hunger Games (June 16). These weeks offer a great bonding time for moms and teens. Lastly, look for the return of our Father’s Day Special where we are giving away a free set of Titlelist golf clubs. A couple of highlights during their stay included a water volleyball game and a Cal-a-Vie Health Spa version of The ”Newlywed Game”. It’s safe to say that the therapeutic benefits of laughter were visible in their happy faces throughout the visit! We look forward to their return next year. A group of eleven ladies from Houston, Texas also returned to Cal-a-Vie Health Spa for four nights of fun and fitness. The lively group participated in tennis clinics, enjoyed a fabulous outdoor movie and several private dinners. Carroll Suggs of Metairie, Louisiana, a loyal guest since 2004, celebrated her membership of La Société De L’Orangerie, a Cal-a-Vie Health Spa loyalty program that honors and celebrates individual guests by the planting of an orange tree in their name. The Cal-a-Vie Health Spa staff was on hand to toast Carroll with celebratory faux mimosas. Carroll is pictured next to her tree which also includes her very own personalized bronze plaque. Norma Foster-Maddy, a long time Cal-a-Vie Health Spa guest of over ten years recently made her bi-annual getaway to the spa accompanied by her daughters, Laurie, Suzanne, Carrie, Janet, and Jayne. Eating healthy often means making changes and that can be hard to do. When it comes to shopping, keep things simple and food prep will magically take less effort. Dining out can be especially challenging when trying to keep things healthy! Here are some of my top picks for restaurant choices that lean towards the healthy side: Here are some creative tips to streamline your efforts and help keep you on a healthy path: • • • • • • Direct from the Cal-a-Vie Health Spa Kitchen Dining Out Tips Nutrition in the Kitchen • From the Spa Double your recipe. If you have time to prepare a meal, make extra to freeze for next week’s meals. Use a personal chef to make meals for days or nights when you are too busy to cook. Integrate ingredients: Monday’s brown rice side dish becomes stir fry on Tuesday; Wednesday’s grilled veggies are tossed into pasta on Thursday; salmon on Thursday goes into Friday’s salad. Load the blender the night before with your favorite smoothie ingredients. Remove from the fridge in the morning, add frozen fruit and blend. Make your own cereal/yogurt topper and keep in flip top container for quick addition: chopped pecans, sunflower seeds, cinnamon and flax seed. Try a CSA (Community Sustained Agriculture) to deliver fresh vegetables to your door. Take advantage of healthy snacks: a bowl of seasonal fruit, trail mixes, hummus and healthy bars. Mexican: boiled beans, grilled/roasted meat, chicken or fish, ceviche, avocado, corn tortillas, cabbage, salsa Thai: fresh spring rolls (not fried), sautéed veggies, brown rice, curries, fish, papaya, soups Italian: soup, salads, fish, shellfish, chicken, thin crust pizza, sorbet, cappuccino Japanese: sushi, sashimi, brown rice, seaweed, miso, mushrooms, salads Steak House: petite filet, chicken, fish, shellfish, bison, salads, grilled veggies, and sweet potato A Year-Round Culinary D elight Roasted Sea Bass with Farro, Artichokes, Hedgehog Mushrooms, and Kale Are you ready for a declious dish? Well, here’s one that is easy and tasty. This roasted sea bass recipe will excite the pallet any time of the year. INGREDIENTS 4 3 oz. pieces sea bass 3/4 cup farro 1 cup hedgehog mushrooms 2 cups cooked artichoke hearts 1.5 cups chicken stock 1 T earth balance® RECIPE DIRECTIONS: NUTRIENT ANALYSIS: Calories: 327 Protein: 24.78 Carbs: 32.11 Total fat: 12.07 Sat Fat: 1.92 Cholesterol: 37.55 Sodium: 255.97 Fiber: 9.94 Place the farro in a small saucepot, cover in water (twice the volume of the faro). Add a pinch of salt, bring to a boil and simmer. Cover until tender for 20-25 minutes. Discard any excess liquid, set aside to cool. Heat oven to 400°. In a small/medium pan place 2 T grape seed oil, heat until slightly smoking. Lightly salt fish on both sides, then put the fish in the pan and cook until golden brown (without turning). Place the pan in the over until fish is firm. When fish is done, remove from oven and place on 1 t fresh thyme 3 T grape seed oil 2 large baby kale leaves torn into pieces Salt and pepper a plate. Return the pan to stove and heat remaining gape seed oil on medium-high heat until slightly smoking. Add artichokes and mushrooms, cook until brown. Add thyme, farro and chicken stock and bring to a boil. Add kale. Reduce heat, add earth balance® using a spoon to combine. Salt and pepper to taste. Divide the mixture into wide serving bowls; add juice around the edge of the bowl. Place one piece of fish on each bowl and serve. Bon Appétit! BODY & BEAUTY From the Spa Beauty tips from the experts help create a more beautiful you! 5 Wonderful Foods for Healthier Skin Healthy tips from the Cal-a-Vie Health Spa Beauty Department Organic green tea – All teas are rich in skin-loving antioxidants, but anti-inflammatory substances called catechins in green tea are thought to be especially beneficial. A recent study by the director of research in the department of dermatology at Case Western Reserve University, Hasan Mukhtar, agreed that drinking green tea may be helpful for warding off skin cancer and the visible signs of aging. Go tea! Olive Oil - Despite all the hype about the supposed benefits of fat-free diets, it turns out that we need essential fatty acids for good health as well as for more elastic, dewy skin. Yes, certain kinds of fats are bad for us, so rather than using saturated or hydrogenated fats for cooking and eating, switch to extravirgin organic olive oil. It is rich in healthy monounsaturated fats. ”Good” fats strengthen our cell membranes, helping our skin to look nourished and radiant. Walnuts - The omega-3 oils in walnuts (or in salmon, if you are a fish-eater) are vital for flexible, plump, younger-looking skin. Flaxseed oil is another great choice for Omega-3 oils, but be sure not to heat it; try it in salad dressings instead. ”Citrus C” Facial Berries – pick a peck of berries to benefit from their powerful antioxidants. Blueberries, raspberries, blackberries, cranberries, acai berries–they’re all delicious, and they give our complexions a healthy boost with phytochemicals that protect skin cells. Vitamin C helps in the production of collagen and improves skin elasticity. Other key ingredients include Bilberry extract which contains Vitamins A, B1, B2, and C, which slow down skin aging. The high content of vitamins in this facial provides antiinflammatory and soothing effects and is very nourishing to the skin. Dark leafy greens – The vitamin A found in dark leafy greens like kale and spinach are great for clearing up acne and promoting skin repair. Taking it off can mean peeling away MUSCLES & METABOLISM Once you’ve adjusted your workout schedule to burn the most calories from fat, you’ll get a bonus! As your body uses fat molecules for fuel, it uses less muscle protein, allowing you to build denser, stronger muscles. This not only gives you a toned appearance, it consumes extra calories even when you are resting. Muscle tissue burns more calories than fat tissue, boosting your resting metabolic rate, according to the American Council on Exercise. Building muscle is energy-intensive; it requires repetitive challenging exercise performed regularly. The results are increased fitness, greater strength, less risk of injury and more effective workouts. A study published in the ”Journal of the American College of Sports Medicine” concluded that post-workout benefits are potential fat-blasters. Subjects who exercised vigorously for 45 minutes showed increased calorie expenditure for more than 14 hours after the workout. INTERVALS EAT CALORIES Maximize fat calorie burn by mixing up your exercise routine. Varying the levels of intensity is a smart way to slim. The American College of Sports Medicine says that high-intensity exercise intervals in your workout, at 80 to 85 percent of your maximum heart rate, burns far more calories than a steady level of activity for the same time period. You should alternate high-intensity bursts with low-intensity recovery at about 50 to 65 percent of maximum heart rate. A study published by the University of New Mexico recommended sprint interval training to boost endurance and prolong fat metabolism. Alternate 30-second sprints with 4.5-minute intervals of light exercise for four to six repetitions. The whole workout takes about 30 minutes but the intensity creates a lasting after-burn. AL THY P INTENSITY AND CALORIE BURN Exercise at low-intensity and about 60 percent of the calories you burn come from fat. The American Council on Exercise says that a half-hour of low-intensity aerobics burns about 200 calories -120 of those are fat calories. But ‘up’ your intensity level and something else happens. The same half-hour of aerobics at high intensity uses 400 calories; only 140 - or 35 percent of those are fat calories. You do, however, burn many more calories and more fat calories total. Doing the math leads to one conclusion: work harder and burn more calories, including fat. If your fitness level is low and your exercise-allergic level is high, working out longer in a low-intensity routine might be your best personal choice for expending enough calories to reach your healthy weight goals. TWEAK YOUR TIMING Timing is everything when it comes to designing a fat-burning workout. Anaerobic exercise, like weightlifting, breaks down the glycogen in muscles to use for fuel. At the same time, it increases the build-up of lactic acid in muscles so you experience fatigue. That’s why anaerobic exercise is short-duration. But low and moderateintensity aerobic exercise does not create lactic acid, so you can workout longer and tackle more fat molecules to supply the energy to keep you moving. For the best fat-burning return on your exercise plan, start with strength training and then proceed to aerobic conditioning. TI the calories but it’s more complicated than just watching what you eat. Various studies of how exercise burns calories highlight differences in burning fat or glycogen as fuel. Sorting through the calorie-consumption data might cause you to throw up your arms in despair. But that wouldn’t be the optimum move for boosting your metabolism and slimming your waistline. HE Fat Burning Vs. Calorie Burning Workout Eating after or before a workout Eating and exercise go hand in hand. When and what you eat can be important to how you feel when you exercise, whether it’s a casual workout or a serious athletic competition. The duration and intensity of your activity will dictate how often and what you should eat and drink. Running a marathon demands more energy in the way of food than does walking two miles — but whatever your exercise, you’ll benefit from paying attention to your meals and snacks.
