They tweaked the script to refer to Bolster Moor Farm Shop (instead of Tesco) and used our bags as props. Well, there’s nothing like a local gag to get the audience laughing! Well done on a great performance. MUST TRY! New! NEW DESIGN bags for life – send us your pics Baguettes & ciabatta We’ve extended our bread range and are now baking French style baguettes (large and small), as well as Italian style ciabatta. A lovely addition for summer eating. Our bags for life have had a makeover. They don’t get any more Yorkshire than this… We’d love to see how far their Yorkshireness travels! They’re mooing and bleating away in our fields around Bolster Moor. Look out for them on your way to the farm shop and coffee shop. Following the success of our steak night at Eric’s restaurant a few months ago, we’ll be there again on 30th July. Simon and Luke Haigh will be talking to diners about steak and helping them choose their perfect cut, from a very tempting menu, by chef Eric Paxman. Try our beautiful Bolster Moor rib eye steak with chimichurri sauce – just the way it would be served in Brazil. To make the chimichurri, blitz up (in a food processor) or very finely chop 3 cloves of garlic and one onion. Add big generous amounts of fresh flat leaf parsley, fresh oregano and fresh coriander and briefly blitz further (it needs to be finely chopped but not pureed). Transfer to a separate bowl and add 4 tablespoons of good virgin olive oil, 2 tablespoons of red wine vinegar and a squeeze of fresh lemon juice. Mix well and season with salt & freshly ground black pepper. If you like it hot, you could add the option of a few dried chilli flakes, but we say don’t overdo it – the flavour of the fresh herbs needs to come through, which will really enhance the rib eye. d cooking, with our super tasty WORLD CUP Support England’s progress in the World Cup with our limited edition England pie. Philly Steak Baguettes The taste of America! Heat a frying pan & add a little oil (olive oil or rapeseed oil would be best). Take a sliced onion & a handful of sliced mushrooms & sauté in the pan. When softened, add a crushed clove of garlic and a little salt, stirring for a minute before setting aside in a separate bowl. Add a little more oil to the pan and heat, before adding our special coffee shop sandwich steak. Sear on one side before flipping over and cook to your liking. Add half a tablespoon of Worcestershire sauce and freshly ground black pepper and stir. Replace the onions & mushrooms into the pan and cover with thin cheese slices (our chantico cheese with chillis and jalapenos is amazing here). Cover for a few seconds so that the steam helps to melt the cheese. Once melted stir together so that the cheese is combined with the steak. Serve hot in one of our crusty baguettes. Balsamic pork chops Jazz up pork chops with this super quick idea, which always goes down a treat. Take our pork chops and rub all over with olive oil. Sprinkle on salt and freshly ground black pepper. Now finely chop a handful of fresh sage and rub into the chops. Grill or barbecue and then drizzle with balsamic. Serve with jersey royals and a nice salad. 7 Make a healthy stir fry packed with goodness & flavour. Heat a wok or large frying pan over a high heat until hot. Add 2 teaspoons of oil and swirl to coat. Add 500g of sliced chicken fillet and stir-fry for 2-3 minutes or until browned. Transfer to a bowl. Put another 2 teaspoons oil in the wok and add about an inch worth of finely chopped fresh ginger, 2 crushed cloves of garlic, 4 roughly chopped spring onions and a finely chopped red chilli. Stir-fry for 30 seconds. Return the chicken to the pan and add chopped broccoli & perppers & stir fry for 1 minute. Add a bottle of our Blue Dragon stir fry sauce. Stir-fry for 1 minute to combine. Finally stir through some fresh basil and cashew nuts (optional). Serve with rice. We love to make salads interesting and this one is most definitely a winner. First make the zingy dressing by putting 2 tablespoons of golden caster sugar in a small pan and pour over enough cider vinegar to cover it. Heat and simmer until the sugar has dissolved. Leave to cool. When cool add a generous amount of chopped fresh dill (or dried dill is fine) & whisk together well with a fork. (You can prepare this dressing in advance and store in the fridge.) For the salad, finely slice 1½ cucumbers, 10 summer radishes and 2 spring onions (it’s a lot of chopping, but worth it). Mix together in a bowl with this season’s beautiful lamb’s lettuce. Give the dressing another quick whisk with a fork & pour over the salad. Gorgeous! Bolster Moor Meatball Sandwich Take a pack of our Bolster Moor Farm Shop spicy meatballs, warm through in the oven for 25 minutes at 180° and simply serve in a really good crusty roll. Pure North Cider Cottage Delight Old English Chutney Yorkshire Ham Made in Holmfirth organically, using home-grown cider apples. This is local, natural cider and all the better for it! Tangy an sweet, this old English chutney is the exact accent this Yorkshire plank needs. Picalilli Our cooked Yorkshire ham comes regular or honey roast. Beautifully moreish and very versatile – it puts packet ham to shame! A great one to ser mer: home for lighter eating over sum Cream Cheese Stuffed Peppers Scrumptious stuffed peppers would be fiddly to make, so we have them ready-made for you in the fridge section. They’re really good… Barncliffe Brie Made locally in Shelley, Barncliffe Brie is a soft mould-ripened cheese created using wonderfully rich local milk. IIt has a smooth texture with a rich golden centre and unique flavour. Homemade Olive Ciabatta Homemade Chicken Liver Pate Homemade to a farmhouse recipe, our chicken liver pate is just delicious. No wonder it’s gold award winning Simon’s Pastrami Made from our Bolster Moor beef, which is slightly smoked and then slowly dry-cured in salt & sugar for 7 days. Then we give it our special pastrami rub and cook gently for 3 hours, just for extra tenderness. Breadsticks 13 11 Try our new range of ciabatta from our ever-expanding bread section. Bolster Moor Farm Shop Rare Sliced Beef Artisan Breadsticks Griss d’or breadsticks are available from the farm shop. These rosemary ones are our absolute favourite. This cooked sliced beef is grand. It’s always the first thing to disappear of the Yorkshire Plank at our house! Mixed olives Find our mixed olives in the fridge at Bolster Moor Farm Shop. A lovely medley in virgin oil (great for dipping bread in afterwards). 12 Piri Piri Spatchcock chicken (oven or bbq) This recipe is a great alternative for bbq days but can also be cooked in the oven. The bbq version makes a really tasty blistered skin and never fails to please. Ingredients: 1 whole chicken (about 1½ kg) • 4 red chillies, deseeded & chopped • • • 3 garlic cloves, crushed 2 tsp sweet paprika 2 tbsp red wine vinegar , • 2 tbsp fresh flat leaf parsley chopped • 2 tbsp rapeseed or olive oil • 1 lemon, cut into wedges to serve • Tobasco sauce (optional if you like it really hot) • Cool down... Don’t forget our range of beautifully refreshing local ice cream by Just Jenny. Available in a wide range of tempting flavours, perfect for cooling down with. Method: 1. Choose a chicken from our butcher’s counter & ask us to spatchcock it (to take out the backbone). 2. Put the chillies, garlic and a pinch of salt in a food processor or pestle & mortar. Blend to a paste, then add the paprika, vinegar, parsley and oil. Mix well and smear over the chicken. Leave to marinate for at least 1 hr or overnight if possible. 3. Roast in a pre-heated oven 200C/180C fan/gas 6, on a baking tray, for 35-40 minutes. To char the skin, grill for a further 5 minutes. Alternatively, this is great for cooking on a barbecue. Place on the bbq grill when the flames have died down, cooking skin side down for 15-20 minutes until charred. Turn it over and cook on the other side for another 5-15 minutes until it’s thoroughly cooked through (check that the juices run clear). Serve with lemon wedges and Tobasco sauce if you prefer it really spicy.
