(Marisu’s Message Corner)
HAYDE CAJERO
In January, Hayde Cajero commemorated
her first year of working at The Athenaeum
by earning Employee of the Month. In just
a year, Hayde has proven to be a great addition to the club’s accounting department
as the Accounts Payable and Payroll Clerk.
Her efficient work ethic and friendly charm
make Hayde such a valued employee.
Hayde brought to The Athenaeum her 10 years of prior managerial experience. However, her most important job is being mom to her 12 year old son, Ethan
and providing for her family. The Cajero
family resides in Rosemead and the family
calendar is always jammed packed with
fun activities. Hayde dedicates her time
to being an active member of the San Gabriel School District PTA, volunteering
at her local church, and being “team mom”
for her son’s football team. Even her niece, only two years old, is an energetic cheerleader at home games.
This summer, Hayde and Ethan are excited
to travel to Mexico. The vacation plans
include a trip to the ancient pyramids, a
relaxing visit to the beaches of Cancun,
and much anticipated time with family.

New Athenaeum website to be launched! On Thursday, March 1st, we will launch the new website to members. The Athenaeum partnered with Clubessential, a leading provider of private club websites, to revamp the existing one. We are very excited to introduce the website to the membership
as it has several enhancements that the current site does not have.
Members can now make online dining reservations for a la carte lunch and dinner and for
all club hosted events. A letter announcing the launch of the site along with some of those
frequently asked questions (FAQs) was sent to members in the last week of February. The most
significant enhancement is the ability for members to view their account online. And, not only
can accounts be viewed online, these can also be paid online. Details and particulars are in the
letter and FAQs sent to everyone.
We invite all of you to navigate the new website and enjoy the new features. Most of all, we
welcome your comments and insights as we continuously strive to improve the site.
March certainly started with a bang! The website launch is being celebrated with the Winemaker dinner on Friday, March 2nd. Hailey Trefethen, winemaker for Trefethen Family Vineyards, will be at the dinner representing the winery. Being showcased that evening are the following wines – Dry Riesling, 2010 (91 points); the Harmony Chardonnay,
2008 (92 points); Merlot, 2008 (93 points); Red Blend, Dragon’s Tooth, 2008 (94 points); a late harvest Riesling, 2009. You surely should not miss this one as our culinary team will
prepare a dinner to complement the wines.
St. Patrick’s Day will be celebrated a day early – Friday, March 16 – at the Rathskeller. Get your fill of the traditional corned beef and cabbage along with a swig of Irish whiskey.
Come early and bring your friends. We had a standing room only crowd last year, seat and
tables were prime commodity. Bar opens at 4:30pm.
Members always look forward to our International Nights to sample great dishes from around
the world without getting on a plane. In line with our celebration of St. Patrick’s Day, we will
feature Irish cuisine on Monday, March 12. And, the main entree will be Guinness braised
beef short ribs (and not corned beef and cabbage). We go to Alsace on Monday, March 26 with choucroute with pork, ham, sausage, sauerkraut and vegetables as the main fare.
Daylight savings time starts on Sunday, March 11. We are looking forward to longer days and starting a countdown for the Rath al Fresco.

Chocolate
Caramel Tart
Directions
Ingredients
Crust
4 oz. butter, softened
3 ½ oz. granulated sugar
1 large egg yolk
4 ½ oz. all purpose flour
1 oz. cocoa powder
Caramel
½ cup water
14 oz. granulated sugar
2 oz. light corn syrup
½ cup heavy cream
4 oz. butter
Ganache
½ cup heavy cream
4 oz. semi-sweet chocolate
Sea salt
For the Crust
1. In a large bowl, cream together the butter and sugar. Beat in the egg yolk. Add in the flour and cocoa powder to the butter mixture. Mix until it comes together.
2. Roll out the dough or form it by pressing it with your fingers into 3 inch rings or tart shells laid down on a paper lined baking tray.
3. Preheat the oven to 350 degrees. Prick the tart shells all over with a fork and place a small piece of parchment over the dough. Fill the paper with uncooked rice or beans and blind bake until cooked through, about 15 minutes. Cool on a wire rack.
For the Caramel
1. In a saucepan, bring the sugar, corn syrup and the water to a boil. Continue cooking without stirring until it reaches a dark amber color, if using a candy thermometer it should reach 350 degrees.
2. Remove the pan from the heat and whisk in the butter and the cream until smooth. Pour about one-third inch of caramel into each of the cooled tart shells and refrigerate until ready to use.
For the Ganache and Final Assembly
1. Bring the cream to a simmer, turn off heat then add the chocolate to the hot cream. Stir to obtain a smooth ganache. Pour the ganache evenly over the tarts and refrigerate until firm. Remove the tarts from the shell. Before serving sprinkle with sea salt.
