This popular program provides each Concord resident three opportunities to have unbagged leaves collected curbside, between October 19th and January 29th. Concord is one of just a few North Carolina municipalities providing this exceptional value to taxpayers, by funding a wide range of solid waste services out of their tax dollars. The program is offered by Solid Waste Services to residents at no extra charge. While bagged leaves, grass, and other yard waste are picked up year-round, loose leaf collection offers residents the extra convenience of simply raking leaf piles to the curb. Be a good neighbor—don't put leaves out too early. The 2015-2016 loose leaf collection schedule was mailed to each residence in the Fall 2015 City Circular. The fitness room at the Sports Club is open to all Highland Creek residents and guests who are a minimum of sixteen years old, provided that teens under eighteen years old… 1. Are residents of Highland Creek. 2. Come to the Sports Club accompanied by a parent or guardian with proper ID. Both parties must review and sign the Authorization/Contract in front of a Sports Club employee. 3. Sports Director, Megan Morsillo, will schedule a session for instruction on the fitness room equipment. 4. Present a valid ID Card at the Sports Club desk. No teens will be admitted to the Fitness Center on his/her own without showing the valid Fitness Center ID, NO EXCEPTIONS! If they lose the ID they will have to pay $10.00 for a replacement. 5. If the teen is disruptive or does not follow the rules he/she will have one warning; if it happens again, his/her ID will not to be returned to him/her. The Ridge Road National Junior Honor Society hosted our Fall Fun Dance on October 9th. It was a rousing success, with students and teachers alike on the dance floor. The proceeds from the dance will help fund our annual district SAC (Special Academic Curriculum) dance in the spring. We are so happy to welcome our Raven Men group to campus. Started by our counselors, over 40 men spend time volunteering and mentoring in our school. Their presence has already made a positive difference in our school culture. The Executive Class Council had visits, that will continue all year long, to Parkside & Highland Creek Elementary schools to help students in the classrooms. Academy of Engineering & DECA had several events with more planned throughout the year. Parent Jam 15 was held last month with the biggest turn out ever where staff & counselors give valuable information to parents for high school & beyond! Fall athletics found MCHS making & breaking several records! The Men’s Soccer finished as Conference Co-Champs. They haven’t seen that title since 2008! Women’s Volleyball finished this season as the best team in the school’s history. The Cross Country team had several runners make all conference including Austin Atkinson qualifying for state. Women’s Tennis had 5 qualify for regionals which is a school record. Maverick Football team is having a great Volleyball Team season continuing their quest for a third straight state championship title while playing against some big teams outside of the state! This included sea turtle nesting, offshore reefs, salamanders, beavers, rabbits, black bears and so much more! Submitted by Darcy Thomas Remove the roast from the oven and transfer it to a cutting board. Cover it tightly with aluminum foil and allow the meat to rest for 20 minutes. Carve and serve with the sauce. Crab Rangoon Dip - A party favorite! 2 cups crabmeat 16 oz. cream cheese (2 blocks) 1/2 cup sour cream 4 green onions, chopped 1 1/2 tsp. Worcestershire sauce 2 Tbsp powdered sugar 1/2 tsp garlic powder 1/2 tsp lemon juice Mustard Horseradish Sauce Whisk together the mayonnaise, mustards, horseradish, sour cream, and salt in a small bowl. Peppermint Meltaways Recipe First, soften the cream cheese in the microwave for about a minute. Chop your green onions. Add them and your two cups of crabmeat. Add the sour cream, Worcestershire sauce, powdered sugar, garlic powder and lemon juice. Mix all the ingredients and bake for 30 mins at 350°. Serve hot with chips, fried wontons or pork rinds. MAKES: 30 servings 1 cup butter, softened 1/2 cup powdered sugar 1/2 tsp. peppermint extract 1-1/4 cup all–purpose flour 1/2 cup cornstarch Frosting: 2 tablespoons butter, softened 2 tablespoons milk 1/4 teaspoon peppermint 2 to 3 drops red food coloring, optional 1-1/2 cup powdered sugar 1/2 cup crushed peppermint cadies Standing Rib Roast 1 (3-rib) standing rib roast (7 to 8 pounds) 1 tablespoon kosher salt 1 1/2 teaspoons freshly ground black pepper Mustard Horseradish Sauce, recipe follows 1 1/2 cups mayonnaise 3 tablespoons Dijon mustard 1 1/2 tablespoons whole-grain mustard 1 tablespoon prepared horseradish 1/3 cup sour cream 1/4 teaspoon kosher salt Two hours before roasting, remove the meat from the refrigerator and allow it to come to room temperature. Preheat the oven to 500°. Be sure your oven is very clean before setting it at 500°. Place the oven rack on the second lowest position. Place the roast in a pan large enough to hold it comfortably, boneside down, and spread the top thickly with the salt and pepper. Roast the meat for 45 minutes. Without removing the meat from the oven, reduce the oven temperature to 325° and roast for another 30 minutes. Finally, increase the temperature to 450° and roast for another 15 to 30 minutes, until the internal temperature of the meat is 125°. (Be sure the thermometer is exactly in the center of the roast.) The total cooking time will be between 1 1/2 and 1 3/4 hours. Meanwhile, make the sauce. RECIPES TO SHARE Sit And Stitch In a small bowl, cream butter and confectioners’ sugar until light and fluffy. Beat in extract. In another bowl, whisk flour and cornstarch; gradually beat into creamed mixture. Refrigerate, covered, 30 minutes or until firm enough to handle. Preheat oven to 350°. Shape dough into 1” balls; place 2” apart on ungreased baking sheets. Bake 9-11 minutes or until bottoms are light brown. Remove from pans to wire racks to cool completely. In a small bowl, beat butter until creamy. Beat in milk, extract and, if desired, food coloring. Gradually beat in confectioners’ sugar until smooth. Spread over cookies; sprinkle with crushed candies. Store in an airtight container. Accounts with a balance will have the paperwork returned. Clubhouses cannot be used for any business, religious, or commercial purpose. The rental fee for Prosperity Park is $100 with a damage/non-compliance deposit of $350. The rental fee for the Sports Club is $200 with a damage/non-compliance deposit of $350. A check for $50 must be submitted with your rental contract. The balance is due 30 days prior to your event. The $50 is non-refundable if your party is cancelled. All rental fees and deposits must be made in certified funds or money order. NO cash payments will be accepted. Rental contracts/fee/deposit must be dropped off at the Sports Club. If consumption of alcohol will be permitted, proof of liability insurance must be received within 7 days of party. Reservations may be booked up to six months in advance on a “first come, first served” basis. Reservations must be made at least 2 weeks prior to the event. If the facility is being hosted for a person between the ages of 15-21, you must provide proof that an offduty police officer has been hired to be present during the duration of the party. One adult must accompany each 5 persons under 21 years of age. Time slots available for rentals are 11-5 p.m. and 6-midnight. The six www.ncgdoors.com hour rental includes your set-up and clean-up. The Sports Club has 10 six foot long tables and approximately 70 chairs for your use. It also has a full kitchen, sound system, tv and cd/ dvd player. Prosperity Park has 6 square tables with 4 chairs each, 1 long table with 6 chairs and approximately 20 extra chairs. It also has a kitchen with microwave & refrigerator. Capacity of the Sports Club is approximately 80 people and Prosperity Park Clubhouse is approximately 50. Helium balloons are not allowed. Board Meetings The Board of Directors meetings will be held on the 2nd Tuesday of each month at 5:30 p.m. at Prosperity Park Clubhouse. Residents may attend these meetings as observers. If an owner wishes to address the Board, he/she must contact Leah Singleton at Hawthorne Management Company at 704-377-0114 in order to be placed on the agenda. The schedule of 2015-2016 Board Meetings is: 2015: December 8; 2016: January 12 (Sports Club), February 9, March 8, April 12, May 10, June 14, July 12, August 9, September 13. Additionally, pursuant to § 7A-38.3F, the association is required to notify members that they may initiate voluntary mediation in an effort to resolve a dispute with the association.
