This dynamic educational program is designed for the engaged club
manager looking to expand his/her knowledge base of the elements
of effective menu analysis as applied in successful club operations.
Topics covered include the menu costing and calculation of ideal food
cost, and the subsequent use of costing data when combined with
sales mix data to develop effective menu engineering strategies. The
focus is on identifying possible opportunities for using the insights
gained from menu analysis to improve both member satisfaction
and the financial performance of the food and beverage operation.
