It took me all of thirty seconds to accept his offer. After all, I realized that he had many years of “dining” experience and having been an educator for a large percentage of his life would surely qualify him to write about it! Sure, we know that “city folks” are accustomed to restaurant critics and reviews. But for our area it is an idea born out of Wayne’s selflessly dining in restaurant after restaurant. Just for us! An idea which proved to be very well received by you, the people of Kerr County. So, the next time you see Wayne Este, whether in his shop, Texas etc., a restaurant, or at one of our community functions, please let him know how much you appreciate his self-sacrificing work in bringing restaurant reviews to Kerr County! Also popular are documentary style biographies, featured on the Biography Channel, further memorializing the lives of famous people. P lowing Mrs. Dodie Love (Copper’s mother), to talk about all her memories as a cheerleader. What was amazing was that she remembered everything as if it were yesterday! She recalled the names of the coaches, the football players, the other cheerleaders, the teachers. She even remembered the cheers! But what about the rest of us? Shouldn’t we be able to preserve our stories, our cherished moments, our accomplishments, struggles, in essence, our own personal histories? Don’t our stories matter? Of course they do, especially to our family, friends, and future generations of loved ones. Just because we are not famous, does not mean our lives are not worth documenting; everyone has a story to tell, everyone’s life is precious. I also videotaped Copper’s Mom at the special tribute to the Tivy Alumni Cheerleaders at a Tivy football game, where Dodie was on the field along with the rest of the alumni cheerleading squad. On another occasion I videotaped Dodie at a local peace march, where I interviewed her regarding her opinion about all the wars she had lived through in her ninety-plus years. She had a lot to say then too. One of her comments keeps popping up in my mind lately, “war never did anybody any good”. She was a wise woman. Memoir videos are an easy, affordable way to document your life story. You can make your own memoir video or you can have a family member help you make a video biography of your life. If you want a professional touch, you can hire a videographer who specializes in producing Memoir Videos for people just like you. Memoir videos can be as simple as an interview of a person relating his or her favorite stories, or memorable events in his or her life. Memoir videos can also include cherished photos, old home movies and background music. Whether it is homemade or professionally videotaped and edited, it is a beautiful and poignant way to preserve your life story. And your family would be honored and very touched to have such a personal gift from you. (Hey, you might even get a kick out of watching it yourself!) A few years ago, I ran into Copper. She thanked me for making the memoir video of her mom, and informed me that her mom had just recently passed on. When family and friends crowded into Copper’s home for her mother’s wake, Copper pulled out the video and played it so that everyone could see and hear Dodie again, telling her stories, in her own special way. I know how much that video means to Copper. As a videographer, it was an honor and a privilege to work with Ms. Dodie Love, a truly remarkable woman. Several years ago, a friend of mine, Copper Love (well known Hill Country artist) asked me to interview her mother, who was one of the “Original” Tivy High School Cheerleaders. The wall outside of Kirks’s office displays a magnificent framed triptych of a black–and-white pin-up photograph of Marilyn in a swimsuit. These items offer only a subtle hint of Kirk’s idiosyncratic obsession with all things Marilyn. Wow! I’d like to get a picture of that! Did he just st walk w in one day and say, ‘Look , honey, I have a tattoo of Marilyn yn on o my leg.’ Or was it something you discussed? SS He has a pencil drawing of Marilyn that he really likes and wanted to get it done and I talked him into it. Kirk took the artist the drawing and he was able to render a nice copy and do the tattoo. I’ll let him tell you all about it. I’m sure he would be happy for you to take a picture ure of it. Kirk’s wife, Susie, offered me a tour of his office inner sanctum. Black-and-white images of People Magazine’s “Sexiest Woman of the 20th Century” peered at me from every wall. I think he likes her because of her look of innocence, and that’s not such a bad reason. Every Christmas, I buy Kirk a Marilyn ornament. While we’re waiting for him, tell me a little bit about the two of you and your business. ss. s. When Wh did you meet? Do you have any children? How long have vee you been in Kerrville? MP Actually, I’d like to photograph your tattoo. I promise I irk and Susie Storey are an inspirational couple who spend a great deal of time together at home, at the office, and working for the Benevolent and Protective Order of the Elks. Kirk is currently president- elect, and will assume duties of president of the Texas State Elks Association in June. Their daunting travel schedule keeps them on the go supporting the 65 Elks Lodges across the state of Texas. To Kirk and Susie, supporting veterans, Americanism, education scholarships for seniors, prosthetic grants and summer camp for handicapped Texas children has become a full time yet very rewarding second job. Kirk summarized their relationship by saying, “ We are hard working people, enjoying life, enjoying each other, and enjoying Marilyn.” won’t pull your leg! KS Well, in that case, can you give me a minute to polish her up? Okay, I’m wondering what electrical devices this process may require... KS I just need to rub a little lotion on her. It really makes the tattoo pop out. I suppose dry, flaky skin on America’s sex goddess might be a major turnoff. So, Kirk greases down, and I get out my camera. Kirk raises his pant leg. Whoa! There she is . . . a color tattoo likeness of Marilyn Monroe drawn on his hairy leg! “This is wrong on so many levels”, I tell myself. Dry skin is the least of her worries – the woman is covered in hair! And it’s not her hair! It’s one thing to have photos and figurines scattered around the office and your home, but to know that the girl of his dreams is permanently branded on his body, always with you 24/7/365; there in your bed, in his shower, in your most intimate moments seems like it would be annoying, to say the least. Marilyn may be “the safest mistress a man can have,” according to Kirk, but Susie is irrefutably mistress of the mansion and remains unitimidated by Kirk’s penchant. “I’m not threatened by her, she’s dead!” 13 kerrcountypeople.com Mar-Apr 08 Wo m e n ’s F i t n e s s Weigh Less By Eating More? E at more, weigh less? Intuitively it makes about as much sense as seeking weight-loss advice from top chef Emeril Lagassi, but you can’t argue with the facts. When researchers at Baylor University’s Sport Nutrition Laboratory allowed women to increase their caloric intake to as much as 2,600 calories a day following a week of being restricted to just 1,000 calories a day, the women did not regain a single ounce. Even after an entire week on the 2,600 calorie-a-day regimen, the women still had not regained any of the weight they had lost, and some even saw their weight drop. What the women had regained, however, and happily so, was their resting energy expenditure—their ability to burn calories even while just reading or taking a snooze. Despite being several pounds lighter, the women were back to burning calories at their pre-diet rate—something of a miracle, given how weight loss generally works. by Sheryl Whitworth As for how long this feasting might be enjoyed before lost weight begins to return, Kreider says that women will need to let their individual experiences be their guide. “The women in our study still were not regaining any weight after an entire week of the 2,600calorie-a-day regimen, but this might not prove true for everyone,” says Kreider. “My suggestion would be for women simply to watch the scale and reduce caloric intake as soon as any lost weight might begin to return.” The bottom line is that our metabolic “furnaces” may need to be well stoked from time to time to keep calorie-burning revved. This is great news for women who fear they will never be able to eat normally without gaining weight. Sheryl, a former yo-yo dieter and non-exerciser, now believes in permanent results without permanent dieting. Prior to opening Curves of Kerrville in 2002, Sheryl completed Club Camp weight management and workout programs with Curves International and continues to stay abreast of the latest research and training regarding weight management, diet and exercise for women. “Usually, resting energy expenditure is reduced when weight is lost,” says Richard B. Kreider, PhD, FACSM, who is professor and chair of the Exercise and Sport Nutrition Lab in the Department of Health, Human Performance and Recreation at Baylor University in Waco, Texas. Thought to be a holdover from earlier times in human history when such metabolic slowdowns would help protect us from starvation during famines, the effect of these slowdowns today has been the dreaded weight-loss “plateau”, where we seem to get stuck at a certain weight despite restricting our caloric intake. Also a holdover from earlier times, our metabolism speeds up during periods of high caloric intake. “By following periods of caloric restriction with periods of relative caloric abundance,” says Kreider, “it may be possible to keep resting energy expenditure active enough to avoid the kind of metabolic slowdowns that can make weight loss difficult to sustain.” What heights might such periods of “caloric abundance” reach? Kreider can speak only in terms of what his particular study has found, but his answer seems encouraging for anyone who likes to eat. “Twenty-six hundred calories a day wasn’t the only amount we studied,” he explains. “We also had groups of women consume 1,600 and 2,100 calories a day for a week following their period of weight loss, but with nowhere near the same metabolic effects that the week of 2,600 calories a day had produced.” 14 kerrcountypeople.com Mar-Apr 08 LASER PEELS & ESR Diminish sun spots, wrinkles and plump up collagen for face, legs and hands. H e a l t h a n d We l l n e s s T homas Edison said, “The doctor of the future will give little medicine, but will interest his patients in the care of the human frame, diet and in the cause and prevention of disease.” Chiropractic care does just that. There are many misconceptions about chiropractic care; over the next few months I will be discussing some of these and explaining the various benefits of chiropractic care. I believe chiropractic care can benefit anyone willing to give it a crack! The word chiropractor is Greek in origin, “chiros” and “praktiker” meaning “done by hand.” Chiropractors diagnose and treat disorders of the spine and musculosketal system. By Dr. John Bilderback, Chiropractor counter environmental factors (i.e., using an antibiotic for a bacterial infection). By contrast the naturopathic approach considers that lowered host resistance is necessary for disease to occur so that the proper solution is to strengthen the host. The spine is the body’s main structural support system. I hear older patients say, “Had I known that I was going to live this long, I would have taken better care of my spine.” You only have one chance with your spine. The more pressure or pain you live with means your spine will deteriorate faster than someone who lives without pain. Chiropractic was founded in 1895 by Dr. D.D. Palmer Dr. Bilderback received his degree from Western States and is now practiced in over one hundred countries. Chiropractic College in Portland, Oregon in 1985. He Early chiropractic philosophy developed by Dr. Palmer has chosen to serve the people of Kerr County for over 20 years. was the subject of criticism. Dr. Palmer believed that mal positioned spinal bones (subluxations) can diminish nerve impulses and interfere with our innate intelligence, “our God given ability to heal ourselves.” By realigning the spine or fixing subluxations (the mal position of two joint surfaces which causes muscle contraction, nerve irritation, swelling and pain) we can release our innate intelligence and the body can rid itself of disease. Today the chiropractic profession has taken on a different approach. We are more involved with preventative health. By improving the musculoskeletal systems there is less stress and tension on the body. This can be done by realigning and strengthening the spine, exercising and by improving diet with proper foods and nutrition. Also, by improving spiritual health with self help material and a more positive attitude, the body’s immune system is stronger and disease is less likely to occur. The traditional “allopathic”, or medical model, considers disease the result of some external influence such as a toxin, parasite, allergen or infectious agent. The medical solution is to 20 kerrcountypeople.com Mar-Apr 08 21 kerrcountypeople.com Mar-Apr 08 Wa y n e K n o w s F o o d By Wayne J. Reduce clutter. Get rid of things you aren't using and organize the rest neatly. 2. Turn on the lights. When you shine light into dark areas of your home/life, you focus energy on them. 3. Fix broken windows, dripping faucets, and doors that stick so they don't hamper your well-being. 4. Position sofas and chairs so no one's back is to a room's entrance. This arrangement makes people feel welcome when they enter the room. 5. Keep walkways unobstructed, allowing positive energy to flow freely through your home. 6. Make sure your stove is clean and in good repair. According to feng shui, the stove generates prosperity–– a burner that doesn't work limits your wealth. Feng Shui Basics Feng shui may seem strange at first, but it isn't really. It's a system for creating a comfortable, functional, and harmonious living environment. You don't have to understand all the mystical angles to use this ancient art yourself or to reap its benefits. Try it yourself––many feng shui cures start working in a matter of days. By making a few changes in your home, you really can change your life. F eng shui, the ancient Chinese art of placement, is thousands of years old, yet until recently few Americans knew about it. Its purpose is to create harmony and balance in your environment. Although feng shui (pronounced fung shway) employs numerous “cures” that may seem a bit like magic to Westerners, much of what it recommends isn’t esoteric at all––it’s common sense. Good feng shui is good interior design. Feng shui practitioners believe that your home is a reflection of your psychological state. If your home is cluttered, you may be experiencing confusion in your life. Inadequate lighting suggests lack of energy or enthusiasm. Doors that stick represent obstacles or frustrations.
