We are truly delighted to welcome you to Dingle for what is now
our 8th Dingle Peninsula Food Festival. This year we are
honoured to have been voted as the Foodie Town of Ireland
by RAI (Restaurant Association of Ireland). The theme of the
festival this year is ‘Food of The ‘Wild Atlantic Way’.
Our main aim of the festival continues to be: to provide the
Peninsula with an opportunity to showcase the food experiences
and incredible hospitality we have to offer in Dingle and surrounding
areas. The first weekend in October has now become a date each year which locals and
visitors from Ireland and overseas look forward to with great anticipation to experience
the events of the festival. One of the highlights of the festival is to stroll the streets of
Dingle and experience the ‘Taste Trail’ in over 75 locations, or attend a cookery
demonstration or a food workshop. There is a children’s programme of events, live
music, a ‘Bake Off’ for men and boys, a Farmers’ and Fisherman’s Forum, artisan food
markets throughout the town and the Blas na hÉireann National Irish Food Awards.
This year also hosts the inaugural Culinary Pentathlon where culinary students will
compete in both athleticism and culinary skills.
To partake on the Taste Trail you will need to purchase a book of Food Festival Taste
Tickets. A book contains 10 tickets and costs €22 with €2 of this going towards the
successful running of the Festival.
You can purchase your taste tickets from the following locations: Fishbarr at the
Marina - John Benny’s Pub - Dingle Bay Hotel - Murphy’s Ice Cream –
O’ Flaherty’s Pub - McCarthy’s Bar - Benner’s Hotel - Festival Office.
The Festival Office will be located in the office of West Kerry Live on Green Street, and
will be open from Friday 3rd – Sunday 5th October. This year the Festival is delighted to
be supporting The Kerry Hospice Foundation – Dingle Branch, Camphill and Hope

Peninsula Food Festival is a voluntary non-profit festival, organised by the people of
the Peninsula to promote the Peninsula. This year we were delighted to have new
members join the committee again, which has enabled us to make the festival bigger
and better! Go raibh míle maith agaibh to all who gave their time and commitment
this year. Bain taitneamh as an Féile Bia! The festival committee would like to pay a
very big thank you to Kerry County Council, Údarás na Gaeltachta, Dingle Tidy Towns

Alessandro Porcelli.
JP McMahon was born in Dublin and moved to Galway city in 1999. He is a restaurateur, chef and educator. He has three popular restaurants under the brand Eat

Galway. As Culinary Director, JP manages
all aspects of the food side of the business.
He travels nationally and internationally
giving demonstrations and lectures.
After working behind the scenes for many
years JP and his wife Drigín opened Cava
Restaurant, their first venture, in 2008. At
the time Tom Doorley said they served ‘the
best tapas in Ireland’. They then went on to take over the food aspect of Massimo
Bar on William Street through their gastropub offering of high quality, accessible
food for all. In 2011 JP and Drigín opened another restaurant, targeting a different
style of diner – Aniar. Aniar and it’s unique philosophy gained a Michelin Star in
2012. One of the few, if not first, Michelin Stars in Galway.
JP runs frequent award-winning cooking classes in Aniar. He also teaches school
students via the Food Education program. He is passionate about preserving food
from curing to pickling and fermentation. He is a keen nose to tail dining enthusiast. His restaurants share is philosophy of working with farmers and primary
producers in order to achieve a more direct connection with food and land.
Awards won by JP and Drigin’s restaurants include 2012 & 2013 Michelin stars, Best
Restaurant in Ireland Food and Wine magazine (2012), Best Ethnic Restaurant,
Georgina Campbell (2012); Best Emerging Irish Cuisine, RAI (2013); ‘Best Restaurant
in Connacht, RAI (2012); Best Gastropub in Connaught, RAI (2013); Best Cookery
School, Good Food Ireland (2013) plus many others.
JP holds a degree in Art History and English and often gives talks on Food in Art
History.

Hailing from Lyon, Jean Marie studied at the prestigious catering school of Thonon
-les -Bains on the shores of Lake Geneva
on the French/Swiss border.
Jean-Marie began working for renowned
French chef Michel Allarousse and his
award winning sommelier wife Maryse
in ‘La Panorama’ Restaurant in the
Beaujolais region. He then moved to ‘Le
Gourmandin’ a Michelin star restaurant
in Lyon. After gaining experience in both

restaurants he began working in a Pastry Shop perfecting his baking skills.
In 1998 he relocated to Dingle and joined the team at the French Style Waterside
Seafood Restaurant. Jean Marie’s knowledge of fish was very limited. Each morning
he would head out on a boat with Michel Chauvet who hailed from La Rochelle
in France to catch the fish that would later be served for lunch and dinner in the
Restaurant. Jean Marie owes all his skill and knowledge in this area to the tutelage
received at the hands of Michel. Jean Marie has spent time in The Skipper in Ventry,
Doyle’s Seafood Restaurant, The Global Village and in recent years in the kitchens
of the famous seafood only Out of the Blue Restaurant which holds accolades from
The Bridgestone Guide, Georgina Campbell Ireland and has been recommended in
many international publications.
Jean Marie has settled in Dingle, having met and married his Russian wife from the
beautiful city St Petersburg.

Tracy Coyne “Winner of TV3’s Great Irish Bake Off ”
Make it, Bake it or Fake it - Delicious Desserts Dismantled
Tracy hails from Killarney and says that she is a
Kerry woman through and through.
She bakes several times a week having been
taught by her mother and grandmother. Her
fondest family memory is baking with her
grandmother in the kitchen. Tracy always
cooked a lot, baking developed later and she
now describes it as therapy and stress relief.
She describes her baking as kid friendly,
healthy and lunch boxable. She has a tendency
to bore herself so always wants to move on with baking. Her children love novelty
cakes so this culminated in a cake she made at Christmas complete with flashing
lights! She is over novelty cakes now and likes more challenging bakes. She describes
herself as cocky enough to think she can do anything but humble enough to accept
that she can’t.
Since winning the Great Irish Bake Off Tracy has been busy running workshops for
adults and children teaching then that good healthy food need not be complex or
time consuming and that even the busiest of people can achieve culinary stardom
with a little planning.
She is also a regular contributor to RTE’s Today with Sean O’Rourke Show where she
is his Go-To person to when it comes to helping busy parents feed the family well for
less.

Muireann NÍ Chíobháin is a performer and writer
and presents the bilingual programme Spraoi on RTE
Junior. She has written and performed for shows RTE
Jr productions ‘Tell Me A Story’, ‘Story Time’, and ‘Shhh
It’s Quiet Time’ and will be seen this Autumn in RTE
Jr’s new show ‘Twigín’. Cooking and craft are also a
passion and Muireann is proud to host the children’s
cookery show as Gaeilge ‘Bia Linn’ on Cúla 4 for TG4
with her kitchen friends and the infamous ‘Coco’ an
Cócaire. A fluent Irish speaker, Muireann enjoys writing
for young people in both languages and regularly collaborates creatively television,
musical and theatre projects for this young audience.

Caroline Gray, “Easy Food Magazine”
Pan-roasted Lemon Chicken with Rice
Caroline Gray is the staff food writer at Easy Food
Magazine, Ireland’s best-selling monthly food
magazine. She writes, tests and styles recipes for
the magazine, as well as demonstrates recipes and
cooking techniques for Easy Food’s YouTube video
series.
She completed the 12-week certificate course at
Ballymaloe Cookery School and has previously
written and developed recipes for the Food
Network in New York City as well as various
newspapers in her hometown of Chicago.

John has over 25 years experience as a chef and currently
owns and runs West End House, Killarney. He also part
runs the busy Wholesome Fayre Café and Deli in Killarney.
John studied in the Culinary department of Tralee IT and
furthered his education studying Kitchen Management
in CIT.
John worked as Executive Chef in the Malton, Killarney
for 7 years, managing 3 busy kitchens servicing 5 food
outlets.
John has also spent time working in the 5* Killarney Park
Hotel and Aghadoe Heights. To further his knowledge
and widen his skills, John completed stagés in the Ritz,
London, the Skylon, London and Bentleys and Corrigans of Mayfair.

Kate Lawlor a BA graduate of CIT is head chef and owner of
award winning Fenn’s Quay restaurant.
In 2006 she became head chef and in 2008 took over the
running of the business. The main ethos at Fenn’s is keeping
it local and fresh with many ingredients sourced from the
nearby English market which was reflected in making the
McKenna’s top 100 in 2014 and winner of “Cork’s Best Restaurant” Restaurant Association of Ireland 2014.
The New York Times has recommended it as the “Place to Eat”,
bold, creative dishes furnish-but do not overwhelm-the menu.

‘My passion is food and my mission is to teach the customer the true taste of fresh
local produce’ - Caroline’s Mantra
Caroline’s approach this year is to link local produce with consumption. Caroline
has developed a natural stock made from shells of crab and prawn and set using
seaweed. Currently, studying for BA (Hons) Degree in Culinary Arts at the Institute
of Technology, Tralee and running a busy kitchen at the Boatyard Restaurant, Dingle, Caroline is kept busy. She states that ’starting any business is no easy task and
becoming a food entrepreneur is a special challenge’. Chefs
that have been most influential to Caroline are Thomas Keller,
Marie-Antoine Carême and Gordon Ramsey. Caroline’s recipes
featured in the Kerry Food Producers Directory which was published in July this year and her restaurant ‘The Boatyard‘, was
awarded the accolade of the Best Casual Dining Restaurant in
Kerry 2014 by Restaurant Association of Ireland.
The demonstration will include a talk on seaweed by Kevin
Flannery of Dingle Oceanworld

Farmer And Fishermen Forum
The annual Farmer and Fishermen forum will take place on Friday the 3rd
of October, in Benner’s Hotel, Main Street, Dingle. The forum aims to create
discussion on the opportunities presented in food production, with a focus on
farm and fishing families. It has been the scene of very lively debate in previous
years, as people get a chance to raise issues directly with policy makers, advisors and experts.

Allen is one of the foremost experts in the field of Farm Diversification and
has supported over 300 successful applications under the current round of the
LEADER programme nationwide.
Maedbh Seoighe joined Údarás na Gaeltacht over
six years ago and works as an Enterprise Executive
in the Enterprise & Employment section of the
organisation. Within Údarás na Gaeltachta, her
portfolio of companies include seafood, aquaculture and food enterprises. She works with a wide
range of companies, from large seafood processing
companies to start ups exploring new food initiatives. She works with clients to establish the most
suitable supports tailored around each company’s
business plan.

Liadh Ní Riada MEP is a member of the European
Parliament for Ireland South. With a background in
media, Liadh has over twenty years’ experience of

structures. Fluent in Irish and French, she is a vocal
advocate for the rights of the “plain people of Ireland”.

the guys from An Canteen, Dykegate Lane who have
been fantastic ambassadors for craft brewers for some
time now.

Food Safety Training for Food Producers (Registration Required)
Location: Údarás Na Gaeltachta, Páirc Ghnó Dhaingean Uí Chúis
TRADEIT is an EU-funded project and is a collaboration
between food producers, academic institutions, food
producer networks, technology providers and food associations. The main
objective of TRADEIT is to strengthen the competitiveness of food producers in
the dairy, meat and bakery sectors and one of our goals is to provide food producers with practical and relevant training that will give them the knowledge
and skills they need to improve their business. Our trainers are specialists with
significant experience and expertise who are aware of the time and resource
constraints faced by small food producers.
This free food safety training session is open to any small food producers in the
dairy, meat or bakery sector who would like hands-on, practical and relevant
guidance. The session will be facilitated by Catherine Halbert who is an expert
in food safety. She works closely with small or start-up food businesses helping
them raise awareness of relevant food safety issues and providing practical tips
for food safety compliance. The training session will consist of a workshop from
10-1 followed by individual coaching sessions for workshop attendees.

could have been eaten, but because we cooked too much, left it in the press or
fridge too long etc. – it ends up in the bin.
The Stop Food Waste Campaign - Sponsored by Kerry County Council and the
Regional Waste Management Office are happy to introduce Chef Mark Doe,
who runs the highly successful ‘Just Cooking’ cookery school in Firies, Co. Kerry
will do a demonstration on cooking dishes with a view to preventing food
waste and how to use left-overs.
Mark will also prepare a couple of sample meal planners and include all the tips
on storage, shopping, freezing etc.... all with a view to saving you money and
keeping good food out of the landfill site!
Pauline McDonagh of the Regional Waste Management Office will introduce
the event and give a brief overview of Food Waste in Ireland

vinegars, jams, fermentations, creams, balms, ointments by using honey and
beeswax and natural ingredients from the Druid’s garden. In this workshop
Juli will help you to reconnect with nature and learn how to use foraged fruits
berries and more as medicine.
Juli Malone has over 25 years experience working with nature as a horticulturalist, florist and herbalist.

Pat is a passionate and experienced beekeeper with over 29 years of beekeeping and is currently the educational officer in the Killorglin Bee-keeping society.

experience in her chosen craft, and continues to put those acquired skills into
practice on every cake she designs and creates.

wool with food waste with Una Ní Shé. An Lab, Admission €5
Learn how to dye a range of materials with some of your food waste, This could
include tops and tails of beetroots, blackberries that are not good enough to
eat, onion skins etc. Bring your own serviette to colour if your wish.
Una Ní Shé originally trained in woven and constructed textiles in the National
College of Art and Design in Dublin. Her practice also extends to print and large
chalk drawings. These are the source for the marks and meanings of her large
painterly felts. Themes include studies of skeletal forms and musical collaborations.

Autumn has arrived and you may be wondering what to do with all those
empty hard working vegetable beds? Wonder no more; just join Kitty Scully
for a hands-on fun and informative workshop on putting the garden to rest for
the winter. From mulching to sowing green manures, there are lots of valuable
autumn ground preparation practices that may just determine the success of
your garden next year and will certainly help to reduce the amount of hours
needed to work soil next spring. October does not cry ‘curtains down’ on the
vegetable patch but simply should be viewed as the beginning of next years
growing season.
Growing up on an organic mixed farm in Co Laois, Kitty became interested and
passionate about home grown food at an early age. After years working on organic small holdings around the world, Kitty returned to Ireland and completed
a Diploma in Organic Horticulture & Sustainable Living and recently achieved first class
honours in an MSc in Organic Horticulture
amidst a busy gardening, writing and teaching career.
Best known for her RTE 1 series’ How to Create a Garden’, Kitty also writes a weekly vegetable gardening and foraging column for the
Irish Examiner. In 2009, Kitty contributed to

is now the Food Grower at Airfield House in Dundrum, a fabulously newly

their passion and commitment to the production and consumption of local,
seasonal home grown food.

If you are interested in foraging and don’t know where to start, well this is the
workshop for you. Darach who is an experienced forager will share his passion
and knowledge of ingredients that are available from both our shores and from
the land. He will provide you with some information on what to look for and
then will use seaweeds and wild plants to create some dishes to show you how
to introduce them to your cooking.
Darach Ó Murchú is a highly experienced mountain leader and outdoor guide.
He has climbed and led on many international mountains ranges including the
Himalayas. Throughout the year Darach offers foraging courses for more details

KRISTIN JENSEN is a freelance editor specialising in cookery books and has worked with many of Ireland’s top food
writers and chefs. She explores Ireland with an appetite,
blogs at Edible Ireland and is a member of the Irish Food
Writers’ Guild. Originally from the US, she moved to Ireland
in 1999 and now lives in the countryside in County Louth
with her husband and two children.
Journalist and broadcaster CAROLINE HENNESSY developed an interest in and appreciation for craft beer while
living in New Zealand. One of Ireland’s first food bloggers,
she started the award-winning www.bibliocook.com in 2005. Together with
Kristin Jensen she set up the Irish Food Bloggers’ Association in 2010. She
writes for the McKenna’s’ Good Food Guides, is a member of the Irish Food
Writers’ Guild and is devoted to exploring the intersecting worlds of Irish craft
beer and fine Irish food. She lives in North Cork with her partner and two small
girls who want to be brewers when they grow up.

In this hands-on workshop Jette Virdi will give you a
better understanding of how to add extra flavour to

will get to build your own your own food smoker,

Based in Dublin, Jette spends her day’s food styling
for magazines such as Easy Food and Bash as well as
creating images for food producers who are looking

This is a method professional coffee tasters use to determine their genetic
pattern of taste.

‘Learn the art of Fermentation’.

Have you always wanted to try making your own fermented food at home,
well wait no longer. During this workshop we will cover the basics of various
fermenting methods, including lacto-fermentation and will explain how
fermenting preserves and enhances the nutritional value of food. We will also
demonstrate how to make Vegetable Pickles, Kimchi, Vinegar, Ginger Beer, and
Kombucha and will then taste some of the ferments.
The Green Apron is a small Artisan Preserve company run by Theresa Storey
(with the assistance of her family.) Her small farm is situated in County Limerick.
The Green Apron’s preserves have won awards in many a local show and we are
listed in the Bridgestone Best in Ireland Guide. Theresa is also very proud to
have won a bronze award for our Raspberry Preserve in the 2010 ” Blas na hÉireann” Irish Food awards and to have our Crunchy Honey Mustard shortlisted for

Blas na hÉireann
The 7th Annual Blas Na hÉireann, Irish Food
Awards
Dingle, recently voted The Foodiest Town in Ireland, is home
to the prestigious Blas na Éireann, Irish Food Awards. The final
judging and Awards presentation to the top winners of this
all-Ireland competition is made during the Dingle Peninsula
Food Festival, right in the heart of Dingle Town.
This year, in the biggest competition in the Award’s history,
more than 2,000 products have been blind tasted by 350 judges in over 90 food categories to arrive at the best that Ireland
has to offer. You will be able to recognise these products by
the Blas accreditation that producers proudly carry on their
Award-winning products at farmer’s markets, fine food retailers, catering outlets and supermarkets throughout the country.
As always, the judges of this competition have looked for goods that are made
using top quality Irish ingredients, by passionate, talented producers, that also
have that extra special something to make their taste buds tingle.
Last year’s Supreme Champion was An Olivia Chocolates from Mullingar, one
of Ireland’s most talented young chocolatiers. The Best Artisan Award went to
Skeaghanore Duck, from Cork, widely recognised as one of the country’s best
duck producers from their farm overlooking Roaring Water Bay in Co Cork.
Both of these Awards are kindly sponsored by Bord Bia. Closer to home in
Dingle, check out Kerry Chorizo from On The Wild Side, Dovinia Chocolates and
The Little Dingle Food Company’s jams and sauces who will, along with many

The Art Trail at the Dingle Food Festival has been sponsored by Féile na
Bealtaine and The Environmental Services of Kerry County

An Lab, John Street, Dingle
An exhibition of paintings by Niki Purcell entitled “Feast”
celebrates the artist’s love of edible delights. The paintings
are concerned with gratification of the senses; their aim is
to capture a moment of desire and delight.
Una Ní Shé will be exhibiting felt pots or mini-cauldrons
that are coloured using food waste with slow-dye processes that do not harm the environment. Related artifacts
and food sources will also be shown. Is le dramhaíl bídh
a dhéanann an t-ealaíontóir Úna Ní Shé dathú ar na potaí
feilte seo. Úsáideann sí leithéidí tóin agus ceann biatais,
sméara dubha nach fiú ithe agus craiceann oinniúin don
bpróiseas mall dathú seo ar a ghlaotar eicea-ruaimniú.
Beidh an taispeántas seo sa An Lab i rith an #dinglefoodfest
“Spud” by Deirdre O Mahony is the first phase in a series of
work which aims to Examine food production, food security, seed heritage and sustainable food production. This 3D
animation details the stages in planting of potatoes using
the lazy bed method. A booklet detailing the “Spud” project
is also available at the exhibition.

Food Miles, a series of sculptures by West Kerry Sculptor Mick Davis demonstrate a move from his more familiar medium of stone to engaging with the environmental consequences of excess waste. After quite a bit of experimentation
he discovered a way of sculpting with old tyres using a steel frame as a base.

THE CULINARY PENTATHLON The inaugural running of the Dingle
Invitational Culinary Pentathlon is set for Friday, 3rd October. Beginning
from the Dingle Distillery, cyclists carrying local produce will traverse Dingle
along the historic waterfront on their way to hand off to chefs at the public
school for two hours of intense preparation. A runner will then push a trolley
filled with the prepared ingredients up
the Main Street of town and out to the
newly opened Dingle Cookery School
where a final chef will finish and plate a
two-course lunch for a panel of distinguished judges.

at the Marina. It’s a great way to begin your Taste Trail here at The Marina.
