For serious Star Wars fans, May 4 has become a gleefully celebrated holiday. Special events, costume parties and movie
showings mark the day.
While most people are
familiar with this collection of movies, here are
some facts about them
that you may not have

The word “ewok” is never said out
loud in the Star Wars movies.

This was not the first time
that Peggy LaRochelle had
been recognized for her work
at Piner’s. Her record as a
previous recipient of the Employee of the Month award
just proves that she consistently provides a very high
quality of care.
Peggy, our Physical Therapist, has been with Piner’s for

an incredible impact on the recovery of both our short
and long-term Elders. She is skilled, respected, polite,
and at the top of her professional game. We often receive
referrals from doctors because of the outstanding service
that Peggy provides. She always goes above and beyond

Luke’s lightsaber in Star Wars: Episode VI - Return of
the Jedi was originally going to be blue to match the
lightsaber he lost in the previous film, but George Lucas
was worried that it would confuse audiences, and
thought a green lightsaber would look better, so he made
the change.
to help all of our Elders and staff, no matter what the
task. She is a valuable member of our team!
Peggy says that she loves the looks on the Elders’ faces
when they finally achieve their goals, whether its finally
being able to stand up on their own or being able to walk
without help. “It’s a wonderful feeling!” she said.
Peggy grew up in Ohio in a large family. She wanted to
be a pediatrician, but her mother convinced her to go
into physical therapy (it was widely thought at the time
that female doctors could not have families). Today,
Peggy loves spending time with her family. “We have
too little time together, but cherish whatever time we can
find to spend with each other.”
Thank you, Peggy, for your smiles, your compassion,
and for sharing your talents with our Elders. We are
lucky to have you as part of the team!
While filming lightsaber fight scenes, Ewan McGregor
kept getting carried away and making the sounds of the
weapon himself, which had to be removed in postproduction.
We couldn’t believe our eyes! That’s because it was April
Fools’ Day, and Stephanie was at her best. We were
treated to tricky concoctions, like a Pizza Cake at the
Guest Home and a Burger Cake with Apple Fries at the
Nursing Home. Jello “drinks” with straws (completely
ineffective straws, that is) just added to the trickiness.
The rest of April consisted of various food holidays. We
enjoyed special treats like banana bread, coffee cake,
cinnamon croissants, and grilled cheese sandwiches.
Special desserts like blueberry cobbler, pecan pie, and
cherry cheesecake finished out our month in a sweet
style.

Lemon Meringue Pie
In saucepan, mix sugar, cornstarch, flour
and salt. Gradually add hot water, stirring
constantly. Cook and stir over high heat
until mixture comes to a boil. Reduce heat.
Cook and stir 2 minutes. Remove from heat.
Stir small amount hot mixture into egg yolk,
then return to hot mixture. Bring to a boil
and cook 2 minutes, stirring. Add butter and
lemon peel. Slowly add lemon juice, mixing
well. Pour into pastry shell. Spread meringue over filling; seal to edge. Bake at 350°
F for 12-15 minutes. Cool.
1½ cups sugar
3 Tbsp cornstarch
3 Tbsp flour
Dash salt
1½ cups hot water
3 slightly beaten egg yolks
2 Tbsp butter
½ tsp grated lemon peel
1/3 cup lemon juice
9-inch pie shell, baked

Easy Meringue:
1 Tbsp cornstarch
2 Tbsp cold water
½ cup boiling water
3 egg whites, at room temperature
Pinch salt
1 tsp vanilla
6 Tbsp sugar
In a small pan, combine cornstarch and cold water. Stir to
blend, then stir in boiling water. Bring to a boil over medium heat, stirring constantly. Cook 2 minutes. Remove
pan from heat and cool to room temperature. Beat egg
whites and salt to soft peaks; add vanilla, then begin adding sugar gradually, beating constantly until whites stand
in firm, glossy peaks. Add cornstarch mixture and blend
well. Spread meringue over cooled pie filling.
