Puchero Ingredients 140M 2PAX Difficulty 400 g of chick peas (soaked) 1 smoked ham bone 1 pig trotter 200 g of sliced streaky bacon 200 g fat from the cheek of the pig 200 g pork 1 chorizo sausage 1 black pudding sausage 1 bay leaf Salt (to taste) Preparation 1 In a large stewpot, place chick peas, meats, ham bone and bay leaf and season with salt. Bring to a hard boil for 5 minutes until a foam rises on the liquid. Skim off the foam (these are toxins). Lower the heat and simmer for 1 hour. 2 Prick the sausages with a pin so that they release their fat and flavour and add to stew. Cook for another hour. 3 Once everything is cooked, remove the meat. Debone the pig trotter and put that meat back in with the broth. Slice the meat and serve separately. 4 Use the broth to make a rich soup.
