Christmas was a wonderful time of changes for our family this
year. My son is home safe from the military and settled in
Columbia, SC with his new wife, Lauren. We were all together
to celebrate the many changes this year. My newest granddaughter, Emma, is now 4 months old and such a joy in our
lives. My husband Gary and I celebrated our first Christmas as
a married couple and are excited to be welcoming a new grandson in early May. I hope your family also enjoyed the many
blessing of the holiday season. Please continue to share your
photos and stories in the Triple Crown magazine.

Familyspotlight
By Residents Elisabeth Erdman-Palmer and Mike Palmer.
We are blessed with a beautiful blended family of eight, eleven
if you include the 3 dogs. Life can be crazy at the Palmer house,
but were happiest when everyone is home and the house is alive
with the energy that the kids bring. Our clan includes 5 boys
and only 1 girl; she doesn’t stand a chance as a teenager. It will
be a brave young man that picks her up for her first date. The
kids include: Austin 22, Grant 19, Logan 18, Carson 13, Tanner
9 and Morgan 7.
Mike and I were matched up by a mutual friend; it wasn’t a
blind date as we both knew whom the other person was, which
made the anxiety of being “fixed up” much less. We had two
first dates in April 2011; one with a group of Mikes friends and
the other just the two of us. Regardless of which was the real
“first date” we were both pretty sure that this was something
special from the very start. Mike proposed on what he considers the anniversary of our 1st date, April 15 of 2013, in a beautifully romantic way. We were married on May 25, 2013 here in
Triple Crown, surrounded by family and close friends.
We are both proud to be Boone County High School alumnae.
Mike is a long time Triple Crown resident, while I am newer to
the community and have only lived here since our engagement
in April 2013.
Our love for our professions was something that initially really
struck a cord for both of us. Mike is a dentist and specializes in
restorative and cosmetic dentistry. I am a certified nurse midwife with Christ Hospital.
We are currently in the process of renovating 1800 square
feet of the already finished lower level. We needed to make
the existing living space more functional for our family of
eight and that entailed adding 2 more bedrooms and an
additional full bath. I am proud to say that my husband has
done much of the work himself. I had no idea what a jackof-all-trades I was marrying.
Mike loves to golf and plays on Sunday mornings in the fall,
spring and summer. It’s something that he loves to do and rarely
misses. The only thing that keeps him from it is conflicting events
that the kids may have. He loves golf, but loves the kids more and

is so very supportive of each of them. Mike’s boys all play golf as
well. The youngest two have started lessons and seem to enjoy it.
The club is a great place for a dinner out with all the kids or even
a quick date night. Since we both work, it’s nice to be so close
to home. Carson is involved heavily with soccer. He plays for
the King’s organization and plans to play high school soccer for
Ryle. Logan is a baseball player and has played the past few years
for Boone County. Tanner loves basketball and baseball, while
Morgan has discovered gymnastics; cartwheels have become her
mode of moving about the house. The whole family has recently
become more involved in snow skiing and we hope to spend some
time on the slopes this year. During the summer the little ones
enjoy spending time in the pool.

We currently have 2 children in college. Grant attends UK
and is a chemistry major planning to purse a career as an oral
surgeon and Austin is finishing up at NKU as an econ major.
Logan is a senior at Boone County and is still undecided as to
which college he will be attending come August.
Life is super busy when juggling the lives of six kids. Since
our wedding we have been to a few cocktail parties and dinner with our friends but otherwise our schedule is pretty full.
Nashville is a special place for us, we have gone a couple of
times just the two of us and we love it. Over the summer the
whole gang went to Hilton Head and in April we are heading
to Park City.

Valentine’s Day:
Together since January, 1994 and married since April 1996
- Scott and I had been dating for over a year when he had to
move to Florida to help out his parents with their business.
After a "comedy of errors" flight to Florida to see him--with
weather delays, diverted flights, and bomb scares in the Miami
airport--I arrived several hours late, thwarting his romantic dinner plans to propose. So, instead, after leaving the airport, he
found a beach, and in the dark, with only the moon providing
light, he got down on one knee and pulled out a book which
was filled with drawings he had made and poems he had written
for me and in the back was a ring. Even though it was not what
he had planned, it was much better--the most romantic and
beautiful experience I could have imagined. Now, after 18 years
of marriage and two kids, we're as happy as ever!

Chris and I met on a blind date on February 18, 2004, married on October 20, 2007.
Beautiful daughter, Chloe, was born on April 23, 2009, and our baby boy, Declan,
was born on April 13, 2012. We have been blessed every day with the gift of family
and unconditional love.

Pam Porter writes: At Boone Co. High School, my soon-to-be
sweetheart finally got up enough nerve to stealthily approach
me at my locker (already practicing his military tactics). I
had slammed my locker - turning around late for class - and
rammed my face into the many track medals on his letter sweater (yes youngsters, guys really did wear them, and they looked
studly). I guess I made a good impression- just didn’t expect to
do it on my face. And it was love at first sight (at least out of
my left eye). Over 42 years later and we’re still havin’ fun and
Ron's still the one...along with the rest of life's blessings: Zack
& Molly Porter, Brenna & Erik Aschermann and our beautiful
grandchildren, Stella, Piper, Knox and Dex Aschermann.

The long and short of February

We were high school sweethearts in 1975 and married in 1985.
Why does the shortest month of the year seem so darn long?
The tiny clumps of crocus are a spring tease and a stark contrast to the dried landscape grasses, which seem so decorative
in October. Each year about this time I start mentioning to
Tom about giving them a buzz cut, and he reminds me we have
another 6 to 8 weeks of winter. That is my signal to call my yard
guy to manage that job and the first round of yard cleanup!
Spring is here for the housing market! Internet searches for
new homes jumped in early January as we packed the lights and
tree for another year- at least until August when the Christmas
trees hit the stores! As my regular readers know, I explore the
predictions of leading economists to give you much needed
information when you are considering a move this year.
The 2 million or more jobs expected to be created in 2014 will,
according to NAR’s Chief Economist, Lawrence Yun, fuel the
housing market growth with a second year of a “very respectable
recovery.” While 2013 showed a nationwide 11% increase in
price; 2014 is expected to increase at a slower pace of 5%. This
is due in part to higher prices and interest rates. Interest rates
are predicted to rise the second half of the year to 5% or slightly
higher for a 30 year mortgage in the second half of the year.
2014 will likely be the year the market will “transition back to
normal,” according to Darren Blomquist, VP of RealtyTrac.
This is welcome news not only homeowners, but also for we real
estate professionals who have had the difficult job of helping
homeowners (including ourselves) adjust to the drop in home
prices and loss of home equity from the highs of 2006.

New construction will continue its strong return, and will compete with existing homes for the buyers.
We met 30 years ago at a bar my husband owned in Mt. Adams
and three years later we were married.
My take on these predictions continues to be neutral, uncluttered, clean and fresh. Start early to enter a strong spring mar-
ket. Housing inventory swells in April. Fewer homes for sale in
February and March mean less competition for sellers on the
market early. Those January Internet house hunters result in
home buyers in early spring.
So, my bottom line for a new home? Spring is here! Let’s get
going for top price, shorter market time, and a less stressful move.

Antibiotics Will Not Help If…
• Acute bronchitis, or chest cold, is a condition that occurs when
the bronchial tubes in the lungs become inflamed. The bronchial
tubes swell and produce mucus, which causes a person to cough.
This often occurs after an upper respiratory infection like a cold.
Most symptoms of acute bronchitis (chest pain, shortness of
breath, etc.) last for up to 2 weeks, but the cough can last for up
to 8 weeks in some people.
• Another kind of lung infection that parents should know
about is bronchiolitis. Infants can be diagnosed with bronchiolitis, a viral infection, which can obstruct the small airways.
When bronchitis is caused by a virus or irritation in the air (like
cigarette smoke), antibiotic treatment will not help it get better.
Since acute bronchitis almost always gets better on its own, it is
better to wait and take antibiotics only when they are needed.
Taking antibiotics when they are not needed can be harmful,
and may lead to unwanted side effects like diarrhea, rashes, nausea and stomach pain. More severe side effects may rarely occur,
including life-threatening allergic reactions, kidney toxicity, and
severe skin reactions.

Respiratory infections are very common during this time of year. But most don't require antibiotics. Here is
some information from the CDC on bronchitis, and why an antibiotic shouldn't be given for it.

Each time your child takes an antibiotic, the bacteria that normally live in his/her body (on the skin, in the intestine, in the
mouth and nose, etc.) are more likely to become resistant to
antibiotics. Common antibiotics cannot kill infections caused by
these resistant germs.
Signs And Symptoms Of Bronchitis
• Cough that produces mucus (may be without mucus the first few days)
• Soreness in the chest, Fatigue, Mild headache, Mild body
aches, Watery eyes, Sore throat,
• Low-grade fever (less than 102°F).
See A Pediatrician If Your Child Has:
• Temperature higher than 100.4° F
• A fever and cough with thick or bloody mucus
• A chronic heart or lung problem
• Shortness of breath or trouble breathing
• Symptoms that last more than 3 weeks
• Repeated episodes of bronchitis/bronchiolitis
• If your child is younger than three months of age and has a
fever, it’s important to always call your pediatrician right away.
Your pediatrician can determine if your child has acute bronchitis,
bronchiolitis, another type of respiratory infection, or perhaps
asthma. Then a decision can be made about possible treatment.
Antibiotics Are Needed When…
Antibiotics will rarely be needed since acute bronchitis and
bronchiolitis are almost always caused by a virus. If your pediatrician diagnoses your child with another type of respiratory
infection such as pneumonia or whooping cough antibiotics will
most likely be prescribed.

According to The New York Times,
80% of the US population has the desire
to write a book. However, Sarah had
always seen herself in the 20th percentile. Having been an extremely dedicated
teacher and FBLA Adviser at Ryle High
School, her schedule had been filled
with family, school, and church. "Honestly, I didn't have time to even think
about writing the first paragraph, much
less an entire book," Sarah said, with a
smile on her face.
Even while teaching, Sarah felt God
nudging her to reach out to other women
who were experiencing struggles in their
lives. For years, she had been watching
God prepare her with the skills needed
to begin a ministry (speaking and writing). Plus, He gave her a tender heart for
encouraging and motivating others.
Sarah has certainly had her own share
of storms, and she has always looked
to God for comfort and guidance. Her
roller coaster of life experiences began
when she was only 13, the death of her
mother. In her young adulthood, she also
went through a traumatic divorce, leaving her as a single parent. But nothing
could have prepared her for the terrifying
and life-changing experience that came
about as a result of a simple high school
class reunion. Becoming reacquainted
with a high school sweetheart soon lead
to romance and an optimistic future. But
when nagging doubts convinced her
that marriage was a mistake, their
relationship turned from romance
to unspeakable violence. Ultimately
involving the FBI, Secret Service, ATF
Specialists, and living in hiding for
several months, her story of surviving
attempted murder and a murder-forhire plot is a story, which conveys her
unshakeable faith in God.
"I don't know how people make it
through devastating events in their
lives without knowing the love of
God," Sarah said. "I certainly credit
God for my survival, as well as my
happiness today. After standing firm
in my faith, God blessed me with a
However, just when Sarah thought her troubles were over, her
life came to a screeching halt. Finding herself diagnosed with a
very aggressive form of breast cancer, undergoing chemotherapy
and a bilateral mastectomy, she was once again faced with a lifealtering situation, which created a whole new chapter in her life.
While dealing with the chemo treatments and recovering from
surgery, there was plenty of time for some deep soul searching
which allowed Sarah to reprioritize her life. No doubt, God was
telling her to slow down, step back, and take the time to make
her dream of creating a ministry come true. Once again, Sarah
realized God was nudging her to share her story and offer hope
to women across our nation.
Speaking to Christian women’s groups has become a deep-rooted passion for Sarah. As Sarah has traveled around the country
speaking encouraging women, she is constantly being asked,
“Do you have a book? If you ever write a book, I’d sure want
one!” Therefore, it didn’t take her long to realize that she was
receiving yet another nudge…”Sarah, you need to write a book.”
After attending several writers’ conferences, Sarah learned more
about the whole writing/publishing process. Not always an
easy task, but she honed her writing skills, learned from the
experts and proceeded forward with determination. Drawing
from her own stormy experiences in life, as well as storms she
had watched from afar in other peoples' lives, Sarah compiled a
straight-from-her-heart book of devotions which address many
important issues individuals are confronted with in their daily
lives. Each devotion is filled with realistic topics, which include
a scripture, the devotion itself, and a challenge question. Sarah
touches on many personal topics but on every page, the reader
is offered an opportunity to be introspective, by journaling and

When Sarah speaks to groups, she often
uses the quote, "Life is not waiting for
the storm to pass, but it is learning to
dance in the rain." She said, "I always
jokingly tell the audience that I have
done a lot of dancing—maybe my rain
came down in sheets, probably a little
more like a hurricane or a tsunami—but I
know my survival has occurred because I
have allowed God to be my dancing partner. Even in the eye of the storm, he has
blessed me beyond measure."
On December 3rd, Sarah proudly introduced her new book, A Dose Of Hope,
to family and friends at a Book Launch

Club. "Initially, I thought I would write
about my life, but then I quickly realized that would take a four volume set,”
Sarah laughs. Several have asked which
devotion is her favorite, and she replied,
"That's a difficult question. I like them
all." However, she did admit that one
of her favorites is a devotion entitled
“Life's Chalk Walk” which is about a
little girl, Mary Jane, who is visiting her
grandmother. While she is there, she
draws a beautiful scene on the sidewalk
with different colored chalks. However,
when Mary Jane, comes out the following
morning, she sees it has rained overnight
and all of the colors in her beautiful masterpiece have blended together. The little
girl is distraught because her beautiful
picture has vanished. Sarah said, "Aren't
our lives the same way? We all have a
plan–we paint the pictures of our lives
every day and try to make them beautiful.
But when storms blow through and wash
away our masterpieces, we can be devastated. That’s when we have to remember,
God is the master painter and we have
to understand that He draws the perfect
chalk walk for each of us to follow."
People in our world today need hope. We
all experience storms in our lives—deaths
of family and friends, divorce, addictions,
abuse, relationship issues, financial woes,
etc. Whatever the struggle may be, we all
share the same common denominator: a
will to survive, a hope for the future. A
Dose Of Hope is a gentle reminder that
regardless of the situation, we need to
turn our hearts and minds toward God
for survival. We must persevere through
those storms. For years, Sarah has held
tightly to James 1:12, "Blessed is the man
who perseveres under trials." And, she
knows this to be true because God has
richly blessed her life.

When we think of pies, we conjure up fruit pies, cream pies,
tartlets, etc., but we do not live by sweets alone. We love savory
pies, too! Packing meaty filler in a pastry crust creates a satisfying meal. It’s not surprising that pies - sweet or savory - resonate with us. It’s often nostalgia and the comforting thoughts
they conjure up that make pies seem to taste all the more delicious. You can get very creative with a savory pie, especially with
the color variations from different crusts. Making a homemade
piecrust can be scary to a novice, but if you have parchment
papers and a rolling pin, well, it is as easy as pie! Make a sandwich of the dough betwixt 2 pieces of parchment, then proceed
to roll it out like the face of a clock: roll out to 12 o’clock; turn
parchment ‘five minutes’ but roll out again at 12 o’clock; keep
doing this until you go around the clock. This helps to do a
nice round crust. For best control hold the pin itself-not the
handles. The following recipe is a rich pie, so I suggest serving
it with just a simple rustic salad. If you have the time to make
all three parts from scratch, then by all means, pour yourself a
glass of wine or three and enjoy the process. Or if you find that
too daunting, consider making some of the components one day,
and finish up on the day you bake it. You will also be forgiven if
you decide to use shortcuts like readymade meatballs or sauce in
a jar. And that piecrust? Roll out a readymade and sprinkle it
with finely grated Parmesan.
Mamma Mia Meatball Pie
You’ll need a deep-dish pie pan
that holds 6-8 cups. The sauce,
meatballs and crust can be made
1-2 days head, but bring it all to
room temp before assembling. You

¾ C (8 oz.) freshly shredded mozzarella cheese
½ C (6 oz.) freshly grated Parmesan cheese

Heat oven to 375 degrees. Combine cheeses; set aside. Using
about 2/3 of the dough, roll out dough (see directions previously
suggested to make an 11 or 12 inch crust). Gently fit into pie
pan. Spread a thin layer of tomato sauce in the bottom of the
crust, using about ¼ cup. Add a layer of meatballs, sprinkling
of cheeses, then a sprinkling of mixed herbs, salt and pepper.
Repeat layers to fill pie, saving any leftover ingredients for a
great Italian sandwich. Roll out remaining dough into a round
a little less than 1/8 inch thick and large enough to cover pie.
Carefully lay across pie and cut steam vents and crimp edges.
Brush top of pie with egg. Sprinkle with 1 teaspoon of mixed
herbs and sprinkle with salt/pepper. Bake until crust is nicely
browned and the filling is hot, about 40-45 minutes. (Cover
edge with foil strips if it begins to brown too much.)
Tomato Sauce
1 slice thick slice bacon
2 Tbs. olive oil
1 Tbs. unsalted butter
½ tsp. salt
2 Tbs. chopped fresh basil (reserve 1 Tbs.)
1 Tbs. minced fresh thyme
1 sprig fresh rosemary
½ large yellow onion, chopped
3 crushed cloves of garlic
1-14.5 oz. can diced tomatoes
1-28 oz. can crushed tomatoes
¼ C tomato paste
1 C chicken stock
¼ C red wine
Salt and pepper to taste
Cut bacon into small pieces and brown in a 6-qt. saucepan,
about 5 minutes. Remove and set aside. Add olive oil, butter
and salt to the pan. Add just 1 tablespoon of the basil, then the
thyme, rosemary, onion and garlic. Stir, cooking over medium
heat until onion/garlic is just golden-about 8 minutes. Do
not brown. Add the rest of the ingredients, except that last
tablespoon of basil. Simmer 1 hour, stirring occasionally. Add
remaining basil and salt and pepper to taste. Set aside for
assembly, or refrigerate 1-2 days.

½ C finely chopped yellow onion
¼ C each freshly shredded mozzarella and Parmesan
1 egg, lightly beaten
2 Tbs. breadcrumbs; set aside ¾ C for coating meatballs
1 clove garlic, pressed
1 Tbs. minced fresh rosemary
2 tsp. minced fresh thyme
½ tsp. each of smoked paprika, salt and freshly ground black pepper
¼ tsp. ground nutmeg
1 C olive oil
2 Tbs. unsalted butter
In large bowl, combine all ingredients except ¾ C breadcrumbs-put crumbs in a bowl-and olive oil and butter. Mix
thoroughly. Shape 2 tablespoons meat into ball; lightly coat
in breadcrumbs. Repeat with remaining meat and crumbs.
Place meatballs on parchment lined cookie sheet in frig for
30 minutes. Heat oven to 300 degrees. Place oil and butter
in a high sided or 6 qt. pan on the stove. Heat oil-test with a
small piece of meat to low sizzle-carefully use tongs to transfer
meatballs to pan-do not crowd or let them touch each other.
Fry about 4 minutes; turn and fry about 5 minutes. Transfer
fried meatballs to baking sheet and bake 10-15 minutes. Use
for assembly or refrigerate for 1-2 days.
Cheese Pie Crust
2 ¾ C flour
1 tsp. superfine sugar
½ C hard aged cheese, finely grated, very cold-like Parmesan or
pecorino Romano
¼ tsp. salt
¾ C unsalted butter, very cold
6 Tbs. water
Add flour, sugar, cheese and salt in the bowl of a food processor; pulse 30 seconds to combine. Cut butter into small
pieces and add to mix all at once. Pulse until mixture resembles fine crumbs. Pulse in water, 1 tablespoon at a time, until
dough comes together and rides on top of the blade. Turn
dough onto lightly floured parchment. Shape dough into a
ball, wrap in plastic wrap and refrigerate 30 minutes, or until
assembly in 1-2 days.
By the time you finish this recipe, check the remnants of that
wine bottle for tonscinicity and talk your children into cleaning
up the kitchen, Febr-r-r-ary will be over. You’re welcome.

A deck expands the living area of a home and is one of the
few house renovation projects where a homeowner can get

improvements in the materials available for deck construction, the options are only increasing for homeowners who
want to add a deck or improve on their current deck. There
are numerous natural and synthetic products for deck flooring and railings, as well as fastening systems, that enable a
homeowner to get the function and appearance they desire
and also the environmental sound and low maintenance features that help add even more value to the deck.
With the many options for deck materials, homeowners can
choose what works best in their climate. Some decking materials are better suited to warm climates, and others are perfect for
withstanding snow and ice. The change to safer chemicals for
pressure treating wood helps the environment as well as reduces
the risk of exposure to hazardous chemicals. And many of the
new composite materials are not only environmentally and
health friendly - but can provide a pleasing appearance along
with low maintenance. Fastener selections include durable stainless steel screws, as well as many different proprietary fastening
systems that keep the fasteners out of sight.
But regardless of the material used to build a deck, they can
take a beating, as deck components are exposed to the elements
year round. Sunlight, rain and snow all affect the deck, and with
horizontal surface that can allow for water or snow to stand, or
leaves and other debris to collect and restrict drainage, complications can set in.
Sometimes the appearance of a deck makes it appear to be in
bad shape as algae and mildew form on the surfaces. In other
cases, the deck may appear to be in great shape while hidden
damage lurks underneath where decay has set in or fasteners
have rusted out. While older decks are more likely to require
attention, any deck should be considered suspect until a thorough check is completed each year.
Spring is a good time to take a close look at your deck to determine if any conditions have developed that could compromise the
structural integrity of the deck and increase the risk of injury.
