Celebrity Chefs Help Cut Path
to a Consumer’s Perfect Knife

With the vast amount of kitchen cutlery
available on the market today, searching
for the right knife can be a daunting task.
With prices ranging all across the board
and a variety of options in materials, such
as stainless steel, ceramic or bamboo, it’s
hard to know what to look for without
doing a little research.
When it comes to how consumers search
for kitchen knives, Annette Garaghty, Vice
President of Sales and Marketing for
Wüsthof-Trident of America, offers some
insight. “There are many factors involved.
To start with, the informed guidance of
retail staff at point of sale is very
important. We also see continued influence
from restaurant chefs who are ubiquitous
on television and author many of today’s
most influential cookbooks and blogs.”
She continues, “The food media, which now
includes a plethora of food blogs and food

Wine accessories are a hot category this
year, and there are a wealth of possibilities
on the market for guests who are looking
for an accessory to accompany a gift of a

IHA Offers Market Entry
Opportunities to China, Japan
Three NY NOW Exhibitors Recieve
Summer 2013 Eco-Choice Awards
Housewares suppliers looking to enter the
Asian market will have two opportunities in
September through events offered by the
International Housewares Association. IHA
will sponsor a pavilion for members at the
Interior Lifestyle China fair in Shanghai Sept.
25-27 and then an introduction to the Japanese
market Sept. 29-30 in Tokyo. Members can
participate in just one or both events.
As a result of online balloting, three
companies—Calamarie, Potting Shed
Creations Ltd. and WorldFinds—are winners
of the 8th semi-annual Eco Choice Awards
for Most Innovative, Most Sensitive Use of
Materials and Most Sellable, respectively, for
products being featured at the summer 2013
debut of NY NOW®, the Market for Home
& Lifestyle (formerly NYIGF®). The Eco
Choice Awards are co-sponsored by NY
NOW and GREENRetailer magazine.
Companies participating in the Interior
Lifestyle China fair pavilion will meet
Chinese retailers and distributors to help
them reach consumers within mainland
China. The fair attracts 20,000 visitors and
features 320 exhibitors, 76 percent of whom
are from outside China. IHA exhibitors will
receive basic booth furnishings for a 9 square
meter booth along with access to interpreters
fluent in Mandarin Chinese and English.

China fair, IHA will hold an introduction to
the Japanese market in partnership with the
Japanese Housewares Importers Association
( JHI). With more than 20 members, JHI is
an important link within the Japanese
distribution chain. Similar to other trade
missions sponsored by IHA, this event will
include a retail tour, led by the president of
JHI on Sept. 29, followed by a tabletop trade
show and networking reception on Sept. 30.
More than 100 people are expected at the
tabletop show and reception, including key
Japanese retailers Franc Franc, Seibu-Sogo,
Takashimaya, Isetan and Tobu and distributors
including Y-Yacht, Fujii, Fujiei and Yuwa.

IHA sponsors several trade missions annually
to help members enter or learn about

in advance, allowing participants to focus on
their business rather than the logistical details.
A trade mission to Australia in November is
sold out. Trade missions planned for 2014
will be announced later this year.

introduced a new houseware brand under the
name of KitchenIQ, taking the place of its
Edgeware brand.
“Overall the change has been quite positive,”
says Mark Adkison, Vice President of Global
Sales. “We have been getting good reactions
to the new brand from our retailers.”
Smith's Consumer Products has been making
sharpeners and other edge care products since
1886. The latest manual and electric adjustable
models have received several highly regarded

Kerry Niesen Sales and
Marketing Manager
Tovolo, a leading kitchen tool and
gadget company, has appointed Kerry
Niesen as its new Sales and Marketing
Manager. Niesen brings nearly 20 years of
retail and housewares experience to
Tovolo, having served as the owner of
Seattle-based specialty retailer, City
Kitchens. With a long-standing appeal

cooks, the former kitchenware retailer
was a downtown fixture for both
locals and tourists alike. Niesen began at

Following Death of Founder

After the death last April of company
founder and industry icon Norman
Glassberg, the folks at tag ltd. have had
to deal with personal grief while forging a
way ahead for the company. They remain
guided by Norman's vision under the
leadership of his daughter Jessica
Glassberg, says Steven Prokash, tag's
national sales manager.
We’re known for development of a lifestyle,
and we’re extending that into coffee,”
Prokash says, adding that the company has
also added crystal stemware to its offerings.
“Our objective is affordability and quality.
For example we have this lead-free crystal
collection. We’re not just a home décor
company. We’re going into the kitchen,
into outdoor living.”
“Norman had a plan all along,” he says.
“Personally, it’s been challenging, but
there’s been a plan in place all along.
Jessica shares Norman’s vision. This is
her vision, not just Norman’s.”
Norman was known for the eagerness
of his constant search for the next great
product, but the plan he had started
putting into place before his death also
emphasizes packaging and fixturing to
help retailers merchandise tag products
more effectively and sell them more
easily. “The innovation in products isn’t
changing, but now there’s more
emphasis on how the products fit into
the consumer world,” Prokash says.
“We don’t sell to big box; we cater to
the independent. We're looking to take
these products and make them relevant
to the specialty retailer.”

Chef Robert Macey Named
Executive Chef for Hearthware Inc.
Chef Robert Macey has joined Hearthware
Inc. in the position of Executive Chef.
Chef Macey will be responsible for
developing and testing recipes for the
NuWave Precision Induction Cooktop 2™

where he hosted sales presentations to
national food service, hotel and restaurant

College in Chicago. Most recently, he was
a Culinary Consultant and Catering Chef
at Brazen Enterprises, where he specialized
in food service facility design and layout.

fry pan. We like to service
everybody. We

In addition to the cooking equipment and
gadgets galore, Las Cosas carries a
selection of gourmet foods including
olive oils from around the world, Sarabeth
jams and French Farm mustards.“We like
to pick those things that you can’t
commonly find in the grocery store. We
like to find things that are special, so
that we’re not competing with the
grocery store on price,” Mike says. And
there’s coffee. The store sells 10 varieties
of green beans to go along with an
extensive collection of roasters, coffee
grinders and brewers all the way up the
scale to the tippy-top of the Jura line.
“They’re all plugged in and turned on and
ready to go when the customer comes into
the store,” says Karen, who adds that
the store’s staff is trained to offer
shoppers a great cup of coffee from one of
those machines as soon as they come into
the store.
That kind of service helps move the coffee
brewers, and it keeps customers coming
back, Karen says. “People come to us
because we train our staff. Our staff is
trained to question the customer and find
out what their needs are and make sure
they walk out with the right product.”
The store’s cooking school also plays a role
in customer service, teaching people how
to use the equipment they’ve bought or
giving them a chance to try out equipment
before they buy. “We don’t like to sell a
pressure cooker and say, ‘Good luck with
that.’ We like to offer a cooking class,”
Karen says. Customers who buy first get a
lesson for free along with their purchase.
Customers who want to try before they
buy leave their class with a discount
coupon for their purchase. “Our knife class
is a prime example of that,” Mike says.
“We carry a wide selection of knives.
We have them all in the cooking school,
so they can try all of them. A lot of
people like to wait and try them and take
the discount. That way they can get what
they like.”
Cooking classes are taught by resident
Chef John Vollertsen, who has been with
the cooking school for
the entire 15 years
that it’s been owned
by Karen and Mike
Walker. His credits
include a cookbook,
“Cooking
with
Johnny
Vee,”
published by Gibbs
Smith, and a feature
that appeared in
Gourmet magazine.
When
he
isn’t
teaching
at
the
cooking
school,
Vollertsen donates a
great deal of his time
to teaching cooking
classes at local youth
programs. He donates his time, and the
Walkers donate the groceries and cleanup services. Cooking classes are offered at
the store on a busy schedule throughout
the year and include additional offerings
from local chefs, signings by cookbook
authors and demonstrations from
kitchenware manufacturers.
The variety of activities in the store as
well as a flow of new gadgets that come in
help keep customers coming back, Karen
says. “A lot of customers say they love
coming here because there’s always
something new and fresh.” Whenever a
new gadget comes in, Karen shoots out
an email to let customers know that
there’s something new in the store to see.
“That keeps them coming into the store,”
she says. “You can’t be all things to
everyone, but you can try to do your best,”
Mike adds.

Weston Jerky Tonics and
4-Tray Food Dehydrator

Up until I got started on this review, I
thought that making beef jerky was a
magical process known only to survivalists
and old-timey frontiersmen. All other beef
jerky came in bags at the supermarket.
When I received the Weston Jerky Tonics
and the Weston 4-Tray Food Dehydrator
I was excited to try this magical process
for myself.
The tonics come in three flavors: Signature,
Cajun and Sweet & Spicy. Each flavor
varies in spiciness, with Signature being
the least spicy and Sweet & Spicy being
the most. For the sake of the review I
decided to start with the Signature blend.
Following the directions on the bottle, I
marinated a small batch of lean, thin cut
beef overnight. While I waited for the
meat, I decided to prepare myself mentally
for what was surely going to be a delicate
and intuitive process.
The 4-Tray Dehydrator is deceptively
simple. It features four trays with
adjustable heights of 1/4" to 1" to
accommodate different food thicknesses
and a removable lid. The
only control on the
dehydrator's base is a
power switch. When
confronted with this, I
decided that I absolutely
had to read the manual
front to back, as there was
most likely more to the
dehydrator than just an
on/off switch. While the
machine itself is no more
complicated than turning
it on and letting it do its
thing, the process of
actually making jerky or
other dried foods requires
much more diligence.
Thankfully, the manual
has detailed instructions
on preparing and making
jerky, as well as drying
fruits and flowers. It even
features a few recipe
suggestions.
By the time the meat was
finished marinating, I was already excited
about the results. The tonic smelled
delicious and I could hardly wait to try it.
I prepped the meat by cutting it into
narrow slices and warming it up to 160˚ F
in my oven as the dehydrator's manual
suggested. Once the meat was ready to
go, I put it into the dehydrator, making
sure to leave space between pieces to aid
air circulation. From there I flipped on
the switch to begin the slow process of
jerky making.
After a few hours of flipping the meat and
checking temperature and dryness, I
guessed that the meat was ready. My
fiancé, who had been begging me to let
him have the first taste since I put the
meat in the marinade, deemed the jerky
delicious. I hardly had any to try for myself
as he ate nearly all of it.
Based on the enthusiastic reaction from
my fiancé, as well as my own personal taste
test, I can definitely say the the results
were successful. The jerky was delicious
and wasn't too dry. I wish I had time to
test more of the flavors by press time, but
based on the results with the Signature
flavor, I was very satisfied. I also look
forward to trying the dehydrator to make
fruit leathers and other dried foods.

Snapi Allows Single-Handed
Serving for Many Uses

We’ve featured KitchenHappy’s Snapi® in
previous issues of Kitchenware News &
Housewares Review and have seen how
the fun, single-hand servers has become
so popular that the line has expanded to
include seven colors: Grape (purple),
Tangerine (orange), Mango (yellow), Ice
(white), Kiwi (green), Watermelon (red)
and Berry (blue).
KitchenHappy likes to say that Snapi is
“the fun way to serve food,” so when it
came to testing the Snapi at home, I
decided to have a little fun with it.
First, though, I wanted to see how good
it was at its primary function: serving food.
I whipped up a batch of penne pasta with
Alfredo sauce and fresh, parboiled broccoli.
As expected, the Snapi was a breeze to
use and I was able to grab tasty handfuls
of the pasta easily.
Cleanup was simple, too. The Snapi is
dishwasher safe and just as easy to wash
by hand.
Clearly, Snapi would be just as handy when
it comes to tossing and serving salads. I
don’t know about you, but sometimes using
salad tongs leads to more salad on the
counter than in the bowl. The Snapi gives
you a lot more control with slippery salads.
I wondered if Snapi has other uses, too. I
don’t have an automatic ice-maker in my
freezer, so I buy bags of ice and use a
scoop. The Snapi is great for this use. I
keep it in the freezer and its BPA-free
plastic doesn’t adhere to my skin as it grabs
the ice. It’s also handy to throw in the ice
chest for cookouts and such. You know
how you reach in for a can and come out
with a frozen hand? Next time, get a Snapi
and, unless you’re digging on the bottom
of the cooler, your drink will be ice-cold,
but not your flesh.
What else is the Snapi good for? Well, I’ll
tell you one thing it isn’t. Playing with
your cat. My Siamese seems to think my
hands are great to chew on, so I thought
I’d see if she’d like to chew on a Snapi
instead. She seemed interested at first,
when I approached with an open Snapi,
but when I clicked it shut, she gave it such
a look of disgust that I was afraid to
approach her for an hour.
In sum: Pasta, salads, yes; ice coolers, yes;
cats, no.

While these influences may guide

A Panini Press

When considering the selling points of a
sandwich press or panini maker, the
consumer must decide whether they want a
flat or ridged final product. A flat sandwich
press will allow for a more even distribution
of pressure, creating a more compact and
faster-cooking sandwich with a consistent
spread of ingredients. A ridged sandwich
press will leave some parts of the bread
uncompressed, creating that waffled, grilled
look that is sought after by those with artisan
inclinations. While aesthetically pleasing,
the ridged press may cause sandwich eaters
to bite into globs of melted cheese, due to
its uneven distribution of ingredients, and
this can be a deal-breaker.
Regardless of which model is considered best,
