CÔTE DE NUITS
In his book, “The Wine Loving Dictionary”, French writer and literary critic Bernard Pivot,
a close friend of our region, talks about wine, not in terms of grape or of appellation,
but rather in terms of the circumstances during which it is enjoyed: wine for a toast,
wine shared with friends, wine that says “love”, wines of propriety, wine for celebrating
a victory, sacramental wine, everyday wine, rascally wine and high society wine.
Bourgogne wines are no exception to this description. On the contrary!
For over 2,000 years, the wines of Bourgogne have been a part of, and have marked,
all of life’s occasions, great and small.
Through appellations and Climats of Bourgogne, traces of this bygone era are deeply
rooted in the history of the wines of our region, to such an extent that they shape its
contours, express its diversity and characterize its tastes.
The keys of this time past have been entrusted to our region’s winemakers. Day after
day, they raise their viticultural production to the rank of nobility, preserve its heritage
and prepare the wines of tomorrow. Because these are the wines that will accompany
the highlights of our lives, and those of future generations.
During this exceptional tasting, it’s a part of Bourgogne’s cellars that will be open to
you, cellars that contain stories, legends and racy anecdotes that the winemakers are
always happy to share.
So that this tasting may become enchantment, I urge you, too, to take the time to enjoy
the wine.

“Old vines! The wealth of our Domaine is contained in these two words.
The vines of the Domaine were planted by my great-grandfather or my
grandfather, i.e. between 1915 and 1950, which gives them an average
age of 60 years.
These old vines, luckily for us, provide the wine with incomparable
concentration loaded with the identity of the terroir and a nice maturity. It
must be said that the previous generations handed down a terrific heritage
which we want to keep alive today with the same passion.
In fact, my mother, my brother Lénaïc and myself ensure the continuity
of the Domaine with this feeling of reproducing the same actions as our
ancestors and reviving history. And let me tell you, when I arrive amongst
our old vines and I remind myself that it was my grandfather who planted
them, it has a really strong effect on me…”

Bourgogne is above all a wine for indulgement. And while it’s relatively easy
to do so with the whites, the reds are more difficult due to their sometimes
green or herbaceous flavours since nature doesn’t always do everything it
takes to achieve optimum maturity.
I like wines to be delicate and flattering; I want to show that a simple
Bourgogne, a Regional Appellation from a good terroir and a well-managed
vine, can produce a great wine. I accept our terroirs, I don’t aspire to
making only Premiers Crus and Grands Crus.

NOTES
On the contrary, I want to restore the credibility of these Regional Appellation
terroirs, which were sometimes destroyed in the past. As for our new
Colbert vat room in Beaune, I dedicate it mainly to this simple wines, its
aim is to not disappoint the consumer. This vat room is the culmination
of a long period of research by my teams as well as significant financial
investment, focused on sustainable development and fully respecting the
grapes’ distinctive nature. We don’t use pumps, we leave it up to gravity,
and I hope that this will make simple, accessible and delicious wines. It’s
a gamble!

BLASONS DE BOURGOGNE
Blasons de Bourgogne is an association of wine-growers from all over
Bourgogne, sharing their expertise for generations and united by a joint
project to reveal the identity and the diversity of the wines and of the
Terroirs of Bourgogne.
The selection of Bourgogne wines they offer range from Chablis on the
North to Mâcon on the South.There are well-known appellations such as
Chablis and Bourgogne Hautes-Côtes de Beaune, and wines to explore like
Saint-Véran and Montagny. For celebrations, they can propose a sparkling
Crémant de Bourgogne – the wise man’s alternative to Champagne.
Blasons de Bourgogne has now been wearing the colours of Bourgogne
with pride for several years.

“I noticed that a better control of supplies was the key to quality; for me,
80% of what makes up a great wine is in the grape. And for this, you have
to be able to choose the plot and the grape. I have found a word to express
my expectations: ‘viniculteurs’, which expresses the identity and style of
each of our wine merchants.
The wine-grower or “viticulteur” provides the grapes and the “viniculteur”
creates the wines, but he also spends a lot of time in the vines. He is
the link between the “viticulteur” and the person in charge of vinifications,
between the vines and the wine, the equivalent for a Domaine of a stage
manager.

NOTES
Reacting against the technological approach, focusing on the “yield” and
the “process”, my sister Nathalie and I looked for people who were above
all passionate, with a heightened sensitivity. And they all have passions
other than wine: music, falconry etc. What I want is not just to make the
wine, but to sculpt it, with talented artists.”

“The family Domaine originally belonged to my maternal grandfather, who
had the “nose”. We are very lucky today in that we acquired Premier and
Grand Crus in the 1950s and 1960s, when vines didn’t cost as much as
they do now. You would have had to have guessed that Chablis would
become so successful! My parents inherited a part in 1980 and they
increased the size of the Domaine by buying or planting new vines.
At the time, planting rights were much easier to obtain than they are now.
Then, to meet growing demand, my parents developed a wine-merchants
business focusing on Chablis and the white wines of the Auxerrois. They
are Chablis wine-growers before anything else.

Then I arrived in the year 2000 after studying business, and I gradually
added my own touch. My father and I get on well and I’m happy to have
him by my side, because in the end he has the advantage of age, and
that’s an asset for me.”

“When I arrived as director of the cooperative of Mancey in 1977, I hit the
road with my samples to sell my wine, but I soon understood that I didn’t
have enough to offer and that the trade was looking for wines from small
owners, but also wanted a rational commercial approach.

So we founded “Bourgogne de Vigne en Verre” in 1980, which brings
together 13 Domaines. I don’t consider myself at all as a merchant. We
are linked to the production of our Domaines, and whatever the trends of
tomorrow will be, we have to find distribution channels that correspond to
each of them.
Our winegrowers know each other, each of them can talk about their own
wines, but also about their neighbour’s wines. They retain entire freedom
for their individual customers, but they pool their professional customers.”

I am very attached to landscapes. This atavism brings me to a word that
is used more and more, the anthropization of the landscape. Stone walls,
headlands, low walls, stone ridges, hamlets and watering points are all the
work of man. In the past, people shaped the landscape.

Here, at the foot of two rocks, Solutré and Vergisson, we are spoilt by
the natural landscapes of rare beauty. From different viewpoints I like to
admire the limestone soils where man established himself millions of years
ago. The Jurassic! Behind it, we can make out the Beaujolais, I like this
link between land and the vines. When you make a great wine, to a certain
extent man is translating the memory of the vine which grew there.
NOTES
But he also knows how to step aside, with minimalist vinifications, letting
time do its work, which is an essential notion. In our family, this wealth has
always been passed down and I hope that future generations will continue
to do so.

At 25, Pierre-François Capitain has a life in wine before him. And yet he
already has a lot of experience! He was picking grapes at 3 years old next
to his father, as the family has done since the beginning of the XIXth century
and will doubtlessly do so, long into the future.

This refreshing young man, totally concentrated on his work, already has
the gift of observation: he notes what he does, everything he has seen
since he started. He then rereads his notes when he has questions. This
“man of the woods”, as he calls himself, cannot stand being shut in. He
seeks the soul of his wine, not just a particular fragrance, not something
that everyone senses without being able to put a name to it, something
that cannot be condensed into a flowery or a fruity note. In short, it is the
“Terroir” that sings.

At Chanson, I work with Jean-Pierre Confuron, who supervises the
vinifications as well as being wine-grower at Vosne-Romanée. My
philosophy is to make Domaine wines, just like in our respective concerns.
And we work on entire harvests, without harming the bunches; this allows
the wines to express their terroir to the fullest and to retain their aromatic
freshness as they age.
The jewel of the Maison is its 45 hectares of vines, entirely based on the
Côte de Beaune and uniquely in Premier and Grand Crus. My logic for
Domaine wines makes me treat these grapes like those that we buy from
our suppliers; we send our grape pickers to the vines on the date we have
chosen and we treat them with the same respect.”

“The Clos des Mouches is the emblem of the house. My grandfather
Maurice bought the first plots of it in 1923. At that time, the Clos didn’t
have a great reputation; the war was just ending and the vines were in bad
condition as they were recovering from the phylloxera outbreak. Back then,
the Clos was planted wholly with Pinot Noir.
But our Grandfather had the idea of making “vermeil”, a blend of white and
red. So he decided to plant Chardonnay, but the first Chardonnays were
so good that he preferred to sell them just as they were! Maurice had fallen
in love with the Clos. And he wasn’t the only one! The restaurant Maxim’s
also asked him for the exclusive right to sell the wine. The Clos became
the wine of stars; my father even received a call from Louis de Funès who
wanted to find out the latest about his wine.

The Clos has loyal fans. In 2004 the vines were hit by hailstones. The
whites managed to pull through beautifully. The reds were good, but not
great. Did we think we’d be able to sell some of it? We hesitated for a long
time before deciding to sell the reds as Côte de Beaune. The Clos cannot
allow itself to be merely “good”, it must be exceptional! Our loyal fans were
certainly sad, but those who bought our Côte de Beaune 2004 got a great
deal!”

But then we followed fairly different paths and our return to Dufouleur Frères
was not actually all that natural. I went to an engineering school in Lyon,
before working in Paris for five years as a consultant. Marc was always
destined to work with wine; first of all he went to the wine high school
in Beaune, then Sancerre, and finally Bordeaux where he completed a
Masters’ in Management.
NOTES
In 2006 we suggested to the family that we come back, but with a specific
project; to give new life to Dufouleur Frères, refocusing it on Bourgogne
wines only. We have complementary backgrounds and the fact that each of
us has previous experience means that we each bring a fresh perspective.

Cards on the table; the name of Lou Dumont – a wine house created from
scratch in 2000 by Nakada Koji – is entirely invented. But it sounds very
French, and that’s what counts when you set up in a region where history
weighs heavy and where outsiders with the audacity to carve out a place
for themselves are rare.
In the space of a few years, this Japanese national has won the trust of
a score of winemakers, mainly on the Côte de Nuits, who now supply
him with their grapes and which Nakada then vinifies. Shrewdly, he has
chosen not to try and imitate the Burgundians, but to make the kind of
wine he likes, whilst fully acknowledging his Japanese taste for Bourgogne
Pinot Noir. “I work as simply and naturally as possible,” he says. “I use
indigenous yeasts, as little pumping as possible and low quantities of
sulfur. I’m not a fan of fermentations which go on for ever, either.” His wines
are all about fruit, and are therefore easy drinking. They are already a hit
in Japan, notably thanks to the manga “Drops of God”, in which this new
figure in the wine world features prominently.

I was 14 when I started out with my father. In those days, when we wanted
to harvest “La Fourchaume”, we took the horse, the cart and a tub. We
had to travel for an hour. When we returned in the evening, with a full tub,
we walked beside the horse; we would bring our lunch with us, we had
to collect dead wood to heat it up. We were in less of a rush. It was very
different. There’s a whole world of difference. The wines were more robust;
they lasted longer but were less pleasant in their youth.

They were vinified with less attention, they more or less made themselves.
And so when I hear people boasting about returning to the old methods,
it’s just talk, it’s impossible in reality. I’m one of the last to still know how
to use the old tools. And that’s why I created a museum of the vine and
the corkscrew: to keep a living link between the pre-war world and that of
the 21st century.

generations of Jadot, then my father André Gagey and myself for thirty

Whitney Woodham is a walking advertisement for the Bourgogne region!
Born in Alabama, this young woman discovered the Bourgogne region ten
years ago and it turned her world upside-down.
Her father is a wine buff who no doubt subconsciously guided Whitney
during family dinners. But when she came here for the first time in 2003,
she fell in love with the place and decided to stay. Whitney had found her
second home, a place where she would flourish beyond all expectations.
She is a keen learner with a thirst for discovery and is very much a “people”
person.
She settled in the Côte de Beaune and became a wine merchant. She
has a taste for elegant, pure and healthy wines, cultivated using organic
practices where possible. If the future of the Bourgogne region is set to be
in the hands of women, then Whitney Woodham certainly has her hands
full.

I went to Fresno State University to study. Over there, around 1985- 86

I set up in 1994, I took the time to understand the vines and then in 2000
I started alternative winegrowing. I don’t say “organic”, because I don’t
want to tarnish the term and for now we don’t have organic certification.
We started by getting rid of weed killers and chemical fertilizers, then we
reduced the doses and frequency of synthetic products, before converting
a quarter of the domaine to organic. We will probably have got there by the
2009 harvest, with an official conversion process for the whole domaine.
It’s not easy.
NOTES
The climate is cool and rainy, we don’t have the security of a synthetic
product which locks the vines for a year. You have to be sure of yourself,
devote a lot of time to it. But I’m convinced that the wines will be better as
a result, because a healthy vine provides ripe, balanced grapes.

get to experiment with every varietal the region allows: Chardonnay and

Thomas Sorin is a winemaker who is certainly enjoying this freedom. His
Irancy wines made from Pinot Noir and César are bursting with fruits like
morello cherry as well as peppery notes. They are simply delicious. And
once a winegrower understands that time is a reliable ally in terms of
quality, his wines are only ever going to improve. Before he planted a single
vine, Thomas Sorin waited for a decade to allow the soil to rest. He knew
that afterwards, the vines would draw the best from the soil for decades
to come.
NOTES
Working hand in hand with Mother Nature comes naturally to this
winegrower, including during the vinification process. The only product he
adds is sulfur. He simply has to wait (again!) for the wine to stabilize in the
bottle before taking it to market. This is a man who loves what he does.

For the past 25 years, Gérard Fagnoni has run the Château de Santenay
with a firm hand. As firm as another of this Medieval stately home’s previous
occupants, Phillip the Bold, who in the 14th century banished the Gamay
grape from the Bourgogne region to focus solely on Pinot Noir.

The duke’s legacy is continued today, under the multicolored roof tiles,
with Fagnoni, who is unwavering in his quest for the best quality wines
produced by his extensive team. The majority of the estate’s vines are in
Mercurey, (73 hectares), with the remaining 24 hectares located on the
Côte de Beaune (in Saint-Aubin, Santenay Premier Cru, Aloxe-Corton,
Beaune Premier Cru and Pommard), and extending onto the Côte de Nuits
as far as Le Clos de Vougeot.
NOTES
As such, Fagnoni is the guardian, decision maker and winemaker for an
exceptional estate, overseeing every stage of the process to obtain the
very best possible wines from his grapes. Over time, he has become a
master in the art of sophistication.

The vineyards have been farmed organically since 2001, with no
certification. The style of our wines focuses on complex but pure flavours,
paying respect to their climats and vintage characters. To that end,
everything is done in the vineyards and in the winery to get a concentrated
fruit to capture that finesse and elegance, which are truly authentic.
Today, our wines are distributed in more than 32 countries and we think
our grandfather, Armand Merme, who, in the seventies, had the idea of
parking a caravan by the main road to sell his wines, would have never
dreamt of that.”

MAISON TRENEL FILS
Although recent, the love story between Gilles Meimoun and the Maison
Trenel is still powerful. Extremely balanced, it is the result of an incredible
tension based on passion and intelligence.
On the one hand, Gilles, with his talent for organising and developing
the vineyards that he is in charge of, has always come across as a real
wine-lover. On the other hand, the Trenel family, which lost its mentor
André Trenel, an exceptional wine taster, over ten years ago.
When the two met in 2005, it was clear: Gilles was the prince who
could wake up the sleeping beauty. He embraced the Maison Trenel
unconditionally, contributing to modernising the style of the wines, even
initiating that which the Maison had never dared: vinification. This was a
first in 2010, opening the door to a new future. And they had and will have
many more pure, sincere wines!

William Trouillet started his career as a winemaker on the family estate a
little earlier than planned, in 2008, after the death of his father.
Fortunately, he had been prepared through his education, work experience
and travels for this task which he took on at a very young age, without a
moment’s hesitation. William is not the type for dwelling on a subject. He
makes up his mind and then goes for it, yet with the patience and skill he
adopted at early on. Carrying on his father’s work was a natural choice,
but over time, in his quest for quality, he has brought his own style to the
estate’s wines.

NOTES
Firstly, he began bottling the production, which was something rarely done
before he took over. Then he started focusing on working the land. He
soon saw the difference as the soil was aerated and made looser – this
approach means that eventually there is no need for pesticides. Most
recently, he created two new cuvées, and has plenty more up his sleeve.

DOMAINE HENRI DE VILLAMONT
When you arrive in Savigny-lès-Beaune, you notice this unique cellar in
Bourgogne; the bricks contrast with the white of the sculpted stone and
the slate roofs which give it a Normandy feel. I was involved in restoring it
from 2004.
The former decor was discovered under the thirty-year old walls and was
revived to recreate the original style. The colour evokes the orangey-red of
Pinot Noir at the beginning of the fermentation and the colour it develops
as it ages. This building was the largest centre of cellars with one single
tenant, at the time, built between 1880 and 1888. In the park there is also
a manor, all of which is surrounded by 7.5 hectares of vines. It is in this
remarkable setting that I work as an oenologist and manager of Henri de
Villamont. It is a discrete and elegant wine merchant.

The wine-grower or “viticulteur” provides the grapes and the “viniculteur”
creates the wines, but he also spends a lot of time in the vines. He is
the link between the “viticulteur” and the person in charge of vinifications,
between the vines and the wine, the equivalent for a Domaine of a stage
manager.
NOTES
Reacting against the technological approach, focusing on the “yield” and
the “process”, my sister Nathalie and I looked for people who were above
all passionate, with a heightened sensitivity. And they all have passions
other than wine: music, falconry etc. What I want is not just to make the
wine, but to sculpt it, with talented artists.”
