What a joy it is to make new friends and

get-togethers. e Pato Banton concert was no exception. Pato was energetic
and engaging and got everyone up dancing the night away.
On Saturday, April 27, Wilson Creek
hosted the “formal” wedding of Juan
and Alexis Dominguez. “Our family
has always been strong supporters of
our troops,” says Bill Wilson, “And
those who have been wounded are
very special to us.” In 2010 Juan
served in Afghanistan where he
stepped on an improvised explosive
device (IED) and lost both legs and
his right arm. Wilson Creek along
with other community members,
donated goods and services, as a sign
of respect and gratitude, to the couple
for their upcoming nuptials.

e next time you come out and visit Wilson
creek Winery, look across the street. e
vineyard and structure you see was formerly
called e castle Bed & Breakfast. it is now
Wilson creek Winery's next growth step,
albeit a baby step, into the overnight
accommodation business. at's right, we
now have a "place" for you to stay. as excited
as we are about this new adventure, we are
also scared to death. We have stayed in hotels, resorts, and B&B's, but
we never imagined we would operate one. at said, we never imagined
opening and operating a winery either. So what the heck is "it"? it is a
12,000 sq. ft., nine bedroom, Vacation Rental By owner, or a five
bedroom bed & breakfast. huh? here's the deal. We can rent out the
entire facility to one person that can use the house as they see fit for a
three night minimum on the weekends, or two night minimum during
the week. if nobody books it in its entirety, we can make it available up
to five individual suites for overnight guests on an independent basis.
each guest suite has its own bathroom, and seven of them have their
own jacuzzi tubs. Seven suites have a balcony or patio access. e Grand
almond champagne Suite is 1,600 square feet and is designed for a
bride-to-be to get ready for her big day in luxury and style. ere is an
indoor lounge, a 1,100 game room, a huge grand salon with fireplace
and wet bar, commercial grade kitchen, large pool area, barbecue island,
shade structures, and many more amenities. We did a major remodel
and we are expected to be operational soon. check out our website for
pictures, further details, and to book a room or the entire facility. Wine
club members will be our priority with their special wine club

S p r i n g c h a l l e n g e s . . . after a very dry spring here we are
in the second week of may bottling White cab in the rain! e
vineyard loves the rain, but bottling in the rain can be a problem.
ings like soggy wet cardboard wine cartons can make life difficult.
We need to use tarps and wear rain gear since we still are working
with mobile bottlers who bring in their bottling line in a trailer. e
movement of empty bottles and full ones in and out of the trailer
exposes the packaging and the workers to the elements. one day we
may have our own bottling line with a nice big warehouse which
would make the weather less of an issue. But for now, this is the way
it is. Bottling a wine is like the end of a journey. it starts with the growing the grapes which then moves to harvest
and making and aging the wine. decisions have to be made all the way along. each step in the path can be leading
toward that perfect wine, or it could be leading to a wine of average quality or worse. When starting out
with high quality fruit it is the winemaker’s job to see to it that the quality of the grape makes it
to the glass. ere are so many potential pitfalls along the way. e most common is neglect. if
the wine is not checked on a regular basis something will go wrong and it will be too late to correct the problem without major intervention. When it is time to bottle, the wine must be
checked for all sorts of stability issues. e blend needs to be checked many times for color, clarity, aromatics, flavor, mouth feel, balance, finish, overall quality and appeal. if something has
been missed, it will show up in the bottled wine. needless to say, bottling can be a very stressful
time for the little old winemaker!

CINNAMON ROLL FRENCH TOAST BAKE
Paired with Grand Cuvee with a
splash of fresh squeezed orange juice
18 three inch cinnamon rolls
1 quart half and half
10 large eggs
2 cups cream sherry
2 cups granulated sugar
1/2 cup ground cinnamon
2 tablespoons vanilla extract
cooking oil spray
Whisk together half and half, eggs, sherry, sugar,
cinnamon and vanilla in a mixing bowl.
Coat the bottom and sides of a square baking
dish with the cooking spray. Lay cinnamon rolls in
a single layer in the dish. Pour egg mixture over
the cinnamon rolls to just cover. Add an
additional layer of cinnamon rolls, pressing
them down to compress, then add
a third layer of cinnamon rolls on
the top. Pour egg mixture over the
cinnamon rolls to cover. Cover the
baking dish with aluminum foil.
Bake at 350 degrees for
35 minutes. Remove the foil.
Cut into single servings and
serve with maple syrup
or whipped cream or
fruit topping.

I have been a member at WC since the
first time I went about ten years ago,
and have always been impressed. is
year when I visited, I came into town
from Chicago with 9 of my family members for Easter Brunch. e food was
phenomenal, and of course the wine was outstanding. However, what impressed
me even more was the service we received from Cody at the Grill. It was obviously
a busy day, and we were a very large party but he went above and beyond in ever
aspect of service possible. Since I don't get out that way very often, I am truly
blown away but each encounter I have at WC.anks again for always making
me feel like I AM an extended member of your family! It really means a lot to have
that feeling when I am in the neighborhood.
