CLUB LIFE - Governors Club
CLUB LIFE Governors Club January 2014 Volume 2, Number 1 “We have been going to ‘Tis since it started. We think tonight was the best ever. We ate more than ever - not only because the food was very, very good, but also because it was very, very accessible and nicely presented. Hard to imagine that there were about 500 folks there. The crowds just moved around very comfortably. Don't know what you did, but it was right! All of the "musical" opportunities were super...” John & Linda Zaremba ‘Tis the Season Holiday Gala “Last night was a hit! It was a fantasy of luscious treats, and delicious choices upon which to dine, executed superbly by a professional and dedicated staff. A hardy thank you seems to fall short, but indeed I am thankful for a wonderful night.” Alma Ferro CONTENTS “You have raised the bar to new heights. Thank you for making 'Tis the Season incredibly fun, elegant, comfortable and beautiful. The food was superb, the décor tops, the music lively and most danceable. The availability of seating, especially good for dining, was excellent and very beautiful. You didn't miss a detail. Bravo!” Ronni and Richard Ebbers Governance 3-4 Membership 5 Dining & Events 6-11 Golf & Grounds 12-13 Tennis 14 Wellness & Youth 15-16 January Calendar 16 CLUB LIFE Governors Club January 2014 Volume 2, Number 1 CLUB MANAGEMENT CLUB INFORMATION BOARD OF DIRECTORS Jim Sink Sam Osborne Jerry Wehmueller Jann Westfall Larry Gunn John Moellering Paul Singer Alyce Twomey Alma Ferro President Vice President Treasurer Secretary ADMINISTRATION Doug Shifflett Tom Hegeman Sara O’Leary Lisa Johnson Bob Wood Nancy Franitza Laina Balafas Luis Rojas General Manager & Chief Operating Officer Chief Financial Officer VP/Director, Marketing & Membership Director of Sales & Catering Director of Maintenance Communications Manager Coordinator, Marketing & Membership Housekeeping Manager FOOD & BEVERAGE Jay Johnson Clubhouse Manager Ben Guaman Executive Chef GOLF Patrick Seither Director of Golf GROUNDS Kevin Redfern Director of Grounds TENNIS Todd Ching Director of Tennis Robyn Ching Assistant Director of Tennis WELLNESS, RECREATION & YOUTH Melissa Uftring Director of Wellness & Youth Activities CLUBHOUSE919-933-7500 General Manager 919-918-7218 Membership Office 919-918-7276 Sales & Catering 919-918-7216 GOLF SHOP Tue-Sun Golf Course Driving Range TENNIS SHOP 919-932-8542 Monday-Friday 8:30 am-12:30 pm 1:30 pm-3:30 pm Saturday 8:30 am-12:30 pm SundayClosed WELLNESS & RECREATION CENTER 919-932-8542 Daily 4:30 am-11:00 pm Attendant 7:30 am-12:30 pm LAKEVIEW ROOM 919-918-7206 Tuesday 11:30 am-2:00 pm Wednesday-Saturday 11:30 am - 2:00 pm 6:00-9:00 pm Sunday 11:00 am-2:00 pm MondayClosed CLUB ROOM 919-918-7206 Tuesday 2:00-8:00 pm Wednesday-Friday 2:00-9:00 pm Sunday 2:00-6:00 pm MondayClosed Mount Carmel Gate 919-932-8500 Lystra Gate 919-932-7486 POA Office 919-942-0500 Click here to link to the POA Newsletter. The Committee reviewed the qualifications of a number of members that were both recommended by Club members and by the committee members themselves. The Club is indeed fortunate to have so many members willing to serve who have the both the background and experience to be an effective Board member. The members selected were not only willing to serve, but have also been active in the Club, have participated in committee-level Club governance, and have been successful in their professional careers. The Committee believes these three individuals will be extremely effective in representing the interests of the full membership during their three year terms. The Club By-laws provide for additional nominations from the membership as follows: “twenty-five (25) members in good standing entitled to vote for the Directors and who are not members of the Nominating Committee or the Board of Directors may also nominate candidates for the Board of Directors by petition signed by them and filed with the Secretary of the Club at least forty-five days prior to the membership annual meeting. Should this occur there would be an election by the full membership prior to the annual meeting with the three candidates receiving the most votes becoming the new members of the Board. Clubhouse renovations will be underway, and members will not be able to enter the Clubhouse. During this time, senior staff will be on duty and available to answer your calls and respond to emails. Alma Ferro Lakeview Room and Club Room resume normal hours Golf Shop and Golf Course resume normal schedule Bridge and Mahjongg resume Tennis Shop open normal hours Fitness Center Open 4:30 am-11:00 pm. Areas designated for Bridge are subject to change based on the construction schedule. Golf Cart shuttles will be available at the Bag Drop for members needing assistance. Members will be able to access dining via the front doors after 5:00 pm, Tues-Sun. Ray Keenan Annual Meeting of the Membership SATURDAY, MARCH 8, 2014 (subject to completion of renovations) 9:00 a.m., Clubhouse Ballroom Ballot information will be sent via email in January. Club Life, January 2014 3 PROJECT 2013 NOW UNDERWAY Renovations began the week of December 16. As with any renovation, construction workers, their equipment and building materials will have an impact on member’s use of our facilities. With a focus on the safety of our members and guests, we have worked with our contractor to develop an approach that will minimize the impact they will have. But, we will all experience some inconvenience during the renovations and we ask for your patience and understanding. Please be advised of the following: FITNESS CENTER Locker room renovations will be scheduled in late January or early February. We will provide details on the impact this will have after the first of the year. CLUBHOUSE LOCKER ROOMS Renovations to the locker rooms started during the week of December 16. The most extensive part of the project will take place in these locker rooms. Walls are being moved, tile is being removed and the walls and ceilings will be renovated. This means that members will not have access to the locker rooms after this date until the locker rooms reopen in early March. The policy of prohibiting the changing of golf shoes in the parking lot will be waived while the locker rooms are closed. Water, coffee, tea and fruit will be available for all golfers in the Club Room. Kyle will shift his lunch and shoe services to the Club Room during this period. Golfers should enter their scores in either the Golf Shop or from their home computers or mobile devices. We anticipate the renovations to the locker rooms will be complete by early March. 4 Club Life, January 2014 LOWER LEVEL REST ROOMS These rest rooms will close after the first of the year. The upper level rest rooms and the outside rest rooms near the patio will remain open throughout the renovations. Beginning in January, members are asked to use the outside rest rooms prior to 5:00 p.m. A Club employee will escort members or guests who are physically unable to reach the outside rest rooms to the rest rooms on the second floor. In the evenings, access to the rest rooms on the upper level will be via the elevator. Please be aware that the area around the upstairs rest rooms will be an active construction area, and caution must be exercised when moving through this area. BALLROOM AND LOBBIES Renovations to the Ballroom and lobbies will begin shortly after the first of the year. The Ballroom will remain closed until the renovations are completed in early February. During the run-up to the vote on this project, we heard many negative comments on the carpet in the ballroom. Although not included as a part of Project 2013, we are pleased to inform you that the Board has decided to use capital funds to replace the carpet on the stairs, the upstairs lobby and halls, the Member’s Lounge and the Ballroom to ensure these areas are totally renovated. The new carpet will be installed in late February. BRIDGE / GAME ROOM We will coordinate with our general contractor to ensure that, on most days, our Bridge and Mahjong players will have access to the Bridge/Card Room while the lobbies are under renovation. If construction activity precludes this, we will look for alternative facilities. We will send out more information as it becomes available. Again, caution is urged, as the upstairs will be under renovation. CLUBHOUSE IN GENERAL As usual, the Clubhouse will be closed for the first two weeks in January (January 1 to 13). The Lakeview and Club Rooms will reopen for member use on Tuesday, January 14. Access to our dining facilities will be restricted during the renovations. Prior to 5 PM the front doors will be locked, as the lobby area will be an active construction site. Please go around the right side of the building and enter through the Golf Shop or through the terrace doors. Golf cart shuttles will be available at the Bag Drop area for those who need assistance. After 5 PM, the front doors will be open for member use. However, we urge caution, as the entrance area will be under renovation. As stated previously, we have worked hard to develop an approach and detailed plans to ensure the safety of our members and guests and to minimize the impact on our members. We believe the minor inconveniences we will all experience will be outweighed by the enjoyment and pride we will take from our renovated facilities. If you have any questions regarding Project 2013 please do not hesitate to contact us at project2013@governorsclub.cc. Thank you for your continued support of our Club. The Geology of North Carolina and Governors Club UNC Professor of Geology Kevin Stewart will give a reprise of his program presented in 2010. This program has had the strongest feedback of any program and is returned by popular request. New information will be included including focus on the events which produced our own Edwards Mountain and the terrain of Governors Club. We may also learn something about the shale formations that are receiving so much “fracking” attention in southern Chatham County. What happened on Governors Drive 220 million years before Roy Thornton fixed it? WEDNESDAY, JULY 30 WWI - Causes and Lessons of the Great War Featuring UNC History Professor Emeritus Gerhard Weinbergm this program will commemorate the beginning of WWI on its centennial anniversary. Focus will be on the political events and treaties that evolved, the regional tensions that erupted and the lessons that might be learned relevant to today’s global situation. July places us squarely between the assassination of Archduke Ferdinand on June 28 and the first action on August 2 when German cavalry advanced into Luxembourg. Professor Weinberg is THE MOST POPULAR speaker in UNC’s “Adventures in Learning” programming. He is regarded as a world-leading expert on WWII. A little known fact is that his University of Chicago masters thesis was on the origins of the Great War – WWI. Who was Bismark and how did his diplomacy impact Europe’s future? Fred Kiger Civil War Series (June Date TBD) Find details and registration for Club events online at www.governorsclub.cc 6 Club Life, January 2014 “Life Back Home in the Piedmont“ In continuation of our Civil War commemoration 150 years later, this program will cover war action from July 5, 1863 through June, 1864 with a focus on what life was like for those left on the farms and villages of Chatham, Orange, Alamance County areas. Why did Robert E. Lee write to Jefferson Davis about Chatham County Soldiers? Bridge and Majongg will be suspended until the Clubhouse reopens January 14. GCBC Governors Club Bridge Club (GCBC) provides members the opportunity to learn and play this fun, challenging and entertaining game. For information on joining the Opera & Arts Guild, please go to Clubs within the Club on the members’ home page of the website. Going into our third year, you can expect bigger things yet! With the completed ballroom renovations, our audio and visual systems will be more appropriate for the type of great talent we will bring in. There will be master classes, lectures, etc., but we have the potential to bring down big names from New York such as Sherill Milnes, Marc Scorca and others. To do this, we need a little help from our group. We are going to increase the dues starting March 1, 2014, to $100 per person, only a $25 increase. If we have 12 events per year that amounts to $8.33 per person for each event. But we often have 2 events per month so that we can accommodate the difficult schedules of some of these very important people. That would be $4.16 per person! Where else can you find this level of entertainment for under $5.00 right in your own back yard? If you wish to cancel your membership in the Guild, you must opt-out by February 28. Please see our web page for details. ! Chris oversees all of the kitchen operations for the evening events and takes great pride in the food that is served at our Club. Chris is from Charlotte, which he calls home although he graduated from high school in Estes Park, CO. He learned his trade on the job, working in many family casual restaurants for thirteen years prior to joining the culinary team at the Myers Park Country Club. Chris feels that his country club experience allowed him to fine tune his knife skills and culinary techniques and prepared him for his current position. Chris enjoys his role because the culinary team is a “family” with a strong esprit de corps. Chris pointed out that he knew he had made the right decision to come to GC when Chef Ben offered him a place to stay prior to his relocation. Chris slept in the loft above the kitchen at Chef Ben’s home and was greeted bright and early every morning by the Chef’s lovely daughters. Nice way to start your day. Jay Johnson Clubhouse Manager If you see Chris, the 6’4’’ guy in chef attire, walking through the Club, please give him your feedback or suggestions for future entrees. Chris is very creative and enjoys the diversity of preparing the unique daily specials. Chris also is a Panther “fanatic” so give him the thumbs up every time they win! Ben Guaman Executive Chef HOUSE COMMITTEE Alma Ferro, Chair Larry Gunn, Board Representative Diane Bastian Catherine Bova Jo Ann Colton Alice Donoghue Bob Elliott Lowell Hoffman Joe Kardas Zuzu Smith Alyce Twomey As an added dividend, we were lucky to have Lauren Haught join our culinary team when she moved to Chapel Hill with Chris. They have recently become engaged and their wedding will be held on October 13, a Monday, because so many of the guests work in eateries, and that is their only day off! Chris’s Bacon Wrapped Potato Cakes 2 pounds red Bliss potatoes 3 TBS. extra virgin olive oil ½ white onion, diced 1 c. spinach 1 TBS. garlic, minced 2 TBS. Dijon mustard Bacon salt and pepper to taste • Boil whole, unpeeled potatoes until done. • Dry them in a 350 oven, quarter, then roughly mash with all ingredients. • Shape with a ring mold into cakes and then refrigerate until cold. • Wrap each cake with 2 strips of bacon – one around the perimeter and the other over the top. • Bake at 350 until the bacon is crisp. • Makes 4 – 5 side-sized cakes; cakes may also be made smaller as appetizer portions – cut bacon to size. 8 Club Life, January 2014 Back of the House When you talk with the GC culinary team, they will tell you that the real action is in the kitchen at our Club. Our dedicated staff looks forward to “show time” every lunch and dinner service. Many changes have occurred in the back of the house since Doug’s arrival, including staff additions and upgraded equipment. The staff reporting to Chef Ben now includes an additional sous chef plus an assistant. They oversee all dinner kitchen operations, participate in creating new dishes for our menu, and will work to improve the service times in delivering food promptly to our members. It may surprise you to know that there are only two staff members responsible for preparing our lunch orders and four for dinner. George Feneley, our daytime sous chef, and Memo, a twelve-year staff veteran, operate the lunch stations for the hot and cold lines. Chris Hempfling takes charge of the line for dinner service. Chris usually has three staff working the dinner line, but Jerome Moody has been activated with the Army Reserve and will be going to Afghanistan in March. Jerome has previously served several tours of duty in Iraq while in the Marines. The culinary team works long hours, and begins each morning doing the prep work for the day. All dishes are freshlyprepared so the members get the best quality food prepared to their satisfaction. If you visit the kitchen, you will see the staff operating the salad line, sauté, and grill stations with an expeditor who calls out the orders and ensures that all dishes are prepared in a timely manner. The Club realized that the kitchen equipment was sorely in need of repair and upgrade. Over the past eighteen months, we have properly equipped both the main kitchen and the upstairs kitchen that supports the banquet facilities. New fryers, coolers, and two new ranges have been installed. In fact, the new range shown in the accompanying picture has just been installed in the upstairs kitchen. This is an upgrade from six sporadically working burners to ten new burners that will better serve all events in our banquet rooms. The culinary team is delighted with the growing number of members dining at the Club, with dinner orders approaching one hundred per night. The daily special is very popular, and can constitute more than 50% of the orders on any given day. The team knew it was “show time” when they prepared over 50 paella dishes one evening. As there weren’t enough sauté pans for that many orders, the team would complete an order, then turn around quickly and wash the sauté pan to keep up with the demand. The culinary team welcomes member feedback as they are always interested in your input. Bon appetit! R.S.V.P. I have often seen members using cell phones in our dining areas. Do we have a cell phone policy? Members should use courtesy and appropriate discretion with the use of cell phones around the Club facilities. Please note the following: • Please keep your mobile phone on silent or vibrate at all times at any of the Club facilities, especially the dining areas. • Do not make or answer calls while in the dining areas. • Keep your cell phone for emergencies only when on the golf course. • Most importantly, please inform and remind your guests about the policy. During the construction phase of Project 2013, will catering be available? Catering service will be available even in January and February. Please call Lisa at 919-918-7216 for any of your catering requests. What happens to the leftover food from our large events? Our employees are often the lucky recipients of leftovers. Additionally, many items are used to make soups and other dishes. Club Life, January 2014 9 ‘Tis the Season 10 Club Life, January 2014 HOLIDAY GALA ‘Tis Tidbits Almost everyone who attended ‘Tis the Season this year has felt it was the “best one yet.” With attendance maxed out at 500, the Clubhouse was utilized to the fullest. The number one thing people commented on was all the available seating. Trying to balance plates and drinks becomes difficult, and all the seating choices were appreciated. Secondly, people liked the advance publication of all the food stations, because they could head for their favorites first. This and the many themed stations contributed to a great “flow” around the Clubhouse. Of course the food received rave reviews. From lobster and lamb, to sushi and scallops, and to the candy bar, there was something for everyone. According to Margie Emshoff, ”It was the best Tis yet,” and she loved the big bar station upstairs, with smaller venues for variety. Leslie Pyatt commented that having seating was a good addition, and the event was a great success. Everyone loved the round bar with the “cook to order” food, and were amazed at how quickly it became a dance floor! We hope you stopped by the “Bollywood” tent for the great food and entertainment. The dessert extravaganza impressed everyone. The hand made sorbets were supplied by Chef Plamen Marinov from Advanced Gourmet. Thanks to our photographers; Paul Franitza, Megan Finger, and Kyle Wilson. Chef Ben and his staff did a great job and were assisted by Chefs from Chef’s Acadamy in Raleigh, as well as culinary help from U.S. Foods. We also bring in new hires from the Chef’s Acadamy after they have worked for an event. This event would not be possible without the tremendous effort by our entire staff! Each and every person worked tirelessly to set up and take down all the decorations. Kudos to all! Favorite Cocktails from the “Speak Easy” Roaring 20’s Gin Fizz 2 oz. On Monday, December 9 the Club received a new fleet of 80 golf cars. After an extensive process of researching and testing the available models on the market we are excited to announce that we have decided on the EZ-GO RXV golf car. What set the RXV apart are its key safety and durability features. The RXV is used extensively at private clubs where mountainous terrain is present; many of these clubs are located in Western North Carolina. For more information on the RXV model please click here. The golf cars will be green with the Governors Club logo on the front and side number decals. Key features include: 12 Club Life, January 2014 • Automatic braking system with no locking brake, the vehicle will come to a stop within seconds after the driver removes their foot from the accelerator. • Two sand bottles, located separately on each side near the rear of the vehicle • Two coolers, located separately on each side above the rear wheel • Retractable rain and weather cover for golf bags • Enhanced message and information holder The Golf Committee and your Professional Staff believe the new EZ-GO RXV golf cars will enhance our image, presentation, and above all the Governors Club member experience. 2013 Women’s Partner Match Play 2014 WGA Membership Your WGA membership for 2014 will be automatically renewed! The 12 teams of Women who played in the GC Women’s Partner Match Play endured a very long and interrupted season. Having begun in May, the winners finally concluded a successful season winning at their last match on October 25. Victorious after an exciting sudden death playoff, consisting of 20 holes before their win, Karyn Wilson and Sally Manaugh emerged ahead of the talented team of Susie Park and Jeong Won. If you are one of the hearty souls who have hit the golf course in the last few weeks, you have probably seen some “repeat” pin positions on the greens. On each green, you also may have noticed extra hole positions filled with a dark plastic cap. Kevin Redfern, Director of Grounds, and his team continue to take steps to well maintain our course and protect our new ultradwarf bermudagrass greens. The team has cut three pin positions on each green and will use only these three locations throughout the winter. One cup on each hole will be “in play” and hold the pin while the other two will be covered with green plastic caps. The flag position might not change each day. Rather, the team will move the pin position to one of the other locations on the green based on the number of rounds played. When the growth of the grass slows or stops and mowing frequency deceases, blemishes to the green’s surface such as ball marks and old hole plugs decrease smoothness and become more prominent. According to USGA agronomists, it’s important to change holes as infrequently as possible based on level of play and deterioration of the hole. Limiting each green to three positions during the winter greatly improves the playability and the appearance of the greens. But, what happens if one of the alternate cups is in your line of putt? Following Rule 24-2, if your ball lies on the putting green and the alternate cup (an immovable obstruction) intervenes in your line of putt, you may take relief from the interference without penalty. To do so, you must mark, lift and then place the ball at the nearest point of relief. What can you do to help the maintenance team care for our greens? In addition to repairing ball marks as you get to the green and tapping down spike marks as you leave, please remember to cancel tee times if you are signed up but no longer intend to play. Working with the Golf Shop, Kevin monitors scheduled play closely during times of bad weather, and it’s important that he have an accurate picture of when golfers will be on the course. He uses this information to help decide when to tarp and untarp the greens. As always, thank you for your understanding and patience to support necessary maintenance activities. Your opponent is amazing at the net. It seems as though he or she is picking off every groundstroke you hit, no matter how well you have hit it cross court. We always try to play “keep away” from players at the net. The strongest net players know this and will tend to favor the middle as they poach and play the net area aggressively. Keep them at bay by challenging them down the line once in a while. If your opponent has no fear of you hitting their alley, they will roam the net freely. If they see that you are willing to challenge them and not play “keep away,” they will be less likely to roam and you will have opened up the crosscourt for yourself. It is recommended to do it early in the game to set the tone. Don’t wait until 0-30 to try it! Todd Ching, Director of Tennis Did you know? You hit a solid forehand cross court and your opponent returns it but is now out of position for the dropshot that you are planning to hit. He runs it down but in the process of sprinting towards the ball, his hat falls off. What should we do? This unintentional act is actually a hindrance and a let may be called by the opposing player or team (in this case, yourself). This must be called before the conclusion of the point or the point stands. A player may not call a hindrance let on themselves. In other words, your opponent may not call a let on their own hat.
