The pulsating heart of Hanoi beats to its own rhythm set by the continuous process of exchange that has existed here for centuries. In fact, the fabled 36 streets of the Hanoi Old Quarter were originally named after the commodity that was originally sold there, and some, such as Hang Bac (Silver Street) and Thuoc Bac (Medicine Street) still specialize in those products even today. Just as food production and consumption has always been central to the Vietnamese way of life, it has always been an integral part of the Hanoi Old Quarter. Some streets, such as Cau Go, were once famous for the comfortable inns and delicious eateries that offered room and board for weary travellers and shrewd merchants. But nowhere is this passion for food clearer than in the bustling Long Bien Market that lies beneath the striking French bridge of the same name. It is here, in the early hours of the morning when much of Hanoi still sleeps, that the countless fresh ingredients used in Vietnamese cuisine are traded back and forth before making their way into kitchens across the capital. Never short of fascinating little cubbyholes and intriguing clandestine crevices, the Old Quarter possesses countless charms hidden within the material layers of history. Commencing in the south by the deeply spiritual Hoan Kiem Lake and stretching north towards the historic Dong Xuan Market, Hang Dao, the street named after the popular peach blossom and the location for our restaurant, provides the backbone of the Old Quarter. In keeping with the atmosphere of this unique urban setting, Viet Deli is a hidden gem that shines brightly within the terrific chaos. Daily market shopping is still common practice in Vietnam and thus there is minimal time between purchasing ingredients and preparing them for a meal. But even beautifully fresh ingredients must be carefully combined to ensure a precise balance of flavors and textures. Our special dishes focus not only on celebrating the freshness of Vietnamese cooking, but also on the expert combination of pivotal flavors for which the cuisine is also renowned. Juicy pomelo from the south and freshly caught large shrimp from the East Sea are briefly marinated in a sweet and sour fish sauce- enough time for the fruit and seafood to absorb the flavors of the marinade without being overpowered. Local herbs are added to the mixture to curb the energy from the marinade while animating the overall flavor of the dish. This dish exemplifies the Vietnamese fancy for combining the sweet and slightly sour essence of large citrus fruits with textured and succulent seafood fresh from the ocean. In keeping with traditional methods and original ingredients, we use the lang fish, which is freshly grilled right at your table together with fresh spring onions, dill and a few salted roasted peanuts.
