Keep product frozen at 0°F to -10°F until ready to use. 2. Line sheet pan with parchment paper and spray with pan release. 3. Place dough balls 6” apart on pan. 4. Place on a covered rack and store in cooler for 24 - 72 hours. Dough must be completely covered to prevent drying. 5. Remove dough from cooler and allow it to reach room temperature and double in size (60 - 90 minutes). 6. To stretch dough, place dough over fists and gently stretch outward. 7. Turn dough one-quarter turn and repeat until dough is desired size. 8. Dough can also be stretched with a rolling pin or pizza press. 9. Dock dough all over to prevent blistering when baking. 10. Place stretched dough onto a pizza pan or screen, sprayed with pan release. 11.
