Six Flags Fiesta Texas - Holiday in the Park

It’s the most wonderful time of the year as Six Flags Fiesta
Texas celebrated Holiday in the Park. Experience the park
transformed into a winter wonderland.
Instructions:
• Preheat oven to 325 degrees. With fingers, carefully loosen the skin
from both sides of the turkey breast. Combine lemon juice and oil;
brush under the skin. Combine the pepper, rosemary, thyme and
garlic salt; rub over turkey.
• Place onion and celery in a 3 quart baking dish. Top with turkey
breast, skin side up. Pour wine into the dish.
• Bake, uncovered, 2 to 2 ½ hours or until meat thermometer reads
170 degrees, basting every 30 minutes with pan drippings (Cover
loosely with foil if turkey browns too quickly). Cover and let stand 15
minutes before serving.

Pecan Pumpkin Pie
Ingredients:
• Pastry for Single-Crust Pie (9 Inches)
• 2 Eggs
• 1 Can (15 Ounces) Solid - Pack Pumpkin
• ½ Cup Maple Syrup
• ¼ Cup Sugar
• ¼ Cup Heavy Whipping Cream
• 1 Teaspoon Ground Cinnamon
• ½ Teaspoon Ground Nutmeg
Topping:
• 2 Eggs, Lightly Beaten
• 1 Cup Chopped Pecans
• ½ Cup Sugar
• ½ Cup Maple Syrup
• Whipped Topping, Optional
Instructions:

Herbed Roast Turkey Breast
Ingredients:
• 1 Bone-In Turkey Breast (5 to 6 Pounds)
• 5 Teaspoons Lemon Juice
• 1 Tablespoon Olive Oil
• 1-2 Teaspoons Pepper
• 1 Teaspoon Dried Rosemary, Crushed
• 1 Teaspoon Dried Thyme
• 1 Teaspoon Garlic Salt
• 1 Medium Onion, Cut Into Wedges
• 1 Celery Rib, Cut Into 2-inch Pieces
• ½ Cup White Wine or Chicken Broth
• Line a 9-in. pie plate with pastry; trim and flute edges. In a large
bowl, beat the eggs, pumpkin, syrup, sugar, cream, cinnamon and
nutmeg until smooth; pour into pastry.
• For the topping, in a large bowl, combine the eggs, pecans, sugar
and syrup; spoon over top.
• Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees.
Bake 40-45 minutes longer or until crust is golden brown and top
of pie is set.
• Cool on a wire rack for 1 hour. Refrigerate overnight. Serve with
whipped topping if desired.

You’ve heard that laughter is the best medicine, and that holds
true for the brain as well as the body. Unlike emotional
responses, which are limited to specific areas of the brain,
laughter engages multiple regions across the whole brain.
Furthermore, listening to jokes and working out punch lines
activates areas of the brain vital to learning and creativity. As
psychologist Daniel Goleman notes in his book “Emotional
Intelligence”, “laughter…seems to help people think more
broadly and associate more freely.”

• Laugh At Yourself. Share your embarrassing moments. The
best way to take ourselves less seriously is to talk about the
times when we took ourselves too seriously.
