TSYC Minimum Spending Policy
The minimum spending requirement per membership at TSYC is $1000
per fiscal year which begins in March of each year and ends at the end
of February the next year. Quarters are (1) March/April/May (2) June/
July/August (3) September/October/November (4) December/January/
February). While it is hoped that each member will spend $250 each
quarter at TSYC for food, drinks and/or items at the Ship’s Store, there
will be no quarterly billing for unused minimum. But $1,000 must be
spent by the end of the fiscal year. Also, money spent at other FCYC
clubs do not count toward the TSYC minimum of $1,000 a year.

Commodore Report
The highlight of last quarter was TSYC’s
opportunity to host the May meeting of the
Florida Council of Yacht Clubs. So many of
our members dedicated their time and
generosity to getting our house in order to show
TSYC in its best light possible! Due to this
effort, we played to great reviews. All 32 yacht
clubs that participated were impressed with our
club both inside and outside. FCYC
Commodore Riss said we had set the bar high
for other small clubs in the future. The success of the event was also
due to the fantastic efforts of our dedicated staff. Not only was the
food presentation fabulous, our wait staff were also impressive. Many
thanks to all of you who made this event a success!
Once again we hosted the Peter T. Assimack Fishing Tournament at
the end of April. Many members offered there time to staff the Food
Court manning the grill, serving food and beverages. This year the
tournament had the most “fisher people” ever. This event serves to
provide scholarships to local school students. We are proud to be part
of this effort.
Summer is upon us and things tend to quiet down but aside from the
closure for two weeks in August for staff vacations, we’re still open for
business. We have the Wednesday and Saturday 2 for 1 house wine
and draft beer specials and the Friday Happy Hour with $1 off all
drinks – and don’t forget about the delicious menu offerings of Chef
Brian. Things on the dock are heating up with raft ins and raft outs
and Saturday morning member kayaking – plenty to keep you entertained.
The next project we will focus on is getting the tiki bar started and
finished as soon as possible. There will be a fund raising effort being
announced soon and you will have an opportunity to purchase a
personalized ceramic tile to be placed on the top of the bar.
This year is the 65th anniversary of Tarpon Springs Yacht Club. We
will be hosting an open house event on October 11 and inviting past
members, city dignitaries and the community to help celebrate this
momentous accomplishment. Stay tuned for details in my weekly
updates.

Triple-Chocolate Mousse Cake
Vegetable-oil cooking spray
2/3 cup all-purpose flour
1/3 cup unsweetened Dutch-process cocoa powder
2/3 cup sugar
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 large egg, room temperature
1/4 cup whole milk
3 tablespoons vegetable oil
1/2 teaspoon pure vanilla extract
2 ounces solid semisweet chocolate
1. Preheat oven to 350 degrees. Place eight 6-ounce (3 1/2-inch diameter)
ramekins on a rimmed baking sheet, and coat with cooking spray; set
aside.
2. Stir flour, cocoa powder, sugar, baking soda, baking powder, and salt in
the bowl of an electric mixer. Attach bowl to mixer fitted with the paddle
attachment. Add egg, milk, oil, vanilla, and 1/4 cup water; mix on medium
-low speed until smooth and combined, about 3 minutes.
3. Divide batter evenly among prepared ramekins. Bake until a cake tester
inserted into the centers comes out clean, about 20 minutes. Transfer to a
wire rack; let cool completely. Run a knife around sides of cakes; unmold.
Cakes can be refrigerated, wrapped in plastic, up to 1 day.
4. Trim each cake to 1 inch high. Transfer to a baking sheet lined with
parchment paper. Cut eight 10 3/4-by-4-inch strips of parchment paper.
Wrap a parchment collar around base of each cake, keeping bottom flush
with baking sheet. Secure each collar with tape; set aside.
5. Transfer bittersweet-chocolate mousse to a large pastry bag fitted with a
large round tip (such as Ateco #808). Pipe a 1-inch layer of mousse into
each parchment collar. Refrigerate until mousse is set, about 20 minutes.
Repeat with milk chocolate mousse, piping on top of the bittersweet
chocolate mousse. Refrigerate at least 4 hours and up to overnight.
Rear Commodore Report
With our successful hosting of the Florida Council of
Yacht Clubs (FCYC) in May, our club has reached
another milestone in our proud 65-year history. We
received rave reviews from yacht clubs all over the
state for our presentation, facility, setting, service and
fabulous food, and the weather was great. It also
reminded us that we're still one of the smallest yacht
clubs in the state. While we intend to continue to
grow, the realities are we’re in a smaller market with
limited dock space. On the other hand, we have an
enviable location next to the historic Becket Bridge, and breath-taking
sunsets from our large patio overlooking Tarpon Bayou.
With the help of our long-term strategic plan, we're working on some
great new things, including our new tiki bar and a sailing school for
people of all ages. We also have more boating activities on the calendar
and increased member involvement inside the club. We’re always
looking for your feedback, so never hesitate to let us know how we’re
doing. We got a complaint recently that that our drinks are too
inexpensive, and the drinks are over-poured. We’re definitely looking
into that one.
The success of a private club like ours is an active group of volunteers
who work hard to keep things new and engaging. If you'd like to help
out, just contact our commodore, vice commodore or rear commodore,
and we'll be happy to get you on one of our committees.
Lastly, in addition to the fine food, fellowship and programs we all
enjoy, we have some aggressive new marketing in the works, starting
with our fresh new web site at www.tarponspringsyachtclub.com.
All good reasons to remember why you belong to the best little yacht
club around.

about 30 seconds. Scrape at a 45-degree angle with a vegetable peeler,
forming curls. Before serving cakes, remove parchment collars, and
garnish with chocolate curls.

Entertainment Committee Report
You can tell summer is upon us! It’s hot
outside and many of our members head
north for cooler temperatures. Our
“entertainment” goes out of doors for the
summer with a very active calendar put
together by our Fleet/Kayak Captain. There
are a variety of Raft Ups and Dock Party
Raft-Ins planned for the summer to keep us
busy. The weekly club updates and the website calendar will
keep you posted on these events.
We hope you can join us for the Annual Three Hour Tour
event on July 19 when we kayak over to Gilligan’s Island
(a spoil island on the Anclote just north of Florida Avenue).
We hit ‘land’ with a boatload of outdoor games and
beverages. Chef Brian will provide a nice lunch upon our
return to TSYC.
The club will close for vacations in August from the 4th
through the 19th but not without fanfare. Plan on coming to
the club for dinner and dancing with at a Luau with SPF40.
The club reopens on August 20. The committee is working on
a Grand Reopening so plan to come out and welcome the staff
back from vacation.
Also, add to your calendars the TSYC 65th Anniversary Party
on October 11. Past members will be invited to join us and
we can all dance to the music of Ron and the Classics! There
will be more to come and it will be a fantastic, don’t miss
event.
The Entertainment Committee works very hard to keep things
fun! If you have any new ideas, we would love to hear from
you!
